The field observations on a seasonal characteristic of organic matter and its origin in the surface sediment were carried out at 35 stations in Deukryang bay, southern coast of Korean Peninsula from May 1995 to February 1996. The analytical parameters were mud temperature, ignition loss(IL), chemical oxygen demand(COD), pheopigment, sulfide and water content. The origin and seasonal dynamics of organic matter in Deukryang Bay were analyzed by COD/IL, COD/sulfide ratio and principal component analysis(PCA). As a results of the mud temperature fluctuated between 2.1$^{\circ}C$ with the lowest mean 4.6$^{\circ}C$ in winter and 27.6$^{\circ}C$ with the highest mean 25.5$^{\circ}C$ in summer. The range of ignition loss(IL) was from 3.1% in autumn to 21.5% in winter. Chemical oxygen demand(COD) showed the highest mean value of 8.45 mg/g dry in spring within the range of 2.90∼18.21 mg/g dry, while it showed the lowest value of 4.33 mg/g dry in autumn within the range of 0.67∼10.37 mg/g dry. Pheopigments showed the highest mean value of 9.04 $\mu\textrm{g}$/g dry in autumn within the range of 1.36∼20.44 $\mu\textrm{g}$/g dry, while it did the lowest mean value of 2.20 $\mu\textrm{g}$/g dry in summer within the range of 0.33∼11.36 $\mu\textrm{g}$/g dry. The range of total sulfide (H$_2$S) was from no detect(ND) to 3.30 mg/g dry in spring. And water content showed the annual mean value of 43.6% within the range of 23.6∼54.9%. The source of organic matter by COD/IL and COD/sulfide ratio in Deukryang Bay had been producted by primary producer in sea water areas except the areas effected by small stream, domestic and animal wastes. And the analytical results of PCA was able to be divided into three different regions. The former was characterized by the shallow depth and authigenic organic matter from phytoplankton in northwest area and northeastern inner bay, the secondary was done by deeper depth and allochthonous one from lands in southeast area and eastern entrance of bay, and the latter was done by authigenic one from the farm of seaweeds such as, sea cabbage, sea mustard etc in western entrance of bay. But a study on the relationship between sulfide and COD concentration in the northeastern inner bay which was characterized by the water stagnation will to take much more studying including major constituents of organic matter in the future.
Qualitative and quantitative algal survey was conducted from March 2010 to December 2010 on a man-made artificial beach in the Hwawon Resort Complex in order to understand seasonal changes of algal flora. The seasonal change of algal vegetation was compared with intact natural habitat near from the experimental sites. Total 15 algal species were found at the artificial beach; 8 Chlorophyta, 3 Phaeophyta and 4 Rhodophyta. And 38 algal species were found at the natural habitat; 7 Chlorophyta, 9 Phaeophyta and 22 Rhodophyta. Dominant algal species at the artificial beach were Ulva compressa, U. intestinalis, U. prolifera, U. pertusa in winter and Urospora penicilliformis, U. intestinalis, U. compress in summer. In natural habitat, dominant algal species were U. pertusa, U. compressa in winter and Sargassum thunbergii, Ishige okamurae in summer. (R+C)/P explaining spatial distribution of seaweeds was 3.7~4.0 (warm-temperature) in the artificial beach and 2.6~3.4 (polar-temperate) in the natural habitat, respectively. The flora of artificial beach could be classified into the filamentous form (64.4%), the sheet form (21.9%), and the coarsely branched form (13.7%). There was significant difference from the two habitats representing dominant species, distributions and ratio of functional-form groups.

Nine species of edible seaweed [green laver (Monostroma nitidium) and sea staghorn ( Codium fragile) of green algae; sea mustard (Undaria pinnatifida), seaweed fusiforme(Hizikia fusiforme), gulf weed (Sargassum fulvellium), and sea tangle (Laminaria japonica) of brown algae; seaweed dilatata (Halimeniopsis dilatata), seaweed furcata (Gloiopeltis furcata), and laver (Porphyra tenera) of red algae] collected from Kijang, Chungmu, and Yosu in Korea, were examined and compared on their chemical and mineral composition depending on their harvesting season. Crude protein $(N\pm6.25)$ showed about $45\%$ on moisture free basis (the contents of every components described below are shown as moisture free basis) for laver and $30\%$ for green laver collected from ever seasons and sites. Sea tangle showed the highest content in crude lipid $(10\%)$ among brown seaweeds and green laver had $6\%$ of crude lipid regardless their habitats. Ash and carbohydrate in sea staghorn hold about $90\%$ of total solids but those levels were only $50\%$ in laver. The relationship between ash and carbohydrate content showed a tendency with reverse correlation. Mineral compositions were examined on green laver, sea mustard, and seaweed furcata collected from Kijang. Sodium was eminent element (1,798-7,334mg/l00g) followed by potassium. Magnesium and calcium content were low level compared with sodium and potassium. As a micro-element iron was appraised the highest status (165-330mg/100g) in green laver, however, iron in sea mustard and seaweed furcata was comparatively low amount (2.7-47.4mg/100g). The level of zinc was also comparatively high and that was varied on habitats. In conclusion, chemical compositions of these algae were distinctively varied on species and habitats, and mineral compositions were notably changed by the harvesting season.
Inflammation is a protective response to infection or injury. However, prolonged inflammation can contribute to the pathogenesis of many diseases, such as cancer, diabetes, arthritis, atherosclerosis, and Alzheimer's disease. Recent studies have shown that activated macrophages, inflammatory effector cells, can react to tissue insults in a polarized manner, in which their phenotypes are polarized into two major subtypes, categorized as M1 or M2. Classical M1 activation involves the production of pro-inflammatory cytokines, such as interleukin (IL)-6 and tumor necrosis factor (TNF)-${\alpha}$, and free radicals, while M2 or alternative activation is an anti-inflammatory phenotype involved in homeostatic processes, such as wound healing, debris scavenging, and the dampening of inflammation via the production of very low levels of pro-inflammatory cytokines and high levels of anti-inflammatory mediators, including IL-10. As part of our ongoing effort to isolate anti-inflammatory compounds from seaweeds, we investigated the effects of phlorotannins isolated from the brown alga Ecklonia stolonifera on macrophage polarization. Mouse peritoneal macrophages were treated with various concentrations of the extracts, and real-time RT-PCR analyses were performed to examine the expression of polarization markers: IL-$1{\beta}$, IL-6, and TNF-${\alpha}$ for M1 and arginase-1, peroxisome proliferator-activated receptor (PPAR)-${\gamma}$, found inflammatory zone-1 (Fizz-1), chitinase 3-like 3 (Ym1), and$Kr{\ddot{u}}ppel$-like factor 4 (Klf-4) for M2. The pretreatment of cells with eckol, dieckol, and phlorofucofuroeckol-A (PFF-A), isolated from the ethyl acetate fraction of E. stolonifera ethanolic extract, potentiated the anti-inflammatory M2 phenotype of the macrophages. These results indicate that phlorotannins derived from E. stolonifera can be used to enrich macrophages with markers of the M2 anti-inflammatory state.
Recently, we found and analyzed vitamin $B_{12}$ in some Korean traditional plant foods which had not reported, yet. This study was to investigate vitamin $B_{12}$ intake and its dietary sources and the vitamin $B_{12}$ status in the very old elderly Koreans. We measured serum vitamin $B_{12}$ level and estimated the amounts of vitamin $B_{12}$ intake from different dietary sources in female elderly Koreans aged 85 and over who had consumed a relatively low animal traditional diet for the whole life. The average age of the subjects (n = 127) was 98.0 years (85-108 years). The assessment on energy and nutrient intake involved a one-day 24-hour recall, and serum vitamin $B_{12}$ concentration was measured by radioimmunoassay. Overall diet pattern was not different between the 85-99 yr-old group and centenarians, except centenarians were taking more dairy product. The average ratio of plant food to animal food consumption was 87.5:12.5 in weight. The average vitamin $B_{12}$ intake of our subjects was 3.2 ${\mu}g$, and 52.7% of subjects consumed under estimated average requirement, 2.0 ${\mu}g$/day. On dietary source, 67.3% of dietary vitamin $B_{12}$ was from meat, eggs and fishes and 30.6% was from plant foods, such as soybean-fermented foods, seaweeds, and kimchi. The average serum vitamin $B_{12}$ concentration was 450.5 pg/mL, and low serum vitamin $B_{12}$ (< 200 pg/mL) was found in 9.6% of subjects. Dietary vitamin $B_{12}$ intake was significantly lower in subjects with low serum vitamin $B_{12}$ (0.79 ${\mu}g$/day) than those with normal serum vitamin $B_{12}$ (3.47 ${\mu}g$/day). There were no significant difference in vitamin $B_{12}$ intake and its dietary sources and serum vitamin $B_{12}$ level between the 85-99 yr- old group and centenarians. In conclusion, several plant-origin foods including seaweed, soybean-fermented foods, and kimchi, may contribute significantly to good vitamin $B_{12}$ status in very old elderly Koreans.
In order to utilize sea mustard, Undaria pinnatifida, effectively. sea mustard jam was prepared by use of physical properties of polysaccharides, mainly alginic acid and then its chemical composition, nutritive qualifies and the stability of pigments were examined. Suitable processing condition for sea mustard jam was as fellows : as the first stage, fresh sea mustard was scalded for 20 sec at $85^{\circ}C$ and dried sea mustard was dipped for 20 min in cold water for rehydration, then both sea mustards were treated by draining and chopping. Next, after adding 4 fold of $0.5\%\;K_2HPO_4$ solution to weight of chopped sea mustards, the mixed solutions were agitated for 15 min at $95^{\circ}C$, and gelated sea mustards were filterated by pressing. Flow characteristics of those sea mustard jam were regarded mixed type having pseudoplastic type and yield stress. Judging from sensory evaluation, adding $0.375\%$ of saccharin, $2\%$ of sorbitol, $0.25\%$ of citric acid and $0.5\%$ of powder of roasted soybean to sea mustard jam were suitable for enhancing taste and flavor of product. Chemical composition of products were scarcely changed throughtout processing. Jam processed by fresh sea mustard was better than dried one in contents of chlorophyll and total carotenoid pigments. In fatty acid composition, polyenoic acids of $C_{18:3},\;C_{20:4},\;C_{20:5},\;C_{22:6}$ were held high contents as known to have lowering function of cholesterol contents. It was presumed that dominant contents in free amino acids such as lysine, alanine, glutamic acid and organic acids such as citric acid, oxalic acid, $\alpha-ketoglutaric$ acid, lactic acid and succinic acid held important role for the flavor of sea mustard jam.

In this study, Sargassum coreanum was enzymatically hydrolyzed to prepare water-soluble extracts by using five carbohydrates (Viscozyme, Celluclast, AMG, Termamyl and Ultraflo) and five proteases (Protamex, Kojizyme, Neutrase, Flavozyme and Alcalase) and their potential antioxidant activity were evaluated. The Celluclast and Neutrase extracts of Sargassum coreanum exhibited better DPPH radical scavenging activities (92.42% and 92.78%, respectively) and hydrogen peroxide ($H_2O_2$) scavenging activities (58.28% and 57.97%, respectively) compared to those of other enzymatic extracts. These results suggest that Sargassum coreanum would be a good raw materials for antioxidant and enzymatic hydrolysis would be a good strategy to prepare antioxidant extracts from seaweeds.

In order to prevent the quality deterioration of rice from microbial infection, we investigated antimicrobial activities of Morun albalinne, Glycyorrhiza uralensis, Sargassum siliquastrum, and Ecklonin cava against isolated microorganisms from the paddy and warehouses. The major types of the bacteria grown in the paddy and rice warehouses were Sphingomonas paucimobilis, Arthrobacter atrocyaneus, and Bacillus spp. such as Bacillus cereus Additionally Deuteromycetes, Aspergillus spp. and Penicillum spp. were considered as major contaminant microorganisms in the paddy and rice warehouses. As results of the paper disc assay against the isolated microorganisms, the ethanol extracts with Morun albalinne, Glycyorrhiza uralensis, Sargassum siliquastrum, and Ecklonia cava showed effective antimicrobial activities. Especially, Morun albalinne showed the strongest growth inhibition on the isolated bacteria at $0.0025{\sim}0.0075%$.

We investigated that methanolic extracts of 20 kinds of seaweeds from Jeju Island for their antioxidant activities, acetylcholinesterase and ${\beta}$-secretase inhibitory activities, and neuronal survival in order to evaluate their potentials as anti-dementia agents. Ecklonia cava extracts had the highest total polyphenol content among the 20 seaweed extracts. The antioxidant activity of seaweed extracts was measured by using 2,2'-azino-bis-(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) assay. It was found that Ecklonia kurome extracts had the highest ABTS scavenging activity ($IC_{50}=0.07{\pm}0.01mg/mL$). As a result, Ecklonia cava, Ecklonia kurome, and Myelophycus simplex extracts were found to be the most effective in terms of acetylcholinesterase inhibitory activity. In the ${\beta}$-secretase activity assay, Ecklonia cava and Ecklonia kurome extracts were effectively inhibited ($84.41{\pm}1.70%$ and $81.17{\pm}2.43%$, respectively). As expected, neuronal cell death induced by $H_2O_2$ in SH-SY5Y cells was diminished by Ecklonia cava, Ecklonia kurome, and Sargassum yezoense extracts. Taken together, these results showed that Ecklonia cava extract has potential anti-dementia activity, which suggests that it might provide an effective strategy for improving dementia.

Seaweeds provide habitats in which marine animals can spawn and develop, and serve as a food supply for algaegrazing species such as sea urchins and abalone. Recently, seaweed species have disappeared from coastal ecosystems, leaving barren ground, defined as habitats that have lost their algae forests and where coralline algae containing calcium carbonate components have become encrusted on rocks. The biological causes of barren ground include grazing by herbivores and excessive seaweed harvest. The environmental harm caused by the spread of barren ground includes accelerated eutrophication following the reduction in seaweed, which plays an important role in oceanic purification. In the present study, we identified the relationships between various seaweed species and the occurrence of barren ground. Subtidal benthic macroalgal flora and community structure were observed seasonally on barren ground along vertical transects of rocky shores of Bihwa, Samchuck, and the east coast of Korea from February to November 2006. Fifty-eight seaweed species were identified, including 7 green, 15 brown, and 36 red algae species. There were between 6 and 28 species among seasons. Over the whole study period, average seaweed biomass (g wet wt $m^{-2}$) was 241.90 g, with a seasonal range of 25.26 to 760.34 g. Seaweed biomass declined with increasing seawater depth and ranged between 91.26 and 422.08 g. The vertical distribution of algae was characterized by Undaria pinnatifida and Sargassum honeri at 5 m, S. honeri and U. pinnatifida at 10 m, and U. pinnatifida and Agarum clathratum at 15 m depth. Seasonal patterns in community indices were not found. Community indices showed different patterns along vertical shoreline gradients; the dominance index increased but the richness, evenness, and diversity indices decreased with seawater depth. Sea urchin density was 8 to 24 individ. $m^{-2}$ in Bihwa. These urchin populations had significantly aggregated spatial patterns and recurrent destructive grazing appeared to be occurring.
