에어커튼형 주방 레인지후드의 배기 특성 (Exhaust Characteristics of Kitchen Hood System with Inclined Air Curtain)

  • There have been many cases that the air curtain installed in the apartment can not well remove the gases such as carbon dioxide and particles such as smokes, oils and vapors generated during the cooking to disperse the pollutants into the room. This study uses the numerical analysis to show how the pollutant-removing performance of the range hood is changed when the air curtain is installed on the range hood of kitchen. As a result of the study, it turned out that, when the air amount supplied by air curtain through the slot was about 60% of exhaust amount, the capturing efficiency of range hood for pollutants increased by 70~80% more than the case without the air curtain. Even when the exhaust amount was small, the capturing efficiency was improved a lot with the use of air curtain. In case that the air flow velocity of slot was greater than 2 m/s, the capturing efficiency turned out to decrease.

Effective Local Exhaust Ventilation on Cooking Fumes of Seasoned Meats

  • This study identified the fumes produced from the cooking of the seasoned meats containing various condiments such as garlic, onion, pepper, soy sauce, and sesame oil. Concentrations, at the breathing zone of the cook, of volatile organic compounds (VOCs) and aldehydes included in the cooking fumes of seasoned meats were identified. Many chloro- and fluoro-aliphatic hydrocarbons, aromatic hydrocarbons, ketones, and aldehydes, which could be carcinogen suspecting chemicals, were producing from the cooking fumes of the seasoned meats. This study also identified the ventilation efficiencies of the cooking fumes of the six exhaust ventilation systems, which were widely being used in the general apartments, houses, and small-food factories. For a comparison of the ventilation efficiencies of the systems, acetaldehyde was chosen as a marker pollutant and its concentrations at the breathing zone of the cook were identified. The laboratory fume hood showed the best ventilation efficiency of the six ventilation systems studied, and then the lateral hood ventilation and the down draft ventilation followed the laboratory fume hood. Finally, this study identified that both a wall factor nearby pollutant sources and a distance factor between the hood face and pollutant sources should be also considered for an effective local exhaust ventilation system design.

  • When oil is used for cooking in detached or apartment houses, large amounts of oil-mist, smoke, and particulate substances are generated and dispersed into the indoor-air environment. These pollutants diffuse into the surroundings and spread their odor while rising fast at a high temperature due to the heat energy from the gas range. Although the exhaust gas is discharged from the exhaust hood, which is installed on the top of a gas range to remove the diffuse pollutants, the exhaust conditions can vary greatly because they depend on the shape of the exhaust hood and the discharge rate. In this paper, the air that is required for the gas-exhaustion process is supplied by an air curtain that surrounds the kitchen hood, and the pollutant-capturing efficiency varies depending on the angle of the discharge grills; the pollutant-capturing efficiency was studied using a numerical-analysis method. The results indicate that the pollutant-capturing efficiency is not significantly changed by a change of the discharge-grill angle at a low air-discharge rate; however, at a high air-discharge rate, the efficiency value increases with an increase of the discharge-grill angle, whereby the best value occurs at 30 degrees and the efficiency decreases above this angle. Below 30 degrees, the effect of the discharge rate on the capturing efficiency is more than that of the discharge-grill angle.

조리대에 급기구를 가진 주방 레인지후드의 배기 성능 (Exhaust Performance of a Kitchen Hood System with a Supply Air Slot on a Kitchen Table)

  • There have been many cases when an air curtain installed in the apartment could not remove the gases well, such as carbon dioxide and particles like as smoke, oils, and vapors generated during cooking to disperse pollutants into the room. This study used a numerical analysis to show how the pollutant-removing performance of the range hood is changed when the air curtain is installed front of the kitchen table. The result of this study was that when the air amount supplied by an air curtain through the slot was about 50% of the exhaust amount, the capturing efficiency of the range hood for pollutants increased 90% more than without an air curtain. Even when the amount of supplied air was small, the capturing efficiency improved markedly with the use of an upward air curtain. In case that the air flow rate of the slot was greater than 60%, the capturing efficiency decreased.

실험실습용 국소배기 기초실험장치의 개발 (Development of Basic Local Exhaust Ventilation System for Experimental Education)

  • To enhance educational effect for exhaust ventilation system, more instructive educational engineering such as experimental system should be needed. This study was performed to 1) manufacture the basic experimental system for local exhaust ventilation, 2) experiment with this system and 3) develop methodology of exhaust ventilation education. With this system, three pressures (static pressure(SP), velocity pressure(VP) and total pressure(TP)) were measured and illustrated and the graphic shapes agreed to theoretical ones relatively. Entry loss factor ($F_h$) of each hood was found to be different with hood shape, duct velocity and flow rate. This result implies that precise $F_h$ should be determined case by case and a industrial hygienist should not be dependent on the existing values. Pressure loss using velocity pressure method and characteristics of air movement near hoods using fume were grasped with this system. But larger system should be recommended to produce more precise experimental results.

중.소규모 사업장의 국소배기장치 설치 실태와 문제점 및 개선방안 (Additional Improvement and Evaluation of Exhaust Ventilation Systems at Small and Medium Sized Enterprise)

  • Objectives : The purposes of this study were to evaluate exhaust ventilation systems(EVSs) and to suggest problems and improvements. Methods : For 50 small and medium-sized enterprises, we carried out evaluation of EVSs. We evaluated hoods with smoke tester and measurement of capture velocity. In addition, we used several indicators for performance evaluation designed in this study. Results : 1. Based on the smoke flow pattern and the criteria of occupational health and safety act, 67.8% of hoods were rated 'good' level at smoke test whereas 26.3% were rated 'good' level at measurement of capture velocity. 2. 29.3% of hoods, of which ratio of measured actual air flow at hood(Qah) to required ideal exhaust air flow at hood(Qih) was 1 or more, were rated 'good' level. 3. The % of EVS, of which ratio of measured actual air flow at stack(Qast) to total required ideal exhaust air flow at hood(Qith) was 1 or more, was 29.0%. 4. For the ratio of measured Qast to existing air flow at fan(Qfan), only 5% of EVSs were 1 or more and 26.0% were 0.8 or more but less than 1.0. 5. For the ratio of measured Qast to total measured actual exhaust air flow at hood(Qath), 74.0% were 0.8 or more but less than 1.0. 6. The percentage of EVS, of which ratio of total measured Qath to existing Qfan was 0.8 or more, was 19.0%. 7. The percentage of EVS, of which ratio of total measured Qath to total required ideal exhaust Qith was 1 or more, was 26.0%. 8. For the comprehensive evaluation indicators designed in this study, 29.0% were 0.8 or more. Conclusions : We found that few exhaust local ventilations at small and medium-sized enterprises were rated 'good' level and that most exhaust local ventilations had 'poor' design and installation. Therefore, relevant professional manpower and enterprises have to construct exhaust local ventilation where it is needed, and technical guidance and economic support are needed to improve 'poor' exhaust local ventilation after self-evaluation.

유해물질 및 공업용 분진 제거를 위한 산업용 후드 개선에 관한 연구 (A Study on Improvement of Industrial Hood in Ventilation System for Elimination of Harmful Material and Dust)

  • This study investigates on the improvement of inhalation effect of hood which attached new device named as "gas-guide-device" in local exhaust ventilation system for the effective elimination of harmful material and dust in manufacturing factory. The gas-guide-device having a diamond shape is composed of width (b) and two sides of a device (X, Y) and its size is selected the industrial hood under application in manufacturing factory after due consideration. In order to investigate the effect of gas-guide-device, numerical and experimental study is performed that the flow velocity is calculated and is measured by a commercial program "COMSOL $Multiphysics^{TM}$" and a hot wire type of anemometer, respectively. The numerical and experimental results are revealed is a similar pattern and flow velocity has improved to hood attached gas-guide-device. Also, the numerical method and result is also verified the dependance. Moreover, the optimum shape and size of gas-guide-device is revealed that the width (b) and the ratio of two sides of gas-guide-device (X, Y) has 125mm and 4 to 6.

가스를 연료로 사용한 주방에서의 오염물질 발생 특성에 대한 연구 (A Study on the Occurrence Character of Contaminant in the Kitchen that Use Gas Fuel)

  • This paper is contents that measure the ventilation rates and temperature by driving condition of exhaust fan, vapor, contaminant occurrence amount of carbon dioxide etc. In kitchen of apartment house. The ventilation rates in the apartment kitchen measured by Tracer Gas Method. And, temperature of when cook by gas table hood lower part 10cm and floor upside 10cm of kitchen central part, 120cm, 210cm heights measure. As ventilation rates measurement result, ventilation number of times was 0.7(number of times/hour) when did not to operate exhaust fan. but we were measured by 2.3(number of times/hour) when drove strongly. As temperature measurement result at cooking by gas table, temperature showed highest in hood lower part 10cm of case that do not operate exhaust fan. Temperature at kitchen central was most low in 10cm height in talc floor, and 210cm were measured highest. Concentration of carbon dioxide is very high by 4,350ppm after measurement time 10 minutes in state who do not operate exhaust fan at cooking by gas table.

  • The vortex ventilation system (VV) which uses a rotating finned swirler installed coaxially with the exhaust duct is a very effective local ventilator. VV can enhance the capture depth by a factor of 3-5 compared to the conventional exhaust hood, in the absence of any solid walls nearby. In real situations there may exist ceiling, side wall and floor, all of which can affect the flow field and suction performance by way of the no-slip condition on the walls. 3D CFD simulation was performed in order to see the effect of the floor on the capture performance of the VV. The presence of floor reduced suction flow velocity, and increased the critical rotational speed which is the rotational speed required for stable vortex formation. Flow velocity profile along the axis could be well approximated by a universal functional form when the distance from the exhaust inlet is non-dimensionalized by the distance to the floor. Capture depth, define by the distance from the exhaust inlet to a point of velocity decreased to 10% of that at the inlet, is reduced by about 10% when the floor distance is 6 times the exhaust hood diameter.

외부식 다단형 슬로트 후드의 효율 향상에 관한 연구 (A Study on Improvement of Ventilation Efficiency of Multi-Stage Slot Hood)

  • This study was conducted to evaluate ventilation efficiency of 4-stage slot hood by variation of slot width, flow rate, hood size and baffle size. The slot velocity, control velocity and plenum velocity were related to slot width and the distance between source of contamination and hood. The results obtained from laboratory experiment for local exhaust ventilation systems were as follows ; 1. When slot widths were constant(equally changed) and the velocity was 6-10 m/s, the slot velocity from 1st slot to 4th slot gradually decreased. As the slot width-to-slot length ratio(WLR) decreased, the slot velocity of each stage increased. But if WLR value was less than 0.04, the slot velocity decreased. 2. When slot velocity exceeded 10 m/s with constant slot widths, the slot velocity of each stage was uniform. 3. When the slot velocity was uniform within 10 m/s and the first slot width was 14-20 mm, the slot width ratio between 1st slot and each of three other slots were 1, 1.25, 1.5 and 3.0, respectively. 4. The slot and plenum velocity were uniform when exhaust flow rate changed from 14 to $19m^3/min$ and there were no hood splitter vanes. 5. When the slot velocity at each stage was uniform, the control velocity at site 30 cm away from hood No.2 increased from 0.15-0.30 to 0.25-0.45 m/s and the control distance from 20 to 30 cm(about 1.5 times).
