Lipid Composition and Palatability of Beef Meats Consumed in Korea (국내소비(國內消費) 쇠고기의 지방질(脂肪質) 성분과 기호성(嗜好性))

  • The lipid composition of domestic and imported beef samples was analyzed and the lipid rancidity and flavor changes during their cooking and storage for 48 hours at $4^{\circ}C$ were investigated. The contents of total lipids and neutral lipids of raw, cooked and cooked-stored samples were higher in domestic beef than in imported beef. During cooking by simmering or roasting and storage for 48 hours at $4^{\circ}C$, the contents of total lipids and phospholipids showed a decreasing tendency in all samples. The results of sensory test for domestic and imported beef samples with two different cooking methods revealed significant differences between domestic and imported in both simmering and roasting. In a palatability test by hedonic scale, no significant difference was observed among roasted samples while a significant difference was observed among simmered samples between cooked domestic and cooked-stored imported beef. The increaase of TBA values in all cooked samples was mild right after cooking whereas it was rapid in cooked-stored samples. As TBA values increased, sensory scores decreased in all samples.

Comparison of structure and physicochemical properties of commercial domestic and imported wheat starch (시판 우리밀과 수입밀 전분의 구조 및 이화학적 특성 비교)

  • This study characterized the chemical structure and physical properties of domestic commercial wheat starch and compared them with those of imported commercial wheat starch. Three varieties of domestic commercial wheat starch (DWS) were compared to three types of imported wheat starch (IWS). The morphology of DWS granules was spherical with diameters 17.0-18.3 ㎛; the IWS granules exhibited various diameter sizes (16.6-17.7 ㎛). The amylose content of both DWS and IWS was between 23.2-23.8%. DWS exhibited smaller gelatinization temperature ranges and gelatinization enthalpies compared to IWS. These results suggest that IWS-PW (plain wheat starch) is a mixture of many types of wheat starch. In conclusion, the quality of domestic wheat flour and imported wheat flour was related to gluten content as well as to the starch properties.

A Survey on the Safety of the Imported Foods in Gwangju (광주지역 수입식품의 안전성에 대한 조사연구)

  • In order to provide fundamental data of food circulation policy, we performed monitoring the safety of the imported food which was circulating through Gwangju from March to October, 2005. Acid and peroxide value which are barometers for evaluation of the quality of lipid were investigated in 130 samples of imported oil treatment food. Not-permitted tar pigment and artificial sweetner were investigated in 139 candies by TLC and HPLC. The content of sulfur dioxide in 129 samples of dried fishery products and dried fruits was investigated by Monier-Williams method. In 130 samples of imported oil treatment food, 9 samples (6.9%) were incongruent with acid value, 6 samples (4.6%) with peroxide value and 4 samples (3.1%) with acid value simultaneously with peroxide value. In 139 imported candies, not-permitted artificial sweetner were found in 2 samples (1.4%). In 129 samples in which sulfur oxide was analyzed,4 samples (3.1%) were incongruent. Finally, in total 398 samples in which this study was analyzed, 25 samples (6.3%) were incongruent.

Proximate and Fatty Acid Compositions of Three Species of Imported and Domestic Freshwater Fishes (수입산 및 국내산 담수어류 3종의 일반성분과 지방산 조성)

  • The proximate and fatty acid compositions of the edible portion of three species of cultured freshwater fish (common eel Anguilla japonica, rainbow trout Onchorhynchus mykiss, and Israeli carp Cyprinus carpio) were compared between imports from China and domestically produced specimens. The lipid contents of cultured common eel and rainbow trout were rich in imported fishes (20.4 and 12.2%, respectively) compared with those in domestic ones (16.0 and 8.01%, respectively), while those of Israeli carp were rich only in the domestically produced specimens (8.06 and 3.07%, respectively). There was a negative correlation between the lipid and moisture contents in all fish samples (r =-0.86). The protein contents ranged from 16.6 to 21.3% in domestic fishes and 15.3 to 19.1% in imported ones. The most prominent fatty acids in the fishes were: saturated fatty acids, 16:0, 18:0 and 14:0; monounsaturated fatty acids, 18:1n-9, 16:1n-7 and 18:1n-7; and polyunsaturated fatty acids (PUFA), 18:2n-6, 22:6n-3 (docosahexaenoic acid, DHA), and 20:5n-3 (eicosapentaenoic acid, EPA). The percentage of n-3 PUFA (e.g., DHA, 22:5n-3, EPA, and 18:3n-3) was higher in domestic common eel and Israeli carp than in imported ones, but similar in domestic and imported rainbow trout, and higher in domestic wild rainbow trout than in cultured ones. On the other hand, all of the cultured freshwater fishes contained a relatively large amount of 18:2n-6, which is a characteristic fatty acid in cultured fish lipids.

A Study on the Carbamate Pesticide Residues in Domestic and Imported Crops in Chonnam Province (전라남도에서 유통중인 국내산 및 수입산 곡류 중의 카바메이트제 농약 잔류 실태 연구)

  • 10 carbamate pesticides were surveyed in domestic and imported green peas, beans, red beans from March 1999 through December 1999. Samples were collected from Gwangju, Mokpo, Suncheon and Yosoo grain markets. This study was performed by post-column ο-phthalaldehyde and 2-mercaptoethanol prior to HPCL fluorophore detection. Pesticides were found in 14 of 80 samples(17.5%). The kinds of pesticide detected in green peas were methomyl, MTMC, carbaryl, those in sesames were oxamyl, carbofuran, carbaryl, 1-naphthol, MIPC, those in beans were oxamyl, MTMC, carbaryl and those in red beans were MTMC, carbaryl. The range of residues detected in green peas, sesames, beans and red beans were 0.002∼0.025ppm, 0.001∼0.469ppm, 0.005∼0.356ppm and 0.017∼0.125ppm, respectively. The most frequently detected pesticides were MTMC(6 times) and carbaryl(5 times), while aldicarb, PHC and BPMC were no detected in all samples. Detection frequencies of carbamate pesticides in imported crops were higher than those in domestic ones except red beans. Only one result of oxamyl residues determined in imported bean was higher than the proposed maximum residue limits of Codex, which was 0.356ppm.

RFID-based Supply Chain Process Mining for Imported Beef

  • Through the development of efficient data collecting technologies like RFID, and inter-enterprise collaboration platforms such as web services, companies which participate in supply chains can acquire visibility over the whole supply chain, and can make decisions to optimize the overall supply chain networks and processes, based on the extracted knowledge from historical data collected by the visibility system. Although not currently active, the MeatWatch system has been developed, and is used in part for this purpose, in the imported beef distribution network in Korea. However, the imported beef distribution network is too complicated to analyze its various aspects using ordinary process analysis approaches. In this paper, we suggest a novel approach, called RFID-based supply chain process mining, to automatically discover and analyze the overall supply chain processes from the distributed RFID event data, without any prior knowledge. The proposed approach was implemented and validated, by using a case study of the imported beef distribution network in Korea. Specifically we demonstrated that the proposed approach can be successfully applied to discover supply chain networks from the distributed event data, to simplify the supply chain networks, and to analyze anomaly of the distribution networks. Such novel process mining functionalities can reinforce the capability of traceability services like MeatWatch in the future.

Effect of Chitosan on Quality of Korean Wheat Bread and Imported Wheat Bread (키토산의 첨가가 우리밀빵과 수입밀빵의 품질에 미치는 영향)

  • This study is to find out the effects of the qualify of the breads made from Korean and imported wheat flour respectively after adding chitosan, by examining the dough making, the bread making properties, the Physicochemical properties of the breads. The low polymerized chitosan (M. W. : 37,000) was added respectively 1, 3 and 5% in the form of 10% lactic acid aqueous solution. The Korean wheat bread had 4% more water, 3% more sugar, 0.5% more salt, 3% more margarine and 1.5% more yeast per 100% to wheat flour added than the imported wheat bread. The bread volume for the two groups stayed the same. The water absorption in the chitosan added group was increased more greatly than in the control group, however, pH was reduced. In case of color among all wheat bread groups the ‘L’ value appeared to be higher in the imported wheat bread groups, and the ‘b’ value appeared to be higher in the chitosan added group.

A Perception of Dietitians for Using Imported Foods and Pro-environment Farm Products for Elementary School Foodservice Operations in Busan (수입 식재료 및 친환경 농산물 사용에 대한 부산지역 초등학교 영양사의 인식 조사)

  • The purpose of this study was to assess the use of food materials at elementary school in Busan area and provide school meal management with basic data to improvement of guideline. A survey was done by e-mail with a set of questionnaires, which was responeded by 122 dietitians in elementary school foodservice. The results were as follows; Sixty percent of the dietitians though to the general imported food materials had to use. Regarding mean score of using the imported food materials; safety was 2.12/5.00, freshness 2.48/5.00, sanitation 2.68/5.00, nutrition 2.73/5.00, preference 2.93/5.00, external form 3.09/5.00, package 3.12/5.00, and price 3.63/5.00. Thirty seven percent of the dietitians had purchase the pro-environment farm products(PEFPs) and 32.0% of them purchased those products for the students' health. But 52.4% could not purchase to the PEFPs because of expensive price. They had negative opinions about deficient supplying of PEFPs 4.51/5.00, too expensive price 4.34/5.00, and the truth or false in source of PEFPs 3.96/5.00. Most of them perceived that using the PEFPs had to apply the step by step. Among of them, 33.9% had the knowledge of PEFPs, but 16.4 of them did not know to the PEPPs. 57.4% of them hoped to purchase the food materials through a center of supporting school meal servcie(it called non-profit-making organizations).

Multiresidue Analysis Method for Determination of Unregistered Organophosphorus Pesticides in Korea for Imported Agri-Food (국내 미등록 유기인계 농약의 수입 농식품에 대한 다성분 잔류분석법)

  • BACKGROUND: For safety evaluation of imported agri-food in Korea, the multiresidue analysis method was establised for unregistered organophosphorus pesticides, aspon, chlorthion, chlorthiophos, crotoxyphos, demeton-O, demeton-S, demeton-S-methyl, dioxathion, heptenophos, iodofenphos, leptophos, methyl-trithion, propetamphos and sulfotep. METHODS AND RESULTS: The used method for multiresidue analysis in brown rice and orange used as representative samples of imported agri-food was the official method of Korean Food and Drug Administration. The results of validation test of 13 organophosphorus pesticides except crotoxyphos for multiresidue analysis method are compared to the criteria such as specificity, linearity, accuracy, precision and limit of quantification. CONCLUSION: The used method for multiresidue analysis of unregistered 13 organophosphorus pesticides except crotoxyphos in Korea can surely be used as an official method for routine analysis of imported agri-food.
