Effect of Kimchi and Its Ingredients on the Growth of Helicobacter pylori

  • Effects of kimchi and its ingredients, vitamin C and $\beta$-sitosterol on the growth of Helicobacter pylori were investigated. Three kimchi variations were studied: a standard recipe (kimchi I) and two functional variations for cancer prevention and treatment made with organically grown ingredients (kimch II and III). Methanol extracts and juices from kimchi I and III did not inhibit the growth of H. pylori. However, 10 mm and 12 mm inhibition zones were formed by methanol extract and juice from kimchi II, which had higher concentrations of red pepper powder (RPP) than those of kimchi I and III. Among the major kimchi ingredients, methanol extracts of RPP, garlic and ginger substantially inhibited the growth of H. pylori. The maximal inhibition zone (30 mm) was attained with garlic treatment. Inhibitory effects of the RPP, garlic and the sub-ingredient mixture (prepared with radish, garlic, RPP, ginger, green onion, sugar and fermented anchovy juice) on H. pylori were decreased by lactic acid bacteria fermentation. Neither the fermented garlic nor the fermented sub-ingredient mixture inhibited the growth of H. pylori. But, the inhibition Bone of fermented RPP was 12 mm, which was less than the 16 mm inhibition zone formed by the non-fermented RPP. Vitamin C and $\beta$-sitosterol which are known to be functional active compounds of kimchi also showed no inhibitory effect on the growth of H. pylori after 3 days of incubation. Further study is needed to determine why the inhibitory effect is removed or decreased by lactic acid fermentation, and to determine if fresh kimchi and lactic acid bacteria of kimchi can inhibit the growth of H. pylori.

찹쌀풀 및 새우젓 첨가가 김치 발효중 총 유리아미노산, 총 Vitamin C 및 환원형 Ascorbic acid의 함량변화에 미치는 영향 (Effect of Cooked Glutinous Rice Flour and Soused Shrimp on the Changes of Free Amino Acid, Total Vitamin C and Ascorbic Acid Contents during Kimchi Fermentation)

  • This study was intended to observe the effect of cooked glutinous rice flour and soused shrimp on the fermentation of Kimchi samples were fermented for 11 days at 10$^{\circ}C$ after they were previously fermented for 6 hours at 20$^{\circ}C$. Changes of pH, total acidity, salt content, reducing sugar content, free amino acid content, total vitamin C content, and ascorbic acid content were measured. The results were as follows; 1. Soused shrimp and glutinous rice flour added in Kimchi acted as lactobacilli growth enhancer during fermentation. 2. Initial cincentrations of redng sugars in Kimch samples with no soused shrimp, 5% and 10% sosed shrimp were 7.5~8.3 mg/g, 3.0~4.7 mg/g and 0.5~0.6 mg/g respectively. Kinchi samples with glutinous rice flour showed higher reducing sugar contents than Kimchi samples without it. 3. Free amino acid contents in Kimchi samples gradually decreased during fermentation at 10$^{\circ}C$. According to their soused shrimp concentration, contents of free amino acid of Kimchi samples were significantly different. And Kimchi samples with glutinous rice flour showed lower free amino acid contents than Kimchi samples without it. 4. Total vitamin C contentrations of Kimchi samples were 24.5~28.0 mg% at the initial stage of fermentation and 15.0~19.2 mg% at the final stage of fermentation. During the fermentation of Kimchi, the higher soused shrimp concentration, the less total vitamin C contents were remained. 5. During the fermentation, ascorbic acid contents of Kimchi samples were not affected by soused shrimp and glutinous rice flour.

서울 및 충청지역의 김치담금 재료비 및 숙성김치의 화학적 성질 조사 (A Study on the Material Ratio of Kimchi Products of Seoul and Chung Cheong Area and Chemical Properties of the Fermented Kimchis)

  • 김치 담금시 재료의 배합비와 숙성시 특성 측정을 위해 서울과 충청도에서 조사된 김장김치의 종류는 배추김치, 깍두기, 총각김치, 나박김치, 동치미, 보쌈김치, 백김치 등이었고 이 중 배추김치담금에 사용하는 주, 부재료는 약 20-25종류였으며 젓갈 및 어패류 의 사용이 많았다. 배합비는 배추 71.9%$\pm$7.7, 무채 11%, 파 2.3-2.6%, 마늘 1.3-1.6%, 고추가루 2.7-3.2% 그리고 젓갈 3.9~4.2% 등이었다. 봄김치는 배추김치, 깍두기, 총각김치와 열무김치, 오이김치 등을 담았으며 배추김치에 김장김치의 갓 및 굴, 새우 등 어패류 대신에 부추, 생홍고추, 양파 등 신선한 계절야채르르 많이 사용하였다. 양념류는 김장김치에 비해 젓갈은 다소 적고 그 외 사용비는 비슷하였으며 나박김치, 열무김치 등 국물김치에서 건더기와 물의 비는 약 40:48을 이루었다. 또한 배추김치의 최적 숙성은 pH 4.2~4.5, 총산도 0.5~0.8% lactic acid 범위였고 선호하는 염도는 김장김치류 2.3~2.74%, 봄김치류 1.8~2.4% 범위였으며 국물김치는 1.3~1.7%의 낮은 염도를 보였다.

중년기의 식습관 및 기호가 건강상태에 미치는 영향 (Effect of Middle-Aged Food Habit and Preference on Health Status)

  • This research was attempted to investigate the correlation between food habits as well as preferences and health conditions of middle-aged people. 380 people living in Dae-gu, kimch$\breve{o}$n and k$\breve{u}$mr$\breve{u}$ng gun in the 40's or 50's were selected for this research as subjects from July 1 to August 15, 1990. The data analysis was made by way of frequency, percentage, ${\chi}^2-test$ and Pearson correlation using SAS package. The summarized results are as follows. 1. Among the total subjects of this research, 200 people (52.6%) were male and 180 people (47.4%) were female. The regional distribution was like this; 115 people (30.3%) lived in large city, 154 people (40.5%) in small and medium city and 111 people (29.2%) in rural region. 2. The survey on food life attitude on the subjects showed that they had a relatively good attitude, and there were little significant differences (p<.05) between men and women. But there were significant differences (p<.001) between rural region and city. 3. On the preferences for taste, food and cooked food the subjects showed the lowest preferences for processed milk-fat food and the highest for soybean and processed soybean food. 4. The research on health condition 1) 30.8% of the subjects were obesity. And this research showed that the percentage of obesity was higher among men (33.5%) than women (27.8%), and higher in cities (40.4, 34.4%) than rural region (16.2%), (p<.05, p<.01). 2) 90.8% of the subjects showed negative according to Diabetes inspection. 3) 2.0% of the subjects were hypertensive, and the percentage was higher among women than men, and higher in rural region than cities. 4) 12.6% of the subjects were anemia, and the percentage was higher among women (17.8%) than men (8.0%), and higher in rural region (23.4%) than cities (7.0, 9.1%). 5) DMFT index and DMF rate of dental caries was higher among women (DMFT index; 10.6 DMF rate; 88.9) than men (DMFT index; 7.3 DMF rate; 81.5), and higher in rural region (DMFT index; 11.8 DMF rate; 90.1) than cities (DMFT index; 7.4, 7.9 DMF rate; 79.1, 85.7). 6) According to the survey on self-diagnosed health status of subjects, the percentages of articular·neuralgia (48.9%) was the highest. And that of stomach digestion troubles (31.1%), headache (22.4%), anxiety excitement (12.9%), spastic constipation (12.4%), insomnia (9.7%), melancholia (7.9%) and etc (1.6%) followed. 7) People had allergied food which contained animal protein such as pork, chicken, mackerel, siakworm pupa, clam and so on. 8) In female cases, 46.7% of women became already menopausal and 13.3% of them was under menopause. 5. This research showed that there were significant correlation between food life attitude and health condition in obesity, anemia and dental caries but not in blood pressure. 6. And this research also showed that there were significant correlations between food preference and health condition in obesity, anemia and dental caries but not in blood pressure.

천일염이 김치발표에 미치는 영향 (Effect of Solar Salt on the Fermentation Characteristics of Kimchi)

  • 소금 종류에 따른 김치의 품질특성에 관한 연구는 몇몇 보고된바 있으나, 김치는 원 부재료를 멸균하지 않는 비살균 개방형 발효로서 원 부재료의 토착미생물에 의하여 발효가 이루어지고 소금의 농도 및 온도 등의 발효조건에 영향을 받는다. 이에 천일염이 김치의 품질에 미치는 직접적인 영향을 규명하기 위해 박테리오신 생성능이 강화된 Leuc. citreum GJ7을 종균으로 사용하여 김치내 미생물 제어에 의한 발효조건을 동일하게 하여주고, 이에 사용된 천일염 (4년 숙성, 1년 숙성) 및 정제염에 따른 차이가 김치의 발효숙성 중 김치품질특성에 미치는 영향을 조사하였다. 산도 변화에서 정제염으로 제조한 김치가 1년 숙성 천일염과 4년 숙성 천일염으로 제조한 김치보다 최적 가식기에 도달하는 시기는 늦었으나 이후 급격히 산도가 증가하는 경향을 나타내었다. 김치내 총균수 및 유산균수는 4년 숙성 천일염 김치가 1년 숙성 천일염 김치와 정제염 김치에 비해 높게 나타났다. 숙성 33일에 Leuc. citreum GJ7 점유율은 4년 숙성 천일염 김치가 80.2%로 가장 높은 점유율을 보였으며, 1년 숙성 천일염 김치 75.8%, 정제염 김치 61.3%로 4년 숙성 천일염 김치가 가장 높게 나타났다. 김치의 황색도 (b)는 숙성시간이 경과함에 따라 증가되었으며, 정제염 김치가 증가폭이 가장 크게 나타났다. 또한 4년 숙성 천일염 김치가 경도가 가장 견고하였으며, 관능검사에서도 가장 높은 점수를 나타내어 김치발효에 가장 적합한 소금은 4년 숙성 천일염으로 나타났다. 김치담금사 사용소금에 따른 이와 같은 차이는 소금의 Na와 Cl 및 각종 무기질 조성 및 그 농도에 기인된 것으로 여겨진다.

묵은 김치 제조과정에서의 이화학적 및 미생물학적 특성변화 (Changes in Physicochemical and Microbiological Properties in Low-Temperature and Long-Term Fermented Kimchi during Fermentation)

  • To develop the low-temperature and long-term fermented kimchi, kimchi was prepared according to the recipe of a specific ratio of major and minor ingredients and adjusted its salinity to 3.7%. Prepared kimchi fermented at $15{\pm}1^{\circ}C$ for 24 hours and transferred and fermented in a refrigerator only used to make low-temperature and long-term fermented kimchi at $-1{\pm}1^{\circ}C$ for 30 weeks. During 30 weeks of fermentation the changes in physicochemical and microbiological properties of low-temperature and long-term fermented kimchi were studied. The initial pH of 6.47 decrease gradually and dropped to pH 4.0 after 14 weeks of fermentation, and then it maintained at same level. Acidity increased to 0.49% on 2 weeks of fermentation and kept at 0.47 $\sim$0.50% during 2 to 30 weeks fermentation. Salinity was slightly increased at early stage and started to decrease on 4 weeks of fermentation, and then it did not change. The change of reducing sugar content was closely related to the trend of pH change with a very high correlation coefficient(r =0.912). Lactic acid, citric acid, malic acid, succinic acid and acetic acid were major organic acids contained in low-temperature and long-term fermented kimchi. Vitamin C content decreased at initial stage of fermentation and then slightly increased up to the maximum of 22.3 mg% on 8weeks of fermentation. In color measurement, L value continued to increase during the fermentation and reached at the highest of 55.45 on 22 weeks of fermentation, and a and b values of 3.62 and 4.54 also increased to 31.26 and 37.32 on 30 weeks of fermentation, respectively. Total microbial count increased slowly from beginning and was the highest on 4 weeks of fermentation, and then began to decrease slowly. Count of Lactobacillus spp. was highest after 6weeks, but count of Lactobacillus spp. was highest on 2 weeks of fermentation, and then both showed a slow decrease. Yeast count wasn't increased until 4 weeks of fermentation and then increased rapidly to get the highest on 10 weeks of fermentation.

식생활(食生活) 관행(慣行)에 관한 한.일(韓.日) 양국(兩國)의 비교(比較) (Comparision on the Habitual Practice of Dietary Life in Korea and Japan)

  • This study was conducted to find out the successive habitual practice of dietary life and all the educational tasks for the purpose of activating with female college students in Korea and Japan. The reesults are as follows. Housewives in both countries prepare ${\ulcorner}the\;same\;menu{\lrcorner}$ for dinner about 65%. ${\ulcorner}The\;rate\;of\;domestic\;manufacturing\;of\;preservated\;food\;{\lrcorner}$ is superior in Korea. ${\ulcorner}Goch'ujang{\lrcorner}$ is made by the 92% of Koreans, ${\ulcorner}Doenjang{\lrcorner}\;89%,\;{\ulcorner}Ganjang{\lrcorner}\;48%,\;{\ulcorner}Oiji{\lrcorner}\;44%\;and\;{\ulcorner}Kimchi{\lrcorner}\;40%.\;{\ulcorner}Umeboshi{\lrcorner}$ is made by the 65% of Japanese, ${\ulcorner}Rakkyo-Zuke{\lrcorner}\;37%,\;{\ulcorner}Kajitsu-syu{\lrcorner}\;40%,\;and\;{\ulcorner}Miso{\lrcorner}$ 27%. Two countries' common seasonings are ${\ulcorner}Ganjang{\lrcorner},\;{\ulcorner}Salt{\lrcorner},\;{\ulcorner}Chemical\;condiment{\lrcorner},\;{\ulcorner}Sugar{\lrcorner},\;{\ulcorner}Pepper{\lrcorner},\;{\ulcorner}Doenjang${\lrcorner}\;and\;{\ulcorner}Vinegar{\lrcorner}$. Koreans use the traditional seasonings, and in addition flavoring vegetables and oil which is Korea's own characteristic. Japanese use western seasonings frequently besides traditional seasonings. ${\ulcorner}Mother's\;representative\;food{\lrcorner}$ as home dish are conscentrated on each count's native food. ${\ulcorner}Kimch'i\;lyu{\lrcorner}$ is made by the 42% of Koreans, ${\ulcorner}Doenjangchigae{\lrcorner}\;39%,\;{\ulcorner}Dakgangjong{\lrcorner}\;31%,\;and\;{\ulcorner}Saongsonmaeuntang{\lrcorner}\;19%.\;{\ulcorner}Misoshiru{\lrcorner}$ is made by the 83% of Japanese, ${\ulcorner}Nishime{\lrcorner}\;76%\;and\;{\ulcorner}Nikujaga{\lrcorner}$ 38%. Korea has more diverse kinds of food. People eat out ${\ulcorner}when\;they\;have\;special\;home \;events{\lrcorner},\;{\ulcorner}when\;they\;would\;like\;to\;do{\lrcorner},\;and\;{\ulcorner}when\;they\;are\;going\;out{\lrcorner}$, It means that to eat out is one of the daily dinning styles. Therefore, for those who are engaged in eating house business it is necessary to form their righteous view of evaluation. Koreans learn more various items of table manner than Japan, which are the symbols of dietary culture. ${\ulcorner}Carriage{\lrcorner}\;and\;{\ulcorner}Eating\;politely{\lrcorner}$ are common items. The extent to which ${\ulcorner}people\;practice\;table\;manner{\lrcorner}$ and to which ${\ulcorner}people\;think\;of\;it\;as\;being\;worth\;practicing{\lrcorner}$ are high in Japan than Korea.

굴김치 숙성에 따른 노로바이러스 대체 모델 Feline Calicivirus의 불활성화 (Inactivation of a Norovirus Surrogate (Feline Calicivirus) during the Ripening of Oyster Kimch)

  • In Korea, oysters are used as an ingredient of Kimchi (Korean pickled cabbage) in early winter. Although viral contamination of oysters, including contamination by norovirus, can provoke gastroenteric illness, little is known of the epidemiological relationship to outbreaks. We postulated that Kimchi ripening can reduce the infectivity of norovirus, in order to test this hypothesis, we carried out a model experiment. Since norovirus is currently regarded as non-culturable, feline calicivirus (FCV) was used as a surrogate to examine the activation of norovirus with Kimchi ripening. In commercial well-prepared Kimchi, the infectivity ($TCID_{50}$) of FCV decreased by 2 log every 12 hours and reached the limit of detection after 48 hours during over-aging at $25^{\circ}C$. During storage at $4^{\circ}C$, the infectivity ($TCID_{50}$) of FCV decreased slowly and reached 5.00 $TCID_{50}$ after 48 hours. The low pH appears to affect the infectivity of FCV directly via organic acids produced by ripening during over-aging and storage. In neutralized lab-prepared Kimchi (pH 7.0), the infectivity ($TCID_{50}$) of FCV also decreased and reached the limit of detection after 72 hours at $4^{\circ}C$. This indicates that there are substances beside organic acids in Kimchi that originate from the raw materials and are produced during ripening. Among the raw materials, salt-fermented anchovies and garlic showed high direct antiviral activity. The main factor decreasing the infectivity of FCV in Kimchi was the high acidity caused by organic acids, regardless of the type, produced by ripening. Furthermore, unknown secondary products of microorganisms associated with Kimchi ripening and antiviral materials originating from raw material might contribute to the decreased infectivity of FCV, the surrogate of norovirus.

식생활 간소화를 위한 표준식단에 관한 연구 (A study for the improvement of Standard menu, (for restrant))

  • Korean foods sold restrant and hotel accompaines so many kinds of side dishes. The menues never considered on the nutritional standpoint nor the volume that can be eaten by customers. The purpose of this study is to simplify and improve the menu of Korean foods sold in restrant. To find out the problem and the method of the betterment Korean food sold in restrant. The survey study was made for 100 restrants in Seoul city. Ther average number of side dish of the restrant food was 23. The average amount number of the side dish was 31 and smallest number was 4. The average amount of food served was 979 grams and the average number of food taken by people was 698 grams. The average percentage of intake of food was 62%. Protein Content of the foods sold restrant was from 54% to 240% over the recommended dietary allowances. Protein intake also exceeded from 19% to 147% of recommended dietary allowances. Age of the customers were surveyed to set up the standard amount of the nutrients. About 68% of the customers were from 30 to 40 years of age in the day time (lunch), whereas about 72% were from 20 to 30 years of age in the evening (supper). From the results of the survey study, two nutritional standard were decided to be used. One is the recommended dietary allowences of 25 years of man (reference man), and the other is that of 45 years of man. The actual standards are as follows : Standard 1 (25 years of man) Calories-900~1000Cal Protein-25-30g Vegetables-200~250g (include yellow, green vegetable), Amount of food-about 800g Standard 2 (45 years of man) Calories-700~800Cal Protein-25~30g Vegetables-150~200g (include yellow, green vegetable) Amount of food-700g The kinds of food recommended to be sold in the restrant are as follows : 1. Pansang-is a formal method of korean table setting 3 types, 7 chup, 5 chup, and 3 chup were studied and made, 2. Table for the quest with drink-2 types of table setting, 9 kinds of food and 7 kinds of foods were studied. 3. free meal-in this table, one pig protein dish with kimchi, one vegetable, and one salty flsh will be served, 19 kinds of foods were studies. 4. One dish meal-in one large dish, rice will be served with side dishes soup and kimch will be accompanied, 10 kinds of foods were studied. 5. Cafeteria style foods-one serving of food will be served in small dishes Customers should select the food want to eat.

한국 전통음식 통합 검색 시스템 구축을 위한 세시음식 연구 (A Study on the Traditional Korean Festival Foods for the Construction of a Traditional Korean Food Data Integration System)

  • This study was performed to offer basic data base on traditional Korean festival foods for a traditional Korean food data integration system, that is based on literature reviews. The Korean lunar calendar has seasonal divisions reflecting traditional Korean holidays. In the past, there were many customs corresponding to emotions, and foods were in accordance with customs, festivals, and seasons. Today, we are well aware of the traditional Korean foods of New Year's Day(Seollal), the Korean Harvest Festival(Chuseok), the First Full Moon Day(Jeongwol Daeboreum), the Winter Solstice(Dongji), and the hottest summer day(Sambok). However, many other traditional Korean holidays are disappearing from the modem Korean life-style. This study made the following classifications for traditional Korean festivals. Seollal(Seol), Ipchun, and Jeongwol Daeboreum in January; Junghwajeol in February; Samjinnal in March; Hansik and Chopail in April; Dano in May; Yudu and Sambok in June; Chilseok and Baekjung in July; Chuseok in August; Jungyangjeol in September; Siwolmuoil in October; Dongji in November; and Napil and Seotdal Geumeum in December. The familiar traditional Korean festival foods are as follows: Seollal's festival foods consist of 5 main dishes, 35 side dishes, 12 kinds of tteok lyou, 21 kinds of hangwa lyou, 2 kinds of emchong lyou, and 3 kinds classified as others; this includes tteokguk, manduguk, galbijjim, sinseollo, jeon, pyunyuk, kimch, tteok, sikhe, sujunggwa, fruits, and seju on Seollal. The festival foods for Jeongwol Daeboreum consist of 3 main dishes, 27 side dishes, 5 kinds of tteok lyou, 3 kinds of hangwa lyou, 4 kinds of emchung lyou, and 3 kinds classified as others; this includes ogokbap, mugeunnamul, yaksik, yumilkwa, wonsobyung, guibalgisul, and burum on Jeongwol Daeboreum. The festival foods for Sambok consist of 6 main dishes, 18 side dishes, 4 kinds of tteok lyou, 3 kinds of eumchung lyou, and 2 kinds classified as others; this includes yukgaejang, imjasutang, youngyejjim, tteoksudan, santtalgihwaschae, and subak on Sambok. Chuseok's festival foods consist of 4 main dishes, 22 side dishes, 18 kinds of tteok lyou, 6 kinds of hangwa lyou, 4 kinds of eumchung lyou, and 3 kinds classified as others; this includes oryeosongpyeon, toranatang, garijjim, dakjjim, namuls, tteok lyou, baehwachae, and fruits on Chuseok. The festival foods for Dongji consist of 6 main dishes, 6 side dishes, 7 kinds of tteok lyou, 1 kind of hangwa lyou, 2 kinds of eumchung lyou, and 1 kind classified as others; this includes patjug, jeonyak, and dongchimi on Dongji. Based on these data, it is recommended that knowledge of traditional Korean festival foods be handed down, preserving and develop their excellence and to further scientific studys.
