Quality and Antioxidant Properties of Fermented Sweet Potato Using Lactic Acid Bacteria (유산균을 이용한 발효 고구마의 품질 특성 및 항산화 활성)

  • The purpose of this study was to investigate the quality and antioxidant properties of three fermented sweet potato cultivars (Shinyulmi, Hogammi, and Shinjami) using lactic acid bacteria. During the fermentation, the pH was lowered and the titratable acidity increased. The viable cell counts of lactic acid bacteria increased 8.44-9.62 log CFU/g. Organic acid content (especially lactic acid) of sweet potatoes increased by fermentation. Also, ${\gamma}$-Aminobutyric acid increased more than 8.6 times by fermentation in all samples. The total polyphenol and flavonoid contents of sweet potato, showed insignificant changes in all samples by fermentation. ABTS radical scavenging activity of all samples slightly decreased by fermentation, but not significantly. DPPH radical scavenging activity decreased slightly by fermentation except Shinyulmi. However, when compared with the varieties, Shinjami showed the highest activity. The reducing power of Shinjami decreased slightly by fermentation, but activity was the highest among all samples. Based on these results, most of the chemical properties and functionality of fermented sweet potato are retained after fermentation, although some antioxidant activity decreases. We suggest that three fermented sweet potato cultivars (Shinyulmi, Hogammi, and Shinjami) using lactic acid bacteria can be used in various applications because of their effective functional properties.

  • This study was conducted to develop a healthy functional food material using mycelial extract of Phellinus sp. Jangsoo and GMPL48007 were selected as suitable strains because of good mycelial growth and high functionality. The highest total polyphenols and reducing power were observed in the Jangsoo strain and the radical scavenging was shown in GMPL48007. Among grains media, whole-grain wheat had the highest extraction yield from mycelia of selected strains; especially, the GMPL48007 strain showed the highest content of beta-glucan.

Analysis of the Quality Characteristics of Cookies based on the Addition Rate of Ear Mushroom (Auricularia auricula-judae Quel.) Powder by Ultraviolet B Treatment (자외선 처리한 목이버섯 분말 첨가량에 따른 쿠키의 품질 특성)

  • This study was conducted to effectively supplement vitamin D and increase the consumption of ear mushroom based on the investigation of the quality characteristics of cookies containing ear mushroom supplemented with vitamin D. Cookies were made of 0%, 1%, 3%, and 5% ear mushroom powder treated by ultraviolet B. Increased addition of ear mushroom powder led to a decrease in the bulk density of the dough as well as a spread factor, color value, and hardness of the cookies. There was no significant difference in the loss rate, but the water content of the dough and cookies was increased. The total polyphenol content of cookies added with 1~5% ear mushroom powder was higher than that of the 0%. The DPPH free radical scavenging activity of cookies added with 5% ear mushroom powder (23.8%) was 2 times higher than that of the 0% (10.9%). The vitamin D2 content of cookies added with 5% ear mushroom powder (835.5 ㎍/100 g D.W.) was 44 times higher than that of the 0% (19.0 ㎍/100 g D.W.). Consequently, ear mushroom powder is considered to be suitable for the production of functional cookies because of high values of antioxidant activity and vitamin D2 content.

Anti-Elastase Activities, and Melanogenesis Inhibition Effects of Korean Traditional Actinidia (Actinidia arguta) Extracts (토종다래(Actinidia arguta) 추출물의 Elastase 및 멜라닌 생합성 저해 효과)

  • The objective of this study is to evaluate the antioxidant components, elastase inhibition activities, and melanin synthesis rates of Korean traditional Actinidia (Actinidia arguta) fruits and leaves depending on the ethanol extraction concentrations. The total polyphenol content was the highest in the 50% ethanol extract of both fruits and leaves, with values of 634.1 mg GAE/100 g and 3,985.2 mg GAE/100 g, respectively. The total flavonoid content was the highest in the fruit 90% extract and leaf 50% extract at 191.9 mg/100 g and 2655.6 mg/100 g, respectively. The vitamin C content was the highest in the 50% extract of leaves at 2990.3 mg/100 g. Elastase inhibition was the highest at 56.9% in the leaf 50% extract at a concentration of 1,000 ㎍/mL. Melanin synthesis inhibition showed the highest melanin synthesis inhibitory effect among the extracts, as the leaf 50% extract showed an inhibitory rate of 65% or more. Therefore, the antioxidant components, elastase inhibition activities, and melanin synthesis inhibitory rate were better in leaves than in fruits. The leaf 50% extract was particularly the best among the extracts. Korean traditional Actinidia leaves can be considered as potential sources for new functional materials.

A Genome-wide Approach for Functional Analysis Using Rice Mutant

  • Rapid extension of genomic database leads to the remarkable advance of functional genomics. This study proposes a novel methodology of functional analysis using 5-methyltrytophan (5 MT) mutant together with their 2-DE analysis and public microarray database. A total of 24 proteins was changed in 5 MT mutant and four remarkably different expressed proteins were identified. Among them, three spots were converted to Affymetrix probe. A total of 155 microarray samples from Gene Expression Omnibus (GEO) in NCBI was retrieved and followed by constructing gene co-expression networks over a broad range of biological issues through Self-Organising Tree Algorithm. Three co-expressing gene clusters were retrieved and each functional categorization with differential expression pattern was exhibited from 5 MT resistance mutant rice. It was indicated new co-expression networks in the mutant. This study suggests that on investigating possibility which correspond 2-DE to microarray database with their full potential.

Functional Motion Analysis of Wrist Joints (손목관절의 기능적 운동 특성의 동작 분석)

  • Injuries of wrist in upper extremity is common onset in industrialized world. The development of joint arthroplasty and mechanical joint is area of research for biomechanical engineer and surgeon for a decade. Therefore. the knowledge of characteristic of joint motion is essential to develop the artificial wrist joint. In this study. the joint motions of wrist required for activities of daily living (ADLs). including personal hygiene and care. and general home activity were measured using flexible electrogoniometer. Total of 25 different daily activities were separated into four groups and tested on 15 subjects who did not show any abnormality of their joint functions. The maximum functional range of motion required for ADLs were obtained and standardized for analysis and comparison. Also. a least functional range of motion for ADLs were investigated. Results revealed that any significant differences were not found in least functional range of motion between left and right wrist to perform ADLs. However. a significant difference was found in different ADLs. Therefore. least range of motion obtained in this study can be used as basic data to design artificial joint and set a goal for surgeon to achieve appropriate treatment from patients.

Effects of Different Frequency on Muscle Function of the Thigh in Patients with Degenerative Knee Arthritis during the Functional Electrical Stimulation (FES 치료 시 자극 주파수 차이가 퇴행성 슬관절염 환자의 대퇴근 기능에 미치는 영향 )

  • Objective: The purpose of this study was to investigate the effects of different frequency on muscle function of the thigh in patients with degenerative knee arthritis during the functional electrical stimulation (FES). Method: For this study, 16 male participants over 65 who patients with degenerative knee arthritis were recruited as research participants. In this research, isokinetic muscular function, EMG, and joint position sensation were performed after FES treatment was applied for three conditions (FES 20, FES 50, and Without FES). For each dependent variable, one-way ANOVA with repeated measures was to determine whether there were significant differences among three different conditions (p<.05). When a significant difference was found, post hoc analyses were performed by using the contrast procedure. Results: When compared to FES 50 and without FES, FES 20 causes significant increase in isometric knee extension strength. No significant differences were found in EMG values across different EMS conditions. Conclusion: The present study examined isokinetic muscular function, EMG, and joint position sensation in order to investigate the effects of different frequency muscle function of knee extensors during the functional electrical stimulation. The results of this study showed that FES with 20 Hz frequency had positive effect on knee extensor. Based on the findings of the present study, FES with lower frequency may help the performer to focus on developing strength in knee extensor muscles.

  • The current RFID middleware standard is ALE (Application Level Event) of EPCglobal that takes the lead in RFID standardization. ALE suggests the minimal interface and extension points so that it can be operated independently from system infrastructure, and actual implementation is left to vendors. But there is no specific mention with regard to functional extension through extension points, and It is very hard to extend or modify the function on running system. To solve this problem, we suggest AOP (Aspect Oriented Programming)-based ALE middleware framework for developing RFID middleware. In addition, we designed aspect for RFID middleware for implementing and extending functions according to ALE rules and for the convenience of maintenance.

  • Although several artificial disc designs have been developed for the treatment of discogenic low back pain, biomechanical change with its implantation was rarely studied. To evaluate the effect of artificial disc implantation on the biomechanics of functional spinal unit, nonlinear three-dimensional finite element model of L4-L5 was developed with 1-mm CT scan data. Two models implanted with artificial discs, SB $Charit\acute{e}$ or Prodisc, via anterior approach were also developed. The implanted model predictions were compared with that of intact model. Angular motion of vertebral body, force on spinal ligaments and facet joint, and the stress distribution of vertebral endplate for flexion-extension, lateral bending, and axial rotation with a compressive preload of 400 N were compared. The implanted model showed increased flexion-extension range of motion and increased force in the vertically oriented ligaments, such as ligamentum flavum, supraspinous ligament and interspinous ligament. The increase of facet contact force on extension were greater in implanted models. The incresed stress distribution on vertebral endplate for implanted cases indicated that additinal bone growth around vertebral body and this is matched well with clinical observation. With axial rotation moment, relatively less axial rotation were observed in SB $Charit\acute{e}$ model than in ProDisc model.

Effects of Proprioceptive Neuromuscular Facilitation Leg Patterns on Activity of Gluteus Medius at Opposite Side (PNF 하지 패턴이 반대측 중둔근의 활성도에 미치는 영향)

  • Purpose: This study investigates the influence of applying proprioceptive neuromuscular facilitation (PNF) leg patterns on the activation of three types of mesogluteal fibers at the opposite side. Methods: The target subjects of this study were 19 healthy men who voluntarily agreed to participate in the program. For all subjects, the following four PNF leg patterns were applied while they were in a standing position, and then, the activation of the gluteus medius at the opposite side was measured: (1) flexion abduction internal rotation pattern, (2) flexion adduction external rotation pattern, (3) extension abduction internal rotation pattern, and (4) extension adduction external rotation pattern. In each position, a pattern was executed three times in 5 s, and the average of each measurement was used for the statistics. Results: Among the PNF leg patterns, the activation of the mesogluteal fibers at the opposite side was most significant under the application of the extension abduction internal rotation pattern. The activation of the back muscular fiber was significantly high under the application of the flexion abduction internal rotation pattern. Conclusion: Selective application of PNF leg patterns can improve the functional activity of each mesogluteal fiber.
