Changes in the Riboflavin Content of Stir-Fried Sausage with Vegetable and Stir-Fried Garlic Young Stem at Various Cooking and Holding Processes in Food Service Establishments( I ) (단체급식소에서 제공되는 소시지-채소 볶음과 마늘종 볶음의 생산단계 및 보관단계에 따른 리보플라빈 함량 변화(1))

  • In order to develop a better food preparation method in terms of vitamin retention in food service establishments, the retention rate of riboflavin in two kinds of Korean dish (stir-fried sausage with vegetables, stir-fried garlic young stems) were examined during various cooking stages, holding temperature and duration time. Riboflavin content of the sample was analyzed using by using a HPLC with a fluorescent detector at various holding durations and temperatures. Also the changes in the pH and water contents of the samples were measured during holding at various temperatures to find any relation among the pH, water contents and riboflavin content. In the results, there were significant differences in riboflavin contents at various cooking processes such as washing, slicing, blanching, soaking, etc. Also, the retention rates of riboflavin at various holding methods and temperature were significantly different from one another. Especially 50% reduction of riboflavin content occurred during blanching of young garlic stem and only 38% of riboflavin was left after slicing carrots for stir-frying of sausage.

  • HTTP/1.1 standard reduces latencies and overhead from closing and re-establishing connections by supporting persistent connections as a default, which encourage multiple transfers of objects over one connection. HTTP/1.1, however, does not define explicitly connection-closing time but specifies a certain fixed holding time model. This model may induce wasting server's resource when server maintains conn ection with the idle-state client that requests no data for a certain time. This paper proposes the mechanism of a heuristic connection management supported by the client-side under persistent HTTP, in addition to HTTP/1.1's fixed holding time model on server-side. The client exploits the tag information within transferred HTML page so that decides connection-closing time. As a result, the mechanism allows server to use server's resource more efficiently without server's efforts.

Effects of Earthenware Vase on Vase Life of Cut Gerbera Flowers and Microbial Multiplication (옹기 화병이 절화 거베라의 수명 및 미생물 증식에 미치는 영향)

  • To examine the availability of onggi (earthenware) as a floral vase, we compared the vase life of cut gerberas (Gerbera jamesonii) with generally used vases made of glass and porcelain. After holding cut gerbera 'Honeymoon' and 'Golden Time' in vases made of glass, porcelain, and onggi containing holding solution (tap water or preservative solution), vase life, fresh weight, and water uptake of cut flowers, and total number of microbes in holding solution were collected. In onggi vase, vase life of both the cultivars was longer than the other vases and floral preservative prolonged vase life compared with tap water. Cut gerberas applied with preservative solution in onggi vase maintained their ornamental value for more than 14 days. Cumulative water uptake by cut gerberas was greatest in onggi vase, where 'Honeymoon' and 'Golden Time' absorbed water by 19.2 and 15.8 mL, respectively, for 10 days. Fresh weight of cut flowers in onggi vase was greater than those of the others, and the preservative solution delayed the reduction of fresh weight compared with tap water. Especially, onggi vase with preservative solution maintained 89% of the initial fresh weight at the 8th day of the treatments due to smooth water uptake with comparison with 71% in porcelain. Total number of microbes in the holding solution was smallest in onggi vase. At the 8th day, microbes number in onggi vase was 435 cfu/mL, that was 20-30% level of those of glass and porcelain vases. In conclusion, onggi vase inhibited microbial proliferation in holding solution, maintained water uptake by cut flower, and delayed bending of flower stalks due to vascular blockage, and then prolonged vase life in gerbera. Therefore, onggi with numerous micropores will be a good material for flower vase and preservative solution can improve its function.

Process Design for Manufacturing 1.5wt%C Ultrahigh Carbon Workroll: Void Closure Behavior and Bonding Strength (1.5wt%C 초고탄소 워크롤 제조를 위한 단조 공정 설계: 기공압착 및 접합강도 분석)

  • Experiments and numerical simulations of the incremental upsetting test were carried out to investigate void closure behavior and mechanical characteristic of a 1.5wt%C ultra-high carbon steel. The experimental results showed that the voids become quickly smaller as the reduction ratio increases. The simulation results confirmed this behavior and indicated that the voids were completely closed at a reduction ratio of about 40~45% during incremental upsetting. After the completion of the incremental upsetting tests, the process of diffusion bonding was employed to heal the closed voids in the deformed specimens. To check the appropriate temperature for diffusion bonding, deformed specimens were kept at 800, 900, 1000 and $1100^{\circ}C$ for an hour. In order to investigate the effect of holding time for diffusion bonding at $1100^{\circ}C$, specimens were kept at 10, 20, 30, 40, 50 and 60minutes in the furnace. A distinction between closed and healed voids was clearly established using microstructural observations. In addition, subsequent tensile tests demonstrated that complete healing of a closed void was achieved for diffusion bonding temperatures in the range $900{\sim}1100^{\circ}C$ with a holding time larger than 1 hour.

Transient Liquid Phase Bonding of Directionally Solidified Ni Base Superalloy, GTD-111(I) - Bonding Phenomena and Mechanism - (일방향응고 Ni기초내열합금 GTD-111의 천이액상확산접합(I))

  • The bonding phenomenon and mechanism in the transient liquid phase bonding(TLP Bonding) of directionally solidified Ni base superalloy, GTD-111 was investigated. At the bonding temperature of 1403K, liquid insert metal was eliminated by isothermal solidification which was controlled by the diffusion of B and Si into the base metal and solids in the bonded interlayer grew epitaxially from mating base metal inward the insert metal. The number of grain boundaries formed at the bonded interlayer was corresponded with those of base metal. The liquation of grain boundary and dendrite boundary occurred at 1433K. At the bonding temperature of 1453K which is higher than liquation temperature of grain boundary, liquids of the Insert metal were connected with liquated grain boundaries and compositions in each region mixed mutually. In Joints held for various time at 1453t phases formed at liquated grain boundary far from the interface were similar to those of bonded interlayer. With prolonged holding time, liquid phases decreased gradually and liquids of continuous band shape divided many island shape. But liquid phases did not disappeared after holding for 7.2ks at 1453k. Isothermal solidification process at the bonding temperature which is higher than the liquation temperature of the grain boundary was controlled by diffusion of Ti to be result in liquation than B or Si. in insert metal.   • The nickel-based alloy Nimonic 80A possesses strength, and corrosion, creep and oxidation resistance at high temperature. These products are used for aerospace, marine engineering and power generation, etc. The control of forging parameters such as strain, strain rate, temperature and holding time is important because the microstructure change in hot working affects the mechanical properties. It is necessary to understand the microstructure variation evolution. The microstructure change evolution occurs by recovery, recrystallization and grain growth phenomena. The dynamic recrystallization evolution has been studied in the temperature range $950-1250^{\circ}C$ and strain rate range $0.05-5s^{-1}$ using hot compression tests. The metadynamic recrystallization and grain growth evolution has been studied in the temperature range $950-1250^{\circ}C$ and strain rate range 0.05, $5s^{-1}$, holding time range 5, 10, 100, 600 sec using hot compression tests. Modeling equations are developed to represent the flow curve, recrystallized grain size, recrystallized fraction and grain growth phenomena by various tests. Parameters of modeling equation are expressed as a function of the Zener-Hollomon parameter. The modeling equation for grain growth is expressed as a function of initial grain size and holding time.

  • Glass ceramics for dental crown prosthesis were prepared by crystallization of CaO-MgO-SiO2-P2O5-TiO2 glasses. Their crystallization behaviors have been investigated as a function of heattreatment temperature and holding time in relation to mechanical properties. The results are as follows: Vickers hardness and bending strength of glass ceramics increased due to the precipitation of apatite, whitlockite, $\beta$-wollastonite, magnesium titanate, and diopside crystal phases within glass matrix. The final crystalline phase assemblages and the microstructures of the glass ceramics were found to be dependent on heat-treatment temperature and holding time. Vickers hardnes and bending strength of glass ceramics increased with increasing heat-treatment temperature and holding time.

  • Post weld heat treatment(PWHT) of weldment of the low alloy steel is carried out to remove residual stress existing in weldment and to improve fracture toughness, but it is often observed that there occurs grain boundary failure and that fracture toughness decreases in weld heat affected zone(HAZ)because of PWHT. In this paper, the effect of heating rate and holding time of PWHT on fracture toughness were evaluated by crack opening displacement (CDD)test and micro-hardness test under the constant stress simulated residual stress in HAZ of Cr-Mo steel. The experimental results are as follow; (1)Transition temperature of weld HAZ after PWHT was dependent upon heating rate greater than holding time, and fracture toughness was decreased with an increase of the heating rate. (2)Softening ration of the notch tip was increased with holding time within one hour and saturated after one hour, but under applied stress it was increasing continuously. (3)The average hardness value in weld HAZ was increased with heating rate of PWHT.

Dissolution Behavior of Complex Carbonitrides in a Microalloyed Steel (Microalloyed 강에서 복합 탄질화물의 재용해 거동)

  • Dissolution behavior of complex carbonitrides in a Nb-Ti-V microalloyed steel was quantitatively examined by electrical resistivity, transmission electron microscopy (TEM), and optical microscopy. The electrical resistivity increased with solution treatment temperature up to $1250^{\circ}C$ for a holding time of 15 min. But, an increasing rate of electrical resistivity with temperature was obviously decreased above $1150^{\circ}C$. As the solution treatment temperature increases, irregular shaped Nb-rich carbonitrides disappear and cuboidal Ti-rich carbonitrides are observed. Abnormal grain growth occurs above $1250^{\circ}C$ for a holding time of 15 min. The optimal solution treatment temperature of a Nb-Ti-V microalloyed steel was determined as $1200^{\circ}C$ for a holding time of 15 min.

  • Ductile cast iron has a good ductility and toughness than those of gray cast iron, because the shape of graphite is spheroidal. Also, it has been reported that, additional strengthening and toughening of the ductile cast iron can be obtainded from the proper combination of matrix structures by the heat treatment and addition of alloying elements. In this study the effect of special heat treatment and addition of alloying elements(Ni, Mo) on the multi-phase(ferrite-bainite-martensite) structures, strength and toughness of ductile cast iron were studied systematically. In water quenching from $770^{\circ}C$, the martensite volume(%) increased, but the ferrite volume(%) decreased with increment of Ni content. In as cast, pearlite volume(%) and hardness increased with increment of Mo and Ni contents. And with the increment of the destabilization austempering holding time, the bainite volume(%) increased but the martensite volume(%) decreased. As destabilization austempering holding time is same, bainite volume(%) decreased, martensite increased with the increment of Ni and Mo contents. The hardness and tensile strength decreased, but impact energy increased with the decrease of Ni and Mo contents, and increment of holding time of destabilization austempering treatment.
