새우 및 새우젓의 향기성분(香氣成分) (Cooked Odor Components of Sergia Lucens and Its Fermented Product)

  • 앵(櫻)새우와 이것을 이용(利用)한 새우젓갈에 대해 가열(加熱)에 의한 향기성분(香氣成分)의 변화(變化)를 GC와 GC-MS에 의해 분석(分析), 동정(同定)하였다. 연확증류추출법(連擴蒸溜抽出法)으로 얻은 향기농축물(香氣濃縮物)을 동정(同定)하고 내부표준물질(內部標準物質)을 넣어 정량(定量)을 행하였다. 그 결과(結果) 앵(櫻)새우와 이 젓갈에서 각각(各各) 47종류(種類)외 화합물(化合物)을 동정(同定)하였다. 앵(櫻)새우의 가열향기(加熱香氣) 화합물(化合物)로는 pyrazine류(類)와 thiolane, thialdine등의 함황화합물(含黃化合物)이 대부분을 차지하였다. 또 젓갈 숙성(熟成)에 따라 pyrazine류(類)는 현저하게 증가(增加)하고 발효취(醱酵臭)에 관여한다고 생각되는 alchol류(類)도 다소(多少) 증가(增加)하였다. 합양화합물(合黃化合物)에 있어서는 Sulfide류(類)는 열성(熱成)에 따라 증가(增加)하고 thialdine은 감소(感少)하였다. 또, 앵(櫻)새우의 독특한 가열향기(加熱香氣)에 기여하는 key compound를 찾기 위해 연속증류추출법(連續蒸溜抽出法)에 의해 가열향기농축물(加熱香氣濃縮物)을 얻어 냄새맡기로 개조(改造)된 GC를 이용(利用)하여 관능적(官能的)으로 검토(檢討) 한 결과(結果) 앵(櫻)새우의 가열향기성분(加熱香氣成分) 중(中) 새우냄새 또는 배소(焙燒)의 고소한 냄새를 띄는 것은 2.5-dimethyl pyrazine, 2.6-dimethyl pyrazine 과 2.3-dimethyl pyrazine의 3종류(種類)와 thiolane, thialdine 등의 함황함실(含黃含室) 소화합물(素化合物)이라는 것이 규명(糾明) 되었다.

GC-ECD와 GC-MSD를 이용한 유니코나졸 잔류실태조사 (Monitoring of Uniconazole by Using GC-ECD and GC-MSD)

  • 본 연구에서는 2012년 1월부터 8월까지 농산물 중 엽채류에 대하여 GC-ECD 및 GC-MSD를 이용하여 uniconazole의 잔류실태조사를 실시하였다. 겨자채에 표준용액을 0.05, 0.5 mg/kg 농도로 하여 회수율을 측정한 결과 98.9%에서 109.4%까지 양호한 결과를 나타내었다. 2012년 1월부터 8월까지 서울지역에 유통되고 있는 농산물 중 엽채류 3,632건에 대하여 모니터링을 실시한 결과 14건에서 uniconazole이 검출되었다. Uniconazole의 검출양은 0.098 mg/kg에서 2.2 mg/kg로 나타났다. 본 연구를 통하여 동시분석법으로 보다 효율적인 검사가 가능할 것으로 기대된다.

  • The determination method for 11 corticosteroids (betamethasone, cortisol. cortisone, cortisone acetate. dexamethasone. cortisol acetate, isoflupredone acetate, methylprednisolone. prednisone, prednisolone, and triamcinolone acetonide) in a herbal medicinal preparation (Sibjeondaibotang) by a gas chromatography-mass spectrometric (GC-MS) method with selected ion monitoring (SIM) mode is described. 삼겹살 구이로부터 발생하는 유해물질의 특성 연구 (A Study of Odorants and Volatiles Released from Pork Belly Meat When Treated by Different Cooking Methods)

  • Pork belly meat is one of the most preferred food items for many Korean people. The odorants released from cooking of pork belly meat were measured by three kinds of cooking methods (Charcoal-grill (C), Electric Pan (E), and Gas burner-pan (G)). A total of 16 target compounds including carbonyl compounds, volatile organic compounds, and poly aromatic hydrocarbon were selected and analyzed for comparative purposes. Their emission concentrations were quantified using HPLC-UV, GC-MS, GC-TOF-MS, etc. The gas samples collected by Charcoal-grill cooking showed generally enhanced concentrations of most target compounds among all three kinds of cooking methods. In Charcoal-grill, concentration of benzene, formaldehyde and pyrene went up to 543, 516, and 402 ppb, respectively. It the results are compared in terms of the sum of odor intensity, the highest value (4.25) was also seen from Charcoal-grill. The results of this study confirm that the significantly reduced emission of harmful pollutants can be attained, it pork belly meat is cooked by the Gas or electric pan instead of Charcoal-grill.

GC-MS에 의한 혈중 5-fluorouracil의 정량법 (The Determination of 5-Fluorourasil in Human Plasma by a Gas Chromatography-Mass Spectrometry)

  • GC-MS를 이용한 사람의 혈중 5-fluorouracil(5-FU)의 정량법이 연구되었다. 5-FU은 isopropanol-ether(20:80) 혼합용매 10ml로서 추출하였고 pentafluoro-benzylation에 의해 유도체화 하였다. 시료주입은 자동으로 수행하였으며 분리에 사용한 칼럼은 비극성 capillary column이었고 검출은 MSD로 하였다. 위의 조건하에서 내인성 물질들의 방해현상은 없었고 검출한계는 0.5 ml의 혈액시료를 사용하였을 때 3 ng/ml이었으며 추출효율은 80%이상을 나타냈다. 5-FU로 항암치료를 받는 환자의 시료 500개중에 혈중 5-FU의 농도 측정에 적용하였으며 이 방법이 우수한 monitoring법임을 알 수 있었다.

생쑥과 덖음쑥차의 향기성분 (Volatile Flavor Compounds from Raw Mugwort Leaves and Parched Mugwort Tea)

  • 한국에서 자생하고 있는 쑥(A. asiatica nakai)을 이용하여 전래의 녹차제조법에 따라 덖음쑥차를 제조하였다. 생쑥과 덖음쑥차의 휘발성 향기성분을 Tenax trap으로 포집한 다음, GC-MS로 분리, 동정한 결과 58가지의 화합물이 동정되었다. 이들 휘발성 화합물 중 향의 특징으로 보아 쑥향과 유사한 11가지 향기성분은 benzaldehyde, pinene, myrcene, cineole, 2-pyrrlidinone, camphor, thujone, 1-acetylpiperidine, caryophyllene, coumarin 그리고 famesol이었으며, 이들의 혼합물은 4월에 채취한 쑥의 향기를 그대로 재현할 수 있었으므로 이들 11가지 화합물을 덖음쑥차의 품질을 측정할 수 있는지 표가 되는 화합물로 생각되었다.

식육중 Chlorfluazuron의 잔류분석법 및 잔류량에 관한 연구 (Studies on the Analytical Methods and Quantity of Residual Chlorfluazuron in Meat)

  • Analytical method using capillary GC/ECD was developed to determine trace residues of chlofluazuron, 1-[3, 5-dichloro-5-trifluoromethyl-2-pyridyloxy)phenyl]-3-(2, 6-difiuorobenzoyl), in meat, and applied to analyze the residues in domestic and imported meats. The analytical scheme developed does not require column chromatographic cleanup; chlorfiuazuron was extracted with diethyl ether and petroleum ether (50: 50), partitioned against acetonitrile, cleaned up with silica Sep-Pak cartridge, identified GC/ECD, and comfirmed by GC/MS. The mean recoveries of the pesticide in meat fortified with standard solution 0.1, 0.5, 0.1 mg/kg were ranged from 82 to 95%. The limit of detection and limit of quantitation were 0.001 and 0.005 mg/kg, respectively. Chlorfluazuron residues were not found in domestic samples, but found in imported Australian beef ranging from 0.02 to 0.17 mg/kg, detected by 18% among the samples.

지리산 녹차의 향기성분 (The Aroma Components of Green Tea, the Products of Mt. Chiri Garden)

  • The aroma components of Korean green tea in the south western part of Mt. Chiri prepared by the traditional method from native variety were analyzed using GC and GC-MS. The patterns on GC chromatograms of the three samples from the flushes plucked in early spring were similar, though they are prepared by different producers in the area of Hadong-kun, Kyung sang nam-do. A total of 51 aroma compounds were identified in all samples. Main component in the aroma compounds of these teas were geraniol, benzyl alcohol, 2-phenylethanol, $\beta$-ionone, benzyl cyanide and linalool oxides. The aroma components of green teas manufactured by the different plucking periods were also compared. The amounts of geraniol, typical rose floral aroma were particularly decreased in the final plucking period. The amounts of pyrazines and furfuryl alcohol, typical roasted aroma and nutty aroma were slightly increased in later plucking period.

Determination of 25 EDs in Frog and Fish Tissue by GC-MS (SIM)

  • A gas chromatography/mass spectrometric assay method was developed for the simultaneous determination of neutral and bacis twenty-five disruptors $(ED_S)$ in frog and fish. Afther homogenization and sonication of 5 g of sample, purification was achieves in one step with a solid phase extraction procedure using silica gelflorisl. Eluton was performed with 50mL of acetone : n-hexane (1 : 9) solution. The eluate was concentrated to approximately 10uL and dissolves with 100 uL of hexane and analyzed by GC-MS (SIM). The peaks had good chromatographic properties and the extraction of these compounds from sample also gave relatively high recoveries with small variatoins. Detection limits were 0.1 ng/g for 4-nitrotoluene, benzophenone, hexachlorobenzene, atrazine, malathion, o,p-DDT, o,p-DDT and permethrin, and 0.2 ng/g for heptachlor epoxide, γ-chlordane, α-chlordane, p,p'-DDE, p,p'-DDD, cypermethrin and fenvalerate, and 0.3 ng/g for trifluralin, metribuzin, alachlor, dieldrin and p,p'-DDT, and 0.5 ng/g for heptachlor, aldrin and parathion, and 0.7 ng/g for endrin, and 0.8 ng/g for nitrofen. The recoveries were between 33 and 109%. The method was used to analyze twenty-five frogs and forty-six fishes fishes samples caught from various regions in Korea. Benzophenone was detected at concentration of up to 17.2 ng/g in frog or fish. Heptachlor, aldrin, γ-chlordane, p,p'-DDE, p,p'-DDD, endrin and o,p-DDD were detected at concentrations of 0.7-12.5 ng/g in frog or fish. Also significant leveles of dieldrin (up to 22.5 ng/g) were observed. The developed method may be valuable to be used to the national monitoring project of EDS in biota samples.
