인삼첨가 Long Life 면의 조직감과 관능적 특성 (Effects of Ginseng on Textural and Sensory Properties of Long Life Noodles)

  • The influence of ginseng on the paste or gelatinization properties by amylograph and mixing properties by farinograph of wheat flour and on quality properties color cooking quality textural and sensory properties and reducing microbial population of LL(Long Life) noodles was studied. The contents of ginseng used were from 5% to 10% based on flour weight. The viscosity property of wheat flour with ginseng was increased the initial pasting temperature but the amylograph peak viscosity were decreased in vice versa. The farinograph absorption stability and breakdown were increased by ginseng. The whiteness of Ll nodles manufactured with ginseng was lower than that of control The shear extrusion force and hardness of LL noodles manufactured with ginseng were shown much higher value than those of control. At cooking quality examination of LL noodles manufactured with ginseng weight of cooked LL noodles was decreased but volum was appeared in ice versa,. Extraction amounts of LL noodles manufactured with ginseng during cooking were much smaller than those of control Total count of microorganism of Ll noodles manufactured with ginseng were decreased during storage at 3$0^{\circ}C$ Sensory properties of cooked LL noodles which was manufactured with ginseng showed quite acceptable. Based on the cooking and sensory evaluation test addition of 7.0% ginseng to wheat flour may be suitable for processing LL noodles.

기존 사무소 건물 및 설비전문가 조사를 통한 설비시스템의 변화와 전망에 대한 연구 (A Study on the Transition & Expectation through Survey for Existing Building and Engineer's Opinion)

  • This study is the survey of a transition procedure of building services systems(heat source, HVAC, water supply) through the survey of existing office buildings, building design documents. The preference & major consideration of system selection is the engineer's opinions. The results of this survey can be used in selection of building services system design. In this survey, "Hot & cold water generator system" and "single duct CAV+FCU system", "Elevated water tank system" are selected. The most important consideration in system selection is the energy saving in heat source system, and comfort in HVAC system, and water pressure in water supply system. They prefer "steam boiler+absorption chiller system" for heat source system, "steam boiler+ice thermal storage system", "hot & cold water generator system", "district heating+absorption chiller system" : "single duct CAV+FCU system" and "single duct VAV+convector system" for HVAC system: and "booster pump system" for water supply system.

마이크로 그리드에서의 풍력/디젤 복합발전 전력품질 (Power Quality of Wind/Diesel Hybrid Operation at an Micro Grid)

  • Wind/diesel hybrid operation can be one of the most effective option for electrical power production at a remote area such as Antarctica. The king Sejong station at Antarctica relies its power production on diesel engines and diesel oil is supplied every other year by ships. However, the oil transportation processes are liable to potential oil spillage caused by the floating ice around the King George island. The long-term storage of the oil at the station can also contaminate the surrounding soils. A l0kW wind turbine has been installed to save oil consumption and operated in connection with the diesel generators since 2006. The diesel engine that operated poorly during the first year of installation was replaced in 2008 to enhance power production an recent measurements indicate that both diesel power quality and the wind turbine availability have been dramatically improved by the replacement. This report discusses electrical power qualities of wind/diesel hybrid system operating at an isolated micro gird located in the king Sejong station. Our experience reveals that the similar technologies can be applied to domestic islands, for example, in the south sea.

해동속도에 따른 동결우육의 해동 후 이화학적 특성에 관한 연구 (Studies on Physico-Chemical Characteristics of Frozen Beef at as Influenced by Thawing Rates)

  • This study was conducted to investigate the quality change of beef muscle, which was thawed by different thawing rate in order to utilize it as fundamental data for establishing optimal and thawing condition. Chilled beef round which was purchased at a commercial market was used. The samples were frozen for 30min(time required to pas through the maximal ice forming zone, -1$^{\circ}C$∼-7$^{\circ}C$) and the thawing conditions were 3.9cm/hr, 0.21cm/hr, 0.13cm/hr. Thawing losses of rapidly thawed meat(3.9cm/hr) were significantly(p<0.05) lower(6.10%), but cooking and total losses were the highest as 48.17% and 56.44%, respectively(p<0.05). Characteristics such as color, flavor, texture and overall quality at different the thawing rates showed similar scores, but slightly increased after storage for 24hr. Juiciness of rapidly thawed meat was significantly(p<0.05) higher than that compared to the other thawing rates.

서울지역 대학생의 커피전문점 이용 실태에 관한 연구 (A Study on University Students' Coffee Shop Use in the Seoul Area)

  • 서울 지역 대학생 250명을 대상으로 2008년 10월 6일부터 10월 10일까지 커피전문점의 이용 실태를 연구하였으며, 자료 분석을 위해서는 SPSS프로그램을 이용하여 통계처리 하였다. 조사 대상자들의 커피전문점에 대한 중요도와 수행도를 5점 척도 방법으로 조사한 결과, 중요도는 4.03점, 수행도는 3.01점으로 나타났다. 커피전문점에 대한 중요도와 수행도를 격자도로 보여주는 IPA 분석을 살펴 본 결과, 중요하지만 불만이 있는 항목으로는 실내 위생 상태, 종업원의 개인 위생 정도, 커피 기구 등의 위생 관리 상태, 얼음의 위생 상태, 사용되는 물의 위생 관리 상태, 제품의 냉장 보관 상태, 커피 가격이 해당되었다.

미래 기후 변화 시나리오에 따른 환북극의 변화 (Projection of Circum-Arctic Features Under Climate Change)

  • This study investigated future changes in the Arctic permafrost features and related biogeochemical alterations under global warming. The Community Land Model (CLM) with biogeochemistry (BGC) was run for the period 2005 to 2099 with projected future climate based on the Special Report on Emissions Scenarios (SRES) A2 scenario. Under global warming, over the Arctic land except for the permafrost region, the rise in soil temperature led to an increase in soil liquid and decrease in soil ice. Also, the Arctic ground obtained carbon dioxide from the atmosphere due to the increase in photosynthesis of vegetation. On the other hand, over the permafrost region, the microbial respiration was increased due to thawing permafrost, resulting in increased carbon dioxide emissions. Methane emissions associated with total water storage have increased over most of Arctic land, especially in the permafrost region. Methane releases were predicted to be greatly increased especially near the rivers and lakes associated with an increased chance of flooding. In conclusion, at the end of $21^{st}$ century, except for permafrost region, the Arctic ground is projected to be the sink of carbon dioxide, and only permafrost region the source of carbon dioxide. This study suggests that thawing permafrost can further to accelerate global warming significantly.

태양광 에너지를 이용한 발열논슬립의 성능분석 (Performance Analysis of Heating Nonslip using Solar Power Energy)

  • This study aims to analyze the performance of Heated-nonslip using renewable energy to prevent nonslip freezing during winter. For this purpose, power generation system and congratulatory devices using solar energy are designed, and it is designed to provide regular electricity to heat up nonslip through Electrical storage system(ESS). In this study, It is intended to analyze the level of electrical energy suitable for nonslip using 24V or 48V, and to measure the temperature changes and temperature distribution according to the location of the test object. As a result of the experiment, nonslip's frame temperature was measured at $-7.5{\sim}-5^{\circ}C$ on average, and $-1{\sim}-2^{\circ}C$ on the heating cable during the supply of 24V and this could not be the solution for defrosting freezing nonslip in the winter. As a result of heating nonslip by supplying 48V with an electrical power of 8W, the temperature of the nonslip was shown to be between $5^{\circ}C$ and $11^{\circ}C$ to $13^{\circ}C$. Even if the power supply was switched on and off every minute, the temperature did not drop below $4^{\circ}C$ and the frozen ice melted on the nonslip without freezing.

리튬이온 배터리용 음극 합금/폴리머 복합체 바인더 패브릭 (Fabrication of petroleum pitch/polymer composite binder for anode material in lithium-ion battery)

  • The lithium ion battery has applied to various fields of energy storage systems such as electric vehicle and potable electronic devices in terms of high energy density and long-life cycle. Despite of various research on the electrode and electrolyte materials, there is a lack of research for investigating of the binding materials to replace polymer based binder. In this study, we have investigated petroleum pitch/polymer composite with various ratios between petroleum pitch and polymer in order to optimize the electrochemical and physical performance of the lithium-ion battery based on petroleum pitch/polymer composite binder. The electrochemical and physical performances of the petroleum pitch/polymer composite binder based lithium-ion battery were evaluated by using a charge/discharge test, cyclic voltammetry (CV), electrochemical impedance spectroscopy (EIS) and universal testing machine (UTM). As a result, the petroleum pitch(MP-50)/polymer(PVDF) composite (5:5 wt % ratio) binder based lithium-ion battery showed 1.29 gf mm-1 of adhesion strength with 144 mAh g-1 of specific dis-charge capacity and 93.1 % of initial coulombic efficiency(ICE) value.

전해산화수를 이용한 수출용 깐밤의 저장성 향상 (Improvement in Storage Stability of Export Peeled-Chestnuts Using Electrolyzed Acid-water)

  • 수출용 깐밤의 유통과정 중 발생하는 백탁현상을 방지하기 위하여 전해산화수를 이용하여 수출용 깐밤의 저장성을 향상시키는 연구를 있다. 수출용 깐밤을 전해수로 저장하면서 저장액의 pH및 탁도 변화를 조사 하였는데, $30^{\circ}C$에 저장했을 경우 저장 하루만에 이미 저장액의 pH가 급격히 변화하였으나, $4^{\circ}C$에 저장했을 경우는 $30^{\circ}C$에 비해 pH가 매우 완만하게 변화하였다. 특히 pH 2.5의 전해산화수는 저장 8일 후 pH가 3.4로 나타나 가장 적게 변화하였다. 탁도도 이와 비슷한 경향을 보였는데, $30^{\circ}C$에 저장했을 경우 저장 1일 후 이미 눈으로 확인할 수 있을 정도의 백탁현상이 일어났으나, $4^{\circ}C$에 저장했을 경우는 저장 14일 까지 백탁현상이 일어 나지 않았으며, 특히 pH 2.5의 전해산화수의경우 14일 후의 흡광도$(OD_{660})$가 0.01, 35일 후의 흡광도가 0.11로 나타나 백탁현상이 거의 일어나지 않았다. 전해수를 사용해 $4^{\circ}C$에서 15일간 저장한 깐밤에 대한 관능검사를 실시한 결과 대조구에 비해 유의한 차가 없었다.

과채류 19종의 과냉각 영향요인 분석 (Influential Factors on Supercooling of Nineteen Fruits and Vegetables)

  • 19종의 과채류에 대한 동결점 및 빙핵 형성 온도, 함수율, 경도, 당도, pH를 측정하여 Pearson 상관분석을 하였다. 동결점은 함수율과 당도에 p<0.01의 유의적인 상관관계를 나타냈으나, 빙핵 형성 온도는 당도에만 p<0.05의 상관관계를 보였다. 특히 동결점과 빙핵 형성 온도의 차이값인 과냉각 격차 FSD와는 함수율과 당도 등이 모두 상관관계를 보이지 않았다. 호기성세균, 유산균, 효모, 곰팡이의 다양한 미생물이 분포하는 배추에 대한 미생물 분석과 FSD와의 상관분석을 수행하였는데, 호기성 세균과 p<0.01의 상관관계가 나타났다. 호기성 세균을 9.4 log CFU/mL의 농도로 접종한 식염수와 이를 멸균한 시료를 각각 $10^2$, $10^4$, $10^6$ 배로 희석하여 동결점과 빙핵 형성 온도 분석에서도 높은 농도의 호기성 세균이 빙핵 형성 온도를 높이는 결과가 나왔다. 하지만, 약 5 log CFU/mL 수준 이하에서는 멸균식염수와 빙핵 형성 온도의 통계적 차이가 없는 것으로 나타났다.
