생강가루 첨가 찹쌀머핀의 최적화 및 품질특성 (Characteristics and Optimization of Processed Sweet Rice Muffin using Ginger Powder)

  • The purpose of this study was to develop Zingiber officinale Roscoe powder(ginger powder) sweet rice muffins. The process included substituting sweet rice flour for cake flour and adding ginger powder. The mixing conditions for the ginger powder sweet rice muffins were a control and three levels of ginger powder (A), whole egg (B), and soybean oil (C) using central composite design, and were optimized by response surface methodology. The optimization was analyzed with regard to physical, textural, and sensory properties. Among the sensory properties, variables that appeared to show significant values, such as appearance, flavor, softness and overall quality were used to identify optimums. The numerical and graphical methods used in this study determined that the optimum formulation for ginger powder sweet rice muffins was 8.39 g of ginger powder, 215.37 g of whole egg, and 54.40 g of soybean oil. Ginger increases appetite, enhances metabolism and reduces the speed of aging. These health advantages of ginger provide evidences that ginger powder sweet rice muffins are a good healthy snack, particularly for the elderly.

생강가루 첨가량에 따른 양갱의 품질 특성 (Quality Characteristics of Yanggaeng Prepared with Different Amounts of Ginger Powder)

  • This study examined the physiochemical and organoleptic properties of the yanggaeng fabricated with different contents of ginger powder. The moisture contents ranged between 39.85% and 47.92%. The yanggaeng made with 0.5 g of ginger powder showed the lowest moisture content of 37.04%, whereas the yanggaeng made with 1.5 g of ginger powder showed the highest moisture content of 47.92%. As for the L value, which indicates lightuess, the yanggaeng made with 1.5 g of ginger powder showed a L value of 13.92, whereas the yanggaeng made with 0.5 g showed the lowest L value of 12.35, (p<0.05). The values for redness (a value) ranged between 4.69 and 5.58, and there was no significant difference as the content of ginger powder increased. The value for yellowness, (b value) ranged between 3.19 and 2.33, and showed a significant decreasing trend as the ginger powder content increased (p<0.05). The sugar concentrations were 53.82~46.56, and decreased as the ginger content increased. The pH ranged between 6.42~6.52, and showed significant differences. As the ginger content increased, changes in hardness, adhesiveness, gumminess, and chewiness, were all significant (p<0.05). Characteristics of cohesiveness and springiness, showed no significant differences. Although there were no significant differences in color, flavor, chewiness, and hardness, there was a decreasing flavor preference as the content of ginger powder increased. There were significant differences in sweetness, moistness, and overall-preference (p<0.05). For overall-preference, the yanggaeng with 1.0 g of added ginger powder showed a high preference level. The study results implied that ginger powder may be used in fabricating yanggaeng. and a 0.5% content of added ginger powder will improve the preference level.

생강가루를 첨가한 쿠키의 품질특성 (Quality Characteristics of Cookies with Ginger Powder)

  • In this study, when we reflect the preference of consumers who wish to receive their health through natural materials, and whose purpose is to receive good quality and good tasting cookies made from ginger. After 0%, 2%, 4%, 6%, 8% of flour was replaced by ginger powder for making cookies, a comparative analysis of quality characteristics and QDA was completed. Adding ginger powder caused a decrease in the density of the cookie dough, moisture content, loss rate and leavening rate of cookie (p<0.05), but the hardness of the ginger cookie increased. As a result of the description analysis of adding ginger powder, adding ginger powder increases, cookie color, crispiness, acid taste, flavor, and an after taste, but not the sweetness of the cookie. In terms of cookie color, crispiness, taste, flavor and overall acceptability, adding 4% ginger powder received high reviews. Also as a result of measuring DPPH radical elimination, ginger powder shows to have good antioxidant activity. So their anti-cancer activity is better than cookies without ginger powder. Therefore, we expect that we can fulfill the overall acceptability.

건조 방법을 달리한 생강가루를 첨가한 배잼의 품질 특성 (Quality Characteristics of Pear Jam with Added Ginger Powder)

  • 본 연구에서는 생생강과 건조 방법을 달리하여 판매되는 생강가루를 첨가하여 가정에서 만들 수 있는 배잼 레시피를 개발하고 품질평가를 통하여 그 가능성을 탐색하였다. 본 연구의 결과는 다음과 같다. 일반성분 분석에서 수분의 함량은 생생강군(G1)이 가장 높은 값을 보였고, 조회분은 동결건조군(G3)이 가장 낮은 값을 나타냈으며, 조단백 함량은 생생강군(G1)에서 가장 높아 시료 간의 유의적인 차이를 보였다. 조지방은 시료 간 유의한 차이는 없으나 동결건조군(G3)가 가장 높은 값을 보였다. pH는 건생강군(G2)이 가장 낮은 값을 나타냈다. 퍼짐성은 건생강군(G2)이 가장 낮은 값을 보였다. 색도 측정 결과, L값과 b값은 생생강군(G1)에서 가장 높았고, a값은 열풍건조(G4)에서 가장 높게 나타났다. 물성 측정 결과, 모든 평가항목에서 건생강군(G2)이 가장 높은 값으로 다른 시료들과 유의적인 차이를 보였다. 관능평가 결과, 생생강 첨가 배잼보다는 생강가루를 첨가한 잼의 외관, 향미, 단맛, 전체적인 기호도가 높았으며, 특히 건생강군(G2)의 기호도가 가장 높게 나타났다. 따라서 본 연구를 통하여 생강가루를 첨가한 배잼의 제조 가능성을 확인하였으며, 잼의 고유의 특성을 살리면서 배와 생강의 건강지향적인 면을 고려하여 배잼을 제조할 때는 건생강가루를 첨가하는 것이 가장 바람직하겠다.

구증구포 생강 분말을 첨가한 생강 조청의 항산화 활성과 품질 특성 (Antioxidant Activity and Quality properties of Ginger Jocheong added with Gujeung-gupo Ginger Powder)

  • This study was investigated to examine the antioxidant activity and quality characteristics of ginger Jocheong added with Gujeung-gupo ginger powder and the results were as follows. As the amount of Gujeung-gupo ginger powder added into ginger Jocheong increased, the moisture and carbohydrate contents of ginger Jocheong significantly decreased(F=133.33, p<.001) and increased(F=36.15, p<.001), respectively. The content of mineral composition such as K, Ca and Zn showed higher values as the amount of added Gujeung-gupo ginger powder increased. As the amount of Gujeung-gupo ginger powder added into ginger Jocheong increased, sweetness(F=200.00, p<.001), viscosity(F=441.23, p<.001), L value(F=1,458, p<.001), a value(F=44.56, p<.001) and b value(F=203, p<.001) decreased significantly, and pH significantly increased(F=59.18, p<.001). As the amount of Gujeung-gupo ginger powder added into ginger Jocheong increased, total polyphenol content(F=86.015, p<.001), total flavonoid content(F=885.012, p<.001), and DPPH radical scavenging activity(F=75.136, p<.001), ABTS radical scavenging ability(F=145.751, p<.001), and FRAP activity(F=172.242, p<.001) increased. From the above results, the antioxidant activity and quality characteristics of ginger Jocheong added with Gujeung-gupo ginger powder confirmed the potential development of ginger Jocheong with high antioxidant activity.

반응 표면 분석에 의한 생강 분말을 첨가한 쌀 압출 성형물의 이화학적 성질 (Physicochemical Properties of Rice Extrudate with Added Ginger Powder by the Response Surface Regression Analysis)

  • This research was attempted to investigate changes in physicochemical properties of rice extrudate with added ginger powder extruded by single screw extruder. Graphic three dimensional analysis on response surface regression was used to evaluate effects of extrusion variables on quality factors of the extrudate according to two independent variables, ginger consent 0∼12%, moisture content 14∼26%. The summarized results are as follows : 1) Regarding proximate composition of rice extrudate with added ginger powder, as ginger powder content of raw material Increased, crude tat, crude protein, crude ash and crude fiber increased, while soluble nitrogen free extract decreased. 2) Graphic three dimensional analysis on response surface regression was conducted for each dependent variable which revealed statistically significant relationship with independent variables, 0∼120A ginger and 14∼26% moisture content. Expansion ratio had a critical point as moisture content changed. As ginger and moisture content Increased, bulk density, break strength and water absorption Index Increased, while water solubility Index decreased. The predicted maximum degree of gelatinization in 6.15% ginger and 15.56% moisture content is 88.27%, and lightness decreased as ginger content Increased. According to the microstructure for the cross section of extrudate obsorbed with image analyzer, air cell number and perimeter revealed saddle point, meanwhile total area and fractarea of air cell had critical points as moisture content changed. In view of the results, quality of rice extrudate with added ginger powder was optimum when rice flour was fed to the extruder with 2∼7% singer powder and 15∼20% moisture content.

생강분말을 첨가한 파운드 케이크의 유변학적 특성 (Rheological Properties of Pound Cake with Ginger Powder)

  • 소맥분에 생강분말을 첨가한 물리적 특성은 Falling number는 생강분말의 첨가비율이 증가할수록 falling number 값이 증가하였다. Farinogram에서 consistency는 생강분말 첨가구 중 3% 이상 첨가구에서 커지는 현상이 나타났다. 흡수율은 생강분말의 첨가량이 많아질수록 흡수율도 증가하였지만 유의적인 차이를 보이지는 않았다. 반죽의 안정도는 생강분말첨가량이 많아질수록 증가하였지만, 모든 시료 간에 유의적인 차이를 보이지는 않았다. MTI 값은 생강 분말을 첨가 할수록 증가하였고 Farinograph quality number는 대조구와 생강분말 첨가구간에 유의적인 차이를 보이지 않았다. 호화 개시온도는 대조구가 가장 높았으며, 생강분말 첨가량이 많아질수록 낮아졌다. 최고점도는 생강 분말의 첨가량이 많아질수록 높아졌다. 최고점도 후에 나타나는 최저 점도인 holding strength는 생강분말 첨가량에 따라 유의적인 차이가 나타나지 않았다. Breakdown 값은 생강분말 첨가량이 많아질수록 높아져, 생강분말을 첨가할 경우 호화된 전분의 안정도는 떨어지는 것으로 나타났다. 최종 점도는 생강분말 첨가량이 많아질수록 높아졌으며, setback 값은 5% 첨가 시 가장 높은 값이 나온 것으로보아 생강분말 첨가는 노화 방지를 할 수 없는 것으로 예측할 수 있었다. Alveogram의 $P_{max}$ 값은 1%와 5% 첨가구에서는 감소하였으며, 신장성을 나타내는 L값은 생강분말 첨가량이 증가할 수록 글루텐 형성이 저해되어 감소하였다. 부피를 예측할 수 있는 G값은 생강분말 첨가량에 따라 감소하였다. 이는 생강분말을 많이 넣을수록 파운드 케이크의 부피는 작아지고, 밀도는 커짐을 예측할 수 있었다. W(반죽의 탄력에 대한 저항성)값도 생강분말 첨가량이 증가할수록 감소하였다.

노랄병(老辣餠)의 재료 배합비에 따른 관능적.텍스쳐 특성 (Sensory and Texture properties of Noralbyung with variation in the ratio of ingredients)

  • The purpose of this study was to investigate the instrumental and sensorycharacteristics of Noralbyung made from rice flour and glutinous rice flour containing 1, 2, or 3% of ginger powder. The result of sensory evaluation showed that Noralbyung containing 252g rice flour, 45g (15%) glutinous rice flour, 3g (1%) ginger powder, 3g cinnamon powder, 55ml honey, 15ml water, and 3g (1%) salt had high overall acceptability and chewiness preference. From textural analysis, springinessand gumminess were increased by adding ginger powder. The Hunter color a-, L- and b-values of Noralbyung were all decreased by increasing the level of ginger powder. The moisture content (%) was higher in Noralbyung with sugar than honey. With increasing ginger powder content, the moisture content (%) of Noralbyung was decreased. From these test result, the most desirable recipe for Noralbyung was 252g rice flour, 45g (15%) glutinous rice flour, 3g (1%) ginger powder, 3g cinnamon powder, 55ml honey, 15ml water, and 3g (1%) salt. The moisture content was 37.72%.

국내산 생강 및 생강가루의 Beauvericin과 Enniatins 오염도 조사 (Survey on Contamination of Beauvericin and Enniatins in Korean Ginger and Ginger Powder)

  • 본 연구에서는 국내산 생강(n = 43)과 생강가루(n = 31)를 대상으로 beauvericin (BEA)과 enniatins (ENNs)의 오염 실태를 조사하였다. 생강 시료 중 62.79%가 BEA에 오염되었으며, 최대 오염농도는 640.07 ㎍/kg으로 오염률과 오염농도가 조사 대상 독소 중 가장 높았다. 생강에서 ENNs의 오염률은 최대 11.63% (ENB, ENB1)이었으며, 최대 오염농도는 91.02 ㎍/kg (ENA)였다. 생강가루에서는 ENB의 오염률이 70.97%로 가장 높았으나, 오염농도는 BEA이 최대 1, 344.18 ㎍/kg으로 조사 대상 독소 중 가장 높았다. 생강가루의 ENA, ENA1, ENB, ENB1의 오염률은 29.03%, 22.58%, 70.97%, 35.48%였으며, 최대 오염농도는 220.45 ㎍/kg, 156.61 ㎍/kg, 413.99 ㎍/kg, 70.29 ㎍/kg로 ENB의 오염률과 오염농도가 높았다. BEA과 ENNs은 생강보다 생강가루에서 오염농도가 높았다. 생강과 생강가루에서 BEA과 ENNs의 중복 오염률은 각각 16.28%와 64.52%로 생강에 비해 생강가루에서 독소의 중복오염률이 높았다. 본 연구는 한국산 생강과 생강가루의 BEA과 ENNs의 발생 및 이들의 중복 오염을 처음으로 보고하는 것이다.

Antiobesity Effect of Major Korean Spices (Red Pepper Powder, Garlic and Ginger) in Rats Fed High Fat Diet

  • Commonly used spices in Korean cooking (red pepper powder, garlic, ginger) were evaluated for anti-obesity properties and effects on triglyceride (TG) and cholesterol in blood and adipose tissues in rats fed a high fat (20%) diet. SD rats were raised for four weeks on either a normal diet (ND, based on the AIN-93M diet), high fat diet (HFD, supplemented with 16% lard oil in the ND), or diets containing 5% red pepper powder (RPP), garlic or ginger. These spices significantly decreased weight gain compared to HFD, but garlic and ginger showed a greater effect on reducing weight gain than RPP. The weights of liver and epididymal and perirenal fat pads in garlic and ginger diet groups were lower than those of the HFD groups (p < 0.05). The garlic and ginger also decreased triglyceride and cholesterol contents in liver and epididymal and perirenal fat pad, reversing the higher levels seen in HFD. RPP, garlic and ginger supplemented diets were effective in lowering serum triglyceride and cholesterol levels (p< 0.05). These results indicated that garlic and ginger more effectively suppressed the effects of HFD on body fat gain and lipid values of adipose tissues and serum than RPP.
