Assessment of Competitiveness Improvement on Multinational Enterprises based in Korea

  • Purpose - This study's the ultimate goal is to analyze competitiveness improvement on multinational enterprises as firstly providing which factors are to strengthen or weaken competitiveness, secondly investigating if hypotheses development and research design is correct and thirdly finding significant implications for research and practices across country specific advantage. Design/methodology - Using feedback data provided by 250 firms, we extracted variable factors and hypotheses, which were empirically carried out by reliability and validity testing, correlation analysis, path analysis, and confirmatory factor analysis to prove which factors are to make the positive effect on the improvement of overseas subsidiaries' management performance and competitiveness. Findings - Through proceeding empirical analysis study, we found out that technology management capability, knowledge management capability, and local management capability had a statistically significant effect on the improvement of overseas subsidiaries' competitiveness, while linked activity capability revealed a negative effect. Originality/value - During business globalization, overseas investments and establishment of overseas subsidiaries have been essential. It is anticipated that this study results would be meaningful for analysis on multinational enterprises' competitiveness and helpful in promoting their entry into Korean market and enhancing their competitiveness. This paper would also help Korea government develops new FDI model and induce more investment from global major companies to Korea region.

An Exploratory Study on the Globalization of Korean Cuisine through the Application of Multicultural Cuisine (다문화적 조리 접근법을 통한 한식 세계화에 대한 탐색적 연구)

  • As Korean cuisine is one of our cultural assets and has global potential, it needs to be better marketed and known to the world. However, there is a lack of research examining what to and how to globalize Korean cuisine practically. Therefore, the purpose of this study is to suggest fundamental reasons and ways to globalize Korean cuisine from a multicultural point of view. A Delphi method was selected because the study is suitable for a structured group of experts instead of unstructured groups or individuals. A panel of experts were selected from two groups, Korean experts and international experts. This research established the characteristics of Korean foods, the difficulties of Korean cooking methods and the incorporation or substitution of Western ingredients in two rounds. A panel of experts suggested strategies for globalizing Korean cuisine in the third round. As a result, meaningful solutions were suggested such as increasing the global profile and knowledge of Korean cuisine from 18 experts out of 23, developing various cooking methods for Korean-cuisine having distinctively Korean characteristics from 17 experts out of 23, developing recipes that are compatible with equipment and appliances in a western kitchen, and considering the differences in taste and texture(mouth-feeling) between Korean and the Western people.

A Study on the Current Status and Improvement Plans for Culinary Education (조리교육 현황과 발전 방안 연구)

  • This study analyzes the differences to examine which education is more effective for practical cooking skills. A survey was conducted on the 4 year university students majoring in culinary arts to examine the recognition levels of culinary practice education for the purpose of searching for an improvement plan for culinary education. The results are as follows. Seniors recognize the importance of learning theory, while the classes offered now are focusing on getting cooking certificates. The students approach cooking not only for eating food but also for the arts, showing increased interests in 'creative food' and 'fusion food.' In class, they feel the necessity of establishing a standard for a fair assessment and English skills for the globalization of food service. Hereupon this study recognizes the current state of culinary education service, draws factors which decide the quality of culinary arts education, and examines student satisfaction with theoretical education, practical education, assessment, and external education by using a factor analysis of twenty quality attributes. Through the development and application of various programs, operation of open practice classes and culinary organization reflecting social changes in learning courses, the culinary arts education is considered to be more vitalized. In this respect, this study introduces four measures which were designed to facilitate the education of highly-skilled human resources in the culinary field.

  • 우리 전통술산업의 육성은 원료농산물의 소비증대와 수입주류의 대체, 전통문화의 복원 등 다양한 의미를 가지고 있다. 즉 쌀과 잡곡, 과일, 약초 등 우리 농산물로 빛은 민속주의 재현을 통해 개방여파로 인해 남아도는 우리 농산물의 소비증대와 국민들의 건강 증진, 전통문화의 계승발전에도 기여할 수 있기 때문에 산업적 활성화의 필요성이 크다. 특히 술은 지역축제나 관광, 예술 등과 결합한 고부가가치 문화상품이 될 수 있는 만큼 그린투어리즘(green tourism)이나 농촌문화관광을 풍요롭게 하는 중요한 컨텐츠가 될 수 있을 것으로 기대된다. 우리술산업의 활성화를 위한 정책과제로는 다음을 제시할 수 있다. (1) 우리술의 맛과 향, 숙취제거 등 품질을 개선하되 특히, 젊은층과 서민들의 기호에 맞으면서도 건강기능성을 가미한 다양한 제품의 개발과 포장 및 디자인의 개선이 필요하며 이를 위해 전문연구기관을 설립하거나 한국식품개발연구원을 통한 연구개 발과 교육 훈련이 선행되어야 한다. (2) 우리술의 품질관리와 차별적 유통을 위한 브랜드화가 필요한데 이는 지방자치단체와 관련업체에서 지역에서 생산되는 술에 대해 원료나 제조방법, 생산지역 등 품질기준과 표기방법을 제도화하고, 이를 소비자들에게 알리는 방법을 강구해야 한다 (3) 시음회나 품평회, 우리술페스티벌 등 다양한 이벤트행사를 통해 우리술에 대한 부정적 이미지를 개선하고 소비를 촉진하기 위해서는 적극적인 홍보와 판매촉진이 필요하다. (4) 우리 전통술의 품질향상과 가격인하를 위해 시설현대화와 기술개발, 포장 및 디자인개선, 원료구입, 홍보 및 판매촉진 등에 소요되는 자금을 지원하고 주세 차등화 등 조세감면과 경영컨설팅 등의 지원이 필요하다. (5) 현재 국회에 계류 중인 [전통술산업육성 및 지원법(안)]를 통과시켜 제도를 정비하고, 여러 부처에 흩어져 방치되고 있는 농민주 및 민속주 관련 행정체계를 정비해야 한다.

  • This article examines the types of Eumchungru as recorded in 16 royal palace studies of the Joseon dynasty (1392-1909). The types of Eumchungru during the Joseon dynasty appeared Hwachae(花菜), Sujunggwa(水正果), Isug(梨熟), Sumyeon(水麵), Sangseolgo(霜雪膏), Gareun-sujeonggwa(假蓮水正果), Hwamyeon (花麵), Cheongmyeon(淸麵), Semyeon(細麵), Saeng-isug(生梨熟), Osaeg-sudan(五色水團), Sudan(水團), Maeg-sudan(麥水團), Bogbunjago(覆盆子膏), Milsu(蜜水). The frequency of the Eumchungru types during the Joseon dynasty in order were; Hwachae(花菜) 26.4%, Sujunggwa(水正果) 20.7%, Isug(梨熟) 17%, Sumyeon(水麵) Sangseolgo(霜雪膏) each 5.6%, Gareun-sujeonggwa(假蓮水正果) Hwamyeon(花麵) Cheongmyeon(淸麵) each 3.8%, Semyeon(細麵) Saeng-isug(生梨熟) Osaeg-sudan(五色水團) Sudan(水團) Maeg-sudan(麥水團) Bogbunjago(覆盆子膏) Milsu(蜜水) each 1.9%. Through this study, through new lighting and menu development for hwachae used as a basis for hope to contribute to the globalization of Korean food.

  • This article examines the types of Sujeonggwa as recorded in 15 royal palace studies of the Joseon dynasty (1392-1909). The types of Sujeonggwa during the Joseon dynasty appeared Sujeonggwa(水正果), Geunsi-Sujeonggwa, Saengri-Sujeonggwa(生梨水正果), Weigamja-Sujeonggwa(倭柑子水正果), Gareun-Sujeonggwa(假蓮水正果), Yuja-Sujeonggwa(柚子水正果), Jabgwa-Sujeonggwa(雜果水正果), Duchung-Sujeonggwa (杜沖水正果), Yukyeldo-Sujeonggwa(六月桃水正果), Bokbunja-Sujeonggwa(覆盆子水正果), Aengdo-Sujeonggwa(櫻桃水正 果), Sansa-Sujeonggwa(山査水正果. The frequency of the Sujeonggwa types during the Joseon dynasty in order were; Geunsi-Sujeonggwa(20%), Saengri-Sujeonggwa(生梨水正果)r(15%), Sujeonggwa(水正果)(10%), Weigamja-Sujeonggwa(倭柑子水正果)(10%), Gareun-Sujeonggwa(假蓮水正果)(10%). The other Sujeonggwa each(5%). Through this study, through new lighting and menu development for Sujeonggwa used as a basis for hope to contribute to the globalization of Korean food.

Development of Evaluation Indicators for Industrialization of Local Cuisine (향토음식의 산업화가치 평가를 위한 지표 개발 연구)

  • The purpose of this study was to develop an evaluation indicator for the industrialization of local cuisine. We conducted a literature study, interviews with experts, and a Delphi survey. The resulting evaluation indicator was divided into four groups and nine sub-groups. The four groups were locality, taste and functionality, industrial base, and business value. The nine sub-groups were traditionality, regionality, eating quality, nutrition and functionality, condition of development, technological level, rights and policy, marketability, and ripple effects. Also 22 items were created as indicators for evaluating classes ; historicity, sustainability, rarity, awareness of local resident, the number of similar restaurant, appearance, taste, nutritional balance, health functionality, availability of raw materials, suitability of environmental exchange of market, standardization of recipe, simplification of recipe, storability, intellectual property rights, government's policy, appropriacy of price, popularization, possibility of franchise, globalization, improvement of local image, vitalization of local economy. The four most important classes corresponded to one of the four groups. These classes were sustainability, taste, state (local autonomy) policy, vitalization of local economy. The implications of this study are that the possibility of industrializing the local cuisine of each region can be evaluated and applied. Moreover, these indicators could promote the discovery of local cuisines, support planning for the commercialization of local cuisine.

Information and Communication Management Systems (ICMS) in India -Connecting the Resource Poor Farmers to Knowledge and Institutions

  • Information and communication technologies (ICTs) have always mattered in agriculture too. In day-to-day practices of agriculture and allied sectors, the farmers often share their information. Changing weather patterns, soil conditions, pests and diseases always throw challenges to small and marginal farmers. So, the farmer needs up-dated information to cope with and even benefit from these changes. In the developing countries like India, where agriculture still plays a crucial role (over 58% of the rural households depend on agriculture as their livelihood) and the rising population from 1027 million to 1419 million during 2001-16 (a total rise of 38 percent or 1.3 percent per year) pose a lot of pressure on land and other resources to meet the food security needs on one hand and to meet the challenges of globalization on the other. Understanding and addressing these challenges are very crucial, in which ICT can play a major role. With the booming mobile, wireless, and Internet industries, ICT has found a foothold even in poor marginal and smallholder farms and in their activities. The survey conducted among the 120 farmers in Srikakulam district in India revealed that, ICT has revolutionized the agriculture in the modern days. Production and marketing information is accessed by 91% of the sample farmers through mobile in 2015, where it was only 5% in 2005. The extent of use of mobile phones by the farmers varied with the decision to be taken by them like Harvesting, packing, and storing (94%), Selling Decision (91%), Seed purchase (89%), Application of fertilizers and pesticides (88%) and Land preparation and planting (84%), other package of practices (77%). The farmers further opined that, 'Voice' was the dominating source of communication (96%) compared to Short Message Service (SMS) (only 27%) and Internet access (10%), as majority are illiterate. The use of camera (71%), Bluetooth (33%), Radio (61%) TV (41%) are the other means of sharing the information. In this context of importance of ICTs in Indian agriculture, greater attention justifies about the applications of ICT's to alleviate poverty and promote economic growth of the farming population.

The Place Occupation and the Marginalization Discourse of Migrants: the Case of Chinese Food Culture Street in Jayang-dong in Seoul (이주자의 장소 점유와 주변화 담론 연구 -서울 자양동 중국음식문화거리를 사례로-)

  • One of the most interesting points in the era of globalization and transnationalism is the movement of people, namely migration. This research aims to explain the discourse of marginalization on Korean-Chinese by Korean merchants as the migrants expand their shops in the Chinese Food Culture Street. The Chinese Food Culture Street has been formed by Korean-Chinese restaurants and shops for the process of differentiation from the Garibong-Daelim area. Korean merchants in the street are not opposed to the influx of Korean-Chinese into Korea, however they do not want to the influx of them into the Jayang area. As the influx of Korean-Chinese into this street has increased, so the Korean merchants in the street have marginalized them as dangerous element for local security, as immoral beings cling to their business, and as the main reason for the regional underdevelopment. However, this marginalization of Korean-Chinese makes difficult to understand the real change of local area, because there has been some positive effects by the influx of them such as the improvement of surrounding environment and the elevation of local imagination. This research clearly suggest that the marginalization of migrants by major society is from the fixed idea and prejudice, and this research suggest the need to further study on the occupation and change of local by migrants.

A study in the Effects on the Quality Attributes of Korean Restaurants menu on Revisit Intention - Centering on Korean Students who are Studying in Paris, France - (한식 레스토랑 메뉴품질속성이 재방문의도에 미치는 영향에 관한 연구 - 프랑스 파리 지역 한국인 유학생을 대상으로 -)

  • This study conducted the empirical analysis of the influence that are quality attributes, and strengths, weaknesses, low ranking and excess of Korean restaurants menu on revisit intention based on differences between importance and satisfaction by surveying Korean students in Paris, and also conducting IPA analysis based on survey result. The result of IPA analysis showed weaknesses that are the visual elements of foods; in contrast it showed strengths that are the price, temperature, taste, quantity, cleanliness, freshness, and flavor of dishes. Also it showed low ranking that are seasonal items, authenticity, originality, sizes, colors, texture, explanations, ingredients, recipes of menu, classification of healthy food, suitability of bowls, creativity of existing food. Therefore, it is found that the higher recognition of attributes, organic functions, properties, and explanations of menu, the higher revisit intention. It showed that explanations, sensibility, characters, quality of menu influenced on revisit intention according priority by analysis of quality attributes of menu on revisit intention. This study is significant in that it provides useful data services for marketing strategies and operational suggestions to globalization of Korean food by analysis local menu of Korean food service industry.
