Changes in Amino Acid Contents during Drying and Storage of Shellfish Meat (패육의 건조 및 저장중 아미노산 함량의 변화)

  • The changes in amino acid contents of sea mussel and baby clam during drying at 40, 50 and 6$0^{\circ}C$ and storage at low temperature(4$^{\circ}C$) and room temperature(2$0^{\circ}C$) were investigated. Amino acids of 17kinds were analyzed in sea mussel and baby clam. Total amino acids content of raw sample were similar to sea mussel and baby clam(6575.30mg%, 6764mg%), decreased during drying and rate of decreasing was higher in baby clam than that of sea mussel. The content of Glx was highest in sea mussel(790.55mg%) and baby clam(990.89mg%), other amino acids differed from samples. The content of amino acids of low drying temperature(40 and 5$0^{\circ}C$) decreased was higher than that of high drying temperature(6$0^{\circ}C$). The rate of decreasing was higher at room temperature(2$0^{\circ}C$) storage and short storage periods than that of low temperature(4$^{\circ}C$) storage and long storage periods.

Drying Characteristics of Oak Mushroom Using Conveyer Far Infrared Dryer - Down Draft Air Flow Type - (컨베이어 원적외선 건조기를 이용한 표고버섯의 건조특성 - 하향 송풍방식 -)

  • This study was conducted to develop a new drying method far reducing the drying cost and time and to investigate the drying characteristics of oak mushroom. A far infrared dryer of down draft air flow type used for this experiment can control the drying parameters, such as far infrared heater temperature and aeration velocity. The far infrared drying tests were performed at aeration velocities of 0.3 and 0.6m/s under the temperature of 90 and 100$^{\circ}C$ in for infrared heater, respectively. The results were compared and analyzed with those of an heated air drying method used as a control in terms of properties representing the drying characteristics. such as shrinkage rate, color, energy consumption amino acid components, drying rate and moisture ratio. The results obtained from this research can be summarized as follows. 1. The drying rate of far infrared drying was faster than that of heated air drying. With high temperature of far infrared heater and slow aeration velocity, the far infrared drying of down draft air flow type was superior to the heated air drying. 2. Most of far infrared drying conditions required less energy consumption than heated air drying. 3. The shrinkage rates of heated air drying and far infrared drying were decreased by 17.0% and 18.2∼19.8%, respectively. 4. The difference of color on oak mushroom surface before and after drying can be represented as $\Delta$E. $\Delta$E values of far infrared drying and heated air drying were 2.39∼4.55 and 6.77, respectively. 5. The amounts of free amino acids were higher in the far infrared than in the heated air drying. In addition the amounts of Gln and Glu generally were increased and those of Ala, Leu, and Val were decreased in order.

  • This study relates to a method for manufacturing a solid electrolytic capacitor using a functional polymer composition. The method comprises immersing the rolled aluminum electrolytic capacitor device in polyaniline solution with high electric conductivity to impregnate the device with polyaniline, drying the impregnated device in a drying oven which is maintained at constant temperature to fully remove the solvent, inserting the dried device to a capacitor aluminum can and then sealing with epoxy resin, to manufacture a solid electrolytic capacitor using a conducting polymer. As such, the impregnation can be performed well at not only normal temperature and pressure, but also high temperature and reduced pressure. The solid electrolytic capacitor has the advantages of high capacity, low impedance and low ESR, and also, low manufacturing cost, simple processes and high reliability.

  • This paper presents a heating source of carbon nanofibers for the efficiency and the drying performance of laundry dryer, and focuses on the applicability-evaluation of its source. To design the proposed heating module, experiments were conducted in terms of surface temperature and surface temperature distribution characteristics of carbon nanofiber lamps. The surface temperature of the lamps increased linearly with increment of a current to flow a lamp and revealing the increasing pattern as the length of the ramps is shorter. The proposed heating source was evaluated based on drying efficiency, moisture evaporation rate at laundry, and internal temperature of a drum during drying process. The drying efficiency satisfied a 45% which is specified in KS C 9319. The moisture evaporation rate and the internal temperature of the drum were respectively 98.88% and $61.1^{\circ}C$, which are similar to that of S's company dryer. From the evaluation and actual drying test results, the proposed carbon nanofiber lamp heating module is considered to be applicable as a heat source for laundry dryer in terms of drying efficiency and drying performance. it is possible to obtain a heat source at a high temperature, an excellent calorific value, an improvement in drying performance, and an effect of sterilizing laundry due to the emission of far-infrared rays. In addition to the applicability, the difference of the drying efficiency between the dryers was analyzed in detail based on the power consumption of the heat sources.

Effect of Drying on the Nutritional and Organoleptic Characteristics of African Leafy Vegetables, Jute Mallow (Corchorus olitorius L.) and Cowpea (Vigna unguiculata)

  • Purpose: The present study investigated the nutritional and organoleptic characteristics of two African leafy vegetables (ALVs)-jute mallow (Corchorus olitorius L) and cowpea (Vigna unguiculata)-at various drying temperatures. Methods: The thin-layer drying of cowpea leaves and jute mallow was studied at various temperatures ($40-100^{\circ}C$) in a convective laboratory dryer, and the nutrient profiles of the dried vegetables were determined. The nutrients considered were vitamins B2 and C, and ${\beta}$-carotene. The level of vitamin C was determined by high-performance liquid chromatography (HPLC), whereas the levels of ${\beta}$-carotene and vitamin B2 were determined by titration. Results: ${\beta}$-carotene was the most stable nutrient, whereas vitamin C was the least stable nutrient in both cowpea leaves and jute mallow. The drying parameters-temperature and time-revealed that temperature had the most profound effect on vegetable nutrient stability. Organoleptic tests were carried out on the fresh and dried vegetable; there were no significant differences in preference between the fresh and dried ALVs (95% confidence interval). Conclusions: The present study revealed that the vegetables can be preserved by drying, and the study could be used as a guide for effective drying of those vegetables.

The Effects of Intermediate Drying after Padding on the Resist-Discharge Printing of Cotton Fabrics with Reactive/Reactive Dyes (패딩 후 중간건조가 반응/반응염료에 의한 면직물 방발염에 미치는 영향)

  • In resist-discharge printing of cotton fabrics with reactive/reactive dyes the effects of intermediate drying on the white and the colored resist-dischargeabilities were studied. From the results of resist-discharge printing in case of 75% pick up, it was found that the most effective condition of intermediate drying which could at once prevent bleeding and improve the resist-dischargeability was 11$0^{\circ}C$ x 1min. The drying condition of 10$0^{\circ}C$ x 2min or 12$0^{\circ}C$ x 1min can be also recommended. It is important to pay close attention to the intermediate drying temperature and time. Because in case of 75% pick up when drying was carried on at 11$0^{\circ}C$ or 12$0^{\circ}C$ for more than 1 minute the resist-dischargeability was greatly lowerd by the fast fixation of ground color caused by high temperature, and in case of 100 % pick up the insufficient drying of ground color caused the resist-dischargeability to lower with giving rise to various troubles such as bleeding and smearing.

Influence of Freezing Rate on the Aroma Retention in a Freeze Drying System (동결건조 시스템에서 동결속도가 향미물질 보존에 미치는 영향)

  • The objective of this study was to investigate the effects of freezing rate on aroma retention and to examine the mechanism of aroma retention during freeze drying process. Our experiments were carried out with self-manufactured freeze-dryer. Gelatin gels (2% w / w, 80${\times}$20mm) containing diacetyl(2mg/ml) were frozen unidirectionally (Neumann's model) from the bottom at -45, -30, -20, and -15$^{\circ}C$ and followed with freeze-drying. Under the upper conditions we measured freezing rate and the change of temperature and pressure during freeze drying. Freeze-dried gelatins were cut horizontally into 5 mm thickness from the bottom measured and diacetly contents. Besides, we observed the effect of the relative humidity of the diacetyl contents freeze-dried gelatin during storage. The retained diacetyl content was increased at high freezing temperature and in order of 0∼5, 5∼10, 10∼15, 15∼20 mm section from the bottom of the sample. It was observed that the retained diacetyl content was high in 15∼20 mm section. The retained diacetyl content and freeze-dried gelatin stored in the condition of high relative humidity was decreased significantly but in the low relative humidity case, was it decreased in small amount. The results of our experiment resents that the low temperature freezing and low humidity storing condition is effective for preserving aroma compound in food.

  • Persimmon boards of 30mm thick were dried, their temperatures were monitored during drying with 490 and 200watt microwave, and the drying efficacy and problems were investigated. The effects of pretreatments such as presteaming and prefreezing were also examined. The persimmon green lumbers of 80% moisture content were dried to 10% for only 50~60 and 110 minutes with 49watt and 200watt microwave, respectively. Severe internal checks were, however, found in all boards. The presteamed boards collapsed on their surfaces earlier than the controls. It may attribute to the high temperature inside boards during microwave drying and the decrease of their internal tensile strength caused by the presteaming treatment. To increase the internal tensile strength of the pretreated boards and to reduce their internal checks, they were air-dried at room temperature. The air-dried boards could be dried to 10% moisture content clearly and free from defects with 200watt microwave. The heating efficiency were also calculated with the maximum weight loss per minute of 490watt and 200watt.

Bioactive Component Content as Affected by Different Drying Condition in Peony (Paeonia lactiflora Pall.) Root (건조처리 조건에 따른 작약근 생리활성 성분 함량 변화)

  • This experiment was conducted to know the changes of bioactive component content in four-year-old peony (Paeonia lactiflora Pall.) root with various drying methods such as room temperature drying, $50^{\circ}C$ heat-air drying, room temperature drying after $80^{\circ}C$ boiling water treatment and freeze drying, and to establish the optimum drying method for high quality production of Paeoniae Radix. For this purpose, the contents of paeoniflorin, albiflorin and five phenolic compounds (gallic acid, benzoic acid, (+)-catechin, (-)-epicatechin and (+)-taxifolin 3-O-$\beta$-D-glucopyranoside) in peony root with different drying methods were analyzed by RP-HPLC. The contents of paeoniflorin, albiflorin and (+)-taxifolin 3-O-$\beta$-D-glucopyranoside at room temperature drying were higher than in the other drying methods and that of gallic acid at 8$0^{\circ}C$ boiling water treatment was the highest among that of all drying methods. In the case of freeze drying, the contents of (+)-catechin, benzoic acid and (-)-epicatechin were the highest among those of all drying methods. As increase of drying and treatment temperature, the contents of paeoniflorin, albiflorin, (+)-taxifolin 3-O-$\beta$-D-glucopyrano-side, (+)-catechin and benzoic acid were decreased.
