Mass Interception Fractions and Weathering Half-lives of Iodine-131 and Radiocesium in Leafy Vegetables Observed after the Fukushima Daiichi Nuclear Power Plant Accident

  • Background: This study was carried out to provide environmental transfer parameter values to estimate activity concentrations of these radionuclides in agricultural crops when direct contamination occurred. Materials and Methods: Mass interception fractions (FBs) and weathering half-lives (Tws) of 131I and radiocesium were calculated using openly available monitoring data obtained after the Fukushima Daiichi Nuclear Power Plant accident. FB is the ratio between the initial radioactivity concentration of a radionuclide retained by the edible part of the plant (Bq·kg-1 fresh weight [FW]) and the amount of deposited radionuclide in that area (Bq·m-2). Tw values can be calculated using activity concentrations of crops decreased with time after the initial contamination. Results and Discussion: Calculated FB and Tw values for 131I and radiocesium were mostly obtained for leafy vegetables. The analytical results showed that there was no difference of FBs between 131I and radiocesium by t-test; geometric mean values for leafy vegetables cultivated under outdoor conditions were 0.058 and 0.12 m2·kg-1 FW, respectively. Geometric mean Tw value of 131I in leafy vegetables grown under outdoor conditions was 8.6 days, and that of radiocesium was 6.6 days; there was no significant difference between Tw values of these radionuclides by Wilcoxon rank sum test. Conclusion: There was no difference between 131I and radiocesium for FBs and Tws. By using these factors, we would be able to carry out a rough estimation of the activity concentrations of 131I and radiocesium in the edible part of leafy crops when a nuclear accident occurred.

양액의 순환주기가 담액수경 엽채류의 용존산소 농도, 생육 및 식물영양소의 함량에 미치는 영향 (Effect of Circulation Cycle of Nutrient Solution on the Dissolved Oxygen Concentration, and the Growth and Phytonutrient Contents of Leafy Vegetables Grown in DFT Systems)

  • 주요 엽채류 7종의 주년 안정생산을 위한 담액수경 재배 시 양액의 순환주기가 양액의 용존산소 농도, 엽채류의 생육, 그리고 식물영양소의 함량에 미치는 효과를 검토한 결과, 양액을 1일 10분 순환 처리구는 정식 13일 후 용존산소 농도가 급격하게 떨어지고 17일 후에는 2.8mg $L^{-1}$, 20일 후에는 최저 1.5mg $L^{-1}$까지 낮아졌다. 처리 20일 후 7가지 엽채류의 생체중은 1일 10분 처리구에서는 대조구인 10분 순환/110분 정지 처리구에 비해 $0{\sim}24%$ 범위에서 낮아졌으며, 10분 순환/10분 정지 처리구에서는 $-2{\sim}34%$ 증가하였다. 양액의 순환주기가 짧을수록 식물체 엽내 P의 함량이 증가하였으며, 식물체의 C/N율과 비타민 C 함량은 감소하였다. 이상의 결과, 담액수경 엽채류의 안정적인 생육과 식물영영소의 흡수를 위해서 2시간에 10분 정도의 양액 순환 처리가 효율적이었다.

녹색잎 채소류의 ${\beta}$-Carotene과 Lutein 함량 (Beta-carotene and Lutein Contents in Green Leafy Vegetables)

  • Beta-carotene and lutein contents in 7 different green leafy vegetables(perilla leaf, mugwort, chwi, lettuce, spinach, leek, and crown daisy) were analyzed by HPLC. The isocratic separation was performed on a ${\mu}-Bondapak$ $C_{18}$ column with a solvent system of acetonitrile : dichloromethane : methanol = 70:20:10. To check the reliability of the method applied, precision and recovery tests were performed. Perilla leaf showed the highest ${\beta}-carotene$ content(12,570 ${\mu}g$ / 100 g), followed by mugwort and chwi, all of those have ${\le}10,000\{\mu}g\{\beta}-carotene$ per 100 g vegetables. Green lettuce, spinach, leek, crown daisy and reddish brown lettuce contained 9,869, 6,689, 5,664, 3,601 and 3,299 ${\mu}g\{\beta}-carotene/100 g$, respectively, Lutein content was the highest in perilla leaf($13,718{\mu}g/100 g$) followed by chwi($11,989{\mu}g/100 g$), mugwort($11,522{\mu}g/100 g$), green lettuce($10,307{\mu}g/100 g$) and spinach($10,115{\mu}g/100 g$). ${\beta}-carotene$ contents in perilla leaf, mugwort, chwi and green lettuce were 47.8~49.6% of total carotenoids, and ${\beta}-carotene$ contents in the other green leafy vegetables analyzed were 37.7~41.4% Vitamin A contents of green leafy vegetables analyzed by HPLC were 2~6 times higher than the vitamin A values shown in food composition tables except crown daisy.

Vegetable and fruit intake and its relevance with serum osteocalcin and urinary deoxypyridinoline in Korean adults

  • The purpose of this study was to evaluate the daily vegetable and fruit intake status of Korean adults and to examine the relationship of vegetable and fruit intake with bone metabolism. The vegetable and fruit intake of 542 healthy male and female adults was analyzed. Then, by selecting 51 targets from the subjects, the relation of vegetable and fruit intake with serum calcium, osteocalcin and deoxypyridinoline (DPD) excretion in urine was examined. The total vegetable intake per day was 397.7 g and 333.5 g by men and women respectively for the age group of 20-29, 366.9 g and 309.2 g respectively for the age group of 30-49, 378.4 g and 325.9 g respectively for the age group of 50-64. Of vegetable varieties, leafy and stem vegetables displayed the highest intake. The order of major intake items of vegetables and fruits was found to be Chinese cabbage kimchi, onion, radish, cucumber, and welsh onion for the age group of 20-29, watermelon, Chinese cabbage kimchi, peach, potato, and onion for the age group of 30-49 and watermelon, Chinese cabbage kimchi, tomato, potato, and peach for the age group of 50-64. Of 51 targets, ${\beta}$-carotene intake displayed a significantly negative correlation with serum osteocalcin. While caloric intake as well as protein, carbohydrate, calcium, phosphorous, zinc and total food intake displayed a significantly negative correlation with DPD excretion in urine, tuber vegetable intake displayed a significantly positive correlation with DPD excretion in urine. In the future, a study will be necessary to accurately explain the relevance of vegetable and fruit intake with bone mineral density and bone metabolism. Also, efforts will be required to increase vegetable and fruit intake.

유기농 시설채소 재배지 토양의 물리적 특성변화 (Physical Properties of Organic Vegetable Cultivation Soils under Plastic Greenhouse)

  • 유기농 시설채소 재배지 토양의 물리적 특성조사는 전국 33개 농가 포장에서 2014년 8월부터 11월 사이에 조사하였다. 시설채소 재배지 선정은 엽채류인 상추(Lactuca sativa L.)와 잎들깨(Perilla frutescens var. japonica Hara), 과채류인 오이(Cucumis sativus L.), 딸기(Fragaria ananassa L.), 토마토(Lycopersicon spp.)를 경작하는 채소 종류별 5~8개 농가씩 선정하여 경도, 작토심 및 삼상 등 토양의 물리적 특성을 현장조사와 실험실내에서 분석하였다. 연구결과 작토심은 30~50 cm 범위로 평균 36 cm이었고, 재배되는 채소의 종류에 따라서 다소 차이가 있었다. 토양의 경도는 표토에서 $0.17{\pm}0.15{\sim}1.34{\pm}1.02$, 심토에서 $0.55{\pm}0.34{\sim}1.15{\pm}0.62$로 모두 매우 우수하였으며, 표토와 심토간에는 큰 차이가 없었으나 엽채류와 과채류 간에는 통계적으로 유의적인 차이를 나타내었다. 관입저항성은 뿌리 신장과 작물 수량을 결정짓는 토양의 물리적 특성중의 하나이다. 관입저항성은 엽채류 재배지에서 답압으로 인하여 다소 높게 나타났다. 토양의 삼상은 유기농 시설재배지 토양에서 동적이고, 전형적으로 변화되었다. 공극률은 $54.2{\pm}2.2{\sim}60.3{\pm}2.4%$ 범위로 높은 경향을 나타내었다. 이상의 결과를 요약해 보면 유기농 시설채소 재배지 토양은 토심은 깊어지고, 고상과 경도(흙의 단단함), 용적밀도(토양 단위 용적당 질량)는 낮아졌으며, 공극률(토양속 공간함유율)은 높아지는 등 유기농 시설재배지 토양의 물리성이 양호하였다.

재배방법이 참죽나무 잎의 생육 및 무기물 함량에 미치는 영향 (Effect of Culture Methods on Growth and Mineral Contents in Chinese Toon (Cedrela sinensis A. Juss))

  • 참죽나무 순채 조기생산을 위하여 하우스와 노지재배에서 생산된 잎의 무기성분을 분석한 결과는 다음과 같다. 참죽나무 순채의 생장속도는 노지에 비하여 하우스 재배에서 다소 빠른 경향이었고, 정아의 경우 초장, 가지수 등 생육과 생체 중, 엽록소 함량 등 품질은 노지와 하우스재배 처리 간 큰 차이가 없었다. 참죽나무 순채의 색도(a값)는 측아보다는 정아에서 적색도가 다소 높았으나 하우스와 노지재배 간에는 차이가 거의 없었다. 참죽나무 정아 및 측아의 pH는 5.7~6.2 정도였고 N 함량은 측아의 평균 $500.5mg{\cdot}kg^{-1}$에 비해 정아에서 3.1배 많았고, 노지재배($1,430mg{\cdot}kg^{-1}$)보다는 하우스 재배에서 1.2배 많았다. P, Ca, Mg 및 Fe 함량도 노지재배에 비하여 하우스 재배에서 유의성 있게 높았는데, P는 1.1배, Ca는 1.7배, Mg는 2.0배, Fe는 2.3배 정도 많았으나 K 함량은 하우스 재배의 $2.94mg{\cdot}kg^{-1}$에 비하여 노지재배에서 1.6배 많았다. Ascorbic acid 함량은 하우스 측아에서 $1,461mg{\cdot}kg^{-1}$으로 가장 높았고 노지 측아, 노지 정아, 하우스 정아 순이었다. 이상의 결과를 종합하면 고품질 참죽나무 순채 생산을 위해서 하우스 재배가 필요한 것으로 생각된다.

Antioxidative Activity of the Korean Wild Leafy Vegetables: Aster scarer mild Ligularia fischeri

  • The purpose of this study was to evaluate the antioxidative potential of Korean wild leafy vegetables in vivo as well as in vitro. Antioxidative activities of Aster scaber and Ligularia fischeri were evaluated against a reference of Spinacia oleracea Forty rats were fed either control diet or respective vegetable diets for four weeks. The level of thiobarbituric acid reactive substances (TBARS) and the activities of catalase and superoxide dismutase (SOD) in liver were compared. The plasma concentrations of total cholesterol (TC), high-density lipoprotein cholesterol (HDL-C) and triglyceride (TG) were also compared. Korean wild leafy vegetables were assayed for $\beta$-carotene, vitamin C and vitamin E and total phenolic compound including flavonoid and thiobarbituric acid (TBA) value using the linoleic acid model system. SOD activity in rats fed Aster scaber was significantly higher(as much as 289%) than those fed Spinacia oleracea. Compared to control animals, the Aster scaber fed animals had significantly lower TC and lower atherogenic index. Compared to Spinacia oleracea, Aster scaber and Ligularia fischeri had vitamin C concentration of 150% and 400%, flavonoid concentrations of 470% and 310%, and phenolic compound concentrations of 326% and 203%, respectively, but tended to have lower $\beta$-carotene and significantly lower vitamin E concentrations. TBA values were only 18% of the control value in Aster scarier and Ligularia fischeri and 41% of the control value in Spinacia oleracea. These results suggest that Aster scaber could have potent antioxidative activity in vivo as well as in vitro and potential vague as a functional food to improve the plasma lipid profiles. Furthermore, phenolic and flavonoid compounds may be a major contributing factor to the antioxidative potential of Korean wild leafy vegetables.

수경 재배 시 계면 활성제 첨가가 상추와 청경채의 생육과 Se 흡수에 미치는 영향 (Effect of Surfactant Addition on Se Absorption and Growth of Pak-choi and Leaf Lettuce in Hydroponics)

  • 소형의 담액 수경재배기를 이용하여 기본 배양액에 셀레늄(Se) 1mg $L^{-1}$과 계면활성제 PVA-95(polyvinyl alcohol-95) 1, 2, 4mg $L^{-1}$과 CLS(calcium lignosulfonate) 5, 25, 50, 100mg $L^{-1}$을 처리하여 청경채와 상추 식물체의 Se과 양이온 함량, 생육, 그리고 비타민 C 함량을 조사하였다. 생육은 처리간에 차이는 있지만 종류와 농도 별로 일정한 경향을 보이지 않았다. 총 비타민 C 함량은 두 작물 모두 모든 처리구에서 대조구에 비해 약간 증가하는 경향을 보였으나 유의성은 없었다. K 함량은 싱추의 경우는 일정한 경향이 없었지만, 청경채의 경우 Se 1+PVA-95 4mg $L^{-1}$ 처리구가 가장 높았고, Se 1+CLS 처리에서는 대조구에 비해 5mg $L^{-1}$ 농도에서는 증가하였지만 처리 농도가 증가할수록 감소하였다. Ca 함량은 두 작물 모두 Se 1+PVA-95와 CLS 처리에서 대조구에 비해 증가하였다. Mg 함량은 상추에서는 계면 활성제 처리에 의한 Mg 함량의 변화가 없었으며, 청경채에는 Se 1+CLS 25mg $L^{-1}$ 처리구가 대조구에 비해 증가하였고 기타 처리는 차이가 없었다. 식물체내 Se 함량은 상추에서는 계면 활성제 PVA-95 처리와 CLS 처리가 대조구에 비해 Se 함량이 모두 높았고, PVA-95 처리에서는 농도의 증가에 따라 Se 함량이 낮아졌으며, CLS 처리에서는 50mg $L^{-1}$ 까지는 높아졌지만 100mg $L^{-1}$에서는 낮아졌다. 청경채의 엽내 Se 함량은 계면활성제 PVA-95 처리가 큰 효과가 없었으나 CLS 25mg $L^{-1}$ 처리에서 현저히 증가되었다.

Effect of Using Vegetable Powders as Nitrite/Nitrate Sources on the Physicochemical Characteristics of Cooked Pork Products

  • This study investigated the potential for using vegetable powders as a natural replacement for sodium nitrite and their effects on the physicochemical characteristics of alternatively cured pork products. We analyzed pork products subjected to four treatments: control (0.015% sodium nitrite), Chinese cabbabe powder (CCP) treatment (0.4% Chinese cabbage powder), radish powder (RP) treatment (0.4% radish powder), and spinach powder (SP) treatment (0.4% spinach powder). Among the vegetable powders prepared in this study, SP had the highest (p<0.05) nitrate content, while CCP had the lowest (p<0.05). The cooking yields from these treatments were not significantly different from each other. However, the products with vegetable powders had higher (p<0.05) pH and thiobarbituric acid reactive substances values than the control. Pork products with vegetable powders also showed lower CIE L values and higher CIE b values than the nitrite-added control. RP treatment had similar (p>0.05) CIE a values to the control, while SP treatment had the lowest (p<0.05) CIE a values. The residual nitrite content was lower (p<0.05) in the vegetable powder added pork products than in the control, although nitrosyl hemochrome and total pigment contents in the CCP and RP treatments were similar (p>0.05) to those in the control. The control, CCP, and RP treatments showed curing efficiencies greater than 80%, indicating that CCP and RP would be promising potential replacements for sodium nitrite. The results of this study suggest that RP may be a suitable natural replacement for sodium nitrite to produce alternatively cured meat products, compared to other leafy vegetable powders.

Protection of Green Leafy Vegetable Extracts Against Oxidation of Human Low Density Lipoprotein

  • Oxidation of low density lipoprotein (LDL) is regarded to play an important role in the development of atherosclerosis. In the present study, salad vegetables with a remarkable DPPH radical-scavenging activity were extracted with methanol, and the methanol extracts were evaluated for the inhibition of $Cu^{2+}$-induced oxidation of human LDL. Separately, the amount of total phenolics was determined colorimetrically using Folin-Ciocalteu reagent. The vegetable extracts, expressing a strong inhibition of LDL oxidation ($IC_{50}$ values, <$100\;{\mu}g/mL$), were from angelica, dandelion, mustard leaf, and water spinach, which contained relatively high level of polyphenol content. Noteworthy, a highly positive correlation was observed between inhibition of LDL oxidation and amount of total polyphenol (p<0.01). Based on these results, it is suggested that salad vegetables, especially angelica, dandelion, and mustard leaf, may be used as easily accessible sources of natural antioxidants, especially in anti-atherosclerosis.
