특급 호텔의 다양성 관리가 식음료 종사원의 직무열의 및 조직몰입에 미치는 영향 (The Effects of Diversity Management in a Deluxe Hotel on F & B Employees' Job Engagement and Organizational Commitment)

  • Purpose: The purpose of this study was to understand the interrelationships among diversity management, employees' job engagement, and organizational commitment in a deluxe hotel. Methods: In a total of 344 F & B employees obtained from empirical research, this study reviewed the reliability and fitness of the research model and verified a total of 4 hypotheses using the Amos program. Results: The proposed model provided an adequate fit to the data, $x^2$=316.722 (df=112), CMIN/df=2.828, GFI=0.899, NFI=0.941, IFI=0.961, TLI=0.953, CFI=0.961, RMSEA=0.073. SEM results showed that diversity management (building cultural awareness: ${\beta}$=0.206; pragmatic management policy; ${\beta}$=0.315) had a positive and significant influence on job engagement. Also, employees' job engagement (${\beta}$=0.623) had significant positive effects on organizational commitment. Conclusion: This study shows diversity management of hotel employees and its effectiveness as well as which diversity management is needed positive attitude.

  • The purpose of this study was to identify the impacts of brand and organizational identification on job satisfaction among kitchen and F & B employees of deluxe hotels. Questionnaires were distributed to 460 employees in the food and beverage departments of 11 deluxe hotels in Seoul. A total of 398 questionnaires were used for analysis (86.5%). Statistical analyses were completed using SPSS Win (12.0) to perform descriptive analysis, reliability analysis, t-tests and ANOVA. The results of the study showed that brand identification was higher with F & B employees than kitchen employees (p<0.01), and was also higher for employees of international brand hotels than local brand hotels (p<0.05). Further analyses revealed that brand identification affected organizational identification, and both types of identification, especially brand identification, had strong impacts on job satisfaction. In conclusion, employee brand identification should be recognized as one of the most important factors of human resource management in the foodservice industry.

  • As hotel industry is growing more and more with increasing income and free time, departments of Rooms and Food & Beverage(F&B) in hotels are getting more important. Especially F & B department in hotel has been playing an important role in marking 39.9% of total revenue. It is certain that F & B will be more crucial. The printed menu is an extremely important marketing tool in order to increase profits. A well-designed and well-produced menu can afford to promote efficiencies in the kitchen, to get practical service system, to save the time and to provide customers with good food. A well-designed menu can also draw to reduce expenditure on wage and food stuff.

  • The objective of this study is on evaluation process of resort hotel management strategy. Therefore, in this study, we find try to a successful implemantation of resort hotel feasibility study and management strategy by systematizing and materialinzing the theory of resort hotel. And we have also investigated and analyzed the real status of resort hotel and then worked out the problem, and estabilished a plan for feasibility determination of resort hotel, he results of this study are as follow: 1) We need to characterize, matenance, develop the benefits of resort hotel. 2) We need to know how to establish model and facilities of resort hotel. 3) We have to inclease quality and quantity of employee's service. 4) We need to effort to satisfy customer's needs and wants through improvising and enlarging facilities of resort hotel. 5) We need to specialize the quality of F & B division. 6) We need to improve the hotel image, promote sales through promotion tools like avertisement, publicity, personel selling, sales promotion.

  • The purpose of this study is to critically review the previous research on the measurement of service quality, and to present future research directions on hotel service quality measurement as follows: 1. As Carman(1990) shows in his study, items of quality measurement should be developed to be fit for the measurement of hotel service quality. 2. To evaluate the service quality of a hotel, measuring three divisions(Room, F&B and Others) separately, then combining them would be the best model. 3. Researches to identify the various dimensions of hotel service quality are needed. 4. In measuring hotel service quality, guests should be classified according to various criteria. 5. To measure the hotel service quality, SERVPERF model might be more a, pp.opriate due to the small number of items to be answered. 6. In hotel industry, researches to identify causal pths between customer satisfaction and service quality are needed. 7. We need to develop alternative scales for the measurement of hotel service quality.

  • 최근 호텔기업에서 식음료부문이 객실보다 더 많은 수익을 창출하는 부서로 인식하면서 수익성 관리와 더불어 다각적이고 과학적인 경영정책이 요구되는 실정이며, 특히 21c 호텔기업은 극심한 기술의 변화와 정보의 홍수에 휩쓸리고 있는 상황에서 호텔기업의 미래를 위한 경영목표를 달성하기 위해서는 무엇보다 호텔기업 현장관리자(지배인 : manager)들이 미래를 준비하고자 하는 노력과 열정이 요구되며 호텔기업의 리더십은 종사원의 안정적인 조직생활에 많은 영향과 자신의 목표를 달성할 수 있는 역할을 하기 때문에 기업의 전부라 하여도 과언이 아니다. 호텔기업이 성장 발전을 결정하는 가장 중요한 요인은 그 기업을 구성하고 있는 사람들의 자세와 능력에 달려있으며, 이러한 문화를 창출하는 것은 바로 전문경영인의 리더십의 역량에 달려있다. 따라서 본 연구는 호텔기업 식음료의 변혁적 리더십과 거래적 리더십의 비교분석을 통하여 효율적인 경영전략 방안을 제시하는데 그 목적이 있다.

호텔조리종사원의 개인역량이 조직성과에 미치는 영향 - 상사신뢰를 조절변수로 - (The Personal Impact on the Organization and Competence of Hotel Cook Employees - Focused on The Mediating Effect of Trust Boss -)

  • 본 연구는 2016년 1월 2일부터 2월 2일에 이르는 약 4주일 정도의 조사기간을 두어 실시하였다. 자료 수집은 서울 시내 특급호텔 6군데 호텔 조리종사원에게 연구목적과 설문내용을 충분히 설명한 후, 호텔관리 책임자의 책임 하에 자기기입식으로 응답하게 하였다. 첫째, 호텔 종사원 개인역량으로 긍정적인 영향을 미치는지 규명했다. 분석 결과, 호텔 종사원 개인역량은 B=0.657(p<.001)로 조직성과에 유의적인 정(+)의 영향력이 있었다. 둘째, 호텔 종사원 개인역량이 상사신뢰를 조절효과를 활용하여 상사신뢰가 조직성과에 영향을 설명한 것은 분석 결과, 설명력의 증가는 49.4%이고, 이에 대한 F=96.219(p<0.001) 조절효과는 유의적으로 나왔다. 유의적인 부(-)의 영향력으로 강한 조절효과를 나타냈다. 상사신뢰가 낮을수록 호텔종사자의 개인역량도 낮아지는 것으로 나타났다.

국내 자생 호텔과 다국적 호텔의 식음료.조리 종사원 인지 브랜드 개성 차이 (The Difference of Hotel Brand Personality Perceived by F&B and Kitchen Employees between Local and International Deluxe Hotels in Seoul)

  • The purpose of this study were to measure brand personalities of deluxe hotels in Seoul, and to identify the difference of brand personality between local and international hotels. The questionnaires developed for this study were distributed to 460 employees in kitchen and F&B departments of 11 deluxe hotels in Seoul. A total of 398 questionnaires were used for anaylsis(86.5%) and the statistical analyses were completed using SPSS Win(12.0) for descriptive analysis, reliability analysis and t-test, and AMOS(5.0) for confirmatory factor analysis. The results of this study showed that deluxe hotels have brand personalities relatively strong at 'affection', 'sophistication', 'competence' dimensions, and there was a significant difference by hotel nationality. The brand personality scores of international brand hotels perceived by employees were high at the 'excitement'(p<0.001), 'sophistication'(p<0.001), and 'competence'(p<0.01) dimensions, whereas local hotels were considered more obedient(p<0.01). Overall, it could be a key factor for successful brand management that establish a distinctive brand personality, and a localized brand personality measure will lead to more desirable decision making.

  • The purpose of this study is to found out that how well yield management, the element of Marketing mix possible to control, is composed and is conducted in strategic level in Italian Restaurant of domestic Hotel and that how much menu which is the element of Yield management contributes to growth of sales. As a result of this research, it is found out that all of three hotels have a different characteristic promotion hold by 10% in F/B. By that reason, out saucing is need to hotel management, but Restaurant should be activated continuously.

  • In the hotel industry, there are the production and consumption of services at the same time, considering direct contact between employees and customers. In this respect, this study was conducted based on more practical factors to grasp employees' feelings and conflicts. The results of this research are as follows. First, individual conflicts among hotel banquet employees influence devotion to the organization which has a direct effect on performance of management. Second, such devotion is closely correlated with the factors of the performance of management. Finally, managing employees' conflicts is the key factor to promote the performance of management. Under these circumstances, there should be more concern in solving problems among employees and special pro-grams for promoting job satisfaction and devotion which bring about more profits as well as a sense of achievement.
