Effects of Additives on the Quality Improvement of Minced Ginger (Zingiber officinale Roscoe) During Storage (생강(Zingiber officinale Roscoe) 다대기의 저장 중 품질개선을 위한 첨가물 효과)

  • The effects of vinegar, alcohol and ascorbic acid on the color, microorganism, sensory properties and flavor pattern of minced ginger (MG) were investigated during storage for 28 days at $30^{\circ}C$. The values of L (lightness), a (redness) and b (yellowness) of the control (T-0) and all the treatments changed slightly at the initial stage of storage, however the elapse of time accelerated the changes. The total bacterial counts of T-0 showed $5.37{\times}10^7\;CFU/g$ at the initial stage, but the MG-treatments decreased the bacteria above 4 log compared to T-0. It was showed that the additives were effective for inhibition of the growth of microorganism. Sensory properties of flavor intensity test showed no significant difference between T-0 and MG-treatments (p < 0.05). The result of volatile flavor contents of electronic nose analyzer (ENZ) showed that MG-treatments (T-I, T-II, T-III) was recognized stronger than non-treatment at the initial stage, but the change of flavor compound were stabilized soon regardless of type or quantity of additives during total storage period at $30^{\circ}C$.

Effect of Dietary Additives on Growth, Feed Utilization, and Body Composition of Juvenile Rockfish Sebastes schlegeli (배합사료내 사료첨가제가 조피볼락(Sebastes schlegeli) 치어의 성장, 사료 이용성 및 체조성에 미치는 영향)

  • The effects of dietary supplementing natural additives [yacon (YC), ginger (GG), and blueberry (BB)] on growth, feed utilization, and body composition of juvenile rockfish were compared to those of ethoxyquin (EQ), which is commonly used to prevent rancidity of fish feed. A total of 480 fish were distributed randomly into 12 50-L flow-through tanks (40 fish/tank). Four experimental diets were prepared: the control diet (Con) with 0.01% EQ, and the YC, GG and BB diets containing 1% YC, GG, and BB instead of wheat flour. Each diet was assigned randomly to triplicate tanks of fish, which were hand fed to satiation twice daily for 8 weeks. Weight gain of fish fed the YC diet was higher than that of fish fed all other diets. Feed efficiency (FE), protein efficiency ratio (PER), and protein retention (PR) in fish fed the YC diet were higher than those in fish fed the other diets. Whole-body chemical composition of the fish was affected by the additive sources. In conclusion, dietary supplementation with GG effectively improved weight gain and feed utilization (FE, PER, and PR) of juvenile rockfish.

  • [6]-Gingerol, a major pungent ingredient of ginger (Zingiber officinale Roscoe, Zingiberaceae) has a wide array of pharmacologic effects. Our previous studies have demonstrated that [6]-gingerol inhibits mouse skin tumor promotion and anchorage-independent growth of cultured mouse epidermal cells stimulated with epidermal growth factor. In this study, we have investigated the molecular mechanisms underlying anti-tumor promoting effects of [6]-gingerol on mouse skin carcinogenesis. (omitted)

Changes in Volatile Constituents of Zingiber officinale Roscoe Rhizomes During Storage (생강 저장 중의 향기성분 변화)

  • This study was carried out to investigate the changes in volatile constituents concerning with the flavor of the green ginger (Zingiber officinale Roscoe) during storage in underground pit ($15^{\circ}C$, RH 95%). And the constituents of essential oil of etiolated shoots formed on the mother rhizomes during the five months storage in the dark under same conditions were compared with those of mother rhizomes. The essential oils of Korean domestic ginger (Bong-dong cultivar) were isolated by simultaneous steam distillation and extraction method (SDE). Then the compositions of the essential oils were analysed by GC and GC-MS spectrometry. The major compounds of essential oil from the fresh rhizomes were zingiberene, $citronellol+{\beta}-sesquiphellandrene$, ${\beta}-phellandrene$, camphene, geranial, ${\gamma}-bisabolene$, ar-curcumene+geranyl acetate, ${\alpha}-pinene$, ${\beta}-gurjunene$, limonene and neral. The content of monoterpene hydrocarbons increased with a concomitant lowering in the amounts of sesquiterpene hrdrocarbons and oxygenated sesquiterpenes during storage of rhizomes although contents of the oxygenated monoterpens changed little or slightly during the storage. During the storage the content of such monoterpenes as camphene, ${\beta}-phellandrene$ and citral (neral and geranial) increased whereas the content of such sesquiterpenes as zingiberene and $citronellol+{\beta}-sesquiphellandrene$ decreased. The composition of shoot oil differed from that of mother rhizome oil in having higher content of terpene hydrocarbons and also in the higher content of bornyl acetate, ${\beta}-gurjunene$ and ar-curcumene+geranyl acetate and lower in citral (neral and geranial).

Monitoring of Extraction Yields and Functional Properties of Ginger (Zingiber officinale) Extracts Using Response Surface Methodology (반응표면분석을 이용한 생강의 추출효율 및 기능성에 대한 모니터링)

  • Extraction characteristics of ginger (Zingiber officinale) and the functional properties of the corresponding extracts were monitored by the response surface methodology (RSM). The maximum extraction yield of 38.83% was obtained under the specific extraction conditions, such as microwave power of 126.68 W, ethanol concentration of 53.39% and extraction time of 8.15 min. The maximum electron donating ability (EDA) was found as 77.92% at the conditions of 58.25 W microwave power, 91.87% ethanol concentration and 5.54 min extraction time. The maximum inhibitory effect on tyrosinase was 79.39% at 106.08 W, 2.06% and 5.61 min. The maximum polyphenol content was 105.59% under the extraction conditions of 81.82 W, 99.52% and 4.06 min. Based on superimposition of four dimensional RSM with respect to extraction yield and electron donating ability and polyphenol content obtained under the various extraction conditions, the optimum ranges of extraction conditions were found to be microwave power of $0{\sim}80\;W$, ethanol concentration of $0{\sim}40%$ and extraction time of $3{\sim}7$ min.

Quality Properties of Peeled Ginger by Controlled Atmosphere(CA) Storage (CA저장에 의한 박피생강의 품질특성)

  • The quality properties of peeled ginger (PG) were investigated during CA storage at different $CO_2$ concentrations. $O_2$ concentration was kept constant at 5% while $CO_2$ of 6%, 14%, 22% and 30% were used. It was found that the weight loss rate tended to decrease with an increase of $CO_2$. In the case of fixed $10^{\circ}C$ storage, the L-value and a-value of the exterior color in treatment increased more than that of control with respect to time, while the b-value of the exterior color and the cutting plane color showed no significant difference. In the exterior color, the results of PG-$25^{\circ}C$ showed similar with PG-$10^{\circ}C$ except b-value of the exterior color which showed not a little change. The cutting plane color did not showed significantly difference in the PG samples between $25^{\circ}C$ and $10^{\circ}C$. Hardness of the PG during storage was found to decrease most severely at 6% of $CO_2$ concentration regardless of storage temperature. The growth of microorganisms during storage of the PG tended to be restrained as $CO_2$ concentration increased. However, microorganisms, when maintained at $25^{\circ}C$ storage, multiplied rapidly to $10^8$ CFU/g within 4 days regardless of concentration.

Dietary inclusion effect of yacon, ginger, and blueberry on growth, body composition, and disease resistance of juvenile black rockfish (Sebastes schlegeli) against Vibrio anguillarum

  • Background: To minimize the use of antibiotics and to obtain a more sustainable fish culture and aquaculture industry, development of alternative natural source of immunostimulant to replace antibiotic in aquafeed is highly needed. Objective: Dietary inclusion effect of yacon (YC), ginger (GG), and blueberry (BB) on growth, body composition, and disease resistance of black rockfish against Vibrio anguillarum was compared to ethoxyquin (EQ). Methods: Four hundred eighty juvenile (an initial weight of 4.2 g) fish were randomly distributed into 12 of 50 L flowthrough tanks (forty fish per tank). Four experimental diets were prepared; the control (Con) diet with 0.01% EQ inclusion, and YC, GG, and BB diets at 1% each additive inclusion. Each additive was included into the experimental diets at the expense of wheat flour. Each diet was assigned to triplicate tanks of fish and hand-fed to satiation twice daily for 8 weeks. At the end of 8-week feeding trial, 20 fish from each tank fish were artificially infected by intraperitoneal injection with 0.1 mL of culture suspension of pathogenic V. anguillarum containing 3.3 × 106 cfu/mL respectively. Fish were monitored for the following 8 days after V. anguillarum infection and dead fish were removed every 6 h for the first 4 days and 12 h for the rest of the study. Results: Weight gain, specific growth rate (SGR), and feed efficiency ratio (FER) of fish fed the YC diet was higher than those of fish fed all other diets. However, feed consumption, protein efficiency ratio, and protein retention was not affected by dietary additive. Moisture, crude protein, and crude lipid content of the whole body of fish were affected by dietary additive. Analysis of the Kaplan-Meier survival curves showed that survival of fish fed the YC, BB, and GG diets was higher than the Con diet. Conclusion: Oral administration of YC can improve not only weight gain, SGR, and FER of black rockfish, but lower mortality of rockfish at occurrence of V. anguillarum.

  • Yacon (YC), ginger (GG) and blueberry (BB) were added to the diet of juvenile rockfish Sebastes schlegeli to investigate the effects of these substances on growth, feed utilization and resistance to Streptococcus iniae compared to feed additive ethoxyquin. A total of 480 fish were distributed in 12 tanks and four experimental diets [control (Con), with 0.01% ethoxyquin, and 1% YC, GG and BB diets] were provided in triplicate. After an 8-week feeding trial, 20 fish from each tank were infected with Streptococcus iniae. Fish fed the BB diet had higher weight gain than fish fed the GG and Con diets. Feed efficiency of fish fed the GG and YC diets was higher than that of fish fed the BB and Con diets. The protein efficiency ratio of fish fed the GG diet was higher than that of fish fed any other diet. The cumulative mortality 54 h after infection of fish fed the Con diet was higher than that of fish fed any other diet. These results indicate that YC, GG, and BB are effective dietary additive, not only improving growth performance and feed utilization but also lowering the mortality of juvenile rockfish exposed to S. iniae.

생강엑기스의 제조에 관한 연구

  • 1) 본 연구에서 시료로 선정한 충남 서산산 건강(dry ginger)은 수분이 $9.4\%$, 회분이 $8.7\%$ 그리고 alcohol에 의한 추출량이 약 $9\%$이다. 이는 선진국에 채택사용하고 있는 건강의 규격기준에 의하면 양호하다. 2) Non- flavor물질의 추출을 최소화하고 특히 증류과정에서 유효성분 손실을 최소화 할 수 있고, 엑기스내의 용매 잔류량이 인체에 유해하지 않고 추출효율을 높일 수 있는 용매는 ethyl alcohol이다. 3) 널리 사용하고 있는 관류추출(percolation)의 성능을 분석하고 이의 개선방안을제시하였다. - 추출효율을 높이기 위하여 건강(dry ginger)의 입자를 작게하면 압력강하가 증대되어순환되는 용액의 유속을 제어하기가 힘들다. - 입자가 작을 시에는 유체의 흐름이chan-nelling현상을 나타낸다. - 위와 같은 조건에서는 물질 전달속도가 느리므로 추출효율을 증대시킬 수가 없다. - 따라서 percolation추출에 사용되는 건강의 입자크기는 30mesh크기 이상이어야 운전조작이 용이하나 추출효율이 낮으므로, 추출시간 6시간에 회수된 생강엑기스양은 약 $2.5\%$이다. 4) percolation추출의 단점을 보완하기 위하여 기계적교반 추출을 선택하여 다음과 같은 개선점을 찾았다. - 교반형 추출에서는 고 - 액분리시 cake 저항에서 문제가 야기되지 않는 범위까지 건강의 입자를 작게할 수 있으므로 추출효율을 크게 향상시킬 수 있었다. 즉, 작게 분쇄된 건강(30mesh통과$90\%$)을 대상으로 추출시간 3시간에 $7\%$의 회수율로 증대시켰다. 최적 운전조건은 다음과 같다. 건강시료:1kg 시료크기:-30mesh$90\%$ 용매:ethyl alcohol 3$\iota$ 교반속도:900r.p.m 추출온도:상온($15\~25^{\circ}C$) 추출시간:3시간 일차 추출조건과 동일하게 하여 얻어진 엑기스의 수율이 $2\~2.5\%$이므로 총엑기스의 수율은 건강(dry ginger)무게기준으로 $8.5\~9.5\%$이었다. 5) 교반추출의 효율이 개선되었다 하더라도 추출물의 분리가 용이하여야만 공정의 이용이 가능하다. 그러므로 교반추출후 고 - 액분리를 위하여 정압여과 장치를 이용하여 여과시 cake의 평균 비저항을 얻었으며, 이의 값은 $4.31\times10^8cm\;/\;gr$으로서 여과에는 어려움이 없다는 것을 의미한다. 따라서 추출속도와 효율이 상대적으로 우수한 교반형 추출기의 가능성을 예시할 수 있음을 알 수 있었다. 6) 추출물을 농축과정에서 휘발성 oil의 손실을 최대로 줄이기 위해서는 단순증류를 하지 말고 분별증류를 수행하여야 하며, gingerol과 같은 중요성분의 열분해 반응을 억제하기 위해서는 열전달 효율을 증대시켜 증류조작을 원활히 수행하여야 하므로, still내의 농축물을 계속 교반시켜야 하며 감압상태에서 증류온도는 $40\~50^{\circ}C$로 유지시키는 것이 가장 바람직하다. 7) Ethyl alcohol로 추출된 엑기스내의 수분이나 회분함량은 외국산 제품에 비하여 약간 낮고, 반면에 조지방 및 조단백 성분의 함량은 약간 높게 나타나고 있어 대체적으로 본 연구에서 얻어진 엑기스내의 비풍미성분(non- fla-vour component) 함량은 외국산에 비하여 많은 차이가 없다. 8) 수입 외국산에 비하여 국산엑기스(본 연구에서 ethyl alcohol로 추출)내의 무기성분등의 함량은 비교적 낮은 편이다. 9) 건강에서부터 oleoresin을 얻어 paradol을 제거시킨 후 순수한 gingerol을 분리하여 IR과 NMR로 확인한 결과, 국산건강의 엑기스에는 주로 6-gingerol이고 약간의 10-gingerol이 함유된 것으로 나타났다. 10) 순수하게 분리된 gingerol을 열분석(TGA와 DTG)한 결과 약 $75^{\circ}C$에서 gingerol의 열분해 반응이 일어남을 알수 있었다. 11) 건강 분말시료와 엑기스내의 미생물 검사 결과 건강분말에서는 세균수가 많이 존재하는 것으로 나타났으나, 이는 ethyl alcohol로 추출하는 공정 중 대부분의 균들이 사멸된 것으로 나타났다. 12) 관능적 측면에선, 본 연구에서 제조한 엑기스와 수입엑기스를 비교한 결과 생강 특유의 맛은 비슷했으나, 수입엑기스에서는 쓴맛과 톱밥냄새를 느낀다는 결과를 나타내었으며 전체적인 종합적 풍미는 국산 건강엑기스가 좋은 것으로 나타났다.

Genetic Variability, Correlation and Path Analysis for Yield Components in Korea Domestic Ginger (한국재래생강(韓國在來生薑)에 있어서 수량구성요소(收量構成要素)의 유전변이(遺傳變異), 상관(相關) 및 경로분석(經路分析))

  • Ninety-four collections of domestic ginger were evaluated for plant hight, leaf number, stem number, leaf length and width, rhizome yield per plant revealed good variability in stem number and rhizome yield per plant. Moderate variation was observed in plant hight, leaf number, leaf length, leaf width and stem diameter. Rhizome yield per plant was positively correlated with six characters, and leaf number, plant height and stem diameter were positive significant correlation with rhizome yield per plant. Path coefficient analysis indicated that stem number, followed by leaf number, stem diameter, had maximum direct effects on rhizome yield per plant. Maximum indirect effect was observed in case of plant height through leaf number. The indirect effects of leaf length and leaf width through leaf number, and plant height, leaf length and leaf width through stem diameter were also observed. From the selection point of view, the characters like plant height, stem number and leaf number per clump may be considered suitable in choosing a good genotype.
