The objective of this paper is to understand the history, current status, and future of Korea meat processing industry. The numbers of businesses, employees and distribution in the domestic meat processing industry have steadily increased year by year. The trends of the Korea meat processing market are being launched with customized products due to rapid changes in consumer's lifestyle. Futhermore, the misconceptions against meat products have been still going on these days. Thus, meat products are perceived as a representative food for fast food and junk food to consumers, and growth of meat processing industry was slow-down due to concerns that some additives contained in meat products, such as phosphate and nitrite may not be good for human health, as World Health Organization (WHO) reported a couple of years ago. Therefore, future meat processing industries should be developed safe, and high quality consumer-oriented products. Finally, it will be able to achieve the unlimited development of the Korea meat processing industry by monitoring rapidly changing consumer needs, improving awareness and producing high quality meat products.

Fast foods are very popular to adolescent and the sales are increasing due to the convenience, low price, and a broad scale advertisement through mass media. Fast foods are often named as junk foods because of high calorie and fat, low vitamins and minerals contents. This study investigated the intake frequency of hamburger, pizza and fried chicken, the 3 representative fast foods, in 306 male and female high school students living in Daejeon. Data were collected by food frequency questionnaire, and analyzed by SPSS(ver. 18.0). Intake frequency of hamburger, pizza and fried chicken were 33, 29, 17 times per year, respectively. Intake frequency of these 3 fast foods were not sig. different by BMI obesity, breakfast and supper meal frequency, and first time of fast foods intake. But intake frequency of fast foods were different by the allowance, intake frequence of pizza and fried chicken are higher in students with higher allowance. Restrain score of fast foods intake were higher in underweight and obese than normal weight students. There were no sig. difference of intake restrain score by preferable future body figure. As conclusion, the most effective way of reducing the fast food intake frequency in adolescent were cutting down the allowance. Besides that education based on analysis about what are the specific nutritional defects in each fast food may help to change the behavior of fast foods intake.
Objectives: The purpose of this study was to evaluate the effects and develop the role and contents of the atopic dermatitis care program with Korean medicine in a public health center. Methods: The data were collected from 180 parents and 43 kindergarten teachers who participated in a child care program with Korean medicine. The program ran from April to October of 2012. The atopic dermatitis conditions of children were reported by SCORAD index; the questionnaires to measure effect and satisfaction of the program were composed of demographic items, children's life habit change checklist, etc. The questionnaires were executed before and after the program. Results: The SCORAD index total scores decreased (1.3908) after the program, especially itching scores (1.1) and sleep disorder scores (0.5693) significantly. The satisfaction with the program was 88% and 77% of parents and teachers groups, respectively. Making food and treatment were mentioned as the best program. The Children's food preference for junk food, irritability, and anger also decreased after the program. Conclusions: From this study, the atopic dermatitis care program with Korean medicine is worthwhile for treating atopic dermatitis.
The purpose of this study was to estimate the effect of "The unsafe food program" designed for improving children's biased eating habits coming from defenceless exposure to the instant food, fast food and adulterated food with MSG and artificial additives with analyzing the current condition of children's biased eating habits and preference for the unsafe foods. This program was performed for 5 year old children who was attending the kindergarten run by the author every day for two months. "The unsafe food program" consisted of the surveys on the parents' attitude towards food and health and children's eating habits, and of programs that was designed to attract children's attention to their daily food intake and to provide physical fitness, information about differences between wholesome food and junk food, and junk food's bad impacts on human body for children. In order to see the changes of children's body through this program, two physical examinations was preformed: SH pharmaceutical company's hair test to measure the accumulation level of toxic metal in children's hair and children's nutrition level before starting the program, and Ilsan Health Center's 'INBODY' test to analyze children's body composition such as body weight, skeletal muscle mass, body fat mass, BMI, body fat percentage and so on before and after the program. The results from this program follow as below. First, the unsafe foods were excluded from children's diet after parents came to recognize the negative effects of the unsafe foods. Second, children became highly interested in their daily diet through the course of gathering information by themselves and discussions together while testing and analyzing foods, and children demonstrated more self-restraint on fast food and instant food. Third, children's body constitution turned out to be improved by physical fitness in addition to this program. Fourth, children formed a good habit of eating well-balanced diet consisting of vegetables, staple food and fruits through this program designed to improve children's biased eating habits. From the results of this study it was confirmed that "the unsafe food project" had effects on improving children's eating habits.
This study was conducted to identify the characteristics of Korean diet in the view of food and food group intakes. The study subjects consisted of preschool children(PC), elementary school children(EC), high school students(HS), college students(CS), and adults over 30 years old living Seoul and the surrounding areas. The subjects over 30 years old were classified to 30-49 years, 50-69 years, and over 70 years. A dietary survey was conducted using 24-hour recall method and data were collected from 2392 subjects. Rice was a major contributor to many nutrients intake because of the amount of consumption. Vegetable oil made great contribution to fat intakes and eggs, squid, and anchovy supplied much cholesterol compared to other foods in all the age groups. Milk was major contributor of fat and cholesterol as well as calcium in younger age group, and seasoning gave much contribution to iron intakes. Mean dietary variety score(DVS) was 32 for EC group and 17 for subjects over 70 years, and tended to decrease along the increasing age. EC group consumed most variable number of foods of all groups but they consumed many junk foods, therefore the MAR value was low despite their high DVS value. Mean dietary diversity score(DDS) of each age group from PC group to subjects over 70 years was 4.34, 4.28, 3.79, 3.89, 3.76, 3.56, and 3.25, respectively. Food group, which was consumed below the minimum amount, was mainly fruits in all the age groups, and many subjects in HS group and over 30 years consumed dairy products below the minimum amount. From these results, age specific nutritional problems were found. PC group and subjects over 50 years seemed to need more diverse food intake than now, EC group did nutrient dense food, and HS group and subjects over 30 years did dairy products. Also, subjects took various nutrients from rice and seasoning contributed to some nutrients intakes. (Korean J Nutrition 34(5) : 568∼579, 2001)
This study investigated: 1) what weight-related behaviors college students practiced; 2) if the behaviors were performed for weight-related reasons; and 3) whether the behavioral practices differed by gender, race, and body weight status. This cross-sectional study used a questionnaire to collect information from a non-probability sample of undergraduate students (n=379; 48% men) recruited from large introductory psychology classes. Chi-square tests were conducted to examine simple comparisons, and multiple logistic regression analyses assessed differences. Male students reported adopting significantly fewer weight-related behaviors than females. Most frequently males increased exercise (69.2%), increased fruit and vegetable consumption (50%), skipped meals (46%), cut out sweets and junk foods (40%), and cut out between-meal snacks (35%). Female students most frequently increased exercise (67.4%), skipped meals (63%), increased fruit and vegetable consumption (62%), reduced the amount of food eaten (60%), and cut out between-meal snacks (51%). Negative behaviors were engaged in by only a few participants. Weight-related reasons were a significant factor for weight-related behavior adoption. Multiple logistic regression analyses showed that gender was consistently and significantly associated with the adoption of weight-related behaviors, while race and weight status were less consistently associated. Findings of this study will be helpful to dietitians who counsel college students. Results of this study may support effects to bring more comprehensive behaviorally-focused health md nutrition interventions to college campuses.

This study aims to understand the influence of COVID-19 on youth daily life by analyzing the correlation between youth health and diet according to whether economic status has changed due to COVID-19 and to provide basic data on program construction for the welfare of socially marginalized adolescents. As a result of the study, the proportion of respondents who answered that there was a change in economic status at a high rate for decreased academic performance (p<0.001), stress perception, and suicidal thoughts (p<0.001), and the proportion of decreased number of breakfasts and increased fast food consumption (p<0.001) was also high. These results of the study are thought to be the reason for the increase in adolescents who are alienated due to changes in home conditions due to COVID-19, which is expected to affect the physical and mental health of adolescents who lack communication and guidance, and the increase in delinquents rate due to reduced academic concentration and increased junk food intake. Therefore, through this study, it can be helpful to use basic data for the development of welfare programs such as non-face-to-face as basic data for teenagers alienated from COVID-19.

This study examined the factors related to drinking, health, and food habits of college students before and after participating in the activities of temperance club. The survey was conducted on 97 college students who participated in the temperance club. Scores on 'daily amount of alcohol drinking(p<.05)' and 'drinking expenditure(p<.05)' were significantly lower after temperance club participation. Drinking knowledge(p<.05), and health-related factors including 'concerns about health(p<.05)', 'health condition(p<.05)', and 'times of exercise(p<.05)' were significantly higher after temperance club participation. Food habits score was significantly higher after temperance club participation(m=46.0 vs. m=48.8, p<.01). The scores on 'I have three meals a day(p<.01)', 'I don't eat junk foods often(p<.05)', and 'I don't eat out often(p<.05)' were significantly higher after temperance club participation. Particiating in temperance club activities improved the factors related to drinking, health, and food habits. Therefore, we would like to provide the results of this study as basic data for creating a healthy drinking culture.

BACKGROUND/OBJECTIVES: Although children of ethnic minority groups are experiencing a transition from a predominance of undernutrition to overnutrition, there is little evidence of a dual-malnutrition burden. Therefore, this study examined the double burden of malnutrition among school-aged ethnic minority children living in mountainous areas and its association with their diets. SUBJECTS/METHODS: A cross-sectional study was conducted from September 2019 to March 2020 in 3 mountainous areas of Northern Vietnam among 1,556 ethnic minority school-aged children. The prevalence of under-nutrition (stunting and thinness) and over-nutrition (overweight and obesity) were measured using the WHO 2006 child growth standards (height-for-age and BMI-for-age Z-score). Nutritional practices were evaluated by the frequency of food consumption based on a 4-level scale. RESULTS: The percentage of children with stunting and thinness were 14.0% and 5.4%, respectively, while the figure for overweight/obesity was 9.4%. The factors positively associated with stunting were living in a family with more than 2 children or being Muong/other ethnicities compared to the Tay ethnicity. Children who consumed fish/shrimps/crabs or milk weekly/daily were less likely to be undernourished compared to those who never consumed these foods. By contrast, children who never consumed foods rich in vitamin A precursors and vitamin A and fruit or consumed daily snacks/junk food were more likely to be overweight/obese. CONCLUSIONS: Undernutrition remains a common issue among school-aged children and adolescents of ethnic minority groups, while over-nutrition exists simultaneously. Public health nutrition programs promoting adequate diets and positive lifestyle changes related to nutrition are essential to tackle the double burden of malnutrition among ethnic minority children.
The purpose of this study was to develop a web site providing sound and specific diet and nutritional information for internet users in different age groups to protect themselves from junk nutritional information. Among 660 internal users (436 in their 20s, 154 in their 30s, and 63 in their 40s), 66.4% had access to a computer to get nutritional information. Almost 38% of those in their 20s searched in the internet using the term 'diet', whereas 25.9% of those in their 30s and 27.1% of those in their 40s searched using 'cooking and recipe'(p<0.001). The main purpose of using nutritional information on the internet of the subjects was 'to take care of health'(p<0.001). Seventy percent of subjects answered 'so-so' for the satisfaction about the content of nutritional information that was self-explored. Contents related to nutritional information which needed to be improved was 'sound information' for 47.2% of those in their 30s, 'convenience for the application to daily life' for 51.1% of those in their 20s, and 39.6% of those in their 40s. A specialized nutritional information site must to be developed for users to gain access to reliable and valuable information without difficulty, as the variety of the interested area and application area for each user.
