  • This study was conducted to examine the effect of HACCP implementation on the cost of medicine use, antibiotic utilization, and productivity of swine in Korea. Data were collected from forty-five swine farms before and after implementation of a HACCP system. The cost of medicine used, the number of different antibiotics used and the number of feeds containing antibiotic supplements added at the feed company tended to be lower (p>0.05) after HACCP implementation. Additionally, the number of feeds containing antibiotics supplemented at the farm was significantly lower after HACCP implementation (p<0.05). Moreover, the number of piglets born per sow per year and pigs marketed per sow per year were higher after HACCP implementation (22.0, 20.0) than before HACCP implementation (20.4, 18.9). These results suggest that implementation of HACCP systems on swine farms may provide beneficial effects such as reduction of medical expenses and improved productivity, as well as increased safety of livestock products for consumers.

  • Korea Agency of HACCP Accreditation and Services(KAHAS) has been focused on strengthen food safety management and competitiveness of the food industry. As a solution, the institution has launched the smart HACCP project, which is highly praised to be an innovation in food safety management system. KAHAS try to analysis of food manufacturing company, candidate of supporting about construction of smart factory from Small and Medium venture Business Department and confirm the effect of smart HACCP introduction. Korea Agency of HACCP Accreditation and Services will use these results for widespread of smart HACCP

  • In this study, we wanted to analyze the causes of food poisoning and its major occurrence in September 2018 and analyze the relevance of the HACCP certification system to report the correlation. Based on three-year food poisoning cases and causative substances data, and big data on HACCP certification companies and food poisoning frequency, Hygiene 1: 'Salmonella would have spread through school food processing medium.' Hypothesis 2: The difference in the number of food poisoning cases in the last three years as the number of HACCP certifier increases, the number of food poisoning cases will be verified and the cause of food poisoning in September 2018. Studies show that the food poisoning in September 2018 was caused by salmonella bacteria and that outsourced food provided through school meals was the cause. It was also shown that the expansion of HACCP certification did not significantly contribute to the reduction of food poisoning. Therefore, the management operation measures were proposed as a solution to prevent salmonella and to become HACCP certification that could reduce food poisoning.

  • This study assessed the biological and physicochemical hazards involved in establishing a hazard analysis critical control point (HACCP) for canned seasoned Broughton's ribbed ark Scapharca broughtonii and examined the critical control points (CCPs) in the field. Following the basic principles of the HACCP system, the hazard-evaluation procedures were enacted during the production of canned seasoned Broughton's ribbed ark after field investigation of a seafood product company in Korea. CCPs were determined using canned seasoned Broughton's ribbed ark with the corresponding control measures. The HACCP system was applied to each step in processing the product. The results indicated that inspection of raw materials, filling, sterilization, and alien substance detection were the most important CCPs. These results can be used to prevent and control food safety problems in the production of canned seasoned Broughton's ribbed ark.

  • The aim of this study was to examine the effect of HACCP system implementation on the budget for medicine use, antibiotic utilization, and productivity of swine farms in Korea. Data were collected form thirty swine farms before and after implementation of HACCP system. Parturition rate, total number of piglets, number of initial weaning piglets, number of weaning piglets, survival rate of piglets after weaning, date of weaning piglets, piglet per sow per year, and market piglet per sow per year tended to be higher after HACCP system implementation. In contrast, price for medicine used per month, number of antibiotic used, the farm number of feeds containing antibiotics in each, growing stages added at the feed company, and the farm number of feeds containing antibiotics in each growing stages added at the swine farm were lower after HACCP system implementation. Due to increase in the feed cost recently, production cost for shipment in HACCP system implemented swine farms had increased in this study. In conclusion, our results indicated that the implementation of HACCP system might be effective in reducing medical expenses and improving the productivity.
