참외주 제조를 위한 이상발효 참외의 원료전처리 및 저장조건의 확립 (Pretreatment and Storage Condition of Abnormal Fermented Oriental Melon for Fermentation Use)

  • 전체 참외생산량에서 25%를 차지하는 이상발효 참외는 농가수익과 환경오염의 측면에서 많은 손실을 발생시키고 있으며 이를 해결하기 위해서는 상품성과 가격경쟁력을 갖춘 참외의 가공기술 개발이 필요하다. 따라서 본 연구에서는 이상발효 참외를 발효식품용 원료로서 사용하기 위한 기본적인 요건이 잘 갖추어진 재료임을 감안하여 참외주 용도로의 이용성을 제고하기 위한 전단계로 정상과와 이상과의 품질을 검정하고 원료처리별 저장성과 착즙방법을 검토하였다. 정상과에 비해 이상발효과는 높은 수분함량과 낮은 탄수화물함량을 나타내었으며, 이는 발효에 의해 당성분이 발효산물로 전환되었기 때문으로 추측된다. 정상과 및 발효과의 온도별 저장기간은 $4^{\circ}C$의 저온상태에서는 각각 25일, 7일이였고 실온상태는 8일, 4일까지 가능하였다. 발효용 참외의 보관방법은 저온$(4^{\circ}C)$에서는 세절 후 구연산을 1.5% 첨가한 상태에서는 30일, 세절 후 플라스틱 필름팩에 밀봉하여 냉동$(-20^{\circ}C)$상태에서는 1년간 저장이 가능하였다.

  • An Aero-NFT nutriculture system using microcomputer for cultivation of greenhouse melon was developed and the performance of the system was evaluated through experiments. The system could control temperature, EC and pH of the nutrient solution within the error ranges of $\pm$ 0.2$^{\circ}C$, $\pm$ 0.2 mS/cm, $\pm$ 0.1 pH, respectively. The results of cultivation experiment showed that temperature, EC and pH of the nutrient solution were generally controlled within the setting ranges during cultivation period. The growth results were good until pinching, but the fruit quality of melons was not high except sweetness and shape. To optimize performance of the system, more techlical information for nutriculture of greenhouse melon was needed.

Occurrence of Damping-off Caused by Pythium spinosum on Cucumis melo in Korea

  • In 2010 and 2012, damping-off symptoms were found on melon seedlings grown in Yeongam and Suncheon, Korea. Water-soaked and discolored lesions appeared on the lower stems of the infected plants. The diseased plants became wilted and stunted, and eventually collapsed. On the basis of morphological characteristics and molecular analyses of internal transcribed spacer (ITS) rDNA and cytochrome oxidase II (cox2) sequences, the causal organism was identified as Pythium spinosum. The isolates were pathogenic to melon under pot conditions. To our knowledge, this is the first report of P. spinosum causing damping-off on melon in Korea.

Occurrence of Fuligo gyrosa Causing Slime Mold of Oriental Melon

  • Recently, a severe slime mold infestation affected oriental melon plants in fields in Chilgok county, Gyeongbuk province, Korea. Specimens were collected from the fields and examined for identification. A species of Myxomycetes, Fuligo gyrosa, was identified based on its morphological characteristics. This is the first report that F. gyrosa causes slime mold of oriental melon.

Occurrence of Fruit Rot of Melon Caused by Sclerotium rolfsii in Korea

  • In 2007 to 2008, a fruit rot of Melon (Cucumis melo L.) caused by Sclerotium rolfsii occurred sporadically in a farmer's vinyl house in Jinju City. The symptoms started with watersoaking lesion and progressed into the rotting of the surface of fruit. White mycelial mats appeared on the lesion at the surface of the fruit and a number of sclerotia formed on the fruit near the soil line. The sclerotia were globoid in shape, 1${\sim}$3 mm in size, and white to brown in color. The hyphal width was measured 3 to 8 ${\mn}$. The optimum temperature for mycelial growth and sclerotia formation was 30 on PDA. Typical clamp connections were observed in hyphae of grown for 4 days on PDA. On the basis of symptoms, mycological characteristics and pathogenicity to the host plant, this fungus was identified as Sclerotium rolfsii Saccardo. This is the first report of the fruit rot of Melon caused by S. rolfsii in Korea.

Co-Occurrence of Two Phylogenetic Clades of Pseudoperonospora cubensis, the Causal Agent of Downy Mildew Disease, on Oriental Pickling Melon

  • The genus Pseudoperonospora, an obligate biotrophic group of Oomycota, causes the most destructive foliar downy mildew disease on many economically important crops and wild plants. A previously unreported disease by Pseudoperonospora was found on oriental pickling melon (Cucumis melo var. conomon) in Korea, which is a minor crop cultivated in the temperate climate zone of East Asia, including China, Korea, and Japan. Based on molecular phylogenetic and morphological analyses, the causal agent was identified as Pseudoperonospora cubensis, and its pathogenicity has been proven. Importantly, two phylogenetic clades of P. cubensis, harboring probably two distinct species, were detected within the same plots, suggesting simultaneous coexistence of the two clades. This is the first report of P. cubensis causing downy mildew on oriental pickling melon in Korea, and the confirmation of presence of two phylogenetic clades of this pathogen in Korea. Given the high incidence of P. cubensis and high susceptibility of oriental pickling melon to this disease, phytosanitary measures, including rapid diagnosis and effective control management, are urgently required.

참외 농축액 첨가에 따른 무증자 쌀막걸리의 품질특성 (Quality characteristics of oriental melon Makgeolli using uncooked rice by oriental melon concentrate)

  • 본 연구에서는 무증자 쌀막걸리 제조과정 중 참외 농축액 함량에 따른 이화학적 품질특성 조사하였다. 그 결과 당도는 참외 농축액 첨가량이 많을수록 증가하였으며 발효가 진행됨에 따라 모든 첨가구간에서 조금씩 증가하는 경향을 보였다. 총산도는 발효 1일째 조금 증가했으며 발효 2일째부터는 0.77~0.85%로 참외 농축액 첨가량에 따른 큰 차이는 없었다. pH는 참외 농축액 첨가량이 많을수록 약간 높은 경향을 보였으며 1일째에 감소한 뒤 농축액 함량에 따른 큰 차이는 없었다. 환원당은 1일째 급격히 감소한 뒤 2일째에는 약간 증가하는 경향을 보였다. 알코올 함량은 발효가 진행됨에 따라 증가하여 발효 4일째에 참외 농축액 9%(v/w)첨가 쌀막걸리가 11.50%로 가장 높게 나타나 참외 농축액 첨가량이 많을수록 높은 함량을 보였다. 알코올 성분 중 acetaldehyde는 참외 농축액 첨가량이 많을수록 낮은 함량을 보였으며 methanol은 참외 농축액 6%(v/w)첨가 쌀막걸리에서 199.08 ppm로 가장 높은 함량을 보였다. 관능적 특성은 참외 농축액을 6%(v/w)첨가한 쌀막걸리가 color, odor, taste 및 overall 면에서 각각 3.60, 3.60, 2.80 및 3.60으로 가장 높았으나 전반적 기호도가 낮게 나타났다. 이상의 결과 참외 농축액을 첨가한 막걸리의 제조는 가능하였으나 기호도 향상을 위한 감미료 등의 사용에 관한 연구가 요망되었다.

The Effects of Calcium Nutrition on the Activities of Lactate Dehydrogenase, Alcohol Dehydrogenase and Other Enzymes in Melon (Cucumis melo L.) Seedlings Subjected to Flooding

  • With transient flooding followed by poor or slow drainage plant roots may become reduction conditions because the root zone was fully filled with water. This study was examined the effects of calcium treatment in the early growth stage on biochemical changes in leaves and roots of melon (Cucumis melo L.) seedlings kept under flooding condition for 72 h. The activities of lactate dehydrogenase more gradually enhanced in the roots than those of leaves of melon seedlings treated with calcium. The activities of alcohol dehydrogenase associated with alcohol fermentation under low oxygen conditions continuously increased in the leaves and roots of seedlings untreated with calcium under flooding at least 72 h but those was constant within at least 12 h in treated with calcium. These results showed that calcium supplying in the early growth stage mitigated alcohol fermentation of melon seedlings kept under flooding condition for 72 h. Activities of nitrate reductase and acid phosphatase in the leaves and roots of seedlings in treated with calcium somewhat higher than those of non-treated with calcium. The activities of sucrose phosphate synthase and fructose-1,6-bisphosphatase of leaves of seedlings in treated with calcium more higher than those of non-treated with calcium. These results indicated that calcium nutrition mitigate the reduction of activities of some enzymes of melon seedling kept under flooding condition for 72 h.

시설채소 농업인의 건강 상태 및 근골격계 질환 실태 (Health Condition and Work-related Musculoskeletal Disorders in Greenhouse Vegetable Farmers)

  • The objective of this study is to survey the risk factors of greenhouse vegetables farmers' work-related musculoskeletal disorders(MSDs). To offer the fundamental data for agricultural improvement of greenhouse vegetable farms, the questionnaire of MSDs and heath condition were carried out. A group of 736 workers(males=492, females=244) in 6 branches constitutes the population and database for the analysis between 2004 and 2005. The sample branch was chosen based on paper are watermelon, strawberry, tomato, melon, cucumber, lettuce. The results are as follows: 1. Smoking rates in cucumber and tomato is the highest. 2. Drinking rates in strawberry, cucumber and lettuce is the highest in males, watermelon and melon are the highest in females. 3. Regular exercise rates in melon are the highest. 4. Physical and mental fatigue in females is higher than that of males in most crops except melon. That of strawberry and tomato is the highest. 5. The prevalence rates of medical diagnosed diseases are higher in order of osteoarthritis, herniated nucleus pulposus(HNP), and hypertension. That of strawberry, melon, and cucumber is high in case of osteoarthritis; Strawberry, melon, and watermelon are high in case of HNP. 6. Prevalence rates of musculoskeletal symptoms among the various pain areas are higher in order of low back, knees, and shoulders. That of tomato and watermelon is high in case of low back; strawberry and tomato are high in case of knees. These results can be used practically for agricultural improvement of greenhouse vegetables farms to prevent MSDs.

멜론 흰가루병 친환경 생물적 방제를 위한 Bacillus속 균의 길항력 평가 (Antagonistic Assay of Bacillus spp. for Eco-friendly Biological Control of Melon Powdery Mildew)

  • Podosphaera fusca에 의한 멜론 흰가루병은 우리나라에서 멜론의 심각한 식물병 중의 하나이다. 본 연구에서는 선발한 길항세균의 다양한 식물병원균에 대한 균사 생육 억제 및 메론 흰가루병 방제에 대한 효과를 평가하였다. 16S rDNA 및 gyrA 유전자의 염기서열을 바탕으로 선발한 길항세균 Bacillus sp. M09, M70 및 M99-1을 동정한 결과 B. velezensis로 동정되었다. B. velezensis M09, M70 및 M99-1는 다양한 식물병원균에 47~69%의 균사생육 억제 효과를 보였을뿐만 아니라 흰가루병균의 발생을 현저히 감소시켰다. 본 연구에서 선발한 3균주는 멜론 흰가루병뿐만 아니라 다양한 식물병에 대한 잠재적인 생물방제제로 활용될 수 있을 것으로 생각되었다.
