  • The red ginseng is very popular as a health food. It has been manufactured with raw ginseng by the conventional method. But, the yield of the heaven grade ginseng (the best quality red ginseng) among the whole products is around 5-7%, Therefore, the yield should be improved in order to increase economic returns. In this study, a new model of drying system was developed to improve the yield of heaven grade ginseng from 7% to 15% or more. For this system, temperature and relative humidity were controlled by the feedback control system, and a solenoid valve for steam supply and other variables were controlled by the PC. The special features of this system developed are an image processing system for monitoring the red ginseng during the drying process in the drying chamber, and a cylindrical porous tray for holding ginseng that is rotating with the speed of 0-10rpm in the drying chamber and makes uniform drying of red ginseng possible.

한국산 및 외국산 홍삼의 사포닌 및 무기물 성분 비교 (Comparison of the Content of Saponin and Mineral Component in Korean Red Ginseng and Other Red Ginseng)

  • 본 연구는 각국 홍삼의 성분비교 연구로서 한국홍삼(찬삼, 지삼, 양삼), 북한홍삼(천삼, 지삼, 양삼), 중국석주홍삼(1등, 2등, 3등), 중국길림홍삼(1등, 2등, 3등), 일본운주홍삼(1등, 2등, 3등) 및 일본신주홍삼(1등, 2등, 3등) 등을 대상으로 사포닌 및 무기물 함량에 대해서 비교 분석한 결과는 다음과 같다. 조사포닌 함량은 한국홍삼의 경우 3.05~3.76%, 북한홍삼은 2.09~3.21% 중국석주홍삼은 2.82~3.71%, 중국길림홍삼은 2.72~3.62%, 일본주홍삼은 2.11~2.44% 그리고 일본신주홍삼은 2.18~2.87%로 전반적으로 한국홍삼이 높게 나타났다. Ginsenoside중에 Rb1, Bb2, Rc, Rd, Re, Rg$_{1}$ 함량을 분석한 결과, 한국홍삼의 경우 약 1.43%로 북한홍삼 1.14%, 중국석주 1.13%, 중국길림 1.07%, 일본운주 0.95%, 일본신주 1.10% 보다 한국홍삼이 약 0.52~0.33% 더 많이 함유하고 있다. 특히 ginsenoside 중에서 Rb$_{1}$, Re, Rg$_{1}$ 성분이 대체적으로 한국홍삼에 많이 함유하고 있었으며, 그 외 성분은 비슷한 경향으로 나타났다. 26종의 무기물함량을 한국홍삼과 타국홍삼과 비교 조사한 결과, 차이는 큰 원소는 As, Ce, Sb, Sm, Sr, K, La, Na 등이었으며, 특히 La성분이 한국홍삼은 0.64~0.88% ppm, 북한홍삼은 0.43~0.67 ppmdldjTdmsk 중국홍삼(석주삼, 길림삼)은 0.09~0.21 ppm 정도이고, 일본홍삼은 0.04~0.14 ppm이었다. 그리고 Na함량에 있어서 한국홍삼은 286~350 ppm인데 비해서 중국홍삼은 59~180 ppm으로 상당히 낮았으며, Sn함량도 한국홍삼은 10.00~72.65 ppm이었으나 중국홍삼은 3.75~9.71 ppm이었다. Brgkafid에 있어서는 일본홍삼이 2.10~3.56 ppm으로 나타났으나 한국홍삼은 0.89~2.77 ppm, 중국홍삼은 0.42~1.04 ppm이었고 Ce함량은 일본홍삼이 가장 낮았다.

홍삼의 자기공명 특성과 영상 분석 (Analysis of Magnetic Resonance Characteristics and Images of Korean Red Ginseng)

  • In this study, the feasibility of magnetic resonance techniques for nondestructive internal quality evaluation of Korean red ginseng was examined. Relaxation time constants were measured using various grades of red ginsengs. Solid state magnetic resonance imaging technique was applied to image dried red ginsengs which have low moisture contents (about 13%). A 7 tesla magnetic resonance imaging system operating at a proton resonant frequency of 300 ㎒ was used for acquiring MR images of dried Korean red ginseng. The comparison test of cross cut digital images and magnetic resonance images of heaven grade, good grade with cavity inside, and good grade with white part inside red ginseng suggested the feasibility of the internal quality evaluation of Korean red ginsengs using MRI techniques. A good grade red ginseng included abnormal tissues such as cavities or white parts inside was observed by the signal intensity of MR image based on magnetic resonance properties of proton nucleus. Analysis on an one dimensional profile of acquired MR image of Korean red ginseng showed easy discrimination of normal and abnormal tissues. MR techniques suggested ways to detect internal defects of red ginsengs effectively.

해가림 종류가 수삼, 홍삼 및 백삼의 품질과 무기물 함량에 미치는 영향 (Effect of Shading on the Quality of Raw, Red and White Ginseng and the Contents of Some Minerals in Ginseng Roots)

  • The quality of raw, red and white ginseng and the contents of some minerals were examined using 6-year-old ginseng roots produced in different shades, thatch and polyethylene net (P..E.). The yield of first and second grade ginseng roots was higher in the thatch shade than in the P.E. shade. The smaller sizes of ginseng routs were probably due to loss of ginseng yield called by alternaria blight in the third and fourth years, and lower quality was dale to more rusty roots in the P.E. shading. For red ginseng. rates of heaven and earth grades were higher in the P.E. than thatch shade. producing red ginseng with less inside cavity Production of white ginseng was higher in the thatch shade than in the P.E. shade. showing a higher yield, better piece grade, lower inside crack and better quality index in the thatch. The contents of some minerals such as K, Ca, Mg and Mn of fine ginseng roots differed between the two shades, some of which had a significant correlation with the quality indices of white ginseng. 재식밀도와 재배광도가 인삼의 수량과 품질에 미치는 영향 (Effect of Growth light and Planting Density on Yield and Quality of Panax ginseng C. A. Meyer)

  • 재배광도와 재식밀도(40, 56, 90주/칸)가 인삼의 수량과 홍삼의 품질에 미치는 영향을 사양토산지삼포에서 수행하였다. 1. 20%의 광도는 수량이나 홍삼품질에서 5% 관행광도에 이하여 유의차를 보이지 아니하였다. 2. 고광도는 줄기를 줄이고 엽면적을 적게 했으며 비엽중을 증대시켰으나 경직경이 적은 것으로 보아 조기낙엽의 피해 가능성이 있다. 3. 고광도는 엽록소함량을 적게 하였으나 Chl a /b값은 차이가 없었고 잎의 수분함량에 차이가 없었다(6 월 15일). 4 최대수량과 최대천지삼율을 나타내는 재식밀도는 칸당 64본으로 일치하였다. 5. 외관천지삼율은 천지삼율과 유의(P=0.01) 정 상관을 보였다. 6. 내백은 56 주구에서 유의성 있게 높았으며 백피는 90본에서만 유의성 있게 낮았다 7. 내공은 재식밀도와 유의성 있는 관계가 없어 밀식이 내공방지에 유효하다는 일반의 믿음과 일치하지 아니하였다.

  • Quality evaluation of red ginsengs is determined by outer shape and inner qualities. Especially, the inner qualities are main grading criteria. Currently, red ginsengs are classified into 3-grades; heaven, earth and good. The best heaven grade must not include inner holes and sponge tissues. This study was conducted to develop a red ginseng sorting system using x-ray image processing technique. Because of lens characteristic, gray values of the central region in the x-ray image are higher and gradually decreased towards the edge regions. This difference of gray values gives trouble in segmentation and detection of inner holes in red ginseng image, so preprocessing technique is necessary. The preprocessing was done by subtracting source image from an empty background image. But, simple subtraction was not quite appropriate because of too small contrast between inner holes and sound part. Scaled subtraction images were obtained by multiplying all gray values by some numbers. However this method could not help to set threshold value because the gray values of root part are generally lower than body part when red ginseng is exposed to the x-ray. To determine threshold value for detecting inner holes, an algorithm was developed by increasing overall gray values of less clear images.

다경형(多莖型) 인삼(人蔘)의 지상부 생육 및 홍삼(紅蔘) 품질 특성 (Characteristics of Aboveground and Red Ginseng Quality of Polystem Ginseng(Panax gjnseng C.A. Meyer))

  • 6년근 인삼에서 다경형(多莖型) 인삼의 지상부 생육특성과 다경형 인삼 뿌리를 원료로 하여 제조한 홍삼의 품질을 조사하였던 바 몇가지 얻어진 결과를 요약하면 다음과 같다. 株당 줄기의 직경, 무게 및 잎의 무게 , 면적은 줄기 수가 많을수록 증가되었으나 줄기당 줄기의 직경 및 엽면적, 엽중은 감소하였다. 주내(株內) 줄기의 직경, 무게 및 잎의 무게, 면적에 대한 변이폭은 줄기수가 많은 인삼일수록 증가되는 경향을 보였다. 근중에 대한 지상부중의 비는 2경(莖)이하의 인삼에 비해 3경(莖)이상의 인삼에서 높았다. 2경이하의 인삼에서는 주당엽면적 및 엽중과 근중간에 정 (+)의 상관이 인정되었으나 경당 엽면적 및 엽중과 근중간에는 유의 상관이 인정되지않았다. 홍삼품질의 저해요인인 내공(內空) 및 내백(內白) 발생비을은 대편급 $(100{\sim}150g/root)$ 과 중편급 $(60{\sim}99g/root)$ 다같이 1.2경인 인삼에 비해 3경인 인삼에서 월등히 많았고 고급홍삼(天蔘+地蔘) 수율(收率)은 3경인 인삼에서 감소하였다. 따라서 고급홍삼 수율을 높이기 위해서는 줄기 수가 많은 품종육성이나 지상부를 지나치게 번무(繁茂)하게하는 재배방법은 바람직하지 않은 것으로 보인다.

Characteristics of Korean ginseng varieties of Gumpoong, Sunun, Sunpoong, Sunone, Cheongsun, and Sunhyang

  • Background: Ginseng (Panax ginseng Meyer) is an important medicinal herbs in Asia. However, ginseng varieties are less developed. Method: To developed ginseng varieties, a pure line selection method was applied in this study. Results: Gumpoong was testing of 4-yr-old specimens in 2002, the proportions of the below-ground roots that were rusty colored for Gumpoong was 1.29 in Daejeon and 1.45 in Eumseong, whereas the proportions for its yellow berry variant were 2.60 and 2.45 in the two regions, respectively. Thus the Gumpoong was resistant to root rust. Sunpoong has a high yielding property. Its average root weight is 70.6 g for 6-yr-old roots. Its yield is 2.9 kg/$1.62m^2$ and the rate of heaven- and earth-grade product is 20.9%, which is very high compared to 9.4% for Yunpoong. Sunone is resistance to root rot and the survival rate of 4-yr-old roots was 44.4% in 1997, whereas that of the violet-stem variant landrace was 21.7%. Sunhyang has content of arginyl-fructosyl-glucose (AFG), which produces the unique scent of red ginseng, is $95.1{\mu}mol/g$ and greater than the $30.8{\mu}mol/g$ of Chunpoong in 6-yr-old plants. Sunun and Cheongsun are being nurtured to protect genetic resources. Conclusion: Developed ginsneg varieties will be used as the basis for the protection of genetic resources and breeding.
