Carcass Characteristics and Primal Cut Yields of Hanwoo as Affected by Sex (한우의 성별에 따른 도체특성과 부분육 생산수율 조사)

  • The purpose of this study was to investigate the carcass characteristics and the primal cut yields from carcasses according to the sex of Hanwoo. Experimental animals comprised of 80 cows, 29 bulls, and 71 steers. After slaughtering, they were evaluated to estimate the productivity of carcass components by market weight, and to predict the beef carcass yield. The average of fasting weight of cow, bull and steer were 634.75 kg, 721.86 kg, and 754.10 kg respectively. Market weight of Hanwoo at cold carcass weight, primal lean cut weight, sub-primal lean cut weight, bone weight and fat weight were 381.01~467.60 kg, 240.79~310.36 kg, 208.27~276.47 kg, 57.23~76.28 kg and 89.19~138.97 kg respectively. Body measurement traits had side length, hindquarter length, cervical vertebrae length, lumbar vertebrae length, sacral vertebrae length, 6th lumbar vertebrae~heel length, 5~6th thoracic vertebrae breadth, 4~5th lumbar vertebrae breadth, 5th sacral vertebrae breadth, 7~8th thoracic vertebrae girth and 7~8th thoracic vertebrae thick were highest length in steer. Carcass weight (CW) were significantly (p<0.05) affected by sex and live weight. The lean meat percentage, fat percentage and bone percentage based on the weight of cold carcasses were significantly different (p<0.05) between sex groups. The primal cuts rate for deungsim, moksim, abdari, udun, suldo, yangjee and satae were higher in bulls than those of the caws and steers. The carcass by-product weight rate in steer had lower oxtail and rib cartilage than cow and bull, while cow showed lower beef leg bones and jappyeo than bull steer (p<0.05). Body measurement traits was always important for primal cut weight estimates.

Survey on the Effect of the Herd Size on Reproductive Traits of Korean Native Cows (사육규모에 따른 한우 번식 실태 조사)

  • A survey was carried out to investigate the effect of the herd size on the reproductive traits of Hanwoo(Korean native cows). Data on the reproductive traits of 670 Korean native cows were collected from January, 1996 to December, 1997 and analyzed by the herd size. The results obtained were summarized as follows: 1. The average ages at first breeding were 437.9, 425.5 and 452.9 days in herd size 1 (less than 20 heads), 2 (21∼50 heads) and 3 (more than 51 heads), respectively (the over all average was 443.0 days). However, there was no significant difference between herd sizes (p>0.05). 2. The average ages at first conception were 452.8, 438.4 and 467.1 days in herd size 1, 2 and 3, respectively (the over all average was 460.0 days). However, there was no significant difference between herd sizes (p>0.05). 3. The average ages at first calving were 741.2, 730.2 and 755.9 days in herd size 1, 2 and 3, respectively (the over all average was 746.6 days). However, there was no significant difference between herd sizes (p>0.05). 4. The average days to first estrus after calving was 70.1 days and it was shortest in herd size 3 (64.8 days) and longest in herd size 1(82.1 days). 5. The average numbers of services per conception were 1.54, 1.61 and 1.48 in herd size 1, 2, and 3, respectively (the over all average was 1.53). However, there was no significant difference between herd sizes (p>0.05). 6. The average days to first conception after calving were 115.6, 99.1 and 80.6 days in herd size 1, 2 and 3, respectively (the over all average was 91.2 days). There was a trend that it was shorter as the herd size increased(p<0.05). 7. The average length of calving interval was 375.3 days and it was shortest in herd size 3 (367. 4 days) and longest in herd size 1 (389.5 days).

Effect of Bovine Somatotropin (bST) Treatment on Embryo Recovery and Pregnancy Rate in Hanwoo (한우에서 bST 처리가 수정란 회수 및 수태율에 미치는 영향)

  • The purpose of this study was to determine the effect of bST treatment on embryo recovery and pregnancy rate following embryo transfer. Donor cows were superovulated with Folltropin-V and PGF$_2$$\alpha$ combination method and then inseminated with frozen semen 3 times 12 hrs interval. Donor and recipient cows were assigned to control and bST group, of which was given a single injection of bST (500 mg, im) at insemination or estrus detection. Embryo collection of superovulated cows were flushed nonsurgical method at 7 to 8 days after artificial insemination. The percentare and Mean$\pm$S.E. of transferable embryo was not significantly different between control and bST treatment (72.8%/5.9$\pm$4.5 vs. 83.7%15.1 $\pm$ 1.6). The percentage and Mean$\pm$S.E. of transferable embryo in non-summer season was significantly higher than in summer (81.8%/5.4$\pm$2.1 vs. 68.7%14.774.6; P<0.05). The pregnancy rate after embryo transfer in bST treatment was significantly higher than in control (64.0 vs. 47.1%; P<0.05). There was no significant difference in pregnancy rate between summer and non-summer (51.6 vs. 61.5%; P>0.05). The results indicated that InST treatment in recipient cows could improve the efficiency of transferable embryo production and pregnancy rate after embryo transfer, and non-summer season may be better far superovulation treatment and embryo transfer.

Effect of Interferon Supplementation on the Motility of Frozen-thawed Spermatozoa and the Pregnancy Rate after Artificial Insemination in Bovine (소에서 Interferon이 동결-융해 정자의 운동성과 인공 수정 임신율에 미치는 효과)

  • The increase in the meat quality and milk production of cows, which breed Korean Native Cow (KNC) and Holstein cow, is not improving reproductive efficiency. In this study, we examined the effect of interferon (IFN) supplementation on motility of frozen-thawed semen and pregnancy rate after artificial insemination of KNC and Holstein cow. In experiment 1, we investigated the effect of IFN-tau concentration (10,000 IU and 20,000 IU) on the percentage of total motility (TM) and progressive motility (PM) of frozen-thawed spermatozoa. In experiment 2, KNC were infused 20,000 IU IFN-tau at insemination or after insemination. In experiment 3, KNC or Holstein cow were inseminated with frozen-thawed semen and infused 20,000 IU IFN-gamma or -tau after insemination. In experiment 1, the average of TM (23.9% to 30.9%) and PM (18.5% to 21.9%) were similar between control and treatments. In experiment 2, the pregnancy rates of IFN infusing times were not different from 45.8% to 53.6%. In experiment 3, the pregnancy rates of Holstein cow infused different kinds of IFN were similar (control, IFN-gamma, IFN-tau; 42.9%, 40.5%, 48.0%). In the case of KNC, however, the pregnancy rate of control was 55.6%, which was significantly lower than that of IFN-gamma (68.9%; p<0.05). Thus, IFN is effective on the improvement of reproductive efficiency, but further study is needed.

Polioencephalomalacia diagnosed in necropsied cattle in Korea

  • Polioencephalomalacia (PEM) is a neurologic disease of ruminants diagnosed by pathological approach. There is very little information available to understand bovine PEM in Korea. In this study, we investigated the diagnostic rate and pathological features of PEM in 334 necropsied cases of cattle submitted to the Animal and Plant Quarantine Agency in Korea from 2015~2017. PEM was diagnosed only in 13 (3.9%) Hanwoo, the Korean native cattle, and sporadically occurred in our country. The disease was the most diagnosed in fall season, and the age of the cows ranged from 1 month to 3 year. In all PEM cases, softening, and yellow discoloration of the gray matter in the cerebrum and fluorescence at the sites using ultraviolet illumination were grossly observed. Microscopically abundance of glial cells with vacuolar large cytoplasm and neuronal necrosis were commonly observed. This study suggests that future studies are necessary to identify the cause and pathogenesis for the control of PEM in our country.

Assessment of N-Loading and Manure Units for Regional Recycling Farming -Case Study in Yeoju-Gun Region- (지역순환농업을 위한 분뇨단위 설정과 질소부하 평가 -여주지역 사례-)

  • In this study, the assessment of livestock manure nitrogen loading for recycling farming in Yeoju-Gun carried out comparing manure units based on the cultivation areas and the N-amount of manure that are generated from livestock manure. Manure units (MU) are used in the permitting, registration, because they allow equal standards for all animals based on manure nutrient production. An MU is calculated by multiplying the number of animals by manure unit factor for the specific type of animal. The manure unit factor for MU determination was determined by dividing amounts of manure N produced 80kg N/year. In this study, manure unit by nitrogen concentration and amount of animal manure was calculated as follows: Hanwoo multiplied by 0.36, dairy cows multiplied by 0.8. swine multiplied by 0.105. The laying hens and broilers multiplied by 0.0079, 0.0049, respectively. The analysis of liquid manure unit per ha shows that the N loading by LMU is quite different by region. When it comes to nitrogen loading, the LMU per ha of cultivated land in excess of the N-amount was the highest in the Bukne-myeon province with 2.76 MU/ha, which is higher than the appropriate level. The Ganam-myeon province came next with 2.53 LMU. To be utilized as a valid program to build the environmentally friendly agricultural system, diverse measures shall be mapped out to properly determine manure units, evaluate N-loading and to properly manage their nutrient balance of each region.

Prevalence of infectious agents in cattle reared in Ulleung island (울릉도 소의 전염성 병원체 감염률 조사)

  • Prevalence of infectious agents, including Brucella abortus (BA), Mycobacterium bovis (MB), bovine leukemia virus (BLV), M. avium subsp. paratuberculosis (MP), Neospora caninum (NC) and Toxoplasma gondii (TG), was investigated in all the cattle raised in Ulleung island during 2007~2010. For BA, the prevalences in head and farm were 8.1% (44/545) and 5.5% (4/73) in 2007, all negative in 2008~2009, and 0.5% (4/774) and 1.7% (1/58) in 2010, respectively. For MB, no sample was positive by PPD or ELISA in 2007~2010. For BLV and MP, no sample was positive by ELISA in 2007~2009. For NC, seroprevalences in head and farm were 0.2% (1/545) and 1.4% (1/73), respectively, in 2007 and all negative in 2008~2009. For TG, seroprevalences in head and farm were 17.6% (97/552) and 54.8% (34/62) by ELISA in 2009. By regions, the seroprevalences of TG in Ulleung-eup, Seo-myeon and Buk-myeon were 26.0%, 9.8% and 16.7%, respectively, which had significant differences (P<0.0001). Tiger cattle were more resistant to TG infection than Hanwoo. The seroprevalence of TG in summer was higher than in autumn. The seroprevalence of TG in cows was higher than in oxen. The seroprevalence of TG in cattle was increased with age. In conclusion, this study indicates that the prevalences of six infectious diseases, except for TG which are widely spread, are relatively low in cattle reared in Ulleung island.

Effects of Aging and Aging Method on Physicochemical and Sensory Traits of Different Beef Cuts

  • Wet and dry aging methods were applied to improve the quality of three different beef cuts (butt, rump, and sirloin) from Hanwoo cows (quality grade 2, approximately 50-mon-old). After 28 d of wet aging (vacuum packaged; temperature, $2{\pm}1^{\circ}C$) and dry aging (air velocity, 2-7 m/s; temperature, $1{\pm}1^{\circ}C$; humidity, $85{\pm}10%$), proximate composition, cooking loss, water holding capacity, shear force, color, nucleotides content, and sensory properties were compared with a non-aged control (2 d postmortem). Both wet and dry aging significantly increased the water holding capacity of the butt cuts. Dry aging in all beef cuts induced lower cooking loss than that in wet-aged cuts. Shear force of all beef cuts was decreased after both wet and dry aging and CIE $L^*$, $a^*$, and $b^*$ color values in butt and sirloin cuts were higher in both wet and dry aging (p<0.05) groups than those in the non-aged control. Regardless of the aging method used, inosine-5'-monophosphate content among beef cuts was the same. The sensory panel scored significantly higher values in tenderness, flavor, and overall acceptability for dry-aged beef regardless of the beef cuts tested compared to non- and wet-aged cuts. In addition, dry-aged beef resulted in similar overall acceptability among the different beef cuts, whereas that in wet-aged meat was significantly different by different beef cuts. In conclusion, both wet and dry aging improved the quality of different beef cuts; however, dry aging was more suitable for improving the quality of less preferred beef cuts.

Estimation of Growth Curve for Evaluation of Growth Characteristics for Hanwoo cows (한우암소의 성장특성 평가를 위한 성장곡선의 추정)

  • Growth curves were estimated for 1083 female Korean cattle raised in Daekwanryeong branch, National Livestock Research Institute (NLRI). Comparisons were made among various growth curve models for goodness of fit for the growth of the cows. Estimated growth curve functions were $W_t=370.2e^{-2.208e^{-0.00327t}$ for Gompertz model, for von Bertalanffy model, and $W_t=341.2(1+5.652e^{-0.00524t})^{-1}$ for Logistic model. Ages at inflection estimated from Gompertz model, von Bertalanffy model and Logistic model were 242.2 days, 191.5 days, and 330.5 days respectively, body weight at inflection were 136kg, 115kg, and 170kg, and daily gain at inflection were 0.445kg, 0.451kg, and 0.446kg. The predicted weights by ages from Gompertz model, von Bertalanffy model, and Logistic model were onsistently overestimated at birth weight and underestimated at 36 month weight. The von Bertalanffy model which had a variable point of inflection fit the data best.

Effect of Collection Seasons on the Oocyte Quality and Developmental Competence of Oocytes Derived from Korean Native Cows (Hanwoo) by Ovum Pick-Up (OPU 채란계절이 한우의 난자 품질 및 발달 능력에 미치는 영향)

  • Implementation of smart embryo technologies in cattle e.g. ovum pick-up followed by in vitro embryo production (OPU-IVP). Seasonal variation is important factor for follicular growth, oocytes quality, quantity and developmental competence. Therefore the aim of present study was carried out to investigated whether the seasons (hot and cool) effect on follicular development, oocyte recovery and subsequent embryo development. Follicular oocytes were aspirated from Korean native cows (Hanwoo) by the ovum pick-up (OPU) method, which was performed 24 times during two different seasons, the hot (July to September) and cool (October to December), from OPU donors. The recovered oocytes were classified according to morphological categories and used for in vitro embryo production (IVEP). The mean number of total follicles was significantly higher (p<0.05) during the hot season ($18.32{\pm}2.26$) compared to cool season ($15.41{\pm}3.34$). Furthermore, seasons did not significantly effect on the number of oocytes recovered (hot season: 41.16% vs. cool season: 46.14%). However, the average number of Grade A oocytes was significantly greater during hot ($1.75{\pm}1.86$) season compared to the cool season ($1.00{\pm}1.46$), but there was no significant difference of other grades oocytes. The cleavage rate (hot: 66.67% vs. cool: 63.3%) and embryo development (hot: 58.95% vs. cool: 56.97%) did not differ significantly between the seasons. In conclusion, the results of present study suggest that the season (hot and cool) does not have effects on the oocyte recovery and embryo developmental competence of in vitro cultured embryos.
