A Quantitative Approach to a Similarity Analysis on the Culinary Manuscripts in the Chosun Periods (계량적 접근에 의한 조선시대 필사본 조리서의 유사성 분석)

  • This article reports an attempt to perform a similarity analysis on a collection of 25 culinary manuscripts in Chosun periods using a set of quantitative text analysis methods. Historical culinary texts are valuable resources for linguistic, historic, and cultural studies. We consider the similarity of two texts as the distributional similarities of the functional components of the texts. In the case of culinary texts, text elements such as food names, cooking methods, and ingredients are regarded as functional components. We derive the similarity information from the distributional characteristics of the two key functional components, cooking methods and ingredients. The results are also quantified and visualized to achieve a better understanding of the properties of the individual texts and the collection of the texts as a whole.

  • Volatile flavour components rates from aromatic rices were analyzed by Electronic nose systems. In functional group, polar compounds and aldehyde compounds showed much of volatile flavour components than apolar compounds, sulphur compounds and aminated compounds. The profiles of volatile flavour components rates were markedly differents of sen-sing times, amylose content.

  • It is difficult to design system software to meet a better separation of concerns, which can provide a number of benefits such as adaptability, extensibility, and modularity in the design and implementation. During design, some aspectual properties, such as synchronization, scheduling, performance and fault tolerance, crosscut the basic functionalities of the system software. By separating functional components from the different aspectual components of the system software in the design, we can provide a better generic design model of system software. Aspect-Oriented Programming is a methodology that aims at separating components and aspects from the early stages of the software life cycle, and using techniques to combining them together at the implementation phase. In this paper we discuss an aspect-oriented framework that can simplify system software design and implementation by expressing it at a higher level of abstraction. Our work concentrates on how to achieve a higher separation of aspectual components, functional components, and layers from each other. Our goal is to achieve a better design model for implementing system software in terms of modularity, reusability and adaptability.

  • Many countries divide infant formula into special nutrient food and they are in control of thorn very carefully. CODEX prescribes that the components which can be added to infant formula must be exist in the breast milk and the additives must be scientifically proved to be safe. Therefore infant formula manufacturers make efforts to develop infant formula to be similar to human milk based on research of human and bovine milk components. Domestic infant formulas are rich with functional components in comparison with foreign formulas ; such as immunity, anti-allergy, growth factor, developments of brain and digestion organs etc. At this point, progress of bioscience technology and introduction of various new technologies lead micro components in human and bovine milk to be separated and purified. Therefore many functional components are commercialized and infant formula companies use these. Various functional components are added to infant formula ; DHA and arachidonic acid as brain growth components, nucleotide and lactoferrin as immunity increment and oligosaccharides fur digestion. And new infant formula is being developed by using bone growth factor and dehydration components f3r atopy and allergy decrement.

Natural variation of functional components between Korean maize types (국내 옥수수 품종에 따른 기능성 성분의 자연 변이 분석)

  • Maize is one of the major crops consumed in worldwide, which nutrients accounts for a large amount of starch, but also functional components, and phenolic acid is known to have a high content. Maize is divided into waxy maize, sweet maize, and normal maize with its shape and use, therefore there is also a difference in nutritional composition. This study was conducted to analyze the content of functional components according to the type of maize and to produce natural variation data in consideration of environmental factors. 3 shapes of maize (waxy maize, sweet maize, and normal maize) samples cultivated in 3 regions (Suwon, Daegu, and Hongcheon) were analyzed using HPLC and GC-TOF-MS. Comparing with type through ANOVA, multivariate statistical analysis, Pearson correlation analysis, 28 components, including carotenoids and tocopherols, showed significant differences among a total of 32 components (p <0.05), 15 of them showed very significant differences (p <0.001). When comparing with regions, 15 components showed significant differences and only vanillate, syringate, C23-ol of them showed most significant differences (p <0.001). As a result of principal component analysis, cluster classification was distinguished by shape than by region, with α-carotene, cholesterol for waxy maize, vanillate and stigmasterol for sweet maize, lutein and β-carotene for normal maize had a great effect on cluster formation. It suggests that the content of functional components is more affected by genetic factors than environmental factors.

Effects of LED (Light-Emitting Diode) Treatment on Antioxidant Activities and Functional Components in Taraxacum officinale (발광다이오드 처리가 서양민들레의 항산화 활성 및 기능성 성분 함량에 미치는 영향)

  • This study was conducted to evaluate the effect of light spectrum using red (660 nm), blue (460 nm), red and blue mixed (Red : Blue = 6 : 4) LED (light-emitting diode), and fluorescent lamp on antioxidant activities and functional components of dandelion (Taraxacum officinale). Total polyphenol contents in dandelion irradiated with the red and blue mixed or the red LED were 121.77 mg/100 g or 115.36 mg/100 g, respectively, which were greater than those in dandelion treated with blue LED and fluorescent lamp. Asparagine showed the highest content among amino acids in leaves and roots regardless of treatments. Total amino acid was the highest when illuminated with the red LED. DPPH (1,1-diphenyl-2-picrylhydrazyl) radical-scavenging activity and SOD (super oxide dismutase) activity of ethanol extracts were increased under all of the LED treatments compared with fluorescent lamp, and the antioxidant activities were increased by the red and the mixed LED illumination. The results indicate that application of the red and the mixed LED illumination promote antioxidant activity and increase functional components during cultivation of dandelion.

Changes in the Chemical and Functional Components of Korean Rough Rice Before and After Germination

  • This study investigated changes in the chemical and functional components of germinated rough rice for the development of functional foods. The chemical components that were determined for 'Ilpum', 'Goami2', 'Keunnun', and 'Heugkwang' rough rice cultivars included dietary fiber, free sugars, free amino acids, and functional components such as tocopherols and ${\gamma}$-oryzanol. The crude protein, fat, total dietary fiber, and free sugar contents of the rough rice increased significantly after germination. The essential amino acid content was particularly increased. After the germination of the 'Ilpum', 'Goami2', 'Keunnun', and 'Heugkwang' varieties, the following increases were found: ${\gamma}$-aminobutyric acid increased 2.4, 2.5, 6.1, and 3.4 times, respectively; ${\alpha}$-tocopherol, ${\alpha}$-tocotrienols, and ${\gamma}$-tocotrienols increased significantly; and ${\gamma}$-oryzanol content increased 0.8, 1.1, 1.5, and 1.2 times, respectively. Thus, germinated rough rice has the potential to be used as a healthy and functional food ingredient.

Composition Analysis and Antioxidant Activity of Ojuk (Phyllostachys nigra Munro) Leaf Tea and Shoot Tea (오죽잎차와 오죽죽순차의 성분 분석 및 항산화 효과)

  • Nutritional components of Ojuk leaf tea and Ojuk shoot tea prepared from the leaves and shoots of black bamboo (Phyllostachys nigra Munro) by tea manufacturing process were evaluated. In addition, the extraction yield of water soluble components from these teas in the general tea brewing condition (water extraction in $80^{\circ}C$ for 10 min.) and the contents of polyphenol and flavonoid were compared with not only the dried raw materials, but also green tea and mate tea. Finally, offline and online scavenging activities against 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulphonic acid) (ABTS) and di(phenyl)-(2,4,6 trinitrophenyl)iminoazanium free radicals were investigated to evaluate the antioxidant activity and explore the components showing ABTS free radical scavenging activity from tea infusion. These results demonstrated that these teas from black bamboo contain various nutritional components and can be used as traditional tea beneficial to human health.

Biotransformation of Ginsenoside Rb1, Crocin, Amygdalin, Geniposide, Puerarin, Ginsenoside Re, Hesperidin, Poncirin, Glycyrrhizin, and Baicalin by Human Fecal Microflora and Its Relation to Cytotoxicity Against Tumor Cells

  • To understand the role of intestinal microflora in the biological effect of functional herbs, which have been used in Korea, Japan, and China as traditional medicines, and suggest new bioactive compounds transformed from herbal constituents, the metabolic activities of the functional herb components (ginsenoside Rb1, crocin, amygdalin, geniposide, puerarin, ginsenoside Re, poncirin, hesperidin, glycyrrhizin, and baicalin) toward their bioactive compounds (compound K, crocetin, benzaldehyde, genipin, daidzein, ginsenoside Rh1, ponciretin, hesperetin, 18b-glycyrrhetic acid, and baicalein) were measured in fecal specimens. The metabolic activities of these components were $882.7{\pm}814.5$, $3,938.1{\pm}2,700.8$, $2,375.5{\pm}913.7$, $1,179.4{\pm}795.7$, $24.6{\pm}10.5$, $11.4{\pm}10.8$, $578.8{\pm}206.1$, $1,150.0{\pm}266.1$, $47.3{\pm}58.6$, and $12,253.0{\pm}6,527.6\;{\mu}mol/h/g$, respectively. No differences were found in the metabolic activities of the tested components between males and females, although these metabolic activities between individuals are extensively different. The metabolites of functional herb components showed more potent cytotoxicity against tumor cells than nonmetabolites. These findings suggest that intestinal microflora may activate the pharmacological effect of herbal food and medicines and must be the biocatalytic converter for the transformation of herbal components to bioactive compounds.
