  • The objective of this study is to present an up-to-date and more comprehensive review of tourism as well as hotel and restaurant business forecasting literature. Major reports of business forecasting studies classified into three broad sections including the hotel sector, restaurant sector, and tourism sector chronologically. The focus and descriptions of findings of those studies are reviewed, compared, and critiqued comprehensively, while capturing major trends of forecasting studies.

  • The purpose of this study was to investigate the stress levels and the dietary patterns of 390 male and female University students in Seoul and to analyze the correlation between the two. Informations of the subjects were obtained by questionnaire. As a result of this research study, male students had such bad dietary patterns as their stress increased(P<.05). Female students were more affected in dietary patterns by stress level and both male and female students exhibited a tendency to be in a higher state of intake as their stress level increased.

  • 본 연구의 한계는 설문대상이 주로 대학생들로 나타나 표본선정에 있어 고루 분포되지 못한 직업군 등으로 연구결과의 대표성에 문제가 제기된다. 또한, 이용자들이 피자 배달 전문점에 어떠한 이미지를 가지고 있는지에 관한 부분들이 결여되어 있다. 따라서, 향후 연구 과제에 대한 제안으로 인구통계적 특성이나 라이프스타일에 따른 보다 구체적인 피자 배달 전문점의 서비스 품질 등을 가미한 연구가 필요할 것이며, 이용자들의 피자 배달 전문점의 서비스품질에 대한 정확한 지각을 측정하기 위해서는 지각된 품질을 구성하는 보다 심층적인 연구가 필요한 것으로 사료된다. 향후 과제로 이러한 부족한 점들을 보완한 연구가 요구되어진다고 사료된다.

Microbial Dynamics of Commercial Makgeolli Depending on the Storage Temperature

  • Market fresh makgeolli was stored at different temperatures of $4^{\circ}C$ and $25^{\circ}C$ to assess the change of the microbial diversity according to the storage temperature and period. Yeast counts increased until day 3 of storage and decreased thereafter. General and lactic acid bacterial counts continuously increased during storage. The data indicated that the control of growth of microorganisms, particularly general bacteria and lactic acid bacteria (LAB), is essential. Total acid levels started to decrease in the makgeolli stored at $4^{\circ}C$, and increased from day 6 of storage in the makgeolli stored at $25^{\circ}C$. The increase of total acid in the non-refrigerated condition greatly affected the quality of makgeolli. In both the fresh makgeolli samples stored at $4^{\circ}C$ and $25^{\circ}C$, yeast (Saccharomyces cerevisiae) and molds (Aspergillus tubingensis, Candida glaebosa, and Aspergillus niger) were noted. Denaturing gradient gel electrophoresis (DGGE) band patterns were almost constant regardless of the storage period. As for bacteria, Lactobacillus crustorum, L. brevis, and Microlaena stipoides were found in the makgeolli stored at $4^{\circ}C$, and L. crustorum, Lactobacillus sp., L. plantarum, L. brevis, L. rhamnosus, and L. similis were found in the makgeolli stored at $25^{\circ}C$. In particular, in the makgeolli stored at $25^{\circ}C$, L. crustorum and L. plantarum presented dark bands and were identified as the primary microorganisms that affected spoilage of fresh makgeolli.

  • The ${\ulcorner}$Ganpyun Chosun Yori-Jebup${\lrcorner}$, was written in Korean in 1934 The analytical results on this book were as follows :1. Fermentation foods were Kimchi, Jut, Jang and Cho. There were 19 kinds of Kimchi with 32materials, 3 kinds of Jut with 4 materials. 8 kinds of Jang with 25 materials and 1 kind of Cho with4 materials.2. There were 47 kinds of DDug(Korean rice cake) with 38 materials.3. Hangwa included Yumilgwa, Suksilgwa, Kangiung, Dasik, Jungwa, and Gwapyun. There were 6 kinds of Yumilgwa with 18 materials. 4 kinds of(Suksilgwa with 7 materials, 6 kinds of Kangjung with 10materials, 7 kinds of Dasik with 14 materials, 13 kinds of Jungwa with 21 materials, and 3 kinds of Gwapyun with 6 materials.4. Korean Beverage included Hwachae and Cha(Korean Tea) . There were 12 kinds of Hwachae with 39materials and 4 kinds of Cha(Korean tea) with S materials.5. Nambi and Sot were used as utensil.6. The measuring units were 'mal', 'sul', 'doi', 'hob', 'ryang', 'geun', 'pun' etc. The foods were prepared frequently by "shaking" and heated by "steaming" .uot;steaming" .ot; .
