Antioxidant Activity of Corn (Zea mays L.) By-Products and Changes in Phytosterol Content according to the Growth Period of Leaves and Stems (옥수수 부산물의 항산화 활성 및 잎과 줄기의 생육시기별 Phytosterol 함량 변화)

  • As the consumption of corn increases, the production of by-products is also increasing. In this study, functional substances and antioxidant activities of corn by-products were investigated to determine their applicability as functional materials. Total polyphenol, flavonoid contents, and ABTS antioxidant activity were the highest in leaves. The total phenolic acid content was the highest in cobs; p-coumaric and ferulic acid were the main components. Phytosterol content in leaves and stems was high at 64 and 50 days after sowing, 261.4 and 274.7 mg/100 g, respectively. β-sitosterol of the leaves and stems was the highest, 149.2 and 138.7 mg/100 g. The total phytosterol content of grains and by-products harvested 106 days after sowing was in the order of: corn silk, husk, grain, leaf, stem, and cob. Among the phytosterols, β-sitosterol was the highest, followed by stigmasterol and campesterol, and the composition was different depending on part. The total phytosterol content was the highest in husk and corn silk, but the stems and leaves, which account for 50% of the total corn biomass, also contained high phytosterol content. Therefore, corn leaves and stems are expected to be used as functional raw materials for the development of functional materials in the future.

Growth and Yield Performance in no-till Cultivation of sugary and shrunken-2 Corn Hybrids

  • No-tillage (NT) practice for corn production has advantages of reduction of soil erosion and energy conservation. Research on effects of NT for sweet corn or super sweet corn is very limited. Hybrids of sugary (su) and shrunken-2 (sh2) were tested under NT and conventional tillage (CT) practices to investigate plant characters, ear characters, fresh yield, and grain yield. Sugary hybrids were Golden Cross Bantam 70 (GCB70), Sprint, Geumdanok, and Danok3. Shrunken-2 hybrids were BSS9472, Cambella90, GSS9299, Jubilee, KS-Y-65, and Chodangok1. Emergence rates under NT were lower than those under CT for su, while there was no difference between tillage systems for sh2. There were no differences between CT and NT for days to tasseling and silking, plant height, and ear height for both su and sh2. Ear characters such as ear length, number of kernel rows, number of kernels per row, and t100-kernel weight under NT were not significantly different from those under CT. There were no differences between two tillage practice for fresh and grain yield, rather they showed trend of increases under NT practices. Results from this trial indicate that NT practice for both su and sh2 cultivation may be possible to recommend to farmers.

Effect of the Double Cropping at High Altitude Area Which was Cultivated Suitable Forage Crop (고랭지에 적합한 사료작물 2모작 작부체계에 관한 연구)

  • This study was conducted to increase the utility and productivity of forage crops at high altitued areas. For that purpose, 21 cultivars of corn and 2 cultivars of rye were cultivated for 3 years using a randomized block designed with 3 replications. The results obtained were as follows. 1. In the Taekwallyong area (800m above sea level) which has a short frostless period, all the seeding and harvest of corn must be finished within about 135 days between mid May, the time of the last frost, and late September, the time of the first frost 2. It was relatively safe for the early maturity cultivar(ll0days) and the medium maturity cultivar(l20days), compared to the late maturity cultivar(l30days) which might have had the possibility of an overlapping period between the time of harvest and the first frost in high altitude areas 3. The productivity of forage corn, which is the most efficient crop for capturing solar energy, varied significantly with the climate circumstances but the productivity of Taekwallyong showed similar results of 19 M/T/ha, compared with 20 M/T/ha in Suwon from the '96-'98 study 4. Rye could be cultivated in high altitude areas and when corn was raised as a second crop after rye in the same year, it was possible to increase the productivity of dry matter yield by 20% through double cropping(P < 0.05).   • The present study was designed to compare the effect of soybean oils and corn oils on serum levels of total cholesterol, HDL-cholesterol and free cholesterol in cholesterol-fed rats. The results are as fellows: 1. The average body weight gain in soybean oil diet group was lower than that of the control group. 2. The food efficiency ratio in soybean oil diet group was lower than corn oil diet group. 3. The serum levels of total cholesterol in soybean oil diet group than that in corn oil diet group. 4. The serum levels of free cholesterol in soybean oil diet group was lower than that in corn oil diet group. 5. The serum levels of HDL-cholesterol in soybean oil diet group than that in corn oil diet group. 6. The serum levels of VLDL-, LFL-cholesterol in soybean oil diet group was lower than that in corn oil diet group.

Change in Photosynthesis, Proline Content, and Osmotic Potential of Corn Seedling under High-Saline Condition

  • To identify salt-tolerance characteristics of corn seedling was treated in solution of 0, 50 and 100 mM NaCl of hydroponic cultivation. In photosynthesis of corn seedling, there was no large difference between 50mM and 0 mM NaCl solution, however, in 100 mM NaCl solution, the tolerance gradually decreased to $76\%,\;49\%,\;and\;31\%$ after one day, four days, and seven days, respectively, in comparison to 0 mM NaCl solution. Osmotic potential of corn in seedling period was significantly decreased with increasing saline level, however, free proline content in the plant on the ground was significantly increased with increasing saline level and with the lapse of time. In terms of correlation among major characteristics, there was a highly significant positive difference between osmotic pressure potential and photosynthesis, However, highly negative correlation was found between osmotic pressure potential and free proline content. In addition, it was expected that young seedling of corn with saline tolerance may be utilized in the transplantation in salt-accumulated land. Based on above-shown result, in terms of saline tolerance of Chalok-2 variety, growth suppression was serious with 100mM NaCl solution. However, growth was expected that seedling growth would be favorable under 50 mM NaCl solution.

Effect of Cooking on Moisture Sorption Properties of Corn (삶은 옥수수의 수분흡습성질)

  • The moisture sorption behaviors of dry corn(DC). dry-corn (DCC) and soaked-rooked corn(SCC) at $25^{\circ}C$ were analyzed. The corn was soaked in water at $26^{\circ}C$ for 8hr. The cooking times for DCC and SCC were 30 and 20min. respectively, at $80^{\circ}C$. Desorption occurred for DC and DCC at RH below 23% and SCC at RH below 33% during storage. Moldiness was observed in all samples at RH 97%, after 192hr for DC and 288 hr for both DCC and SCC. At the same water activity. SCC sample had the highest moisture content, followed by DC. The SCC sample had the highest monolaver value and sorption heat. Stability isotherms indicated that DC and SCC had better storability than DCC.

Physicochemical Properties of Corn Starch Oxidized with Sodium Hypochlorite (산화에 따른 옥수수 전분의 이화학적 특성 변화)

  • Corn starch was modified by oxidation with sodium hypochlorite (NaOCl) as an attempt to expand the application of starches in food industry. Corn starch was oxidized with 0.25, 0.5, 0.75, 1.0 and 1.5% active Cl/g starch at pH 7.0 and $25^{\circ}C$ for 10 minutes. The size, shape and amylose content of oxidized starches were similar to those of native corn starch. As the extent of oxidation increased, solubility, swelling power and the amount of soluble amylose increased, X-ray diffraction patterns changed, and relative crystallinity decreased. In Brabender amylogram, oxidation did not chance the gelatinization temperature, but oxidized starches had a lower peak in viscosity and their cooled pastes gave less setback, compared with native corn starch.

Effects of Opaque-2 Corn on the Body Weight of Rats ("오페이크 2" 옥수수가 흰쥐의 생체중에 미치는 영향)

  • Feeding test was conducted to determine the values of opaque-2 corn selected from opaque-2 conversion program at the Crop Experiment Station, Suwon. At the end of 24 days of experiment, the average gain of body weight of white rats fed on opaque-2 corn was 40.2 grams, that of the rats on normal corn, 31.4 grams, 1.3 fold difference. The growth rate of rats expressed by regression coefficients indicated that the effects of opaque-2 corn was greater than that of normal corn.

Effects of a Corn Extract on Mouse Splenocyte and Cytokine Production by Peritoneal Macrophages (4주 동안의 옥수수 추출물 투여가 마우스 비장세포와 대식세포 생성에 미치는 영향)

  • This study was performed to investigate the in vitro effect of a corn water extract on immune function. Splenocyte proliferation was determined by the MTT(3-[4,5-dimethylthiazol-2-yl]-2,5-diphenyl terazolium bromide) assay after preparing asingle cell suspension. Production of macrophage-secreted interleukin(IL)-$1{\beta}$, IL-6, and interferon(IFN)-${\gamma}$, was detected by ELISA using a cytokine assay kit. After a 48-hr incubation with mitogens(ConA or lipopolysaccharide), mice splenocyte proliferation increased with the addition of a corn water extract supplement at 10, 50, 100, 250, 500, or $1,000\;{\mu}g/m\ell$. Production of IL-$1{\beta}$, IL-6, and IFN-${\gamma}$ increased in treatments supplemented with the corn water extract. In an in vitro study, splenocyte proliferation increased when $50\sim1,000\;{\mu}\ell/m\ell$ corn water extract was added. In an ex vivo experiment, the highest production of cytokines by activated peritoneal macrophages was observed in mice orally administered 500 mg/kg body weight/day.

Effect of Waterlogging Duration on Growth Characteristics and Productivity of Forage Corn at Different Growth Stages Under Paddy Field Conditions

  • The purpose of this study was to determine the effect of waterlogging duration on the growth characteristics and productivity of forage corn at different growth stages under paddy field conditions. Treatments consisted of waterlogging at two growth stages (V7 or V14) for four waterlogging durations (no waterlogging, 48 hours, 72 hours, and 96 hours, respectively). The V14 growth stage was more vulnerable to waterlogging than the V7 stage. Among the waterlogging durations, the lodging score increased at 48 hours. The stem height of forage corn decreased with the increase in waterlogging duration at the different growth stages (V7 and V14). Increase in waterlogging duration reduced the stem dry matter yield, ear dry matter yield, and total dry matter yield at both growing stages (V7 and V14). The waterlogging treatments at the V14 stage affected ear dry matter yield more than those at the V7 growing stage. Thus, the management of forage corn under paddy field conditions must be strengthened during early (V7) and grain fill stages (V14). When waterlogging occurs, surface and subsurface drainage should be implemented within 48 hours to control (no waterlogging) the groundwater level and, thus, minimize economic losses due to forage corn damage.
