Comparison of Broadband Acoustic Scattering Characteristics Between Japanese Flying Squid Todarodes pacificus and Golden Cuttlefish Sepia esculenta (살오징어(Todarodes pacificus)와 갑오징어(Sepia esculenta)에 대한 광대역 음향산란특성의 비교)

  • Cephalopods, such as the Japanese flying squid Todarodes pacificus and golden cuttlefish Sepia esculenta, are an important food source for all toothed whales, particularly bottlenose dolphins in costal and offshore waters around the Korean Peninsula. A controlled laboratory experiment was conducted to investigate the broadband acoustic backscattering from live individuals of these two cephalopod species using linear chirp signals (100-200 kHz). The backscattered echo signal was measured at about 1° intervals from -45° (head down) to +45° (head up) in the dorsal plane. The species-specific, frequency-dependent scattering characteristics were investigated by comparing the relationship between the wavelength-normalized backscattering cross-section (σ/λ2) and the wavelength-normalized fish length L/λ for each species. The estimated σ/λ2 value for Japanese flying squid was 9.51 at an L/λ range of 12.79-30.27 (mean, 21.26). This was approximately 7% of the σ/λ2 value (136.1) for golden cuttlefish at an L/λ range of 9.07-25.49 (mean, 15.77).

  • Comparisons of enzymatic method, gas chromatographic method, and the Iatroscan method for the determination of cholesterol in each parts of Korean squid were undertaken. The Iatroscan method was the most suitable procedure for the rapid and simple determination of net cholesterol concentration in parts of Korean squid. 5$\alpha$-cholestane is used as a good internal standard. The cholesterol contents in body, leg, viscera, eye, skin, and liver part of Korean squid, Todarodes pacificus STEEN STRUP by Iatroscan method were 178.9, 321.4, 168.9, 159.5, 608.8 and 634.2 mg%, respectively.

  • The spatial and temporal catch variations of Argentine shortfin squid Illex argentinus in the Southwest Atlantic Ocean (SWA) were analyzed using Korean squid-jigging fishery data collected through electronic reporting system (ERS) from 2016 to 2020. The ERS linked with GPS has been implemented for collecting fishing data from all Korean fishing vessels operating in international waters since November 2015. The fishing period of the Korean squid-jigging fishery in the SWA runs from early summer to autumn (December to June) in the Southern Hemisphere. The fishing ground was extended from 42°S to 48°S along the Patagonian continental shelf and slope, and the main fishing ground was formed around the Falkland Islands. The yearly catch per unit effort (CPUE) of I. argentinus fluctuated between 1.69 and 7.53 tons/day. In this study, during the fishing season, a south and westward shift on the fishing ground was observed indicating the feeding migration of the south Patagonian stock. The shift in monthly fishing centroids differed according to fishing season. The gradual southward shifts of fishing centroids were observed in the catch years (2017 and 2018), whereas unapparent shifts in fishing centroids were observed in the low catch years (2016 and 2019).

  • Annual variations In main fishing grounds of common squid with different angling and their fishing conditions in Korean waters were studied by analyzing catch and water temperature data. The main fishing grounds of squid angling fishery started to moved to the north in April and to the south in September in the last Sea of Korea. The catch of squid was related to the direction of thermal fronts. The catch was high when the thermal front was formed in the east-west direction, while there was low catch when the thermal front was formed in the south-north direction which runs parallel to the roast.

  • Fishing efficiency of the squid jigging vessel using the LED and metal halide fishing lamp combination was analyzed to reduce the cost for fishing operation utilizing the fishing light system for high degree of efficiency in the squid jigging fishery (one of the representative coastal and offshore fisheries in Korea). This study aims to improve the nature of existing LED lamps and to develop fan-shaped LED lights having 180W of power and ${\pm}45^{\circ}$ angle of light intensity distribution. The marine experiment for making a comparison of their fishing efficiency was tested by a 9.77 tons fishing vessel from Oct. through Dec. 2012. As a result, experimental fishing vessel showed slightly higher fishing efficiency than the average of metal halide lamp-equipped vessel and 20% energy savings. This means that the combination of LED and metal halide lamps would provide an efficient way to lower energy consumption while maintaining fishing efficiency.

VOLATILE CONSTITUENTS OF COOKED SQUID (피등어꼴뚜기의 자숙취에 관한 연구)

  • In this study, gas chromatographic analysis was carried out on volatile constituents of cooked squid for the object of obtaining information on the characteristic flavor of the cooked squid meat. The results obtained are as follows: 1) Methanol was the most effective solvent for the extraction of volatile constituents of squid meat. 2) Twenty five and thirty two peaks were detected from the condensate collected in cold traps which were immersed in ice water and dry ice-acetone, respectively. In these compounds, five kinds of volatile organic acids such as acetic acid, butyric acid, iso-valeric acid, valeric acid, and caproic acid were identified. 3) Eleven peaks were detected from the head space vapor collected in cold trap which is immersed in liquid nitrogen. Volatile amines identified in these components are as follows; methylamine, trimethylamine, dimethylamine, ethylamine, and iso-propylamine.

Studies on the Myofibrillar Proteins of Mollusca (연체류의 근원섬유단백질에 관한 연구)

  • In order to compare and examine the general characteristics of myofibrillar proteins which is an important protein source as a food resource and relates directly with muscle contraction, we have extracted the myofibrillar proteins from squid and clam. The ionic strength of myofibrillar proteins connected with Ca-ATPase activity, Mg-ATPase activity and EDTA-ATPase activity showed distinct differences between squid and clam. In the activity-pH curve, actomyosin of the clam had a weak biphasic response. In the low concentration of dioxane, myofibrillar proteins of the squid showed a sudden decrease in activity but myofibrillar proteins of the clam showed in increase in activity. Ethanol and metanol in low concentration caused myosin and HMM from the squid and clam to increase their activities. If we cause modification by NEM, under 10-6M concentration, the activity was increased but above 10-5M concentration, there was a sudden decrease in activity.

Formulation of Surimi and Surimi-based Products with Acceptable Gelling Ability from Squid Muscle (가열 젤 형성능을 가진 오징어 Surimi와 Surimi-based 제품을 위한 첨가물의 최적화)

  • We investigated the optimum formulation to improve the gelling ability of squid, Dosidicus gigas, surimi. The solubility of minced squid muscle was highest at pH 10.7, and lowest at pH 5.0. The yields of conventional surimi and protein recovery after alkaline pH-shift processing were $68.1{\pm}2.4%$ and $65.3{\pm}2.6%$, respectively, whereas the protein recovery with acidic pH-shift processing was only $21.2{\pm}1.6%$. The addition of 5% starch decreased the breaking force regardless of the kind of starch, while the mixture of corn, potato, and wheat starch (total 15%) increased the breaking force by up to 1.9 fold. The addition of 5% egg white, 5% porcine plasma protein, 0.3% $CaCl_2$, and 0.3% Polymix GA significantly increased the breakingforce (P<0.05). None of the ingredients examined in this study significantly affected the deformation value (P<0.05). The optimum concentrations of egg white and $CaCl_2$ to obtain a breaking force of 55 g and a whiteness of 70 were 2.69% and 0.22%, respectively.

NON-ENZYMATIC BROWNING REACTIONS IN DRIED SQUID STORED AT DIFFERENT WATER ACTIVITIES (마른 오징어 저장중의 수분활성과 갈변반응)

  • In the previous work(Kim et al, 1973), the quality of sun-dried Alaska pollack, Theragra chalch-ogramma, was discussed in the aspect of non-enzymatic discoloration as a function of relative humidity during storage at room temperature($20^{\circ}C$). In this paper, sun-dried squid, Ommastrephes steam pacificus was investigated at the same aspect mentioned above. Fresh squid from the whole sale market was dressed, filleted, dried for 48 hours in the open air and finally stored in the humidistat chamber. Lipid oxidation ana development of non-enzymatic browning were tested by the same methods described in the previous paper. The TBA value showed a maximum peak on 30 day storage, hereafter tended to decrease gradually. The rate of browning, however, in water soluble fraction as well as in chloroform-methanol fraction was lower at 0.34 to 0.45 water activity than at any other case, and propagation of lipid oxidation was also diminished at the above level of water activity. From the results, it is recognized that storage at Aw=0.34 to 0.45 provides higher quality stability for sun-dried squid.

Selectivity of Gillnet for Neon Flying Squid, Ommastrephes bartrami (LeSueur) in the North Pacific

  • This paper attempted to estimate mesh selectivity of gill nets for neon flying squid in the north Pacific Ocean. The 11 linear regressions, (P<0.05) were obtained using the data on catch ratios derived from mesh size combinations between two slightly different mesh sizes of 12 kinds of research gillnet (namely 33, 37, 42, 48, 55, 63, 72. 76, 86, 96, 105 and 115 mm in stretched mesh size). There was an increase in the optimum length with the increase in mesh size but standard deviation showed somewhat increase with the increase in the mesh size. The selectivity curves were well fitted to the length frequency distributions obtained from samples for the mesh sizes from 48 mm through 86 mm. For the mesh sizes of 33, 37 and 42 mm the DML (Dorsal Mantle Length) compositions were distributed towards the right hand-limb of the curves. The DML distributions from the 96 mm and larger meshes showed a trend towards the left hand-limb of the curves. The selectivity curves for different mesh sizes indicate that large mesh sizes catch a greater size range of squid, and the gill net fishery in the north Pacific Ocean captures effectively neon flying squid within the range of $9\~43cm$ DML.
