Development of Standardized Model of Staffing Demand through Comparative Analysis of Labor Productivity by Foodservice's Meal Scale in Contract Foodservice Management Company (위탁급식전문업체의 급식소 식수 규모별 노동생산성 비교 분석에 따른 인력산정 모델 개발)

  • The purpose of this study were to a) investigate operation of human resource in contract foodservice management company (CFMC), b) identify the staffing indices for the establishment an labor productivity for CFMC, and c) develop standardized model of staffing demand as foodservice's scale in CFMC. The data was collected using FS intra-net system from 138 contract-managed foodservice operations in A CFMC and statistical analysis was completed using the SAS/win package (ver. 8.0) for description analysis, ANOVA, Duncan multiple comparison, pearson correlation analysis, and regression analysis. The types of operation were included factory (45%), small scale operation (26%), office (11%), department store (10%), training institute (4%), and hospital (3%). The distribution of foodservice scale was classified by meal served was as follows; 'less than 500 meals (47%)', 'from 500 to 1500 meals (25%)', 'from 1500 to 2500 meals (17%)', and 'more than 2500 meals (12%)'. There was two types of contract method, fee-contract (53%) and profit-and-loss contract (46%) Some variables were significantly high operation indices such as selling price, food cost, monthly sales, net profit and others were significantly low operation indices such as labor, meal time a day in the small foodservice on meal scale (p<.001). The more foodservice was large, the more human resource was disposed on dietitian, cook, cooking employee altogether (p<.001). Foodservice in A CFMC was divided into 2 groups by 500 meals a day, according to comparative analysis of labor productivity as meal scale per working hour, meal scale a day and operation indices as meal per foodservice employee, meal per cooking employee (p<.001). The regression equation model was developed as 'the number of employees=1.82+0.014 ${\times}$ meal served' in the operation of less than 500 meals, 'the number of employees=9.42+0.013 ${\times}$ meal scale a day -0.94 ${\times}$ meal scale per working hour' in the operation over 500 meal scale using labor productivity indices and operation indices. Therefore, CFMC could be enhanced efficiency of human resource arrangement using the standardized model of staffing demand and would be increased effectiveness of profit.

An Economic Analysis of Oak Mushroom Cultivation in Korea (표고버섯 재배에 대한 경제성 분석)

  • This study analyzed an economic efficiency of oak mushroom cultivation in order to provide data needed for formulating related policies. 88 farmhouses in major producing areas were interviewed with. The average production cost per 100 bed-logs was 151,699 won. Among production costs, material costs accounted for 56.0% and labor costs 41.8%. Oak mushroom cultivation was labor-intensive and labor input was a significant factor determining the production costs. There was 3 7.2% gap in production costs between Chungbuk, the highest cost area and Gyeonggi, the lowest cost area of oak mushroom due to difference in labor input. Average revenue per 100 bed-logs was 178,627 won. Average income per 100 bed-logs, which is variable production costs of 116,613 won subtracted from the revenue, was 62,014 won and thus income rate was 34.7%. Income rate in Jeonbuk, the highest area, was higher than that in Gyeonggi, the lowest area, by 15.8% points due to difference in quantities produced, grade, and variable production costs, in particular, labor costs. The result of the economic analysis indicates that reduction in establishment and labor costs, accounting for the highest portion in production costs is priority issue for the enhancement of the competitiveness of the oak mushroom industry.

Effects of Positive Psychological Capital of Fitness Center Trainers on Emotional Labor and Job Ability (피트니스센터 트레이너의 긍정심리자본이 감정노동, 직무능력에 미치는 영향)

  • The purpose of this study is to verify the effect of positive psychological capital of fitness center trainers on emotional labor and job ability. For this purpose, as a convenient sampling method, 265 questionnaires were conducted by directly visiting a fitness center in the metropolitan area, and item analysis, validity analysis, reliability analysis, correlation analysis, and multiple regression analysis were applied to the collected data. As a result of the analysis, the following conclusions were obtained. First, in the relationship between positive psychological capital and emotional labor, it exerted a meaningful influence on hope and optimism in deep acting and superficial acting. Next, in the relationship between positive psychological capital and job competency, leadership ability is self-efficacy, hope, management ability is optimism, hope, counseling ability is hope, optimism, self-efficacy, PR ability is self-efficacy, optimism, and program operation ability is optimism. exerted a significant influence on elasticity. In relation to emotional labor and job competency, counseling ability exerted a significant influence only in deep acting, and in leadership ability, management ability, PR ability, and program operation ability, deep acting and surface acting exercised a significant influence. In the future, it is necessary to study the characteristics and properties of trainers as emotional labor and follow-up studies on improvement measures.

The Relationship Between Emotional Labor, Job Burnout and Job Satisfaction in Fitness Center Instructors (휘트니스센터 지도자의 감정노동과 직무소진 및 직무만족의 관계)

  • The purpose of this study was to investigate the relationship between emotional labor, job burnout and job satisfaction in instructors. The data were collected from 323 fitness center instructors using multistage stratified cluster random sampling method. With the collected data, factor analysis, reliability analysis, frequency analysis, correlation analysis, model fit tested, and structural equation model were performed by SPSS 23.0 and AMOS 20.0. The result of the analysis were summarized as follows. First, the emotional labor(inner behavior) impacts negative influence on job burnout of fitness center instructors. Second, the emotional labor(surface behavior) impacts positive influence on job satisfaction of fitness center instructors. Third, the job burnout impacts negative influence on job satisfaction of fitness center instructors. Fourth, the emotional labor(inner behavior) impacts positive influence on job satisfaction of fitness center instructors. Fifth, the emotional labor(surface behavior) does not influence on job satisfaction of fitness center instructors.

Aging Society and Labor Market (고령화 사회와 노동시장)

  • Population aging in Korea is in progress rapidly, though it isn't recognized as a critical situation now. Absolute scale of population will decrease since 2030 and that of 2050 will stay in 2005 levels. But most serious problem is that the core working age group, 25-54 ages will begin to decrease since 2012 because of low fertility and population aging. In these situation of population aging, we will face inevitably great amount of labor force shortages and we should build up policy alternatives for solving these problems. I proposed some policy alternatives. firstly, pronatalism policies including state-supported child-care system for preventing decreases of absolute scale of population. Second, facing up to labor shortages under population aging, I proposed policy alternatives for increasing labor market participation, measured by employmeny rate, of aged (or aging) people including wage-peak system of extending retiring ages and women including lowering opportunity costs of women labor market participation rates, given laboer forces. And to conclude, we should approach to the aging problems by steady state equilibrium ecnomic growth, under inevitable population aging.

Impact on the Degree of Labor turnover of Professional Self-concept and Emotional labor: A Case of Female Children's Hospital Nurses (전문직 자아개념과 감정노동의 이직의도에 미치는 영향: 여성아동병원 간호사 사례를 중심으로)

  • The purpose of this study is to consider the impact on the degree of turnover of the professional self-concept and the emotional labor. This study were subjected to empirical analysis on female children's hospital nurses. The results of the analysis, only emotional labor and task satisfaction among the components of the professional self-concept became statistically significant results. The relationship between professional pride and task satisfaction have a significant effect on turnover. The relationship only of surface acting and turnover between those of emotional labor and turnover became significant. Based on the research results, it should be preferred to nurse specialists in the women's hospital, in order to lower the turnover of nurses. Management strategies of the organization should be sought to improve operational feeling of satisfaction, and Also the approach should be applied to ease the negativity of surface acting.
