Characteristics of UAV Aerial Images for Monitoring of Highland Kimchi Cabbage

  • Remote sensing can be used to provide information about the monitoring of crop growth condition. Recently Unmanned Aerial Vehicle (UAV) technology offers new opportunities for assessing crop growth condition using UAV imagery. The objective of this study was to assess weather UAV aerial images are suitable for the monitoring of highland Kimchi cabbage. This study was conducted using a fixed-wing UAV (Model : Ebee) with Cannon S110, IXUS/ELPH camera during farming season from 2015 to 2016 in the main production area of highland Kimchi cabbage, Anbandegi, Maebongsan, and Gwinemi. The Normalized Difference Vegetation Index (NDVI) by using UAV images was stable and suitable for monitoring of Kimchi cabbage situation. There were strong relationships between UAV NDVI and the growth parameters (the plant height and leaf width) ($R^2{\geq}0.94$). The tendency of UAV NDVI according to Kimchi cabbage growth was similar in the same area for two years (2015~2016). It means that if UAV image may be collected several years, UAV images could be used for estimation of the stage of growth and situation of Kimchi cabbage cultivation.

마(Dioscorea opposita)김치의 영양성분 및 관능적 특성 (Nutrition and Sensory Properties of Kimchi prepared with Dioscorea oppasita)

  • 본 연구는 마를 활용하여 마죽을 만든 다음 양념으로 마김치를 제조하였다. 마의 농도는 3%(W/W)로 하여 마맛김치, 마깍두기, 마포기김치를 제조한 다음 영양성분 및 관능 평가를 실시하였으며, 그 결과는 다음과 같다. 시료 100 g 당 3 종류의 마김치 열량은 35~40 kcal이였으며, 조지방, 포화지방, 트랜스지방 및 콜레스테롤은 검출되지 않았다. 나트륨 함량은 450~650 mg으로 마맛김치군 < 마깍뚜기군 < 마포기배추김치군 순으로 높은 함량을 보였다. 3종류 마김치의 비타민 C 함량은 저장 기간 28일에 급격히 높은 증가량을 보였으며, 마깍뚜기에 비해 마맛김치와 마포기배추김치에서의 비타민 C 함량이 크게 증가되었다. 3종류의 마김치 모두에서 Ca, K, Mg의 함량은 높았다. 마김치의 염도는 담금 직후부터 28일까지 맛김치와 깍두기에 비해 포기배추김치 염도가 2.38~ 2.72%의 적정염도를 유지하였다. 맛김치와 배추포기김치는 저장기간이 늘어나면서 명도값은 증가된 반면에 적색도값은 감소되는 경향을 보였으며, 대조군에 비해 마를 첨가한 실험군에서 높은 황색도값을 보였다. 3종류 마김치의 경도는 저장기간이 길어질수록 낮아졌다. 3종류 마김치의 관능검사에서는 대조군과 마를 첨가한 실험군 간에 큰 차이는 없었다.

  • This study was conducted to investigate the standardization of kimchi and related products. There are about 339 kinds of kimchi and related products in Korea. Half of those various kimchi was 50% of the total products, and the other groups are in the order of Jangachi (high salted vegetable pickles, Saengchae (a salad type kimchi), Kakduki(reddish kimchi), Keotjulyi(nonfemented kimchi), Pickles, Seobakji (kimchi based on raddish, fish and other ingredients) and Shickgae (lactic fermented fish products). About 200 ingredients (chinese cabbage, raddish, cucumber, other vegetables, fruits, seaweeds, fish, meat etc.) were used for those products. Tongbaechu kimchi (whole headded chinese cabbage kimchi) and Possam kimchi (wraped kimchi with chinese cabbage leaves) were made by about 30 ingredients, respectively. Kakduki, Oyster-kakduki, Chonkak kimchi (kimchi based on small raddish with leaves) and Tongchimi (raddish kimchi with brine soup) were made by raddish and more than 10 ingredients, but the subsidiary ingerdients were less than that of chinese cabbage kimchi. Other products such as Yulmu kimchi and Oisobaki (a cucmber kimchi) were also dicussed.

김치 모재료 채소의 질산염 함량 분포와 배추 염장처리 및 김치 조리방법에 따른 질산염 함량 변화 (Distribution of Nitrate Content in Vegetables for Kimchi Raw Material and Changes of Nitrate Content by Salting of Chinese Cabbage and by Cooking Process of Kimchi)

  • This study aims to find out the devices to minimize the amount of nitrate ingested from kimchi, the main way of vegetable intake for Koreans, and the basic data to deliver to calculate the total daily intake for Korean, investigating the year-round changes of nitrate content in vegetables for Kimche raw material, and changes of nitrate content by salting of chinese cabbage, and stewed kimchi through the use of different cooking methods. The results obtained were summarized as follow: over between 205-6655mg/kg f.w. in chinese cabbage, 480-3970mg/kg f.w. in chinese radish, 157-5820mg/kg f.w. in lettuce and 29-520mg/kg f.w. in cucumber respectively. Therefore it was strongly adviced to introduce the nitrate limit value of vegetables in Korea if the nitrate content in Kimchi should be reduced to meet the nitrate ADI(Acceptable Daily Intake, 219mg60kg b.w) of FAO.WHO, because the nitrate content in Kimchi reflects the nitrate content in vegetables. In order to keep the low nitrate content in Kimchi. it was adviced to remove the outer leaf which contains 2-3 times higher nitrate content compare to the inner leaf at the time of preparation, i.e. chinese cabbage, before the soaking treatment in salt solution for Kimchi making process. The dehydration by soaking treatment in salt solution occurred at 0.9%~4.7% in leaf midrib and more than 13%~24% in leaf blade. The nitrate content after soaking in salt solution was increased 107%~123% compared with before soaking, increasing rates of nitrate content in the outer and inner leaf midrib were higher than those in leaf blade. The increase of nitrate content in salt solution after soaking due to the dehydration of chinese cabbage by soaking treatment. The Kimchi stew(Kimchi JJige) was processed with and without animal oil, but the amount of nitrate in kimchi stew did not decrease both treatments, but it increased after the processing since the water in Kimchi stew has got low by boiling.

  • 절임 배추와 숙성된 김치의 동결저장 가능성을 조사하였다. 생배추의 조직은 급속침지동결이나 예비건조하면 완만공기동결이나 건조하지 않은 것에 비해 우수하였다. 절임 배추는 생배추에 비해 동결손상이 적었고 급속동결이나 예비건조에 의해 조직이 개선되지 않아 조직특성은 숙성된 김치와 비슷하였다. 김치는 동결시 동결하지 않은 것에 비해 약간 질겼으나 전체적인 품질에서는 유의적인 차이를 보이지 않았다. 동결저장시 절임배추는 3개월후 약간의 핑크색을 띄었으나 김치는 6개월 저장동안 이런 현상이 나타나지 않았고 품질도 거의 변화가 없었다.

배추김치 분획물의 in vitro 항암효과 (Invitro Anticancer Effect of Chinese Cabbage Kimchi Fractions)

  • In vitro anticancer effect of Chinese cabbage kimchi fractions was investigated by using human cancer cells, AGS human gastric adenocarcinoma cells and HT 29 human colon adenocarcinoma cells. The Chinese cabbage kimchi(fermented for 4 days at 15oC) was fractionated into 7 groups, methanol extract, hexane fraction(fr.), methanol soluble fr., dichloromethane fr., ethylacetate fr., butanol fr. and aqueous fr.. Chinese cabbage kimchi fractions inhibited the growth of AGS and HT 29 cancer cells as dose dependent. In particular, the dichloromethane fr. showed the highest inhibitory effect among other fractions. When the dichloromethane fr.(0.2mg/ml) was treated, the number of AGS and HT 29 survival cancer cells reduced to 12$\times$104/ml and 11$\times$104/ml compared to 166$\times$104/ml and 50$\times$104/ml of the controls, respectively. Chinese cabbage kimchi fractions also inhibited the DNA synthesis of the cancer cells. They inhibited the DNA synthesis of AGS human gastric adenocarcinoma cells more efficiently than that of HT 29 human colon adenocarcinoma cells. These results indicate that Chinese cabbage kimchi fractions show in vitro anticancer activity and the dichloromethane fr. among them reveals the highest effect.

배추김치즙의 Staphylococcus aureus, Salmonella enteritidis, Vibrio parahaemolyticus 및 Enterobacter cloacae에 대한 항균작용 (The Antibacterial Action of Chinese Cabbage Kimchi Juice on Staphylococcus aureus, Salmonella enteritidis, Vibrio parahaemolyticus and Enterobacter cloacae)

  • 배추김치의 항균작용을 실험한 본 연구에서 1개월간 발효된 배추김치즙 시료(염분 2.8%, 산도 1.34%, PH 4.1)를 2% 함유한 보통 한천 배지에서 실험군의 집락수 억제율은Salmonella enteritidis ATCC 13076이 가장 낮은 63%이었고 Enterobacter cloacae ATCC 13047과 Staphylococcus aureus ATCC 6538p은 각각 72%, 76%이었고 Vibrio parahaemolyticus ATCC 17802은 가장 높은 90%를 보였다. Vibrio parahaemolyticus ATCC 17802는 배추김치즙 함량이 6%에서 100%발육 억제효과를 보여 실험균 중 배추김치즙에 대한 저항력이 가장 약했으나 동일한 배추김치즙 시료농도(6%)에서 Salmonella enteritidis ATCC 13076, Enterobacter cloacae ATCC 13047, Staphylococcus aureus ATCC 6538p는 각각 89%, 90%, 91% 의 집락수 억제 효과를 보였다. 배추김치즙 함량 10%에서 모든 실험군의 집락가100% 억제되는 효과를 보였다. 실험결과 1개월간 충분히 발효된 배추김치에는 어떤 식중독균도 생존할 수 없을 것으로 밝혀졌다.

김치용 배추의 수경재배에 관한 연구 (A study on the hydroponic cultivation of Chinese cabbage for kimchi)

  • Hydroponic cultivation is a technology of raising crops without use of soil. Generally farmers use the method of DFT(deep flow technology)to grow leafy or fruity vegetables; however, systematic and scientific researches are insufficient on this matter. This study investigated the possibility of cultivating Chinese cabbage steadily year long by using the method of DFT. Chinese cabbage was cultivated hydroponically with and without Ge addition, used to prepare kimchi, and the chemical and microbiological characteristics of kimchi were compared. The basic hydroponic cultivation condition was as follows: 30 days after seeding, the raised seeds were moved to a hydroponic bed and given underground water for 3 days so the roots grow normally Standard nutrient solution was provided and the early electric conductivity concentration was maintained between 1.5∼2.5 thickness. The temperature of the solution was maintained between 10 ∼25$^{\circ}C$ to allow the growth of Chinese cabbage. When soil-cultivated, organically cultivated and hydroponically cultivated Chinese cabbages were compared, hydroponically cultivated cabbages were smaller in size and showed less ability to build up and fold leaves into a head, but showed better quality than organically cultivated cabbages. The contents of protein and fat showed no significant differences. The contents of water. Ca, P, Fe, Vitamin A and Niacin were higher in control and Ge-added cabbages compared with soil-grown cabbage. There was no difference between soil-cultivated Chinese cabbage kimchi and hydroponically cultivated Chinese cabbage kimchi.

절임정도에 따른 배추김치의 질감과 맛에 관한 연구 (A Study on the Texture and Taste of Kimchi in Various Saltings)

  • The effects of salting degree of cabbage on the chemical, microbiological, textural changes and taste of Korean whole cabbage Kimchi fermented at $21^{\circ}C$ was studied. Low salted Kimchi (1.8% NaCl, soaking for 2 hr. in 20% brine) was showed higher total acdity than high salted Kimchi II(3.1% NaCl, Soaking For 8 hr in 20% brine) and III(2.9% NaCl, no soaking in 20% brine). The changes in growth of lactic acid bacteria was relevant to the salt content of whole cabbage Kimchi. Kimchi I was showed higher growth rate of Lactic acid bacteria and slower death rate constant of Lactic acid bacteria than that of Kimchi II and III. In palatability test, salty taste of Kimchi II, III was more salty than that of Kimchi I ($p{\leqq}0.01$) and total evaluation of Kimchi I, II was more palatable than Kimchi III ($p{\leqq}0.05$) at 3rd's day (optimum taste). Cutting force by Rheometer was well correlated with the salt content of Kimchi.

조리서와 신문, 잡지기사에 나타난 1930-2010년대 배추김치 연대별 고추 사용량 변화에 대한 고찰 (A Literature Study on the Amount of Red Pepper in Cabbage Kimchi between the Decades from 1920 to 2010 in Cookbooks, Newspapers and Magazines)

  • This study compared and analyzed the consumption and amount of red pepper used in Baechu Kimchi (cabbage Kimchi) especially the amounts used in Kimchi recipes with respect to the passage of time from the 1930s to the 2010s. In this analysis, 78 recipes for cabbage Kimchi were taken from books, daily newspapers and magazines from 1930 to 2014 and collected for comparison. The result of the study showed that the consumption and inclusion of dried red pepper powder in cabbage Kimchi increased. The average consumption of red pepper in the 1930s was 5.75 g, and the number went up to 8.83 g in the 1940s, to 13.8 g in the 1950s, and to 20.25 g in the 1960s. The amount dramatically increased from 1970 to 1980 (53.37 g) and kept rising until 2010 (71.26 g). The average consumption of red pepper in cabbage Kimchi in the 2010s is about 12 times that of the 1930s.
