계란의 Cholesterol : 문제점과 대책 (Egg Cholesterol : Effects on Health and Perspective)

  • Egg cholesterol has been a hot issue in respect of it's effect on health and diseases in human. There is a general recognition that the cholesterol from eggs is similar to that from the other dietary sources in its biochemical functions. Many evidences show that egg yolk increased plasma cholesterol levels at an average rate of 2.3 mg /100 rnL plasma for every 100 mg cholesterol consumed. The elevation of plasma cholesterol could, however, be altered by various dietary factors such as ratios of polyunsaturated fatty acids and saturated fatty acids. Blood cholesterol levels of Korean adults have been raised up to, on the average, 193 and 187 mg /100 mL plasma for men and women, respectively, from 167/5 mg /100 mL in 1980. Furthermore, proportion of hypercholesterolemics(> 210 mg /dL) has been increased up to 23% of the population. These changes in blood cholesterol levels are attributed to the changes of dietary patterns, suggesting the arguement that Koreans are insensitive to changes of blood cholesterol is not right. Egg cholesterol levels have never been successfully reduced to any significant levels even with tremendous amounts of efforts made during last decades. The alternative and the best way to control blood cholesterol level originating from egg consumption appeares to enrich egg fat with omega-3 series fatty acids. Ingestion of the fatty acid group has specific functions to reduce hypertension and prevent various types of cancer as well as to reduce blood cholesterol. Another way to reduce egg cholesterol directly is to produce smaller egg yolk without reducing whole egg size since cholesterol is located only in the yolk. It is important to keep faith with consumers by providing correct informations on eggs, meanwhile efforts need to focus on to improve the quality of eggs as one of the best protein food items.

채소류 중 발암성 농약의 위해성 평가 (Risk Assessment on Carcinogenic Pesticides of Vegetables in Korea)

  • Objectio ostinato the carcinogenic risks from the ingestion of some carcinogenic pesticides (CPs) in vegetables sampled at a local agricultural product market in Seoul. Methods: After applying a hazard identification step, we selected four pesticides, such as DDT, dieldrin, folpet, and heptachlor epoxide, for this risk assessment. Concentrations of each pesticide were measured from randomly sampled vegetables. In order to estimate the human exposure levels, we combined the concentration of pesticides in the vegetables with consumption rate of those vegetables. Three scenarios were hypothesized for human exposure assessment. Scenario I was the most conservative which supposed the undetected CPs would be the detection limit values. Scenario II was assumed that the undetected CPs would be a half of the detection limit values, and finally scenario III merely considered only values greater than the detection limit values. We finally presented the estimated carcinogenic risks on the basis of the traditional risk assessment procedure suggested by U.S. EPA. Results: Pesticides including DDT, dieldrin, folpet and heptachlor epoxide were detected in 9 samples (6%) in the range of $0.0006\sim0.09ppm$. The daily intake levels of carcinogenic pesticides were estimated in the range of $0.0009\sim0.0079{\mu}g/day$. As we expected, excess cancer risks based on scenario I was also the highest $(1.1\times10^{-8}\sim5.5\times10^{-5})$. Conclusions: We found that the estimated risks from the pesticides we investigated were not serious. We, however, propose that a continuos monitoring is needed to make sure for the protection of public health.

The study on development of easily chewable and swallowable foods for elderly

  • BACKGROUND/OBJECTS: When the functions involved in the ingestion of food occurs failure, not only loss of enjoyment of eating, it will be faced with protein-energy malnutrition. Dysmasesis and difficulty of swallowing occurs in various diseases, but it may be a major cause of aging, and elderly people with authoring and dysmasesis and difficulty of swallowing in the aging society is expected to increase rapidly. SUBJECTS/METHODS: In this study, we carried out a survey targeting nutritionists who work in elderly care facilities, and examined characteristics of offering of foods for elderly and the degree of demand of development of easily chewable and swallowable foods for the elderly who can crush foods and take that by their own tongues, and sometimes have difficulty in drinking water and tea. RESULTS: In elderly care facilities, it was found to provide a finely chopped food or ground food that was ground with water in a blender for elderly with dysmasesis. Elderly satisfaction of provided foods is appeared overall low. Results of investigating the applicability of foods for elderly and the reflection will of menus, were showed the highest response rate in a gelification method in molecular gastronomic science technics, and results of investigating the frequent food of the elderly; representative menu of beef, pork, white fish, anchovies and spinach, were showed Korean barbecue beef, hot pepper paste stir fried pork, pan fried white fish, stir fried anchovy, seasoned spinach were the highest offer frequency. CONCLUSIONS: This study will provide the fundamentals of the development of easily chewable and swallowable foods, gelification, for the elderly. The study will also illustrate that, in the elderly, food undergone gelification will reduce the risk of swallowing down to the wrong pipe and improve overall food preference.

급식횟수가 체내의 지방축적과 지방조직의 lipase에 미치는 영향 (Influence of Periodicity of Eating on Body Fat Accumulation and Lipases in Rat Adipose Tissue)

  • Activities of lipoprotein lipase (LPL) and hormone-sensitive lipase (HSL) in adipose tissue, accumulation of carcass fat, and serum triglyceride have been determined in meal-fed (MF) and ad libitum-fed (AD) rats. At each feeding frequency, the animals received diets providing total fat as 15% or 30% of calories and polyunsaturated fatty acids (PUFA) as 2.5% or 11% of calories. The food intake of the MF rats was 75% of that consumed by the AD rats but MF rat utilized their food more efficiently, as evidenced by weight gain per 100 Kcal consumed. Meal feeding, as contrasted to ad libitum feeding, resulted in greater activities of both LPL and HSL. This suggested a higher turnover of fat in the adipose tissue of MF rats. In AD rats, body fat was significantly correlated with LPL and the ratio of LPL/HSL. Meal feeding significantly increased the ratio of LPL/HSL, indicating a greater capacity for energy storage and fat deposition in the MF rat. However, at the limited caloric intake, MF rats failed to realize this potential; there was no significant difference in percentage of body fat at the two feeding frequencies. Body fat deposition was greater in rats fed the 30% fat diet, as compared with the 15% diet, regardless of the rate of food ingestion. This was coupled with a higher ratio of LPL/HSL. The significant correlation of serum triglycerides with body fat and with the ratio of LPL/HSL in AD rats suggests that LPL activity and fat deposition may be controlled by the concentration of circulating triglycerides. Both serum triglycerides and adipose LPL activity were significantly reduced when the diet contained high levels of PUFA. The percentage of body fat was also lower in animals whose intake of PUFA was high.

성주군 S 초등학교 및 중학교에서 집단 발생한 세균성 이질에 관한 역학조사 (Epidemiologic Investigation on an Outbreak of Shigellosis in Seongju-gun, Korea, 2003)

  • Objectives: An outbreak of shigellosis occurred among students and staff of S primary and middle school, Seongju-gun, in 2003. This investigation was carried out to institute an effective counterplan, and study the infection source and transmission of the shigellosis. Methods: The authors conducted a questionnaire survey among 235 students and staff from S preschool, primary and middle school relating to the ingestion of school lunch and the manifestation of symptoms. Also, the author investigated the drinking water, feeding facility and reconstructed cooking process of the food presumed to be the cause of the shigellosis. The diarrhea cases were defined as confirmed cases and those cases who had had diarrhea more than one time, accompanied with symptoms such as fever, vomiting and tenesmus. Results: From rectal swabs 20 people, between June 28 and July 4, 2003, were confirmed with shigellosis. The diarrhea attack rate was 40.0%. Those who had ingested tomatoes and cubed radish kimchi had significantly higher diarrhea attack rates (p<0.05), with the relative risk of tomatoes being 2.69 (95% CI: 0.98-7.42). The major cause of shigellosis was presumed to be from contaminated tomatoes due to cooking with rubber gloves containing holes. Conclusion: The cooks in charge of school lunches must make doubly sure to not only attend to their sanitation, but also to manage the table wear and items used in providing school lunches. The health care authority should introduce higher-leveled criteria for health care among cooks, so that they cannot cook when the have a case of any infectious disease.

가금류와 지렁이를 이용한 음식물 쓰레기 재활용 방법에 관한 연구 (A study on recycling of food waste using poultry and earthworms)

  • 음식물쓰레기를 사료화하여 산란계(Gallus gallus) 또는 청둥오리(Anas platyrhynchos)에게 급이하고 그 음식물을 먹은 닭 또는 오리의 배설물을 줄지렁이(Eisenia fetida)에게 급이하여 퇴비화하는 recycling system 구축 가능성을 검토하기 위하여 음식물 쓰레기에 대한 닭과 오리의 섭식률, 배설률 및 계분, 오리분에 대한 지렁이의 섭식효율을 조사하였다. 음식물쓰레기를 닭 또는 오리에게 급이하였을 때 음식물쓰레기 처리량과 배설율은 닭의 경우 0.40kg/일, 71.0%, 오리의 경우 0.79kg/일, 53.7%로 나타났다. 계분과 오리분을 처리하기 위해 건조된 제지슬러지나 인분케익과 혼합하여 부숙후 지렁이에게 급이한 결과, 지렁이 생장에 제지슬러지를 혼합한 시료가 인분케?보다 효율적인 것으로 나타났다. 또한 계분 또는 오리분에 건조된 제지슬러지를 혼합하여 21일 이상 부숙시킨 시료에 대한 지렁이의 섭식효율이 21일 미만 부숙시킨 것보다 효율적이었다.

알코올 전처치한 흰쥐에 Cyclohexane 투여로 인한 간 세포 내 소포체 미세구조의 변화 (Ultrastructural Changes of Endoplasmic Reticulum on Hepatocytes by Cyclohexane Injection in Alcohol-pretreated Rats)

  • 주류의 섭취가 산업화학물질의 생체 내 독성유발에 어떠한 영향을 미치는지를 검토하기 위해 흰쥐를 이용하여 15%에탄올을 6주간 섭취시킨 후, cyclohexane(CH)을 2일 간격으로 4회 복강 투여하고 24시간 후 다음과 같은 결과를 얻었다. CH의 투여로 인해 정상군과 비교하여 간 무게와 헐청내 xanthine oxidase활성은 증가되었고, 간 내 glucose-6-phosphatase활성은 감소되었다. 그리고 CH 대사효소인 cytochrome P450 dependent aniline hydroxylase와 alcohol dehydrogenase의 활성은 CH투여 후 유의적으로 증가되었으며, 알코올 전처치 후 CH투여군이 가장 높은 활성을 보였다. 미세구조적으로도 알코올 섭취군과 CH투여군 모두에서 조면소포체로부터 활면소포체로의 전환이 일어났으며, 전 실험군 중 알코올 전처치 후 CH투여군이 가장 높은 전환율을 보였다. 이러한 결과들로 볼 때, 병변을 초래하지 않는 수준의 알코올의 섭취는 CH대사활성을 증대시키는 것으로 판단되었다.

음주에 따른 음성 변화에 대한 고찰 (Studies on Voice Changes Associated with Alcohol Intake)

  • Background and Objectives : It has been pointed out that alcohol intake in human beings induces changes in voice register and maximum phonation time. These changes supposedly result from injection of the vibratory vocal folds. The purpose of this study was to clarify the voice changes associated with alcohol intake and the changes of laryngeal mucosa. Materials and Methods : The subjects included 29 volunteers, including 20 men and 9 women ranging in age from 22 to 31 years. Alcohol intake was accomplished by oral administration of 23% soju 1 bottle (255cc). Serum alcohol concentration levels were evaluated hourly for 3 h after ingestion of alcohol. Seven measurements were performed at pre-alcohol intake and post-alcohol intake hourly : fundamental frequency, jitter, shimmer, noise to harmonic ratio as the acoustic analysis, maximal phonation time, mean flow rate, and subglottal pressure as the aerodynamic analysis. The changes of laryngeal mucosa were evaluated by flexible laryngoscope at each measurement. Results : By comparing the acoustic and aerodynamic data and laryngeal mucosa before and after alcohol intake, there were not remarkable changes (p>0.05). Conclusion : The voice and laryngeal mucosa have not remarkably changed according to alcohol concentration in this study. Furthermore studies on the voice change induced by multiple alcohol concentrations are required.

사상의학적(四象醫學的) 비염치료(鼻炎治療)에 관한 연구(硏究) (A study on the treatment of rhinitis by Sasang Constitutional Medicine)

  • 1. The purpose of this study This study was performed on the basis of clinical consideration about rhinitis patients who suffered from sneeze, rhinorrhea, rhinocleisis and etc. And we checked the clinical inclination of this disease and the characteristic treatments of Sasang Constitutional Medicine. 2. The method of this study For 17 months from October in 1999 to April in 2001 we selected outpatients who had consulted for rhinitis more than twice in the department of the Sasang Constitution of the Bundang Oriental medical hospital, Dongguk University, and 31 of those were confirmed of their course of treatment. From their medical records and history, we learned the general characterisics and patterns of rhinitis, and the qualities and effects of its various treatment. 3. The result of this study The result were as follows ; 1) The rate of patients who have had the symptoms over the two years was 74.2%. 2) In the distribution of chief symptoms, sneeze occupied 80.6% of all appealed symptoms, rhinocleisis 77.4%, rhinorrhea 71.0%, intranasal pruritus 54.8%, postnasal drip 16.1%, orderly. 3) The treatment period was about 30days. The method of treatment was the Herb-med Tx, acupuncture Tx and etc. The herb-med ingestion was about two times in that period. 4) On the effect of treatment, Sneeze and rhinocleisis were improved. 5) The symptoms of rhinitis was more depravated by fatigue and stressful condition than weather condition. This result shows that the improvement of general condition has an effect on the rhinitis treatment.

Feeding by common heterotrophic protist predators on seven Prorocentrum species

  • Species belonging to the dinoflagellate genus Prorocentrum are known to cause red tides or harmful algal blooms. To understand the dynamics of a Prorocentrum sp., its growth and mortality due to predation need to be assessed. However, there are only a few Prorocentrum spp. for which heterotrophic protist predators have been reported. We explored feeding by the common heterotrophic dinoflagellates Gyrodinium dominans, Oxyrrhis marina, Pfiesteria piscicida, Oblea rotunda, and Polykrikos kofoidii and the naked ciliate Strombidinopsis sp. (approx. 90 ㎛ cell length) on the planktonic species Prorocentrum triestinum, P. cordatum, P. donghaiense, P. rhathymum, and P. micans as well as the benthic species P. lima and P. hoffmannianum. All heterotrophic protists tested were able to feed on the planktonic prey species. However, O. marina and O. rotunda did not feed on P. lima and P. hoffmannianum, while G. dominans, P. kofoidii, and Strombidinopsis sp. did. The growth and ingestion rates of G. dominans and P. kofoidii on one of the seven Prorocentrum spp. were significantly different from those on other prey species. G. dominans showed the top three highest growth rates when it fed on P. triestinum, P. cordatum, and P. donghaiense, however, P. kofoidii had negative growth rates when fed on these three prey species. In contrast, P. kofoidii had a positive growth rate only when fed on P. hoffmannianum. This differential feeding on Prorocentrum spp. between G. dominans and P. kofoidii may provide different ecological niches and reduce competition between these two common heterotrophic protist predators.
