Glucan has been shown to have a significant role in the activation of the immune system, including increased activity of macrophages and so on. Sparassis latifolia (formerly S. crispa) is an edible mushroom abundant in dietary fiber and widely known to contain high levels of ${\beta}$-glucan. In the present study, fermentation broths containing soluble ${\beta}$-glucan were prepared by fermentation with mushrooms with four Lactobacillus species (L. plantarum subsp. Plantarum, L. acidophilus, L. helveticus, and L. delbrueckii subsp. Bulgaricus). After culturing four Lactobacillus spp. in MRS broth, each Lactobacillus was inoculated into MRS broth containing S. latifolia powder 5% (w/v) at $37^{\circ}C$ in an anaerobic incubator for five days. It showed that the ${\beta}$-glucan contents were different in each fermentation sample. The suitable conditions for the preparation of mushroom fermentation broths were investigated and discussed.
In order to study the effects of dietary yeast (Saccharomyces cerevisiae) products on the performance of broiler chickens, tow feeding trial using Arbor Acres strain were conducted. In experiment 1, 200 hatched male broiler chickens were divided into groups of 10 birds each and four groups were given each of the five dietary treatments : control, 0.25% yeast culture supplemented (YC-0.25%), 2.5% yeast culture supplemented(YC-2.5%), 0.05% live yeast supplemented(LY-0.05%) and 0.1% live yeast supplemented(LY-0.1%) . In experiment 2, 240 hatched broiler chickens(120 birds in each sex) were assigned to 2$\times$3(sex$\times$feed) factorial design Dietary treatments were control, 0.1% live yeast supplementation in finisher diet(LY-Finisher) , and 0.1% live yeast supplementation in whole period (LY-Whole). Results of experiment 1 showed that weight gain, feed intake and mortality were not significantly different among treatments. However, weight .gain of YC-0.25% and LY-0.1% tended to be greater than other treatments after 3wks of age Feed efficiency of LY-0.05% was poorer than those of control, YC-0.25% and LY-0.1% . Although nutrients availabilities were not significantly different among treatments, availiabilities of Ca and P were greater in yeast products supplemented groups than in control group. The number of Lactobacillus spp., Streptococcus spp . and yeast in small intestine tended to be greater in supplemented groups while that of Coliforms bacteria tended to be greafter in control group. In experiment 2, there were significant effects of factors (feed and sex) and interaction on growth rate. LY-Whole groups showed best weight gain in male while LY-Finisher groups did best in female broiler chickens. Feed intake and mortality were significantly higher in male broiler chickens. Feed$\times$sex interaction had a significant effect on feed efficiency. LY-Whole groups showed best feed efficiency in male while LY-Finisher did best in female broiler chickens. Availabilities of dry matter, Ca and P were higher in male than in female broiler chickens. Availabilities of Ca and P were higher in live yeast supplemented groups than in control groups. Live yeast supplemented groups tended to have greater number of Lactobacillus spp . and yeast in the small intestine and Stre))tococcu spp. in the small intestine and cecum, and lesser number of Coliforms bacteria in the small intestine The pH of small intestinal contents tended to be higher in live yeast supplemented groups.
In the present study, biogenic amine-forming Bacillus spp. and bacteriocin-producing lactic acid bacteria (LAB) isolated from Doenjang were generally identified through 16S rRNA gene sequencing, and the physicochemical and microbiological characteristics of cheonggukjang prepared using the isolated strains were investigated. Biogenic amine-producing bacteria from the samples were identified as Bacillus licheniformis DB102, B. subtilis DB203, B. stearothermophilus DB206, B. pumilus DB209, B. subtilis DB310, B. coagulans DB311, B. cereus DB313, B. amyloliquefaciens DB714, B. amylolique-faciens DB915, B. licheniformis DB917, B. cereus DB1019, B. subtilis DB1020, B. megaterium DB1022. The bacteriocin-producing LAB showed antibacterial effect against biogenic amine-producing Bacillus spp. were identified as Lactobacillus plantarum DLA205, L. brevis DLA501, L. fermentum DLA509, L. acidophilus DLA703, and Enterococcus faecalis DLA804. The bacteriocin produced by the LAB significantly decreased the viable numbers and the amine production ability of the biogenic amine-forming Bacillus spp. in a concentration dependent manner. Therefore, the pH, ammonia nitrogen and biogenic amine content of cheonggukjang prepared by mixed culture of the LAB and Bacillus spp. were significantly decreased compared to the control group.

Objective: Our study examined the impact of propriety blends of Bacillus strain probiotics on the performance, egg quality, and faecal microflora of laying hens. Methods: A total of 183 Institut de selection Animale (ISA) brown laying hens aged 23 weeks with an average body weight of 1,894±72 g were randomly allocated into 3 groups as control (corn-soybean meal based diet, CON), 0.5 g/kg Enterosure probiotics (ET1, 3×108 colony-forming unit [CFU]/kg feed), and 5 g/kg Enterosure probiotics (ET2, 3×109 CFU/kg feed) administered in mashed form. At the completion of each phase hen day egg production (HDEP), average egg weight (AEW), feed intake, and faecal microbiota were evaluated. Results: HDEP and AEW were higher (p<0.05) in the ET2-supplemented diet in phase 3 (week 9 to 12) compared with CON. Egg mass (EM) was higher (p<0.05) in phase 2 at ET2, and also higher (p<0.05) in phase 3 at the ET1 and ET2-supplemented diets compared with CON. Feed conversion ratio was lower (p<0.05) in phase 3 at the ET1 and ET2-supplemented diets, with ET2 being the lowest compared with ET1 and CON. Yolk colour was higher (p<0.05) in the ET-supplemented diets at phase 3 compared with CON. Bifidobacterium spp. was higher (p<0.05) in the ET2- supplemented diet compared with CON in phase 2, while in In phase 3, Lactobacillus spp. and Bifidobacterium spp. were higher (p<0.05) in the ET-supplemented diets compared with CON. Coliforms were lower (p<0.05) in the ET-supplemented diets compared with CON in phase 3. Conclusion: The propriety blends of Bacillus strain probiotics supplements at 0.5 g/kg and 5 g/kg could improve the production and quality of eggs with more significance at 5 g/kg for HDEP, AEW and EM, which was achieved via the increase of beneficial microbiomes such as Lactobacillus spp., Bifidobacterium spp., and the decrease of pathogenic microbiomes like Escherichia coli and Coliforms which was speculated to improve gut barrier function and the reproductive hormone.

Two experiments were conducted to investigate the effects of feeding single or combined probiotics on performance and intestinal microflora of broiler chicks for five weeks. Diets based on corn and soybean meal contained 21.50, 19.0% CP and 3,100, 3,150 kcal/kg ME for starting and finishing period, respectively. Lactobacillus salvarius isolated from chicks intestine(LSC), Lactobacillus salvarius isolated from piglet(LSP) Bacillus polyfermenticus(BP) were fed with alone and mixed ones at the level of 0.21 and 0.1% in experiment 1 and 2. Three hundred eighty four chicks were randomly assigned to eight treatment with four replicates of 12 chicks each per treatment. Weight gain, feed consumption, feed conversion ratio(FCR) were weekly measured for 5 weeks. The number of intestinal microflora was examined at the end of experiment. There were no significant different weight gain of all treatment in both experiments. Feed consumption were not shown consistency. Chicks fed LSC alone showed the lowest feed conversion ratio of all treatment in experiment 1, but was not consistency in experiment 2. The number of Lactobacillus spp. tended to increase in chicks ileum fed probiotics treatments, whereas it was not consistency in cecum. The number of ileal E. coli was not decreased in BP treatment.
A novel bacteriocin produced by Streptococcus parauberis Z49 strain was characterized and efficiently extracted from fermented cultures by use of aqueous two-phase systems. The nisin-like bacteriocin, which was active even after a heat treatment at $121^{\circ}C$ for 15 min and in the broad pH range from 2 to 12, showed inhibition of bacterial growth of Micrococcus luteus, Lactobacillus spp., Lactobacillus fermentum, Enterococcus faecium, Listereia monocytogenes, and Pseudomonas fluorescens. Optimal conditions of PEG 600/$Na_2SO_4$ aqueous two-phase systems for the simple and rapid extraction of a novel bacteriocin were determined to be PEG 600 15%, $Na_2SO_4$ 30%, and NaCl 8%, where the bacteriocin was concentrated in PEG layer.
In order to find the reason for souring of Hansan sogokju (Korean traditional rice wine), microbial distribution, pH change and organic acids were analysed. Besides 161 mM of lactic acid as a major organic acid, small amount of acetic acid, malic acid, propionic acid were found in sogokju. Four different microbial strains were identified from the sogokju. These are two strains of Lactobacillus spp., Bacillus sp. and yeast. The pH of sogokju was changed from 4.01 to 3.29 during 18 days storage at $30^{\circ}C$. Amount of total acidity increased from 9 to 34.86 at the same condition. Notable change in the soured sogokju was an increase of the lactic acid (from 161 mM to 192 mM). So, we could assume that it was soured by an additional production of lactic acid by lactic acid bacteria during storage. The shelf life of sogokju was 41 days below $15^{\circ}C$ degree because this temperature was hard condition for the growth of Lactobacillus spp., causative bacteria responsible for additional lactic acid production.
Purpose: Microbial colonization of the intestine begins just after birth and development of the normal flora is a gradual process. The first bacteria colonizing the intestine in newborns are Staphylococcus, Enterobacteriaceae and Streptococcus. For several days after birth, the number of Bifidobacterium spp. increase. The aim of this study was to investigate the changes of microflora for seven days postnatally in neonatal stool. Methods: Fifteen neonates (breast : formula : mixed feeding 1 : 8 : 6, vaginal delivery : cesarean section 3 : 12) who were born at the Kangdong Sacred Heart Hospital, Hallym University were enrolled. First meconium and stools of postnatal 1-, 3-, and 7-day were innoculated. Blood agar plates for total aerobes, trypton bile X-glucuronide agar for E. coli, phenylethyl alcohol agar for gram positive anaerobes, MRS agar for Lactobacillus spp., bifidobacterium selective agar for Bifidobacterium spp. and cefoxitin-cycloserine-fructose agar for Clostridium difficile were used in the general incubator ($CO_2$ free incubator), $CO_2$ incubator or the anaerobic chamber for 48 or 72 hours at $37^{\circ}C$ and then colony forming units were counted. Results: No microflora was identified in the first meconium. Total aerobes, E. coli, and gram positive anaerobes were significantly increased with advancing postnatal days. In only one baby, Lactobacillus acidophilus was detected $2{\times}10^5CFU/g$ in the seven-day stool. Bifidobacterium spp. was detected in two babies. Clostridium difficile was not detected during the seven days. There were no significant differences in the bowel flora depending on the delivery pattern and feeding method. Conclusion: This study shows many changes in the intestinal normal flora in neonatal stool during seven days postnatally. If these findings are confirmed with larger studies, the data may be preliminary findings to support use of probiotics in neonates.
The purpose of this research was to develop an optimum composition model for a new synbiotic fermented dairy product with high probiotic cell counts, and to experimentally verify this model. The optimum composition model indicated the growth promoter ratio that could provide the highest growth rate for probiotics in this fermented product. Different levels of growth promoters were first blended with milk to improve the growth rates of probiotics, and the optimum composition model was determined. The probiotic viabilities and chemical properties were analyzed for the samples made using the optimal formula. The optimal combination of the growth promoters for the synbiotic fermented milk product was 1.12% peptides, 3% fructooligosaccharides (FOS), and 1.87% isomaltooligosaccharides (IMO). A product manufactured according to the formula of the optimum model was analyzed, showing that the model was effective in improving the viability of both Lactobacillus spp. and Bifidobacterium spp.
Various microorganisms play important roles in food fermentation, food spoilage, and agriculture. In this study, the biotype of 54 yeast and bacterial strains having high potential for utilization in food and agriculture, including Candida spp., Lactobacillus spp., and Acetobacter spp., were characterized by matrix-assisted laser desorption/ionization time-of flight mass spectrometry (MALDI-TOF MS). This characterization using a fast and robust method provides much-needed information on the selected microorganisms and will facilitate effective usage of these strains in various applications. Importantly, the unique protein profile of each microbial species obtained from this study was used to create a database of fingerprints from these species. The database was validated using microbial strains of the same species by comparing the mass spectra with the created database through pattern matching. The created reference database provides crucial information and is useful for further utilization of a large number of valuable microorganisms relevant to food and agriculture.
