To investigate the effects of dietary phytate reduction and zinc supplementation on biochemical iron parameters in elderly Korean women consuming inadequate iron, fifteen healthy women aged 64-75 years were recruited for a feeding study. A high-phytate diet (27.8 phytate:zinc molar ratio) was provided for 9 days, followed by a nine-day low-phytate diet(12.3) and a subsequent 28-day period of unregulated meals with zinc supplementation (22 mg/d as zinc gluconate). Serum iron increased significantly with the low-phytate diet (130.4 $\mu g$/L) but returned to the level observed during the high-phytate diet (113.0 $\mu g$ /L) period when subjects were taking zinc supplements (105.8 $\mu g$ /L). However, serum ferritin in the subjects decreased significantly with the low-phytate diet (73.8 $\mu g$ /L) as well as with zinc supplementation (57.2 $\mu g$ /L), compared to levels following consumption of the high-phytate diet (89.6 $\mu g$ /L). Transferrin receptor and transferrin saturation were unchanged with the treatments. In summary, zinc supplementation might result in deteriorated iron status in elderly Korean women who consume inadequate iron, while there was no significant effect from reducing dietary phytate.
The surveys of food intakes were carried out on 49 healthy infants aged 4-9 months at the first interview and repeated 3 more times at the interval of 2 months by using food diary recorded by their mothers. Of the subjects 12 were breast-fed, 28, formula-fed, and 9, mixed type-fed. Foods introduced first as the weaning food were commercial weaning foods, fruit juices, yoghurt, egg and rice. Supplemental food was introduced at the age of 4 months in 57% of the infants, but it amounted to a significant proportion of overall food consumption from the age of 6 months. The levels of nutrients except energy, iron and niacin were similar or in excess of RDA, and breast-fed infants tended to have lower intakes of energy and protein compared to infants formula-fed or mixed type-fed. Average intakes of vitamin A, vitamin B1, vitamin B2, vitamin C and calcium were above RDA, but iron intake did not meet RDA of infants of all ages. In conclusion, the average status of nutrient intakes of infants was fairly good, however, food consumption besides milk was less in breast-fed infants than in formula-fed infants, and iron status seemed to be poor, Although it is well-known that breast-milk compared to formulas is more beneficial for infants, mothers feeding breast-milk to their infants should be educated for the importance of supplemental food and its practice to support good nutrition.
In order to investigate the differences of nutrient intakes by the economic status and different age groups and to identify the nutritional risk group and its specific nutrition problem, 2001 Korean National Health and Nutrition Survey were analyzed. The subject's numbers of 9,391 were classified into four classes such as low (14.2%), medium (37.2%), high (26.0%), and high above (22.6%) on the basis of the family monthly income and the 2001 Korean minimum cost of living according to the family size. Mean intakes of energy and all nutrients assessed by the RDAs, lipid-energy %, and MAR were increased as the economic status were going up. Na intake expressed per 1,000kcal was in reverse. Nearly a half(45.5%) of the low-income people seemed to take nutritionally inadequate diet in consideration with MAR values. Deficiencies of iron and even energy in the toddlers (1 to 2 years) of low-income class were of great concern. Adolescent age group has been observed that their calcium and iron intakes, and possibly energy, were appeared to be the most deficient among all the age groups regardless of the economic status. For the elderly in all the economic status except high-above class, calcium, vitamin A, and riboflavin were commonly deficient nutrients. Calcium deficiency was appeared throughout nearly all the ages except toddlers and all the economic classes. Even in the high-above class 57.3% took insufficient amount of calcium.
The objective of this study was to investigate the effects of iron supplementation and nutrition education on the iron status and anemia of middle school girls in Ulsan city in Korea. The subjects were already diagnosed as having anemia (hemoglobin < 12 g/dL) or iron deficiency (ferritin < 12 ng/mL and/or transferrin sataturation < 14 %). Over a period of three months, one iron tablet (80 mg Fe as ferrous sulfate/day) was administered to the iron deficient subjects and two tablets (160 mg Fe as ferrous sulfate/day) were administered to the anemia subjects. Total calorie intake of subjects was 82.1 % of RDA. The iron intake of subjects was 91.3 % of RDA and the Ca intake was 78.8 % of RDA. The basal hemoglobin concentration of subjects averaged 12.8 1.2 g/dL, and this increased significantly (p < 0.001) to 13.2 0.9 g/dL after iron supplementation. The basal ferritin concentrations were 14.9 14.2 ng/mL and these significantly increased to 26.6 19.8 ng/mL (p < 0.001). The level of total iron binding protein (TIBC) significantly decreased from the initial 523.1 108.7 $\mu\textrm{g}$/dL to 462.2 90.2 $\mu\textrm{g}$/dL (p < 0.001) after iron supplementation. Anemia symptoms such as‘Being bruised easily’, ‘Inflamed inner mouth’, and ‘Pale face’ improved significantly after iron supplementation in the subjects. There was a negative correlation between their class & year ranking and serum iron level, transferrin saturation after nutritional education and iron supplementation. It was shown, therefore, that the higher the improvement of their anemia level after iron supplementation, the higher their academic performance. It was shown that there was some improvement of their dietary attitudes after nutritional education, and that their serum level related to anemia symptoms and iron nutrition was improved after iron supplementation.

The purpose of this study was to evaluate the obesity index and effect of dietary zinc and iron levels on serum trace minerals status in the high fat diet-induced obese rats. Male Sprague-Dawley rats were randomly assigned to control and high fat diet groups. Ten weeks later, the control and high fat diet group were rearranged into six groups by zinc and iron levels. After 16 wk serum zinc, iron, copper and manganese was analyzed. Obesity index was significantly higher in the group fed high fat diet (20% lard) than that of control group (5% corn oil). Body fat content was 12.10$\pm$4.51g/100g BW in high fat diet group and 7.64$\pm$4.18g/100g BW in control group. So, the obese rats were successfully induced by high fat diet. The trace mineral concentration of obese rats in serum were affected by zinc levels. Serum zinc concentration was increased by dietary zinc overload, whereas the iron, copper and manganese were decreased. Specially the manganese concentration was significantly affected by zinc levels. In both groups, serum trace mineral concentration was not changed significantly by the dietary iron levels. There were positive correlations between zinc, iron and manganese concentration according to dietary zinc and iron levels.
A survey was performed to 238 male young men who were living alone (104 persons) or living with roommates (134 persons). Their average age was 22.6 years old, height 171.8cm, and weight 65.6kg. Their daily calcium intake level was averaged 271.9 $\pm$ 169.1mg, which was 38.8% of Korean Recommended Dietary Allowances(RDA). Comparing calcium intake of each mealtime, breakfast, lunch, dinner, and snacks were composed of 18.6%, 30.0%, 34.0% and 17.4%, respectively. Their daily iron intake level was averaged 8.9 $\pm$ 10.8mg, which was 74.3% of Korean RDA. Comparing iron intake of each mealtime, breakfast, lunch, dinner, and snacks were composed of 15.4%, 33.6%, 36.3% and 14.7%, respectively. Deficiency of these minerals in young male adults were severe and the nutrient qualities were also poor and the deficiency was more profound in calcium than in iron. And we observed iron nutrition differed significantly according to their living status, such as iron intake and its %RDA were significantly worse in single living subjects than the other. However calcium did not show significant difference. It was found mineral intake, especially iron, could be improved in young men living with roommates than living alone and regular breakfast could improve calcium and iron intakes. This study was performed to determine the changes of maternal iron status during pregnancy cross sectionally, and to evaluate the appropriateness of the cut-off points of hemoglobin (Hb). hematocrit (Hct), serum transferrin receptor (sTfR) and sTfR : ferritin ratio for assessing iron deficiency status based on serum ferritin level (< 12${\mu}g$/L). Serum Hb concentrations in the first trimester were significantly higher (p < 0.05) than those in the second and third trimester. Serum levels of iron and ferritin in the third trimester were significantly lower (p < 0.05) than those in the first and second trimester. On the other hand, sTfR:ferritin ratios in the third trimester were significantly higher (p < 0.05) than those in the first and second trimester. sTfR concentrations did not change significantly during pregnancy. The appropriate cut-off points of Hb were 11.5g/dL for whole period of pregnancy. 12.0g/dL for 1st trimester. and 11.5g/dL for both 2nd and 3rd trimester. The good cut-off points of Hct were 34% for whole period of pregnancy. 36% for 1st trimester. and 34% for both 2nd and 3rd trimester The suitable cut-off points of TIBC were 400${\mu}g$/dL for whole period of pregnancy. 360${\mu}g$/dL for 1st trimester, and 400${\mu}g$/dL for both 2nd and 3rd trimester. Any cut-off point of sTfR could not be selected because of its low sensitivity and specificity. The proper cut-off point of sTfR : ferritin ratio was 600 or 650 for all the periods determined except the first trimester. In conclusion, there were no reliable cut-off levels of sTfR and those of sTfR : ferritin ratio showed low specificity. The cut-off values of Hb and Hct for assessing iron deficiency were slightly higher than the values used to evaluate anemia. Thus, if appropriate cut-off levels were applied, Hb. Hct, or TIBC might be useful indices for evaluating iron deficiency as well as anemia.
The purpose of this study was to investigate the status of magnesium, iron, copper and zinc nutrition in 28 normal and 28 obese male elementary school students who have over 30% obesity index. The anthropometric measurements, dietary intakes and serum levels of magnesium, iron, copper and zinc were determined by 24-hr recall method and blood analysis, respectively. The mean age, height, weight, and obesity index were 10.9years, 147.4cm, 61.1kg, and 50.5% in obese group and 10.8years, 145.4cm, 40.2kg, and 3.3% in normal group. There was no significant difference in average daily food intake between obese and normal group, but meats(p<0.05) intake of obese group was significantly lower than that of normal group. The intakes of energy, magnesium, iron, copper were not significantly difference between obese and normal group, but heme iron(p<0.05) intake of obese group was significantly lower than that of normal group. Zinc(p<0.05) intake of obese group was significantly higher than that of normal group. Serum magnesium(p<0.001) level of obese group was significantly higher than that of normal group, but there were no significant differences in serum iron, copper, zinc levels between obese and normal group. There was a significantly positive correlation between serum magnesium and weight(p<0.05), and obesity index(p<0.05). There was a significantly positive correlation between serum magnesium and energy intake(p<0.05), protein intake(p<0.05), animal protein intake(p<0.05), phosphorus intake(p<0.05) and animal iron intake(p<0.05). There was a significantly positive correlation between serum magnesium and seaweeds intake(p<0.05), milks intake(p<0.001). Also, there was significantly positive correlation between serum copper and oils and fat intake(p<0.05). These results suggest that there should be careful considerations for micronutrients nutrition status among male obese elementary school students.
BACKGROUND/OBJECTIVES: The prevalence of atopic dermatitis in infants is increasing worldwide. However, the nutrient intake status of infants with atopic dermatitis has not been studied properly. This study was conducted to compare the nutrient intake status of infants in the weaning period with atopic dermatitis by feeding type. MATERIALS/METHODS: Feeding types, nutrient intake status and growth status of 98 infants with atopic dermatitis from age 6 to 12 months were investigated. Feeding types were surveyed using questionnaires, and daily intakes were recorded by mothers using the 24-hour recall method. Growth and iron status were also measured. RESULTS: The result showed that breastfed infants consumed less energy and 13 nutrients compared to formula-fed or mixed-fed infants (P < 0.001). The breastfed group showed a significantly lower intake rate to the Dietary Reference Intakes for Koreans than the other two groups (P < 0.001). In addition, they consumed less than 75% of the recommended intakes in all nutrients, except for protein and vitamin A, and in particular, iron intake was very low, showing just 18.7% of the recommended intake. There was no significant difference in growth by feeding type, but breastfed infants showed a significantly higher rate of iron deficiency anemia (P < 0.001). CONCLUSIONS: Continuous management programs should be prepared for breastfed infants with atopic dermatitis, who are in a period when rapid growth takes place and proper nutrient intake is essential.
This study was performed to assess the lead and cadmium status of children residing in urban factory area and to see if there is a difference of lead and cadmium status between the group with normal iron status. The mean lead concentration of male hair was 9.55ppm which is significantly higher than 6.61 ppm that of female. The mean lead concentration of male urine sample was 0.04ppm, 10.3ppm and $48.14\mu{g/L}$, which is higher than 0.08ppm, 6.08ppm and $20.69\mu{g/L}$ of normal group, respectively. In a suboptimal group the proportion of children whose urinary lead is higher than normal$(35\mu{g/L)$was 87.3%, whereas 2.5% for a normal group. The mean cadmium concentration of male hair was 2.58ppm, which is higher than 2.48ppm that of a female. The mean cadmium concentration of erythrocyte, hair and urine was 0.25ppm, 2.65ppm and $38.83\mu{g/L}$, which is higher than 0.20ppm, 2.40ppm and $19.78\mu{g/L}$ of the normal group, respectively. The proportion of children whose urinary cadmium level is higher than the low limit of risk of cadmium intoxication$(40\mu{g/L)}$ was 21.4%, whereas 0% for a mormal group. Urinary lead and cadmium level showed significantly negative correlation with the RBC count, hematocrit, hemoglobin and serum ferritin, whereas they had significantly positive correlation with FEP/Hb(p<0.01). There was no correlation between the IQ and the level of lead and cadmium.
