This study was conducted to investigate the effects of saltwort on the quality characteristics of tofu. In addition, we examined the potential for commercialization of tofu containing saltwort. For this study, saltwort was added to tofu at 0%, 4%, 8%, 12%, 16% and 20% and quality and sensory tests were administered. Analyzing the mineral contents of saltwort juice, K was present in the greatest amount, followed by Mg, P, Ca, and F (in decreasing order). There were significant differences in yield rates and turbidity between the groups. Acidity was highest in the control group, and acidity and volume of tofu tended to decrease with an increase in saltwort powder. L value and a value decreased as the content of slaltwort powder increased, but b value increased with increasing saltwort powder concentration. Hardness, chewiness, and gumminess were rated higher in the control and the 4% supplement groups than the others groups. In the sensory evaluation, cross section and soybean flavor were the highest in the 4% saltwort supplement group, and the presence of an "off-flavor" increased with the content of saltwort powder. The saltiness score was highest in the 20% supplement group. The 4% and 8% supplement groups were favored in the "feel after swallowing" assessment. Softness was the lowest in the 20% supplement group, and the 4% supplement group had the highest overall acceptability. As demonstrated by these results, the addition of saltwort positively affected the overall sensory evaluation of tofu and supplementation with saltwort at 4% and 8% might be considered the most appropriate choices. In conclusion, saltwort tofu expected to increase the functionality of new products, particularly with respect to product variety and health improvement.
The purpose of this research was to provide basic information for cookies made with black soybeans, chick peas, lentils, oatmeal, and brewer's yeast and to establish the optimum formula for the development of low glycemic index (GI) cookies with high biotin content for lactating women. This study was performed to determine the optimal composite recipe of oatmeal cookies with two different concentrations levels of bean powder (black soybeans, chick peas, lentils) and brewer's yeast using a central composite design. In addition, the mixing conditions of oatmeal cookies were optimized using response surface methodology of sensory evaluation and mechanical and physicochemical analysis. As a result, mechanical and physicochemical analyses showed significant values for lightness, redness, yellowness, hardness, and water content (P<0.05), while sensory evaluation showed significant values for flavor, taste, crispness, and overall acceptability (P<0.05). The optimal sensory combination was suggested to be 3.73 g of bean powder and 1.59 g of brewer's yeast. Considering all outcomes obtained throughout the experiments, brewer's yeast, black soybeans, chick peas, lentils, and oatmeal are suitable ingredients for increasing functionality and consumer acceptability of cookies. In addition, these results are expected to be useful in producing cookies of optimal quality, contributing to the development of various nutritious foods, and improving the food industry for lactating women.
Premix frying powders were prepared by supplementation with 0%, 3%, 6%, 9%, or 12% egg white powder. The following quality characteristics of the fried batter were assessed: proximate composition and amino acid content of premix frying powder; viscosity and pick-up ratio of frying batter; moisture content, lipid content, color, texture and DPPH radical scavenging activity; and sensory evaluation items. Addition of egg white powder in place of wheat flour resulted in lower moisture content (p<0.01) and lower carbohydrate content (p<0.001), higher crude protein content (p<0.001), higher ash protein content (p<0.001), and higher amino acid content (p<0.01) in the premix frying powder. Lower viscosity and higher pick-up ratio (p<0.001) of the frying batter were observed. The resultant fritters had the higher moisture content and higher lipid content (p<0.001). They also showed the lighter color, and had lesser redness and yellowness (p<0.001). Considering texture, the fritters were harder, had higher fracturability and higher adhesiveness (p<0.001), lower springiness (p<0.001), were less chewy (p<0.01), and had lower cohesiveness (p<0.001). Examination of DPPH radical scavenging activity showed higher antioxidant activity (p<0.001) upon addition of egg white powder. Sensory evaluation of the fried batters showed the best outcomes for the group containing 6% white egg powder, in terms of appearance (p<0.05), flavor (p<0.001), taste (p<0.01), texture (p<0.01), and overall quality (p<0.001). Based on the results of this research, we postulate that the addition of 6% egg white powder to premix frying powder will not only improve customer preference and product quality but also enhance the nutrition and functionality of the product.
As weapon systems become complex in terms of the scale and functionality, the required time to complete the test and evaluation (T&E) process is inevitably getting longer. However, nowadays the reduction of T&E period becomes one of the core targets in the weapon systems acquisition programs. This is because the reduced time for T&E process can yield the reduction of defense budget and also faster deployment of the weapon systems, thereby having a competitive edge over rival countries. On the other hand, in weapon systems development the management of reliability, availability, maintainability and safety (RAMS), and risk is considered important to keep competitiveness and thus has been carried out separately. Thus, the objective of this paper is to study on improving the T&E process by integrating the RAMS and risk management process in it. To do so, the related processes are analyzed and modeled first. Then an integrated process model is developed. The resulting model is equipped with the traceability among the data and interfaces that are generated from the T&E and RAMS/risk processes. As a case study, the model developed is applied in tanks development. The effective use of the traceability is expected to reduce the time and cost required to complete T&E process.
최근 교육시설정책의 일환으로 전체 학교시설 중 40년 이상 경과된 건축물을 대상으로 공간혁신 차원의 개축사업이 진행 중이다. 노후화 정도 또한 증가하여 안전상의 위험을 초래하여 교직원과 학생의 거주 안전성을 위협하거나 미래 교육과정에 대응되지 못하는 열악한 환경으로 학교건축에 대한 증개축의 필요성이 급격하게 증가하고 있다. 학교건축은 교육과정을 수행하는 교육환경으로 대응하기 위해서는 국가 교육과정의 이해와 교육적 효과를 지원하는 교육공간의 명확한 관계 판단 기준이 필요하다. 본 연구는 노후 학교건축의 평가 기준을 정하기 위해서는 정량적 분석과 체계화된 평가지표의 연구와 평가방법을 관련 담당자들이 활용할 수 있도록 정량화, 정확성을 중심으로 판단자료를 제시하고자 하였다.
Eugenol, which can be extracted from clove oil, is a phenolic aromatic compound and has been found to have antibacterial, antiviral, antifungal, anticancer, anti-inflammatory, and antioxidant functions. Consequently, clove oil has long been used in several fields (food, medicine, skincare). Hence, in this study, the sensory profile of clove oil contained in milk analogs (almond, oat, and soy milks) was evaluated at different amounts (added at 0.25%-0.5% increments from 0% to 1.5%). Because of the strong scent of clove oil, the value of the evaluation for sensory profile determined in this study tended to be low. However, compared with the control group, good values in the evaluation for the sensory profile were found in all samples containing 0.25% of clove oil. We evaluated clove oil contained in milk analogs to help increase their sales through products with improved functionality.
Recently, smart wearable products, including electromyography (EMG) measurement devices and clothing, have been developed to monitor users' exercise levels, muscle activation, and muscle balance more effectively during fitness activities. However, technical and socioeconomic barriers, such as flexibility and durability, still pose challenges in terms of comfort, ease of wear, and wearability of smart clothing, which includes devices and circuits. To address these issues, this study developed a wearable EMG device integrated with clothing to collect valid EMG signals from desired muscles while maintaining comfort, functionality, and ease of wear. After deriving a combined structure that could stably position the wearable device within the clothing, a prototype was manufactured and evaluated for fit, compression, comfort, and exercise comfort test by ten participants (height = 176.2 cm, weight = 76.4 kg, chest circumference = 101.2 cm). The study found that the prototype had smaller circumferences around the chest, waist, and abdomen compared to commercial products, resulting in lower ratings for wearing comfort and ease of wear. However, the prototype received high ratings for fitting, pressure, and the exercise comfort test. Valid signals were obtained when the EMG device was combined to the prototype for the rectus femoris muscle, indicating stable positioning of the device during exercise.
디지털 아카이브는 지속적으로 보존할 가치가 있는 디지털 기록을 보존하고 활용하기 위한 온라인 플랫폼이다. 그러나 국내에서 운영되고 있는 디지털 아카이브는 기능 메타데이터, 데이터의 기술원칙과 관련된 공통 원칙이 존재하지 않는다. 이는 분산적으로 존재하는 디지털 기록을 연계하기 힘들게 만드는 요인이 된다. 본 연구는 디지털 기록의 상호운용을 개선하기 위한 방안으로 디지털 아카이브를 위한 공통 어휘를 제안하고, 공통 어휘로 구축된 디지털 아카이브의 상호운용성을 평가한다. 1997 외환위기 아카이브의 데이터를 수집·분석하여 지식그래프를 구축하고, RiC-O로 구축된 지식그래프와 상호운용성을 비교한다, FAIR 데이터 원칙의 평가 프레임워크는 1997 외환위기 아카이브와 지식그래프를 평가하는 데 활용된다. 구축된 지식그래프는 기록의 다양한 개체가 서로 연계되고, 기록의 이해에 도움이 되는 맥락 정보를 제공한다. 검증 결과는 공통 어휘로 구축된 지식그래프가 기존 아카이브에 비해 디지털 기록의 연계와 검색, 상호운용 관점에서 향상된 결과를 보인다.
국외의 대형 무척추동물과 해조류 군집을 대상으로 해역의 생태학적 상태를 평가하는 모델을 이용하여 인공어초와 인접한 자연초의 상태를 비교함으로써 우리나라 연안역에 설치된 인공어초의 기능도(FI, Functional Index; 군집구조의 안정성과 생산성의 추정)와 성숙도(MI, Maturity Index; 자연초 생물학적 패러미터와의 비교)를 평가할 수 있는, 복수의 생태학적 지수(ecological index)로 구성된 시스템을 개발하였다. 이 생태평가 모델을 서해안 연안바다목장 5개 지역(백령-대청, 연평, 태안, 서천 그리고 부안)의 자연초와 인공어초 또는 어초시설예정지(자연초)에 적용한 결과, 기능도(FI)는 지역별로 평균 31.6%(백령-대청)부터 72.5%(부안), 성숙도(MI)는 53.1%(서천)부터 76.9%(태안)의 범위를 나타내었다. 인공어초의 기능도와 성숙도는 태안에서 가장 양호하였으며, 인접한 인공어초와 자연초 간의 FI는 유의한 선형 관계를 갖는 것으로 나타났다($r^2=0.83$, p=0.01). 이 같은 결과는 그 해역의 생물 군집의 상태가 어초의 기능도를 결정하는 데에 중요한 요인으로 작용할 수 있음을 의미한다. 생태학적 상태에 대한 평가 결과는 효율적인 재원의 활용과 의사 결정에 책임이 있는 환경 및 자원 관리자에게 중요한 정보로 활용될 수 있을 것이다. 평가 결과의 정확도를 개선하고 강화하기 위해 다음과 같은 세 가지가 필요하다: (1)평가 결과의 타당성 검증과 이에 기초한 지시자 기준의 보정(rescaling)을 지속하고, (2) 시스템의 적용 및 자료의 축적을 통해 획득된 관찰과 경험을 적극적으로 활용하며, (3) 새로운 지수들을 지속적으로 개발, 검증하고 추가해 나가는 노력이 요구된다.
최근 IT 환경의 변화에 따라 웹 서비스를 기반으로 대규모 사용자 대상의 상호 참여적인 MOOC(Massive Open Online Courses)과 같은 온라인 교육 환경이 부상하고 있다. 그러나 온라인 교육 시스템은 원거리로 학습이 이루어짐에 따라 학습자의 자발적 동기를 꾸준히 유지하기 어려우며, 또한 학습자 간에 지식을 공유하고 공유한 지식을 활용하는 기능이 부족하다. 이러한 문제를 극복하기 위해 구성주의적 학습이론과 집단지성에 기반하여 학습자가 보유한 학습자료를 공유하고 개인화된 학습자료 추천을 받을 수 있는 학습자료 북마킹 서비스인 WeStudy를 구현하였다. 위키피디아(Wikipedia), 슬라이드쉐어 (SlideShare), 비디오렉쳐스 (VideoLectures) 등 현존하는 집단지성 기반 서비스들의 주요 기능으로부터 필요한 집단지성 기능들을 검토하였으며, 본 서비스의 주요 기능으로 1) 리스트 및 그래프 형태의 학습자료 리스트 시각화, 2) 개인화된 학습자료 추천, 3) 보다 상세한 학습자료 추천을 위한 관심 학습자 지정 등을 도출하여 시스템을 설계하였다. 이후, 웹 기반으로 구현된 세 가지 주요기능 별로 개량된 휴리스틱 사용성 평가 방법을 통해 개발된 시스템의 사용성 평가를 실시하였다. 10명의 HCI 분야 전공자 및 현업 종사자를 대상으로 정량적 및 정성적인 평가 결과, 세 가지의 주요 기능에서 전반적으로 사용성이 우수한 것으로 판정되었다. 주요 기능 별 정성적인 평가에서 도출된 여러 마이너 이슈들을 반영할 필요가 있으며, 향후 대규모 사용자를 대상으로 본 서비스를 보급하고 이용할 수 있도록 제공하여 자발적인 지식 공유 환경을 조성할 수 있을 것으로 전망된다.
