  • This study was carried out to estimate the contents of heavy metals (Hg, Pb, and Cd) in seaweeds (n=169) which are closely related to food resources. The contents of heavy metals in the laver were found as follows; Hg was highly detected in the east coastal area ($0.0509{\pm}0.0635mg/kg$), Pb in the south coastal area ($0.0509{\pm}0.0635mg/kg$), Cd in the south coastal area ($1.3785{\pm}0.7754mg/kg$). In the sea mustard, Hg was highly detected in the south coastal area ($0.0152{\pm}0.0116mg/kg$), Pb in the east coastal area ($0.1633{\pm}0.2888mg/kg$), Cd in the south coastal area ($0.7141{\pm}0.4952mg/kg$). In the sea tangle, Hg was highly detected in the south coastal area ($0.0177{\pm}0.0118mg/kg$), Pb in the east coastal area ($0.0728{\pm}0.1025mg/kg$), Cd in the south coastal area ($0.1640{\pm}0.1253mg/kg$). In the sea lettuce, Hg, Pb, and Cd were highly detected from the west coastal area. In the fusiforme, Hg and Cd were highly in the west coastal area, Pb in the south coastal area. In general brown algae showed the highest level of Hg, Pb, and green algae showed the highest level of Cd Additionally, the significant correlation was observed between Hg and Cd (r=0.513, p<0.01), between Cd and Pb (r=0.420, p<0.05). The weekly average intakes of Hg, Pb and Cd from seaweeds takes about 0.17~10.30 % of PTWI (Provisional Tolerable Weekly Intakes) that FAO/WHO Joint Food Additive and Contaminants Committee has set to evaluate their safeties.

  • Occurrence of adult alfalfa weevil, Hypera postica Gyllenhal, was observed at Chinese milk vetch field, and host plant preference of its $1^{st}$ generation adult was observed at greenhouse and Chinese milk vetch field. The over-wintered adult of the weevil appeared from late March and peaked in mid April while the $1^{st}$ generation adult appeared from late April and peaked in late May. However, the occurrence of over-wintered adult was very low contrary to the $1^{st}$ generation adult which was very high with some variations among observed years. In greenhouse, host plant preference of $1^{st}$ adult generation of H. postica was evaluated with 11 different seedlings. H. postica was found to occur in significantly higher number on Chinese cabbage seedling followed by soybean, and kale at 7 days after releasing(DAR). Corn, crown daisy and sorghum were found to be the least preferred with nil occurrence of the weevil. Seedlings damage rate by H. postica feeding at 7DAR was the most severe on Chinese cabbage(60.0%) followed by soybean(50.0%), kale(30.0%), foxtail millet(16.7%), proso millet(13.3%) and lettuce(3.3%) significantly. Also, seedlings damage rate by H. postica at 7DAR in Chinese milk vetch field had shown the similar trend with Chinese cabbage(46.7%), soybean(43.3%), kale(23.3%), foxtail millet(13.3%) and proso millet(13.3%) in greenhouse significantly. Accordingly, results on host plant preference of H. postica from this study can be used as a basic information for safe cultivation of upland crops at near or around green manure crop field.

  • In vitro digestibility of filefish, protein was substantially decreased by fiber constituents in the follow-ing order : pectin (9.97%), gum karaya (7.03%), sodium alginate (6.12%),and cellulose (1.52%). The order of reduction by fibrous residues from vegetables ranked as follows : sea tangle (12.36%), Ro-maine lettuce (11.12%), perillar leaf (8.96%), and green pepper (5.15%). The inhibitory effect of the dietary fibers towards filefish protein digestion, expressed as soybean trypsin inhibitor equivalents, in-creased with added levels, but the inhibition differed with the sources of dietary fibers. Sea tangle and sodium alginate were most active in decreasing the concentration of essential amino acid from filefish protein hydrolysis. Sodium alginate exerted an inhibitory effect on the activity of trypsin, but the other fiber constituents did not have an inhibitory potency on trypsin and bacterial pretense (Streptomyces griceus). Results supported that dietary fiber components may reduce protein digestibility through the interaction of dietary fiber components with filefish protein.

  • In continuation of the previous $studies^{2{\sim}3)}$, the folate activity levels in 226 Korean food items were determined by a modified microbiological assay with Lactobacillus casei. There was a large variation in folate activity between the different food groups as well as between each individual food. There was also a wide variation in the biologic availability of folate in foods and the different forms of the folate with different foods in varying amounts. Data showed that almost always, foods cooked and/or processed were lower in folate activity than fresh or raw food and the amount of the loss varied greatly in each food. In calculating dietary intake, total rather than free folate activity levels should he used. In addition, loss of folate activity during cooking and processing of foods should be considered as a major concern for appraising diets and food supplies. Among all assayed food items, including Part $I^{2)}}$ and $I^{3)}$, yeast 2800. ug total per 100g the highest folate level. Soybean, spinach, Shepherd's purse and liter of beef and pork had over 100 ug total per 100 g folate activity. Folate ranging over 50 ug total per 100 g was found in all dried legumes, nuts and seeds assayed, Garland Chrysanthemum, leek, mugwort, wafer cress, asparagus, e99 folk and beef kidney. Wheat, sweet Potatoes, dried fungus, green onion, hotrod pepper, lettuce, radish and some fermented soybeen products had considerably higher folate content ranging around 40 ug total per 100 g. Substantial amounts of folate were not found in many food groups, and among specific groups, in part in starch, sweets, fruits, meat, fish, milk, and cooked and processed foods. Soused fish, oils and fats, beverages, liquor and seasonings, other than fermented soybean products, had almost no folate.

The purpose of this research was making materials to show direction of the education about nutrition by checking relationships among the nutritional status for the lunch box, the taste of food and the environmental factors. The results observed in the study were as follows: 1. The intake of nutrition from the lunch box and the ratio between the recommended dietary allowance and the contained nutrients in the lunch box as follows. Calorie(603 Kcal, 78.6%), protein (21.7g, 93.1%) Animal protein (10.3g, 132.1%) calcium (151.7 g, 56.9%) Ferrum 93.1 mg, 51.7%), Vitamin a (129.3 RE, 55.4%) Vitamin B1 (0.29 mg, 72.5%), Vitamin B (0.26 mg, 55.3%) Niacin (4.7 mg, 94.0%), Vitamin C 913.2 mg, 79.0%). Except animal protein, all the recommended dietary allowance. 2. According to the intake of calorie, the ratio of taken carbohydrate, protein and fat was 77.7 : 15.5 : 6.8. The intake of protein was desirable but most of calorie depended on carbohydrate. Among the total intake of protein, the ratio of animal protein was 47.5%, which was a high rate. 3. Most of calorie (75%), was taken from staples, protein (41.5%), vitamin B1 (48.3%) were taken at the same rate from staples and side dishes. Most of fat, calcium, ferrum, vitamin A, vitamin B, and vitamin C, was taken from side dishes. 4. In taking among the five basic food groups, proportion of the grain fourth food group was the highest, light color vegetable the third food groups, proportion of the grain fourth food group was the highest, light color vegetable the third food group was second, and Calcium food the second food group was the lowest. 5. As the staples, students liked tchajangmyon, mandu and ttokkuk as written order. They disliked Kongbap and Patpap. As the side dishes for the lunch box, they liked kimchi, ham, sausage, cuttlefish, dried slices of filefish, eggs and green seaweed as written order. As a side dishes they liked Laver, Cucumber, Squid, lettuce, Potatoes. They disliked pork fat, cow's intestines, cow's liver, Crussian carp, pickled fish. The favorite snack was fruits, ice cream, hamburger, Chocolate and milk. 6. In taking condition of the principal food, rice rate (65.6%) was the most, and mixed food was 5 or 10%. 7. Favorite cooking was frying, roasting and kimch. But disagreeable cooking was pickling. 8. Favorite food was what was pungent but disagreeable food was what was salty. 9. the higher parents educational background was, the higher their income was. Also the more various the information about the nutrition was, the better the intake of nutrition was. 10. The preference tendency influenced in choosing the side dish of the Lunch box. The higher the preference tendency of the girl students became, the better their nutrition condition became.

  • Cellulose-digesting bacteria were isolated from hindgut of Allomyrina dichotoma (Coleoptera: Dynastidae). The bacterial isolates were identified as Yersinia sp. and Bacillus sp. The addition of the identified bacteria to diet increased growth rate of the cetoniid beetle, Protaetia brevitarsis senlensis (Coleoptera: Cetoniidae), probably by digesting cellulose nutrient contained in the oak tree sawdust diet. An additive of wheat flour at more than 10% to the sawdust diet significantly enhanced growth of P. brevitarsis senlensis. Trimmed branches of apple trees have been disposed in the apple farms and could be used for a diet component of the cetoniid beetle when the cellulose-digesting bacteria were mixed with the derived-sawdust. Resulting manure from mass rearing of P. brevitarsis senlensis contained high organic matters and trace amounts of toxic metals. When the manure were splayed on soil, it was effective as a natural compost and significantly stimulated lettuce growth. This research suggests a model technology to use cellulose-digesting bacteria to use for culturing grub, which results in natural recycles of trimmed branches in apple farms as grub diet, and to use grub manure as a natural compost.

  • The present paper was investigated in the inhibitory action of vegetable and seaweed water-soluble extracts on the formation of carcinogenic N-nitrosodimethylamine(NDMA). The vegetable and seaweed extracts obtained from garlic(Allium sativum), onion(Allium cepa), green onion(Allium fistuiosum), chinese pepper(Fagara mandshurica), green pepper(Capsicum annuum), red pepper(Capsicum annuum), ginger(Zingiber officinale), carrot(Daucus carota), laver(Porphyra tenera), sea lettuce(Entero compresa), sea mustard(Undaria pinnatifida) and sea staghorn(Codium fragile) were incubated with sodium nitrite-dimethylamine mixtures at $37^{\circ}C$ under different pH conditions The formation of NDMA was reduced to $10{\sim}40\%\;and\;25{\sim}50\%$ by the addition of vegetable and seaweed extracts 30mg at pH 1.2, respectively. The inhibition degree by the extracts at pH 1.2 was similiar to that at pH 4.2 and to that by ascorbic acid at pH 1.2. The inhibitory action of the extracts against NDMA formation was not decreased by heat treatment at $80^{\circ}C$ for 10min, but decreased by the treatment of sodium borohydride. It is assumed that reducing powers of the extracts participated in their inhibitory actions.

  • BACKGROUND: Hydroponics is one of the methods for evaluating plant production using the inorganic nutrient solutions, which is applied under the artificial light conditions of plant factory system. However, the application of the conventional inorganic nutrients for hydroponics caused several environmental problems: waste from culture mediums and high nitrate concentration in plants. Organic nutrients are generally irrigated as a supplementary fertilizer for plant growth promotion under field or greenhouse conditions. Hydroponic culture using organic nutrients derived from the agricultural by-products such as dumped stems, leaves or immature fruits is rarely considered in plant factory system. Effect of organic or conventional inorganic nutrient solutions on the growth and nutrient absorption pattern of green and red leaf lettuces was investigated in this experiment under fluorescent lamps (FL) and mixture Light-Emitting Diodes (LEDs). METHODS AND RESULTS: Single solution of tomatoes (TJ) and kales (K) deriving from agricultural by-products including leaves or stems and its mixed solution (mixture ration 1:1) with conventional inorganic Yamazaki (Y) were supplied for hydroponics under the plant factory system. The Yamazaki solution was considered as a control. 'Jeockchima' and 'Cheongchima' lettuce seedlings (Lactuca sativa L.) were used as plant materials. The seedlings which developed 2~3 true leaves were grown under the light qualities of FL and mixed LED lights of blue plus red plus white of 1:2:1 mixture in energy ratio for 35 days. Light intensity of the light sources was controlled at 180 μmol/㎡/s on the culture bed. The single and mixture nutrient solutions of organic and/or inorganic components which controlled at 1.5 dS/m EC and 5.8 pH were regularly irrigated by the deep flow technique (DFT) system on the culture gutters. Number of unfolded leaves of the seedlings grown under the single or mixed nutrient solutions were significantly increased compared to the conventional Y treatment. Leaf extension of 'Jeockchima' under the mixture LED radiation condition was not affected by Y and YK or YTJ mixture treatments. SPAD value in 'Jeockchima' leaves exposed by FL under the YK mixture medium was approximately 45 % higher than under conventional Y treatment. Otherwise, the maximum SPAD value in the leaves of 'Cheongchima' seedlings was shown in YK treatment under the mixture LED lights. NO3-N contents in Y treatment treated with inorganic nutrient at the end of the experiment were up to 75% declined rather than increased over 60 % in the K and TJ organic treatment. CONCLUSION: Growth of the seedlings was affected by the mixture treatments of the organic and inorganic solutions, although similar or lower dry weight was recorded than in the inorganic treatment Y under the plant factory system. Treatment Y containing the highest NO3-N content among the considered nutrients influenced growth increment of the seedlings comparing to the other nutrients. However effect of the higher NO3-N content in the seedling growth was different according to the light qualities considered in the experiment as shown in leaf expansion, pigmentation or dry weight promotion under the single or mixed nutrients.
