Effect of Vitamin C Treatments on the Storability of Baby Vegetables in MA storage (저장전 비타민 C 처리가 베이비채소의 MA 저장중 저장성에 미치는 영향)

  • This study was conducted to find out the effect of vitamin C treatments on the storability of several baby vegetables; endive, green romaine lettuce, pak-choi, red romaine, lollo rosa, and ssamchoo. The vitamin C was treated by the foliar spray which was carried out 3 times before harvest or dipping in vitamin C solution for 5 minutes after harvest. The vitamin C contents of 6 different baby vegetables were higher in vitamin C treatments than control, whereas the difference of vitamin C content between treatments was disappeared after storage. The fresh weight of ssamchoo and lollo rosa lettuce treated by vitamin C was maintained higher than that of control. There was not significant difference in visual quality among treatments, though some of baby vegetables treated by washing with vitamin C showed better visual quality than the others. The contents of carbon dioxide, oxygen and ethylene in MAP with baby vegetables did not show any difference among treatments. As the result, high concentrated vitamin C treatment, such as the foliar spray and washing (dipping) had a role of increasing functionality, but the enhanced functionality, high vitamin C, did not affect storability in baby vegetables.

Removal of Malathion Residues from Fruits and Vegetables by Washing Processes (과일채소중 말라티온 잔류분(殘溜分)의 세척효과)

  • In order to determine the removal efficiency of pesticide residues in fruits and vegetables by washing processes, samples of lettuce, young Chinese radish, Chinese cabbage, green red pepper, strawberry and grape were artificially contaminated with malathion and washed according to the household practices. After three times washings with water, the remaining ratios of malathion residues in grape, green red pepper, strawberry, young Chinese radish, lettuce and Chinese cabbage were 9.7%, 25.2%, 28.0%, 29.7%, 38.9% and 57.5%, respectively. After washing with detergent solution followed by two times rinsing with water, the remaining ratios of malathion residues in the same food samples were 1.6%, 8.3%, 15.8%, 24.8%, 27.2% and 45.9%, respectively. The removal efficiency of malathion by detergent washing was significantly higher than the water washings only. The removal ratio of malathion residues was the highest in the first washing and the ratio fell greatly in the following washings. The removal efficiency was not quite different in the temperature range of $5-35^{\circ}C$ of the washing solution, but the efficiency at $100^{\circ}C$ was 2-3 times higher than other temperature ranges.

Examination into Favorable Taste of College Students on Food Colors (식품색에 대한 대학생의 기호도에 관한 조사연구)

  • This study was conducted to examine the favorable taste of food color for one month of November 1991 With 200 college students consisting 100 male and 100 female students. The color to examine the favorable food was based on Munsell color standard of ten colors such as F. Birren seven colors (red, orange, yellow, yellowish green, green, blue and violet), brown, pink and black. And then, the data of this study was analysed by using frequency(%), mean values, standard deviation, t-test, Chi-square, Spearman correction with SAS Package on the basis of 100% collection and reliable coefficient alpha= .775. The result of this study is summarized as follows. 1. It was shown that the male college students (59%) showed remarkable interest in the food color higher than that of female college students (92%), and that 85% of male students and 97% of female students considered that the food color has an effect on appetite. In addition, the food name having an effect of the food color on appetite appeared in such order as carrot (13.0%), apple (10.9%), spinach (7.0%), cucumber (6.0%) and red pepper (5.6%). The important factor in choosing the favorable food was the taste for both male and female college students, while the male and female students considered the food color as the 4th, respectively, and the 3rd important factor in choosing the favorable food. 2. The favorable food color appeared in order such as orange, red, yellow, yellowish green, green, blue, violet, pink, black and brown colors for the male college students, and in order such as red, orange, yellow, green, yellowish green, brown, violet, black, pink and blue. Also, there was difference between the male and female college students in such colors as brown, yellowish green, blue and pink. It was also shown that there was no relation between the male and female college students in examining the order of favorable food colors and general colors when selecting null hypothesis (ASE: .405). The food name associated with the color was apple for red color, orange for orange color, coffee for brown color, banana for yellow color, lettuce for yellowish green color, spinach for green color, mackerel for blue color, eggplant for violet color, sausage for pink color and bean for black color 3. The favorable color combination of both male and female college students showed red with green, orange with yellow, yellow with green, green with yellow, pink with violet and black with black. In addition, the favorable combination of the male college students indicated brown with black, yellowish green with orange, blue with red and violet with yellow while the female college students did brown with yellow, yellowish green with green, blue with yellow and violet with pink. The favorable combination color showing difference between the male and female college students included orange, brown, violet, pink and black colors. 4. The relation between the food color and terms of favorable taste showed that “light and mild color” is yellow, that “untasty color” is black, that “sourish and puckery color” is orange, that “bitter color” is violet, that “hot color” is red, and that “fresh color” is green which were answered by both male and female college students. However, the male and female college students considered yellow, respectively, and orange as “tasty color”, and black and yellow, respectively, as “sweet color”. Then, the taste term showing difference between male and female college students included “light”, “mild”, “sourish”, “tasty” and “sweet”. Based on the above result of this study, it is apparent that there is a close relation between the food color and appetite while being difference between the general color and taste. In addition to this fact, there is also some differences between male and female college students in the taste of food color.

Analysis of Carotenoids in Commonly Consumed Agricultural Products in Korea (국내에서 상용되는 농산물의 카로티노이드 함량 분석)

  • A total of 51 vegetables and fruits, commonly consumed agriculture products in Korea, were analyzed for their α-carotene, β-carotene, and β-cryptoxanthin contents as provitamin A. The beta-carotene content (㎍/100 g) was high in a few green leaf vegetables such as coriander (5,924.07), gegeol radish leaf (5.855.72), and curried mallow (5,138.01), while α-carotene and β-cryptoxanthin contents were not detected. The β-carotene in 8 kinds of 20 general vegetables was detected in the range of 214.06~1,437.67 ㎍/100 g, while α-carotene was detected at 460.17 ㎍/100 g in only old pumpkin. The β-cryptoxanthin was detected in the range of 106.55~315.49 ㎍/100 g in Japanese elm, watermelon, white cucumber, and lettuce. However, carotenoids were not detected in 10 kinds of agricultural products including oriental melon, potato, etc. In fruits, the beta-carotene contents ranged from 165.72~3,997.39 ㎍/100 g, showing maximum value in apple mango and minimum value in persimmon. The β-cryptoxanthin was detected at 232.22 ㎍/100 g in only passion fruit, while the α-carotene was detected at 77.25 ㎍/100 g in only darae. Thus, based on the analyzed results of carotenoids of agriculture products consumed or cultivated in Korea, and it was found that green leaf vegetables comprise high beta-carotene overall.

A Survey on the Notion and Intake of Kimchi among College Women (여대생의 김치에 대한 의식과 섭취실태 조사)

  • A survey of the notion and intake on Kimchi among college women in Pusan was conducted to get some basic information on kimchi. Two hundred sixty seven students in Pusan participated in this survey. Seventy five percent of students answered that they like kimchi. They preferred well-fermented kimchi with anchovy extracts, refreshing taste and crispy texture the saltly and sweet. Chinese cabbage kimchi (87.6%) was found to be the most favored kimchi and Kakdugi(seasoned pickles of cubed radish), Nabak kimchi and Chonggak kimchi (ponytail kimchi) were followed in the order. The most favorite food made from kimchi was stir fried kimchi with rice. They disliked traditional special kimchi, such as Puchu kimchi (leek kimchi), Pa kimchi (green onion kimchi), Kkennip kimchi (perilla leaf kimchi), Godulbaegi kimch (Korea wild lettuce kimchi) and Gat kimchi (Leaf mustard kimchi). About 93 grams of kimchi was consumed daily and this amount was a little. Seventy percent of students did not have any experiences preparing kimchi. Experiences of kimchi preparation were given by mother through kimchii-making event for the winter(71.7%), cooking practice in middle or high school (14.1%) and college(10.9%) and general cooking education (33%). They preferred to buy kimchi at the Agricultural Cooperative Association (48.5%) or a large kimch factory (32.75). College students believe that kimchi is a healthy food and are willing to learn how to make kimchi.

Effects of the Application of Livestock Manure Compost on Reducing the Chemical Fertilizer Use for the Lettuce Cultivation in Green House (시설상추 재배시 축분퇴비 이용에 따른 화학비료 절감효과 평가)

  • Livestock manure compost (LC) generally contains high content of phosphorus, therefore can be a substitute for phosphorus fertilizers. In this experiment of the cultivation of lettuce in green house, the possibility of LC as a subsitute for phosphorus fertilizer was investigated and the fertilizer efficiency of nitrogen and potassium in LC as compared with chemical N fertilizer (urea) and K fertilizer (potassium chloride) was examined. In proportion to the increase in the application rate of nitrogen fertilizer, soil pH declined, whereas EC and $NO_3$-N content became higher. The application of LC appeared to increase the soil content of organic matter, available phosphate, exchangeable calcium, magnesium and sodium more than that of chemical fertilizer. Supplementation of the K fertilizer by the lack amount from the application of LC resulted in the same exchangeable potassium content in soil with NPK plot in which N, P and K fertilizers were applied by the amount of soil test recommendation. The relationship between soil $NO_3$-N content and nitrogen application rate from fertilizer and compost showed as y=0.57717a+0.19760b+74.65 ($R^2$=0.6347) in which y is the soil $NO_3$-N content (mg $kg^{-1}$), a is nitrogen application rate from fertilizer and b is nitrogen application rate from compost (kg $ha^{-1}$), respectively. From this equation, the supply ability of $NO_3$-N into soil of LC exhibited about 34% (pig manure compost 37.0, chicken manure compost 34.7, cattle manure compost 23.3) of nitrogen fertilizer (urea).

Optimum Strength and NH4+:NO3- Ratio of Nutrient Solution for Romaine Lettuce Cultivated in a Home Hydroponic System (가정용 수경재배기에서 재배한 로메인상추의 생육에 적합한 양액 강도와 NH4+:NO3-의 비율)

  • Concentration of nitrogen, one of the major elements, and ratio of two nitrogen forms (NH4+ and NO3-) in the nutrient solution affect the quality and food safety of fresh vegetable produce. This study was conducted to find an appropriate strength and NH4+:NO3- ratio of a nutrient solution for growth and development of a Romaine lettuce (Lactuca sativa L. var. longiflora) 'Caesar Green', a representative leafy vegetable, grown in a home hydroponic system. In the first experiment, plants were grown using three types of nutrient solution: A commercial nutrient solution (Peters) and two strengths (GNU1 and GNU2) of a multipurpose nutrient solution (GNU solution) developed in a Gyeongsang National University lab. Plants grown with the GNU1 and GNU2 had greater shoot length, leaf length and width, and biomass yield than Peters. On the other hand, the root hairs of plants grown with Peters were short and dark in color. Tissue NH4+ content in the Peters was higher than that of the GNU1 and GNU2. The higher contents of NH4+ in this solution may have caused ammonium toxicity. In the second experiment, eight treatment solutions, combining GNU1 and GNU2 solutions with four ratios of NO3- :NH4+ named as 1, 2, 3 and 4 were used. Both experiments showed more growth in the GNU2 group, which had a relatively low ionic strength of the nutrient solution. The growth of Romaine lettuce showed the greatest fresh weight along with low tissue NO3- content in the GNU2-2. This was more advantageous in terms of food safety in that it suppressed the accumulation of surplus NO3- in tissues due to the low ionic trength of the GNU2 subgroup. In addition, this is preferable in that it can reduce the absolute amount of the input of inorganic nutrients to the nutrient solution.

Anti-inflammatory Activities of Ethanol Extracts of Dried Lettuce (Lactuca sativa L.) (건조 상추 에탄올 추출물의 항염증 활성)

  • Lettuce (Lactuca sativa L.) is one of the most popular green leafy vegetables, and it contains various beneficial components including polyphenolic compounds and has been known to possess various biological functions such as anti-microbial, anti-oxidative, and anti-inflammatory activities. In the present study, we prepared ethanol extract of dried lettuce (DLE) and investigated its anti-inflammatory activity. To evaluate the anti-inflammatory activity of DLE, nitric oxide (NO) production was measured in LPS-activated mouse macrophage RAW 264.7 cells. DLE significantly suppressed NO production in these cells without affecting cell viabilities while resveratrol was used as a positive control. DLE dramatically decreased the expression of pro-inflammatory genes such as iNOS and COX-2 at the mRNA and protein levels and reduced the expression of several cytokines including $IL-1{\alpha}$, $IL-1{\beta}$, IL-1F6, $TNF-{\alpha}$, CSF2 and CXCL10. In addition, DLE suppressed phosphorylation of MAPKs and the nuclear translocation of $NF-{\kappa}B$ p65 indicating DLE shows its anti-inflammatory activity via regulating MAPKs pathway and $NF-{\kappa}B$ pathways. And also, DLE reduced the production of reactive oxygen species in a dose-dependent manner. DLE increased HO-1 protein expression, and also increased the nuclear translocation of Nrf2. Overall, our results suggest that lettuce down-regulate various pro-inflammatory genes and have its anti-inflammatory activity via regulating MAPKs, $NF-{\kappa}B$, and Nrf2/HO-1 pathways.

Nitrate and Nitrite Content of Some Fermented Sea Foods and Vegetables (시판젓갈류와 채소류중의 질산염 및 아질산염함량)

  • Nitrate and nitrite, which readily produce N-nitrosamines by reaction with secondary amines, are widely distributed in natural products such as vegetables and cereals, and are also used as a color fixation in meat products or fish roes. This experiment was carried out to determine the contents of nitrate and nitrite in foods such as fermented sea foods and fresh vegetables purchased at markets in Korea. The contents of nitrate were $0.74\sim13.81\;ppm$ for fermented sea foods and $4.0\sim1,572.5\;ppm$for fresh vegetables. As for vegetables, the nitrate levels of edible herbs were relatively higher than those of greens, fruits and rootcrops. The nitrite contents in fermented demoisells(Chromis notatus), fermented shrimp, fermented small squid, fermented anchovy and salted Alaska pollack roe were very little, while those in fermented hairtail and fermented entrails were not detected. As for vegetables, nitrite levels found for cabbage and lettuce were relatively as high as 3.8 ppm and $2.5\sim2.9\;ppm$, respectively, but were not detected in Korean cabbage, green perilla leaf, pepper, garlic and burdock. Of vegetables, the nitrate values in the outer part of Korean cabbage, stems of water cress and leaves of green onion were higher than in the other parts. Little variety of the nitrate levels were found during 4 days storage. In the comparison of low temperature storage and room temperature storage, lettuce, pumpkin and spinach contained higher levels of nitrate at low temperature storage, while eggplant and green onion, at room temperature storage.

Effect of Inter-and mixed cropping with Attractant and Repellent Plants on Occurrence of Major Insect Pests in Organic Cultivation of Chinese Cabbage (간.혼작을 이용한 유기농 배추 주요해충 발생경감 효과)

  • This study was evaluated the effect of attractant or repellent plants for establishing push-pull strategy for insect pest management of organic Chinese cabbage cultivation. The attractant or repellent effect of Ten plants, marigold, rye, Chinese chive, lettuce, chicory, Nongwoo-chicory, crown daisy, Treviso, green leaf mustard, and red leaf mustard were evaluated against diamondback moth, striped flea beetle, aphids, brown-winged stink bug and cabbage stink bug in organic Chinese cabbage field in Seosan in 2012. Of the ten repellent or attractant plants, rye and chicory attracted significantly brown-winged stink bug and cabbage stink bug, respectively. Aphids ate attracted significantly to the rye rather than the other plants. Leaf mustard was attracted cabbage stink bug and brown-winged stink bug in order. Cabbage stink bug was attracted by only a combination of lettuce and Chinese chive. Diamondback moth, striped flea beetle, aphid, brown-winged stink bug and cabbage stink bug were significantly repelled by single or combined cultivation of crown daisies, Treviso, and leaf mustard in organic Chinese cabbage cultivation. The results above-mentioned indicate that selected insect-attractant and -repellent plants can be used as tools for integrated pest managements of Chinese cabbage.
