Effects of Dietary Plant Oils on the Cholesterol Level and on the Composition of Fatty Acids in Hen Egg Yolks (산란계 사료에 첨가된 식물유지류가 난황의 콜레스테롤 농도 및 지방산 조성에 미치는 영향)

  • White Leghorn hens were fed a commercial formula feeds as a basal diet, which was supplemented with 3 types of plant oil safflower, evening primrose and pine seed, at the 10% level for 3 weeks. No significant changes was found between the basal diet and the oil feeding trials in the egg yolk cholesterol content, the laying rate, the egg weight, and the yolk weight, except the feed intake. In the fatty acid composition of the egg yolk lipid, however, the plant oil feedings to hens resulted in considerable increase of $C_{18:2}$ acid with a simultaneous decrease of $C_{18:2}$ acid ,and, consequently, followed by the improvement of balance with P /S and P /M /S ratio close to 1.0 and 1:1:1, which is known a desirable ratio for human health in lipid nutrition, respectively.

  • Traditional Chinese cuisine, which is highly evaluated with respect of taste and techniques, is built based on a sound healthy philosophy and distinct dietary culture, with emphasis on the unity of human beings and nature. The traditional cuisine utilized food materials according to the physical status and seasons, which is still a valuable principle in the modem diet. According to relevant research, the nutrient retention in Chinese cooking is acceptable. However, following the rapid growth of domestic economy, the Chinese diet is in danger of losing its original merits, especially when eating out. The excessive desire for food enjoyment leads to a rapid increase in the prevalence of obesity and chronic disease. It is a critical point to review the characteristic of traditional Chinese cuisine and lead the trend to a healthy direction.

Influence of Phytate and Low Dietary Calcium on Calcium, Phosphate and Zinc Metabolism by Growing Rats (Phytate와 저 Ca 섭취가 흰쥐의 성장기간 동안 Ca, P, Zn 대사에 미치는 영향)

  • A factorial experiment was conducted to determine the influence of phytate(0 or 10g/kg diet) and calcium (Ca)(3 or 10g/kg diet) intakes on Ca, P and Zn metabolism by growing female rats. Food intake and weight were similar for the all groups, however, phytate ingestion for six weeks depressed femur growth. The low Ca plus phytate group showed the lowest Ca content of total femur and this was related to a significant decrease of Ca retention. Phytate intake depressed zinc(Zn) absorption in the first metabolic collection. This inhibitory effect of phytate on Zn absorption was improved in the low Ca plus phytate group after several weeks. Impared Zn absorption however remained in the high Ca plus phytate group which was reflected in the lowest Zn content of femur, phytate intake with high Ca also depressed phosphorous(P) absorption and serum and urinary P. These adverse effects of phytate on Zn and P absorption when the dietary Ca was high could explain reduced femur weight despite the highest concentration of femur Ca(mg/g ash) in this group. Results suggest that phytate can adversely affect not only Ca metabolism but Zn and P utilization. Thus, for the normal bone growth when phytate intake is high, the ingesion of Ca, P, Zn and other minerals should be enhanced.

Effects of Calcium and Genistein on Body Fat and Lipid Metabolism in High Fat-induced Obese Mice (칼슘과 제니스테인 섭취가 고지방식이로 유도된 비만 모델 마우스의 체지방과 지질대사에 미치는 영향)

  • The study was conducted to investigate the effects of dietary calcium and soy isoflavone on body fat and lipid metabolism in high fat-induced obesity. Four week old female C57/BL6J mice, known as a good model of diet-induced obesity, were fed low Ca and high fat diet for 6 weeks. After induced obesity, mice were divided into six groups according to diets varying calcium contents (0.1 or 1.5%) and genistein contents (0 or 500 or 1,000 ppm). Body weight, fat pad (perirenal fat and parameterial fat), adipocyte size, serum total lipid and total cholesterol were significantly decreased by both high Ca intake and genistein supplementation. However, the effect of genistein supplementation showed in low Ca-fed groups. Serum LDL-cholesterol and TG were significantly decreased by high Ca intake and genistein supplementation, respectively. In liver, lipogenic enzymes (fatty acid synthase and malic enzyme) activity and TG were significantly decreased by both high Ca intake and genistein supplementation. This inhibitory effect of genistein on lipogenic enzymes showed in low Ca-fed groups. But liver total cholesterol and total lipid were significantly decreased by high Ca intake and genistein supplementation, respectively. Fecal excretion of total lipid, total cholesterol and TG were significantly increased by high Ca intake, not by genistein supplementation. In conclusion, high calcium intake and genistein supplement may be beneficial for suppression of obesity through direct anti-adipogenesis by decreasing fat weight and size and indirect anti-lipo-genesis by inhibiting lipogenic enzymes activity and improving lipid profile.

Effect of High Fat Diet Containing Hangbisan on the Body Weight and Blood Lipid Composition in the Rats (항비산을 함유한 고지방식이가 흰쥐의 체중증가 및 혈중지질 함량에 미치는 영향)

  • Among the oriental medicine compounds, sulfur is known as a heat-generation material in a human body. Heat-generation reaction results in the consumption of energy source. Some oriental herbs are used to treat obesity and blood lipid composition. Therefore, we hypothesized that a sulfur containing oriental medicine compound, called as Hangbisan, could help weight loss of experimental rats. This study was designed to observe the change of weight of Sprague-Dawley (SD) rats that had been fed with high-fat diet containing 10% cellulose or Hangbisan for 9 weeks. Hangbisan affected the weight loss of rats as reducing the level of plasma cholesterol and triglyceride and increasing the level of HDL-cholesterol. Thus, this study revealed Hangbisan have an anti-obesity effect and a potential role for anti-obesity agent in the application of oriental medicine compounds.

Validation of Food Security Measures for the Korean National Health and Nutrition Examination Survey (국민건강영양조사 식품안정성 측정 도구의 타당도 조사)

  • The objective of this study was to assess the reliability and validity of food security measures, which was developed based on the US household food security survey module (US HFSSM) with content validity in the Korean population. The reliability and validity were assessed by internal consistency, construct validity and criterion-related validity. The study included 446 households. Among those, 46.2% were households with children. The proportion of food insecure households was 33.3%. Among those, 35.4% and 64.6% households were food insecure with hunger and without hunger, respectively. The Cronbach's alpha coefficients were 0.84 and the infit value by the Rasch model analysis ranged from 0.68 to 1.43. The scale item response curves by food insecurity severity explained well the nature and characteristics of food security, indicating the highest proportion of "yes" for the items on diet quality, followed by those with diet quantity. The result of criterion-related validity showed that food insecurity status was significantly related in a dose-response manner with the household income level, food expenditure, subjective health state, subjects' educational level. Household food security status was also related to dietary diversity regarding protein foods, fruits and fruit juice, and milk and dairy product. These findings suggest that the food security instrument is reliable and valid and would be used to assess food security status in the Korean population.

The effect of high-carbohydrate diet and low-fat diet for the risk factors of metabolic syndrome in Korean adolescents: Using the Korean National Health and Nutrition Examination Surveys (KNHANES) 1998-2009 (우리나라 청소년의 고탄수화물 식사와 고지방 식사가 대사증후군 위험요인에 미치는 영향: 1998~2009년 국민건강영양조사 자료를 이용하여)

  • Purpose: The prevalence of metabolic syndrome has increased in both the adult population and in adolescents. However, few studies have been conducted for adolescents. The aim of this study was to examine the association of metabolic syndrome and its risk factors with high carbohydrate diet and high fat diet using data from the Korea National Health and Nutrition Examination Survey (1998-2009). Methods: Using the Acceptable Macronutrient Distribution Range for Korean Dietary Reference Intakes, subjects whose energy intake from carbohydrate was greater than 70% and from fat was less than 15% were classified as the 'High-carbohydrate & low-fat diet (HCLF)' group and subjects whose energy intake from carbohydrate was less than 60% and from fat was 25% or more were classified as the 'Low-carbohydrate & high-fat Diet (LCHF)' group. Among 5,931 eligible subjects, HCLF included 853 subjects and LCHF included 1,084 subjects. Results: The mean age in both groups was 14 years and significant difference in age, BMI, sex, physical activity, and household income was observed between the HCLF and LCHF groups. Regarding the energy intake compared to Estimated Energy Requirement, the HCLF group met 79.0% and the LCHF group met 100.3%. Regarding nutrient intake per 1,000 kcal, carbohydrate, iron, potassium, and vitamin C intake in the HCLF group were significantly higher, but protein, fat, calcium, phosphorus, vitamin A, thiamin, riboflavin, and niacin intakes were significantly lower in the HCLF group compared to the LCHF group. After adjusting for age, sex, BMI, study year, household income, physical activity, and energy intake, the serum triglycerides level and systolic blood pressure were slightly higher, while the serum HDL-cholesterol level was significantly lower in HCLF than LCHF. The odds ratio of metabolic syndrome did not differ significantly between HCLF and LCHF. Conclusion: Our findings indicate an association of a high carbohydrate diet with increased risks for metabolic syndrome components. Conduct of future studies would be necessary in order to explore the underlying mechanism and to confirm our findings in a prospective study.

  • Better understanding of the complex factors leading to human diseases will be necessary for both long term prevention and for managing short and long-term health problems. The underlying causes, leading to a global health crisis in both acute and chronic diseases, include finite global health care resources for sustained healthy human survival, the population explosion, increased environmental pollution, decreased clean air, water, food distribution, diminishing opportunities for human self-esteem, increased median life span, and the interconnection of infectious and chronic diseases. The transition of our pre-human nutritional requirements for survival to our current culturally-shaped diet has created a biologically-mismatched human dietary experience. While individual genetic, gender, and developmental stage factors contribute to human diseases, various environmental and culturally-determined factors are now contributing to both acute and chronic diseases. The transition from the hunter-gatherer to an agricultural-dependent human being has brought about a global crisis in human health. Initially, early humans ate seasonally-dependent and calorically-restricted foods, during the day, in a "feast or famine" manner. Today, modern humans eat diets of caloric abundance, at all times of the day, with foods of all seasons and from all parts of the world, that have been processed and which have been contaminated by all kinds of factors. No longer can one view, as distinct, infectious agent-related human acute diseases from chronic diseases. Moreover, while dietary and environmental chemicals could, in principle, cause disease pathogenesis by mutagenic and cytotoxic mechanisms, the primary cause is via "epigenetic", or altered gene expression, modifications in the three types of cells (e.g., adult stem; progenitor and terminally-differentiated cells of each organ) during all stages of human development. Even more significantly, alteration in the quantity of adult stem cells during early development by epigenetic chemicals could either increase or decrease the risk to various stem cell-based diseases, such as cancer, later in life. A new concept, the Barker hypothesis, has emerged that indicates pre-natal maternal dietary exposures can now affect diseases later in life. Examples from the studies of the atomic bomb survivors should illustrate this insight.

Diet of The Wild boar (Sus scrofa) in Agricultural Land of Geochang, Gyeongnam Province, Korea (경남 거창 농경지 멧돼지(Sus scrofa)의 식이물 분석)

  • Wild boar have increased in recent years in Korea where damage to agricultural crops is considered as a social issue. The ecological studies on wild boar are essential for the effective management in the future. During May and December 2012, We collected 79 wild boar stomach samples from culling program implementation to reduce agricultural damage in Geochang County and analyzed stomach contents to figure out wild boar diet habit and which crop was preferred. There was seasonal variation in the diet. Plant foods represented up to 93.5% of the diet and were consumed more frequently than animal foods. Invertebrates occurred with high frequency but were underestimated in dry weight because they are rapidly digested. Agricultural crops consumed comprised mainly chestnuts(33%), rice(33%), and apples(24%). Agricultural crops are also a potentially important food resources for wild boar. The frequency of occurrence of earthworms was 50% of diet. Earthworm consumption generally increased in summer, and then decreased in winter. Our results show that wild boar can be considered an omnivore whose diet consists of plant and animal foods. To reduce wild boar agricultural damages, We have to focus on the prevention effort to rice paddy adjacent to chestnut forest and to apple orchard.

Tissue Distribution of Divalent Metal Transporter 1 and Regulation by Dietary Iron in Rats (흰쥐에서 Divalent Metal Transporter 1의 조직내 분포와 Iron에 의한 조절)

  • Iron (Fe) is an essential metal in biological processes, which maintains a homeostasis in the human body. Divalent metal transporter 1 (DMT1) has been known as an iron transporting membrane protein, which is involved in the uptake Fe at the apical portion of intestinal epithelium, and may transport Fe across the membrane of acidified endosome in peripheral tissues. In this study, we studied the tissue distribution of DMT1 in the Fe supplemented (FeS) diet fed rats, and the regulation of DMT1 expression by depleting body Fe. Sprague-Dawley rats were divided into two groups, and fed FeS (120 mg Fe/kg) diet or Fe deficient (FeD, 2∼6 mg Fe/kg) diet for 4 weeks. The evaluation of body Fe status was monitored by measuring sFe, UIBC and tissue Fe concentration. Additionally, DMT1 mRNA levels were analyzed in the peripheral tissues by using the quantitative real time RT-PCR method. In the FeS diet fed rats, the tissue Fe was maintained at a relatively high level, and DMT1 was eventually expressed in all tissues studied. DMT1 was highly expressed in the testis, kidney and spleen, while a moderate levels of DMT1 expression was detected in the brain, liver and heart. In the digestive system, the highest level of DMT1 was found in the duodenum. Feeding the FeD diet caused a reduced body weight gain and depletion of body Fe with finding of decreased sFe, increased UIBC and decreased tissue Fe concentration. The depletion of body Fe upregulated DMT1 expression in the peripheral tissue. The expression of DMT1 was very sensitive to the body Fe depletion in the small intestine, especially in the duodenum, showing dramatically higher levels in the FeD rats than those of the FeS group. In the FeD diet fed animals, the expression of DMT1 was low significantly in other tissues compared with the duodenum. The expression of DMT1, however, was 60∼120% higher in the testis, kidney and spleen, and 30∼50% higher in the lung, liver and heart, compared to the FeS diet fed rats. In summary, DMT1 expression was ubiquitous in mammalian tissue, and the level of expression was the organ-dependent. The expression of DMT1 in peripheral tissues was upregulated by depletion of body Fe. Duodenum was the most sensitive tissue among organs studied during Fe depletion, and expressed the greatest level of DMT1, while other tissues were less higher than in duodenum. This study supports that DMT1 plays a role in maintaining the body Fe level through intestinal uptake as well as homeostasis of Fe in the peripheral tissue.
