두유(豆乳)의 가열처리가 젖산균의 산생성(散生成)과 대두요구르트의 품질에 미치는 영향 (Effects of Heat Treatment of Soy Milk on Acid Production by Lactic Acid Bacteria and Quality of Soy Yogurt)

  • 농축대두단백으로 만든 두유를 여러 가지 정도로 가열 처리한 후 젖산균 5종을 각각 접종하여 두유의 가열처리가 젖산균의 생육과 산생성 그리고 대두요구르트의 관능성과 커드의 침전에 미치는 영향을 관찰하였다. 먼저 산생성을 보면 표준시료(비가열(非加熱)시료)에 비하여 $60^{\circ}C-10$분 또는 그 이상의 가열로 모든 균주에서 산생성이 촉진되었으며 그 촉진의 정도는 대체로 가열의 정도가 높을수록 점차적으로 증가하여 Streptococcus lactis를 제외한 4균주의 산생성이 $121^{\circ}C-1$분에서 가장 높았다. 그러나 생균수는 가열 처리로 큰 변화가 없었다. 대두젖산균 음료의 관능성에 미치는 영향을 보면 $95^{\circ}C-30$분 시료의 관능 성은 표준시료보다 현저하게 우수하였으나 $121^{\circ}C-15$분 시료의 관능성은 표준시료보다 현저하게 저조하였다. 한편 두유의 가열처리로 대두젖산균 음료의 침전이 지연디는 경향을 보였으며 특히 $121^{\circ}C-15$분의 가여로 침전이 현저하게 지연되었다.

당귀가 유산균의 생육에 미치는 영향 (The Effect of Angelica gigas Water Extract on the Growth of Lactic Acid Bacteria)

  • This study was carried out to survey the effect of medicinal herbs on the growth of 3 strains of lactic starter cultures in MRS broth by the addition of 0, 1, 3, 5, and 10% water extract, after 30 hrs incubation. The pH, titratable acidity and O.D. of lactic acid bacteria were investigated to obtain fundamental knowledge for the development a new product. The effects of medicinal herbs extracts on the growth of lactic acid bacteria were variable depending upon the species of lactic acid bacteria and medicinal herbs extract. Growth of Str. thermohilus was activated by addition of 1 and 3% Angelica gigas water extract, but the basal medium plus 5 and 10% extract and growth of L. acidophilus and Bif. longum were depressed by the addition of extract. The pH and acid production ability dropped slightly in the basal medium plus 1 and 3% of extract. The other samples following the same trend as the control.

탄소원으로서 입국을 이용한 유산균 발효 (Lactic Acid Fermentation with Rice Koji as a Carbon Source)

  • Recently, several health benefits of rice wine, makgeolli, were known due to the interest on the traditional Korean liquor and the researches on the rice wine are increasing. Organic acids produced during the process of rice wine fermentation play important roles in the taste and flavor. In this study, we have examined the optimal conditions for lactic acid production in rice koji as a carbon source. Skim milk was also used as a supplementary ingredient for the optimization of lactic acid fermentation. Bacterial growth of Lactobacillus sakei was monitored under this condition. The pH, acidity of the culture and the ethanol tolerance of this bacterium were also tested. Through these experiments, we were able to optimize the growth condition of lactic acid bacteria by the addition of skim milk. This was also able to affect the change of pH, acidity, sugar concentration and alcohol tolerance, which might contribute to the improvement of the quality of rice wine. The optimal condition for the growth was 2 days with 10% (w/v) of skim milk concentration. With these results, it was confirmed that rice koji was an effective carbon source for the growth of lactic acid bacteria.

유청(乳淸)과 두유(豆乳) 혼합액(混合液)에서의 유산균(乳酸菌) 생육특성(生育特性) (Growth Characteristics of Lactic Acid Bacteria in Whey-Soy Milk Mixtures)

  • 유청(乳淸)과 두유(豆乳)의 공동침전(共同沈澱)에 의해 치즈를 제조하기 위한 기초실험으로서 유청-두유 혼합액에서 6종의 유산균들의 생육특성을 조사하였다. S. cremoris와 L. acidophilus가 두유와 유청-두유 혼합액에서 다 같이 많은 산을 생성하였다. 그러나 모든 유산균들이 두유에서 보다는 유청-두유 혼합액에서 더 많은 산을 생성하였고 이것은 특히 S. lactis와 S. cremoris에서 현저하였다. S. lactis와 S. cremoris 혼합균주의 생균수는 두유에서보다 유청-두유혼합액에서 약10배정도 많았다. 유청-두유 혼합액에서 산생성이 증가되는 것은 유청중에 존재하는 유당의 효과에 주로 기인한 것으로 나타났다. 두유에서의 산생성을 촉진키 위해 첨가하는 유당의 적정량은 두유 100ml당 0.8g으로 밝혀졌다.

매실을 이용한 젖산발효의 최적 조건 (Optimization of the Lactic Acid Fermentation of Maesil(Prunus mume))

  • In this study, we attempted to optimize the fermentation processes in the production of lactic acid juice with 20% Maesil(Prunus mume) extract using Lactobacillus plantarum isolated from Kimchi, assessing a variety of pH, temperature, sugar compositions, and sugar concentrations. In the preparation of fermented Maesil(Prunus mume) extract, the optimal pH and fermentation temperature were 4.0 and $35^{\circ}C$, respectively. When the effects of various sugar sources and concentrations on lactic acid fermentation were assessed, 15% fructose was shown to yield more acid productivity than was observed with other sugar sources. The optimum composition, on the basis of our sensory evaluations, was determined to be a fructose concentration of 15% and a fermentation time of $72{\sim}96$ hours.

Beneficial Effects of Lactic Acid Bacteria Inoculation on Oat Based Silage in South Korea

  • The objective of the study was to measure the beneficial effects of lactic acid bacteria (LAB) inoculation on the nutritive value of oat silage collected from thirteen regions in the Republic of Korea. The contents of crude protein, acid detergent fiber (ADF), neutral detergent fiber (NDF) and crude ash (CA) were slightly lower in LAB inoculated silage when compared with the control silage, whereas inoculation of LAB resulted in increased total digestible nutrient (TDN). Higher number of LAB, but lower count of yeast and fungi indicated the effectiveness of the LAB inoculation on oat silage fermentation. LAB inoculation resulted in low pH silage, which may prevent undesirable microbial growth. The LAB inoculation promoted lactic acid dominant fermentation with marginal levels of acetic acid and butyric acid in oat silage. These data suggest that the LAB inoculation may preserve oat silage at better quality for ruminant animal production.

운동습관이 혈액중 젖산농도 및 LDH 생성에 미치는 영향 (The Effect of Regular Exercise on the Level of Blood Lactate and LDH Production in College Women)

  • The purpose of this study was to compare the level of blood glucose and lactate and also plasma LDH production of college women in relation to exercise. College female student which majored athletics (E, exercise group, n=43) were recruited and compared with college women (Control group, n=60). Anthropometric measurements, triceps skinfold thickness were measured of two groups. And body fat mass and waist and hip circumferences were measured and the concentrations of plasma glucose, lactic acid and lactic acid dehydrogenase (LDH) were also assayed. Average height and weight of E group were slightly higher than that of control group. but there is no difference in body mass index (BMI) and waist hip ratio (WHR) between two groups. The percentage of body fat and body fat mass(kg) in E group was slightly lower than that of control group. Plasma glucose and LDH levels of E group were higher than those of control group, and plasma lactic acid concentration was significantly increased.

Effect of Temperature on the Production of Free Organic Acids during Kimchi Fermentation

  • The production of free non-volatile and volatile organic acids in Kimchi during fermentations at 30, 20 and $5^{\circ}C$, were determined by gas chromatography. The order in the amount of non-volatile organic acid, soon after preparation, was malic, citric, tartaric, pyroglutamic, oxalic, lactic, succinic and ${\alpha}-ketoglutaric$ acids. The major non-volatile acids at the optimum ripening time were malic, tartaric, citric and lactic acids, and as the temperature was lowered, the amount of lactic, succinic, oxalic, pyroglutamic and fumaric acids increased, while that of malic and tartaric acids decreased. The order in the amount of volatile acids at the beginning was acetic, butyric, propionic and formic acids. Among these acids, acetic acid was significantly increased in its amount during fermentation and the Kimchi fermented at low temperature produced more acetic acid than that fermented at high temperature.

Aglycone Isoflavones and Exopolysaccharides Produced by Lactobacillus acidophilus in Fermented Soybean Paste

  • Bioconversion of aglycone-formed isoflavones from glycoside-formed isoflavones by commercial lactic acid bacteria in fermented soybean paste was evaluated. Enterococcus faecium KCTC 13410 showed the most resistant capacity and Lactobacillus acidophilus KCTC 3925 had a sensitive susceptibility at a high NaCl concentration (13.2%) in fermented soybean paste. Among the 5 strains tested, Lac. acidophilus KCTC 3925 showed the highest relative ratio of aglycone-formed isoflavones to total isoflavones in fermented soybean paste. Production of exopolysaccarides (EPS) by lactic acid bacteria was compared using de Man, Rogosa, and Sharpe medium containing 1% sucrose at $37^{\circ}C$ for 48 h. Among the 5 lactic acid bacteria, Lac. acidophilus KCTC 3925 and Lactobacillus rhamnosus KCTC 3929 were investigated to produce EPS. Based on the results concerning growing susceptibility and conversion of aglycone-formed isoflavones/EPS production, it is anticipated that Lac. acidophilus KCTC 3925 may be used for preparation of Cheonggukjang, which contains relative low NaCl content.

방사선중합체로 고정화된 Rhizopus oryzae의 유산생성 (Production of L(+)-Lactic Acid by Rhizopus oryzae after Immobilization in Polymer Supports with Gamma-ray Induced Polymerization)

  • 방사선 중합체로 고정화한 Rhizopus oryzae의 유산생성 방사선 공중합 고분자로 Rhizopus oryzae를 흡착 고정화하였다. 이 고정화 균체는 고정화하지 않은 생균체보다 반응시간도 짧았으며 제품수율도 아주 높았다. 즉 글루코스를 주 탄소원으로 한 경우 고정화 하지 않은 균체 배양은 반응후 96시간에 탄소원을 거의 소비하고 유산생성 수율이 약60%에 다다랐으나 고정화 균체는 반응후 48시간 안에 수율이 약 88%이상으로 되었다. 또 중합체 중 모노머의 비율이 5-10%의 것이 고정화에 좋은 결과를 보였다.
