A Study on Human Resources Management for Hotel Kitchen (호텔주방 인적자원관리 방안에 관한 연구 -서울지역 특급호텔 중심으로-)

  • Since 1998 IMF economic crisis, hotel companys have made an operation innovation in generally to reinforce a competitive power. Never ther less, a structural depression with high expense of costs-low degree of efficiency and high price of commodities-low degree of growth during the last few years. And hotel companys were doing endeavor for conquer this depression with reshuffle of the personnal system and that systematizing an enterprise and production control. Hotel has more increase personnel expenses percents than increase sold price percents so that hotel reducing cook and as result, hotel has a problem from production selling of foodservice because that is insufficient of cook man power. On studying this research, an importancy of cusine department in inquire hotel and an efficiency man power control of cusine department influence on hotel marketing were made use of analysis for hotel kitchen management. The result of this study is like that. First, the quality of a hotel employee is directly related to that of hotel service, which is functioned as a principle factor on which success or failure of tie hotel very largely depends, Second, fair evaluation of merits. Third, cognition for job as expert. Fourth, the roles and competences of the employees were affected much by the inner or outer environmental changes surrounding the hotel enterprises. Fifth, do not underestimate an intelligent ability and will power of employee, and hotel company have to manage that the employees consult themselves about their things of department and improve with the master sense for job. Sixth, pay increase and intensive system. This system can raise the will to achievement for employee's job, and company can get many benefits from government. Seventh, the employees should be encouraged to have memberships of academic organizations, to actively participate in academic meetings, workshops, conferences, and forums in the area of job performance.

Contact Frequency and Psychological Distance between Leaders: Job Distress and Mediation through Employees' Perceived Self-Leadership (리더와의 접촉빈도와 심리적 거리가 직무 디스트레스에 미치는 영향: 구성원이 인지하는 셀프리더십의 매개효과)

  • Purpose - This study aims to investigate a solution to reduce the negative reactions arising from the performance of duties or the job distress of workers in the service industry, because human resource statistics regarding workers in the service sector have been unreported, while concerns regarding exposure to emotional exertion and poor working conditions have been continuously increasing. Research design, data, and methodology - This study specifically focused on workers in highway service areas. It differs from previous studies because it involves the perspective of the person-organization fit and regards workers' cognition of leaders through the psychological distance toward the leader and the contact frequency between workers and leaders within the framework of the leader-individual fit. Moreover, this study highlights the role of the self-leadership of workers as an important factor that becomes manifested in the individual-level fit to the organization. Hence, this study investigates whether the positive role of the above factors, in turn, could reduce job distress. Workers from highway service areas in Gyeonggi-do province provided data; 141 valid questionnaires are collected. SPSS 19.0 and AMOS 19.0 were used to test the reliability and validity of constructs. Simple regression, multiple regression, and 3 step mediation tests were used to test the hypotheses after the correlation tests. Results - Results indicated that leader-member contact frequency and psychological distance have negative effects on job distress but positive effects on self-leadership. A mediation test revealed that self-leadership, in the relationships between contact frequency and job distress and between psychological distance and job distress, resulted in partial mediation and full mediation, respectively. Conclusions - The result can be understood through two different possible explanations. First, service area workers generally possess a positive perspective toward their leaders. This can be interpreted to mean that increased contact frequency and psychological distance would be considered as supports from the leader, rather than intrusive controls or management schemes. Therefore, the management in highway service areas should invest efforts in increasing contact frequency as well as maximizing psychological similarities by adopting the viewpoints of workers in terms of moral and ethical management, to reduce the workers' job distress. The results relating to self-leadership also indicate that increased contact frequency must be accompanied by intentions for the effective promotion of workers' self-leadership. It also signifies the necessity of a strategic approach by leaders to induce workers to perceive "in-group"ness as suggested both by the similarity-attraction theory and by the social identity theory. In addition, the results of the mediation test of self-leadership indicate that because workers' self-leadership activates upon increased contact frequency by the leader, it should not be a means of control and should not be utilized only from the perspective of management. It is also suggested that strategies such as transfer of authority could have a positive effect in promoting the expansion of self-influence from workers.

The Experience of Nursing Staff on the Dementia Patients′ Aggressive Behavior (간호제공자들의 치매노인 공격행동 경험에 대한 연구)

  • Providing care to the dementia elderly with behavioral problem is a major issue in nursing homes today. This study was aimed to explore the nursing staffs′ response to aggressive dementia patients, and the effect that the aggressive behavior had on Nsgstaff. The interviews used a semi-structured questionnaire are were carried out from May to July, 1999. The subjects were 23 nursing personnel working in the nursing homes for dementia elderly. The result are as follows; 1. The types of aggressive behavior cited by the subjects was "physical", "linguistic", and "sexual". 2. The factors that caused the behavior were "symptoms of disease", "under- conditioning", "context of nursing care", "unsatisfied need", "relationship to other patients", "change of outer environment", and "invasion of one′s own privacy". 3. The response of the subjects were "unhappiness", "stress", "anger", "exaggeration", "anxiety", and "fear". 4. The management strategies listed by nursing personnel used to alleviate aggressive behavior were "ignorance" "patience" "leaving the area" "soothing sounds" "verbal punishment" "restriction and isolation" and "various management skill appliance" "adaptation". 5. The effect that aggressive behavior and were "disturbance of relationship to elderly" "decline in the amount and quality of nursing care" "interruption of task performance" "job exhaustion" "desire to leave the job" "physical impact" "stress on the cognition of others" "anxiety about health and one own future" "interference to family life′. The findings of this study will be useful in understanding the difficulties of nursing personnel when confronting the aggressive behavior of dementia partients. It also is useful as basic data in preparing efficient intervention program for these difficulties.

The effect of Emotional Leadership of Dental Hygienist on job satisfaction (치과위생사의 감성리더십이 직무만족에 미치는 영향)

  • This study investigated the effect of emotional leadership on the job satisfaction of dental hygienists. Therefore, we tried to determine a way to improve job satisfaction through emotional leadership, which is one of the skills that dental hygienists should have. The study subjects were 237 dental hygienists working in dental clinics in Jeollabuk-do from April 16, 2018 to April 28, 2018. The data was analyzed using the SPSS 12.0 program. The following results were obtained. The emotional leadership of the subjects was lowest for leadership ability (3.15), and the average job satisfaction was 3.43. Salary levels were low, ranging from 2.49 to 2.98. The final academic achievement and dental career had significant influences on emotional leadership (p<0.05). Marital status, self-cognition ability, self-management ability, and relationship management ability influenced the subjects' job satisfaction. The explanatory power of the multiple regression model was 26.5% and the validity of the model was statistically significant (p<0.05). Based on the above results, it was determined that self-recognition ability, self-management ability and relationship management ability of emotional leadership are all highly related to the job satisfaction of dental hygienists. Thus, emotional leadership of dental hygienists can be strengthened to enhance empathy, understanding and management of others' feelings. Therefore, institutional support should be provided for developing an emotional leadership program based on education and training.

Career Cognition, Key Competency, Vocational Values of University Students and Junior College Students (대학생의 진로 관련 인식, 직업기초능력, 직업가치)

  • The purpose of this study was to analyze career cognition, key competency, vocational values of university students and junior college students. The study was carried out through questionnaire survey method. The population sample for the study constituted 368 completed questionnaires from sample of 373 freshmen-women of university and students. A survey questionnaire consisted of career cognition items, key competency scale, vocational values scale, and personal characteristics items. The construct validity of key competency scale and vocational values scale were confirmed by factor analysis with varimax rotation. Both descriptive and inferential statistics were employed for data analysis. Major findings of this study were as follows: First, university students and junior college students most wanted to get a job after graduate. Many students decided their career at high school days. Many students were not prepared for their career after graduate. They recognized that major curriculum of university and junior college was very helpful to prepare their career. And many students discussed with their parents about their career. Second, key competency of them was moderately high. In the items of key competencies, 'communication and following' was the highest. And key competency of university students was better than that of junior college students. Key competency of male students was better than that of female students. Third, vocational values of them were high. In the items of vocational values, 'occupational stability' was the highest, and 'work in freedom and challenge' was the lowest. 'Occupational stability' and 'work in freedom and challenge' of junior college students was higher than that of university students. And 'occupational stability' of female students was higher than that of male students.

The Impact of Ethical Leadership on Unethical Pro Organizational Behavior: The Dual Mediating Effect of Job Engagement and Organizational Commitment (윤리적 리더십이 비윤리적 친조직행동에 미치는 영향 직무열의와 조직몰입의 이중 매개효과)

  • The purpose of this study is to examine the impact of Ethical Leadership on job engagement, organizational commitment and unethical pro-organizational behavior and to analyze the dual mediation effect of job engagement and organizational commitment. We used 565 questionnaires collected by members in domestic companies. The result of the analyses are as follows: First, Ethical Leadership has no positive effect on unethical pro-organizational behavior. Second, in the relationship between Ethical Leadership and unethical pro-organizational behavior, job engagement does not play a mediating role, but organizational commitment plays a mediating role. Third, in the relationship between Ethical Leadership and unethical pro-organizational behavior, job engagement and organizational commitment play a dual mediating role. The theoretical implication is that this study once again confirmed the behavior patterns such as cognition, emotion, attitude and behavior of members in the organization. In addition, this study can contribute to theoretical expansion by explaining that these behavior patterns are identified by social exchange theory. The practical implication is that this study confirmed that members in the actual management field are willing to perform unethical pro-organizational behavior in order to achieve the organization's goal efficiently and effectively. Therefore, it is suggested that active efforts should be made to recognize these negative influences and possibilities at the organization level and to create a clean and fair organizational culture and environment that everyone can recognize at the social level.

A study on the employment preparation cost and attitude of college student for Job-seeking (국내 대학생의 취업태도 및 취업준비 비용에 관한 연구)

  • This Study focuses on the university students' job attitude and cost of employment preparation. Nowadays, many university and college students spend a big money improving their employment preparation such as studying on foreign language, getting various kinds of certificates and tooth correction, clothing etc. for employment interview. This study investigated the cost of employment preparation and Job attitude of the 484 students of universities and colleges, the analysis of the collected data was conducted with SPSS 12.0 program by using frequency analysis, factor analysis, reliability assessment, correlation test, t-test, one way ANOVA. The university students paid more costs of employment preparation such as a language training abroad, a private training, and clothing than the college students. Also, Allied social science students paid more costs of the language training abroad, and clothing than allied computer science and allied design students. The female students paid more money than male students for tooth correction. The costs of language training abroad, private training and clothing are affected the students' socioeconomic background of a home. Regarding the job attitude of students, the university students are feeling more positive than the college students of the employment efficacy and cognition of the education environment. As result, the differences in the cost of employment preparation by the university type, faculty major course, their sex, and socioeconomic background of a home. The student's employment-efficacy and cognition of the education environment are also differences between the university and the college students. So, to improve the job attitude, developing their ability for employment preparation, educational programs should be arranged in school and continuous researches are needed.

A Study on the Factors of Women Student's Dropout from Engineering College (공학계 여학생의 중도탈락 요인에 관한 연구)

  • In order to aware the situation and factors of women students' dropout from engineering college, the factor analysis for women students in P university was performed. The results showed responses that social cultural effects is more significant ones than social effect alone, and the effects of negative gender cognition in industrial circle and college to the women employees and coeds are more significant than effects of regional or positional ones. Also showed responses that the physical difference from man students, the ability for handling machine and tools, her parents' moral support, the gender cognitive engineering education and the boosting for job recruiting are more significants effects than the scholastic ability or the ageism. This may lay the foundation to make a curriculum for women included engineering education that emphasize the gender cognitive approach and the circumstances.

Cognition of VT CEOs on the Theoretical Success Conditions of Contracting-out VT Services (직업훈련 민간위탁의 이론적 성공조건에 대한 훈련기관장의 인식과 시사점)

  • This paper analyzes cognition of the vocational training (VT) CEOs on the theoretical success conditions of contracting-out VT services to private training providers, by using survey results on 87 CEOs. The survey results show that VT CEOs agree with most of the theoretical success conditions of contracting-out VT services. The only thing they do not agree with the theoretical success conditions was that CEOs prefer direct trainee recruiting instead of referral by public employment service offices after consulting and job capacity assessment. This implies that government can smoothly transfer vocational training policies suitable for the success conditions of contracting-out vocational training services to private training providers.

The Cognition and Attitude for Internal and External Organizational Behavior of Health Centers Staff (보건소조직(保健所組織)의 내(內)·외부적(外部的) 행위(行爲)에 대한 보건소장(保健所長) 및 직원(職員)들의 인식(認識)과 태도(態度))

  • This study was conducted to the cognition and attitude for internal and external organizational behavior of health centers staff. An analytical model employed in this study was developed by modifying 'organizational behavior model'. Data was collected a mail survey of officers at health center, including 66 directors and 1,768 staffs of the health centers in southern region. The major findings are as follows : Among directors of the health centers 47% of them stated that legislators and chief executive officer(CEO) of local governments are highly concerned about the public health program. However only 15.2% of health center directors reported that legislators and CEO put public health high priority. For leadership type of directors 39.0% of them was classified as controller, 30.3% as participant, 22.7% entertaining and 7.6% comprehending. Regarding sociopsychological characteristics of the health center staffs, about a quarter of them had high degree of group cohesion, while 10.7% had low degree. Those staffs who are older, high educational level, or working in the rural health centers showed higher degree of cohesion than those who are young, low educational level, or working in urban health center. A third of them were less likely to be satisfied by what they are doing at the health centers. The higher educational level, the likely to be satisfied by what they are doing at the health centers. The higher educational level, the more satisfied with their job. Considering these results, policy implication was discussed and suggested. It is suggested that educational efforts be made to improve leadership of the health center directors and concern with public health program by the CEOs and legislators of local governments.
