학교급식의 한우 이용실태 조사 및 저지방 한우 부위를 이용한 학교급식 메뉴 개발 (Survey on Hanwoo Usage and Menu Development using Lean Cut Hanwoo for School Foodservice)

  • The purpose of this study is to analyze Hanwoo usage in school foodservices and to develop menus of lean cut Hanwoo. As a result, satisfaction of students, parents and teachers all increased regardless of school type after using Hanwoo. The high price compared to other meats (3.98) was the biggest difficulty for using lean cut Hanwoo followed by reduced taste preferences (2.84), lack of parent awareness (2.67) and lack of appropriate cooking facilities (2.13). According to the survey on how to increase the usage of lean cut Hanwoo, improvement of meat tenderness (3.80), development of various sauces (3.74) and development of seasoning for existing menu (3.61) were identified as major necessities. This analysis of Hanwoo utilization in school foodservice was used to develop menus of lean cut Hanwoo. The menu was particularly developed to overcome the supply-demand imbalance of different cuts. For the menu development process, potential Hanwoo utilization in school foodservice, cooking method, and diverse taste were considered. In order to evaluate the applicability in school foodservice, JARS was used and the final eight menus were selected. For the selected menu, a nutrition analysis was conducted. Further, systematic recipes with a mixing ratio;product process description and a simplified product process were also developed.

  • Lean 6 sigma has recently been used to describe a management system which combines lean management and 6 sigma. The marriage between Lean manufacturing and 6 sigma has proven to be a powerful tool for cutting waste and improving the organization operations. Time and quality are the most important metrics in improving any company's production and profit performance. lean 6 sigma is a management innovation for improving production efficiency, process quality, cost reduction, investment efficiency and customer's satisfaction. in this paper, Advanced cell line is builded the home appliance goods of the LCD TV final assembly line of domestic company line, training the multi-skilled man and controlling the production information system based on Lean 6 sigma.

  • Successfully adapting to digital and customer-oriented transformation, the concept of lean manufacturing professes the philosophy of creating greater benefit while minimizing losses. These losses are operations that do not add value in the production process to ensure the efficiency, flexibility, and profitability of projects. In the context of broad automation and digitalization of all sectors of the economy, mechanisms for combining automation technologies and lean production are becoming available. Moreover, when it comes to the efficient use of financial, human, or material resources, it is clear that the use of Industry 4.0 technologies can be an effective tool for achieving the goals of lean production, as many of them pursue the same goal. In this context, this article aims to study the effectiveness of the implementation of project management concepts at the global level and identify the main factors influencing its effectiveness to ensure the achievement of lean production through LEAN technologies and Industry 4.0 technologies. To achieve this goal, several statistical indicators were selected and several statistical methods of analysis were used: pairwise correlation, regression analysis, methods of comparison, synthesis, and generalization. Statistical analysis was conducted according to a survey conducted by the Project Management Institute (PMI) in 2020. An economic-mathematical model of dependence of project effectiveness in different regions of the world on the level of implementation of project management approaches is built, which shows that the increase in project effectiveness by 85% is due to financial losses, technical training, and consumer orientation. These results allow project managers to develop appropriate strategies to improve project management approaches at all levels. It is established that LEAN technologies and technologies of Industry 4.0 have several tools that have a positive effect on minimizing losses following the concept of lean production. Besides, given that the technology of Industry 4.0 is focused on the automation of Lean Production technology, a mechanism for the introduction of lean production using these technologies and methods.

  • 건설산업은 높은 노동의존성으로 인한 저생산성 구조를 근본적으로 가지고 있으며, 이는 건설업체들의 낮은 수익률과 영세성의 원인이 되며, 건설사업의 독특한 수행방식과 함께 기술과 경험의 축적을 어렵게 한다. 기존의 건설생산성 향상을 위한 노력은 개별 단위 작업개선에 초점이 맞춰져 있으며, 전체 건설생산 프로세스에 걸친 개선의 노력이 부족했던 경향이 있다. 특히 관리적인 측면에서의 기술력이 건설선진국에 비해 현저히 떨어지므로, 이에 대한 개선이 시급한 실정이다. 이는 건설정보의 호환성과 신뢰성 있는 도구의 부재에 의한 문제라 할 수 있으며, 한국 건설산업의 국제 경쟁력을 높이기 위해서는 시스템적 사고의 기초위에 건설생산 프로세스의 개선을 지향하고, 건설정보의 신뢰성 향상이 요구된다. 따라서 본 연구에서는 웹 기반 건설정보관리시스템의 개발을 통해 시스템 구축이 미비한 중소건설업체의 관리능력향상에 기여하고자 한다.

  • 건설생산성의 혁신적 향상을 지향하는 린건설(Lean Construction) 구현을 위해 가장 시급히 개선되어야 할 사항은 건설생산 프로세스의 개선과 건설정보의 신뢰성 향상으로 정의될 수 있다. 본 연구에서는 건설생산 프로세스 중 설계/시공단계에서의 개선사항을 설계관리, 자재조달관리, 공정관리 측면에서 도출하고, 각 단계에서 도출된 개선사항을 웹기반 정보시스템으로 실현하여 건설산업 종사자들에게 필요한 정보와 지식을 제공하고자 웹 기반 분산형 건설정보 시스템을 개발하고자 한다. 이를 위해 건설생산 프로세스 각 단계에서의 주요 문제점을 파악하여 개선모델 및 요소기술을 제시하고, 모델의 구현을 위한 시스템 프로토타입을 개발하였다. 설계/자재조달/공정 관리지원 시스템은 웹 기반의 지식관리 시스템을 중심으로의 통합을 추진할 예정이다.

  • System is the organization of hardware, software, personnel and facilities needed to perform a designated function within a stated environment with specified results. The trend of modern systems is getting more complex and larger. The system is necessary for modern society but the minor malfunction of the system can result the enormous human and material losses. Recently it is being heightened the concern for system safety and required to be built and applied Safety Engineering standard Guideline for safety of complex and large-sized system. This paper describes the System Engineering Process model integrated with Safety Engineering and the establishment of standard safety guidelines for safety of product development using DMADOV Methodology of the Lean 6 Sigma.

린 건설 원리에 기초한 건설 생산 공정 분석 모델에 관한 연구 (Development of CPAM(Construction Process Analysis Model) based on Lean Construction Principles)

  • 본 연구에서는 작업 신뢰도 향상의 한 방안으로 기존 공정 관리 기법 상의 한계점을 분석하여 이를 보완하고자 하였다. 그 결과로써 린 생산 원리를 적용한 건설 생산 공정 개선 모델인 CPAM(Construction Process Analysis Model)을 제시하였다. CPAM의 변이 관리 기법을 통해 작업 변이를 최소화시켜 공정계획의 신뢰도 향상 및 생산 효율을 증대시킬 수 있도록 하였고 CPAM에서 제시된 세부작업 일정 계획과 주간작업계획을 통해 건설 현장의 작업 흐름에서 나타날 수 있는 자재, 장비, 인력등의 재고(Inventory or Work In Process, WIP)를 감소시킬 수 있도록 하였다. 또한 본 연구는 건설 생산을 작업 흐름의 관점으로 분석함으로써 기존의 분석에서 놓치기 쉬운 작업 흐름상에서의 불확실성을 최소화시키고 작업 처리량을 최대화시킬 수 있는 대안을 제시하는 데 그 의의가 있다.

  • This paper is the first of companion papers, which investigate port-masking effects on lean misfire limit. Port-masking was applied to commercial SOHC 3-valve and DOHC 4-valve engine by inserting masking plates between manifold and port. To induce various conditions of stratification, six types of masking plates were applied. The masking plates were placed in the upstream of injector to prevent wall wetting and two ports were not separated to permit both fuel and air entering through masked port. The results were compared with those by conventional port throttling. The results show that lean misfire limit mainly depends on masking direction, that is, high lean misfire limit is achieved when the port near the spark plug is masked. The mechanism of stratification by masking is different from axial stratification by port throttling. In this case, the rich mixture entering through masked port plays a very important role in the stratification process.

  • Mixture formation in the cylinder of a lean bum engine has been observed by Laser Induced Fluorescence technique. XeCl laser (308nm) was used to produce a laser sheet. 3-pentanone has been added to iso-octane fuel to produce fluorescence, the intensity of which is proportional to the concentration of the fuel. The laser sheet was introduced through the piston window and the fuel distribution in the vertical plane was observed through a side window. Comparison has been made for the cases of selected fuel injection timing as 0, 360, 405, and 450 CA. For the case of 0 and 360 CA injection, uniform fuel distribution in the combustion chamber has been obtained at the ignition time which is favorable for the high load mode. And the late injection cases, 405 and 450 CA, revealed the stratified formation of rich mixture around the spark plug. That extends the lean misfire limit and reduces cyclic variation in the low load mode.

  • This paper deals with the productivity increment through construction of lean production system for automobile factory in China. This lean production system has been progressed according to 5 steps. Step 1 is the work preparation. Step 2 is the process design. Step 3 is the establishment of method to count production quantity. Step 4 is the establishment of measuring method for input and output. Finally, step 5 is the construction of flexible production system able to adapt for environment change. This lean production system is expected to obtain the productivity increment by 50% for plastic plant and reduction by 50% in inventory quantity.
