Evaluation of the Storage Characteristics of Kangjung Added with Gromwell Extracts (지치 추출물 첨가에 의한 강정의 저장성 연장 효과)

  • This study examined the effects of gromwell (Lithospermum erythrorhizon) extracts on the storage characteristics of Kangjung. At an increase of $0{\sim}0.25%$, there was no significant difference in the moisture content of wild and cultivated gromwell extract added to Kangjung, whereas there was a significant difference when increased to 0.5%. When compared, the occurrence of lipid oxidation among the controlled gromwell extract group stored at $60^{\circ}C$, resulted in peroxide values exceeding 40 meq/kg which is a maximum value for Hankwa within 12 hours of storage. However, at an increase of 0.25%, the cultivated gromwell extract added group reached limits within 16 hours. Furthermore, at a 0.5% increase in cultivated gromwell and 0.25% in wild gromwell, extract added groups exceeded this limit within 20 hours of storage. Gromwell added Kangjung, a fried food, showed efficiency in suppressing oxidation of fat, more so in the wild gromwell than the cultivated gromwell. In addition, efficiency in suppressing oxidation of fat increased at the 0.5% level than the 0.25% level. In conclusion, it is believed that an unused pigment resource called Lithospermum erythrorhizon, normally reserved for medicinal use, can be distributed as a safe food additive. In addition, as Lithospermum erythrorhizon is a natural antioxidant in fried foods, we believe this satisfies the demand for natural food.

Evaluation of Importance and Performance for Students and Employees about Sanitary Characteristics for High School Foodservice in Busan (부산지역 고등학교 학생과 급식종사자의 급식위생에 대한 중요도와 수행도 평가)

  • The evaluation of students and employees on the importance and the performance for sanitary characteristics in high school foodservices, was investigated. The questionnaires were administered to 379 students and 141 employees in 13 high school, in Busan and then the data evaluated by 5 scales method of Likert were statistically analyzed. The mean scores of the importance and the performance evaluated by students (4.26/3.24) were significantly (p<0.01) lower than those by employees (4.71/4.51). Both the students and the employees percepted that, among sanitary characteristics, cleanliness of meals was most important. The student assessed the performance of withdrawal of plate waste as lowest scores, however the employees assessed student's hygiene as lowest scores, among sanitary characteristics. The gap score of the student (-1.02) between the importance and performance for sanitary factor was higher than that of the employees (-0.02) in high school foodservice. The importance grid of students and employees revealed that the items of tray cleanliness, dining table cleanliness, restaurant cleanliness, and handwashing before serving were high scores to the students, but low scores to the employees. The performance grid of students and employees revealed that the items of tray cleanliness, dining table cleanliness, restaurant cleanliness, the sanitation of treatment process of Plate waste, cleanliness of utensils of platewaste, not touch utensils before serving, handwashing before serving, handwashing before eating and not touch inside of tray were low scores to both the students and the employees. Therefore, it is suggested that the sanitary operations for dining place, treatment process of plate waste and the student's hygiene might have to increase in high school foodservice.

Characteristics of Surface Flow on the Forest Fire Sites by Using Rainfall Simulator (인공강우장치를 이용한 산불발생지의 지표유출 특성에 관한 연구)

  • For the purpose of this study, the characteristics of surface flow through the survey of rainfall intensity and degree of slope on fire sites by using rainfall simulator was examined and analysed. And also the relationship between the amount of surface flow and rainfall intensity, degree of slope and elapsed year after forest fire occurrence influencing on the surface flow were analysed. The results obtained were as follows: 1. The amount of surface flow by year of occurrence of forest fire was increased 2,2 to 3,2 times as rainfall intensity was increased by 30 mm/hr, and 1.5 to 1.9 times as degree of slope was increased by $10^{\circ}$, 2, Even though ground vegetation in forest fire sites was recovered more than 80%, the amount of surface flow in initial rainfall was relatively much and it seemed that vegetation didn't play substantial roles in reducing runoff. 3, The amount of surface flow by rainfall intensity and degree of slope in accordance with elapsed years after forest fire was reduced 22,3% to 41,8% in three years after fire as compared to the first year of fire occurrence. The amount of surface flow were significantly differentiated by rainfall intensity and degree of slope in the first year of fire occurrence and the difference were gradually reduced afterwards. 4. In the analysis on influences of each factors on the amount of surface flow on forest fire sites, the amount of surface flow was significant differences in major impacts of each rainfall intensity, degree of slope and elapsed year after fire and interaction of rainfall intensity ${\times}$ degree of slope and rainfall intensity ${\times}$ elapsed year after fire, but no differences were observed in interaction of degree of slope ${\times}$ elapsed year after tire and rainfall intensity ${\times}$ degree of slope ${\times}$ elapsed year after tire. Rainfall intensity was the most affecting factor on the amount of surface flow and followed by degree of slope and elapsed year after fire.

  • The present study was conducted as a part of the research on the investigation on daily life and consciousness of the longevous people in Korea. Surveys were carried out on their familial organization and the marriage life of longevous people in order to achieve the purpose of the research. The materials for 121 males and 258 females aged more than 80 were collected and analyzed from June to November 1985. The results are summarized as follows: 1. As for parents' mortality age of longevous people, 49.5% of them showed 'both above 70'(20.3%) and/or 'either father or mother above 70' (29.2%). Consequently, a significant difference was found between tile life span and inherent factor. 2. By the birth order of longevous people, '1st' had the highest figure of 41.2%. and decreased in the order of '2nd'(25.1%) and '3rd'(13.7%). It was observed that the more the birth order of longevous people preceded, the more life span of the aged increased. 3. Three to five persons in the number of brother3 and sisters comprised 57.6% of total longevous people surveyed. while 63.9% of them were revealed to have three to six in the number of offsprings.

Effects of Nitrogen and Phosphorus Fertilization on Soil Nitrogen Mineralization of Pinus rigida and Larix kaempferi Plantations in Yangpyeong area, Gyeonggi Province (질소(窒素)와 인(燐) 시비(施肥)가 경기도(京畿道) 양평지역(楊平地域) 리기다소나무와 낙엽송(落葉松) 조림지(造林地) 토양(土壤) 내(內) 질소무기화(窒素無機化)에 미치는 영향(影響))

  • To examine the effects of nitrogen and phosphorus fertilization on soil nitrogen (N) mineralization, we monitored rates of soil nitrogen mineralization and nitrification in 41-year-old pitch pine (Pinus rigida Mill.) and Japanese larch (Larix kaempferi Gordon) stands growing on similar soil condition in central Korea. For this study, we used the buried-bag incubation method. Fertilizers were applied at three levels [control (C), 200 N kg/ha+25 P kg/ha (LNP), and 400 N kg/ha+50 P kg/ha(HNP)] on 5 June, 1996. Mineral soils (0~20 cm) were incubated 6 times with 45-day-interval from 5 June 1996 to 4 June 1997. Initial soil moisture contents were significantly different among sampling dates and between tree species. Initial soil moisture contents were 32% for C, 28% for LNP, and 26% for HNP at the P. rigida stand, and 31% for C, 31% for LNP, and 33% for HNP at the L. kaempferi stand, respectively. Mean daily N mineralization rates were significantly different among sampling dates and treatments. Annual net N mineralization and nitrification were also significantly different between the two tree species. The annual net N mineralization was 10.6 kg/ha/year for C, 23.3 kg/ha/year for LNP and 6.6 kg/ha/year for HNP at the P. rigida stand, and 2.0 kg/ha/year for C, 12.1 kg/ha/year for LNP and 16.7 kg/ha/year for HNP at the L. kaempferi stand. The annual nitrification was 2.8 kg/ha/year for C, 7.6 kg/ha/year for LNP and 4.3 kg/ha/year for HNP at the P. rigida stand, and 4.3 kg/ha/year for C, 14.8 kg/ha/year for LNP and 6.6 kg/ha/year for HNP at the L. kaempferi stand. The ratios of annual net nitrification to annual net N mineralization were 26% for C, 33% for LNP, 65% for HNP at the P. rigida stand, and 100% for C, 100% for LNP, 40% for HNP at the L. kaempferi stand, respectively. This study indicates that N mineralization in forest may be different by the predominant tree species and fertilization even under similar environments. It is likely that the quality of organic matter might control nitrogen mineralization and nitrification in soils.

Effect of the Consumer's Perception of the University Foodservice Quality on the Consumer Attitude (대학교 급식소의 급식서비스 품질에 대한 인식이 소비자태도에 미치는 영향)

  • The purposes of this study were to investigate the consumer's perception of the subject to manage the foodservice operation in the university, and to analyze the effects of consumer's perception of the university foodservice qualify on intent to revisit and intent to recommend. The questionnaires were distributed to 575 students in the K University located in Masan, who were sampled by proportionate stratified sampling method. The surveys were peformed from May 17 to June 2, 2005. The 566 questionnaires were responded, and 6 unusable questionnaires were excluded, then 560 were used for the final analysis (response rate: 97.4%). For the statistical analysis, SPSS (12.0) was used to conduct the descriptive analysis, factor analysis reliability analysis, and multiple regression analysis. The results of this study were as follows: First 254 respondants (47.3%) did not know that their foodservice operation was managed by contract foodservice company, and 374 students (66.8%) did not know the name of the contract foodservice company which runned their foodservice operation. Second, the food factor of university foodservice quality had a significant positive effect on intent to revisit (P<0.001), and the food factor of university foodservice quality also had a significant positive effect on Intent to recommend (p<0.001). It was concluded that as the food factor of university foodservice qualify Increased, the intent to revisit and the intent to recommend the university foodservice increased. So when university foodservice managers plan the foodservice operation strategy, they should focus on increasing the perception of customers' foodservice quality and also advertising contract foodservice company's brand name.

Assessment of Dietitian's Nutritional Quality Management for School Food Service (학교급식 영양사의 영양적 품질관리 수행도 평가)

  • The purpose of this study was to evaluate school dieticians' performance of nutritional quality control, and further to establish effective and objective standards of nutritional quality control. Data for this study came from 200 school dieticians' responses in the Chungbuk area. The total quality management (TQM)-based questionnaire was structured. The questionnaire consisted of the following four fields (1) performance of nutritional quality control, (2) performance of stepwise food production to maximize nutrient preservation rate, (3) management of documents and records related to nutritional quality control, and (4) other relating matters. The items of the questionnaire were measured on a five-point Likert scale which ranged from 'strongly agree' to 'strongly disagree'. First, the analysis indicated that school dieticians performed 'least' on human resource management', 'mediocre' on nutritional quality control, and best on 'leadership'. Second, the analysis on performance of stepwise food production to maximize nutrient preservation rate showed that dieticians considerably endeavored to maximize nutrients of cooked food, but it was found out that the most of nutrient destruction can be caused by heating during cooking. Third, the result showed that the systematic use of documents and records for nutritional quality control was not sufficiently accomplished, especially in the production phase of food. In addition, the measure by the Pearson correlation coefficient indicated that there was a significant relationship between performance of nutritional quality control and performance of stepwise food production to maximize nutrient preservation rate, and between performance of nutritional quality control and management of documents and records related to nutritional quality control. Finally, the findings of this study suggest that more effort should be exerted to carefully establish TQM-based standards for the improvement of nutritionary quality.

An Economic Analysis of Land Investment for Plantations by Faustmann's Formula (Faustmann식(式)에 의(依)한 조림용(造林用) 임지(林地)의 투자지표(投資指標) 설정(設定))

  • The study was conducted to find out the relationship between land cost and financial yield earned by the plantations of Pinus koraiensis, Pinus densiflora and Cryptomeria japonica, and to investigate possible land investment for the given rates of return. The result of the study could be summarized as follows: 1. In the case of Pinus koraiensis plantation on site index 12, the finnancial yield was 6.4 percent when the land cost was 0.5 million Won per hectare, but the yield was reduced to 2.1 percent when the cost was 2.5 million Won. It would be therefore necessary for inducing plantation investment to raise financial yield by control of forest land price. 2. The financial yield on land of zero expectation value, in other words, internal rate of return of land investment was estimated at 10 percent. If the opportunity cost of forest land is higher than this, the economic plantation is not visible even though the land is free. 3. With the expected financial yield of 3 percent, the possible land investment of poor sites was estimated at 1.24, 0.28 and 0.80 million Won per hectare for the plantation of Pinus koraiensis, Pinus densiflora and Cryptomeria japonica, respectively. In any case, however, land cost could not be over 3 million Won per hectare. 4. The rate earned from forest land investment was generally less than 10 percent. Therefore, the annual interest rate in forestry could not be higher than this, and hopeful rate is not exceeding 6 percent.

Effect of Glutathione S-Transferase Polymorphisms on the Antioxidant System (Glutathione S-Transferase 유전적 다형성이 항산화 체계에 미치는 영향)

  • Glutathione S-transferase genotypes GSTT1, GSTM1 and GSTP1 were characterized in 104 healthy male and female subjects and compared with parameters of oxidative stress at the level of DNA and lipids, with antioxidant enzymes, and with plasma antioxidants in smokers and non.smokers. Of the 104 subjects studied, 57.4% were GSTT1 present and 47.6% were GSTM1 present. The GSTP1 polymorphisms a and b were represented as follows: a/a, 75.5%; a/b, 21.6%; b/b type, 2.9%. The GSTT1 null genotype was associated with decreased glutathione in erythrocytes and elevated lymphocytes DNA damage. GST-Px was higher in GSTT1 null compared with GSTT1 present type. The homozygous GSTP1 genotype was not associated with any antioxidant status or DNA damage. The difference in plasma ${\alpha}$-carotene and erythrocytes GSH-Px and GST activities between smokers and non-smokers was detected in the GSTT1 null genotype. Plasma ${\gamma}$-tocopherol and ${\beta}$-carotene decreased significantly in smokers having GSTM1 null genotype. When GSTT1 and GSTM1 were combined, plasma lycopene and erythrocyte GST were reduced in smokers in both null types of these genes. As for GSTP1 genotype, plasma ${\alpha}$-carotene and erythrocytes GSH-Px decreased significantly in smokers with GSTP1 b/b, while erythrocytes GSH-Px activities decreased in smokers with GSTP1 a/b. The different ${\beta}$-carotene level between smokers and non-smokers was seen with both GSTP1 a/a and a/b genotype. It seems that polymorphisms in the phase II metabolizing enzyme glutathione S-transferase may be important determinants of commonly measured biomarkers.

  • This study was carried out to examine the effect of manufacturing factors on physical properties of hardboard (S.I.S) made from the juvenile wood of sycamore (Platanus orientalis L.) The results obtained may be summarized as follows: 1. The difference among the yields of pulp treated with preheat time (defibrate condition) was significant in those of treatments. There was no difference in the yield of pulp treated with defibrate time. The yields of pulp on the tree age classes were shown the difference by 2<4<6<8 years. 2. The specific gravities of hardboard that were treated with hot pressing conditions showed us significantly in those of treatments. There was no difference on the specific gravities among hardboards, treated with resin and wax contents. But in all cases of the specific gravities satisfied the standard which specified the KS F 3203 (Hardboard) 3. The moisture contents of hardboard satisfied the standard which calls for 13-percent below. There were difference in moisture contents between hardboard, treated with preheating time, resin and wax contents and hot pressing conditions. And the moisture contents of hardboard on the tree age classes showed the difference by 2<4<6<8 years. 4. The water absorption and thickness swelling of hardboard treated with defibrations, resin and wax contents, and hot pressing conditions were significant in those of treatments. And the water absorption and thickness swelling of hardboard on the tree age classes showed us the significant difference by 8<6<4<2 years. 5. The difference among the flexural strength in using tested three conditions showed us the difference by defibration$200kg/cm^2$) of hardboard, it is likely to be recommened that the juvenile wood of sycamore is valuable for the raw materials of hardboards.
