'Wonhwang' pear ($Pyrus$$pyrifolia$ Nakai) often showed physiological disorder and quality deterioration during long-term storage and shelf life although this cultivar has the advantage of a good appearance and better taste for overseas exportation. This study was conducted to investigate the effect of temperature during transportation and continuing market temperature on fruit quality, and the occurrence of physiological disorder to set up the appropriate transportation and distribution temperatures in the fruits harvested at different times. Unripe fruits harvested 120 days after full bloom maintained higher firmness until 21days of shelf life at both 18 and $25^{\circ}C$ than late harvested ones. Otherwise, ripe fruits harvested 130 days after full bloom showed high incidence of mealiness breakdown of flesh tissues in 21 days of shelf-life at $25^{\circ}C$ of market temperature, but not in the fruits stored at $18^{\circ}C$. Late harvested fruits showed much severe physiological disorders when compared with early harvested ones that showed relatively lower respiration rates. Fruit quality parameters were more highly affected by market temperature than transportation temperature. Results showed that unripe fruits harvested at 120 days after full bloom maintains high marketability until 21 days of shelf-life, while the maximum shelf-life of ripe fruits harvested 130 days after full bloom will be considered at within 7 days.

'Shingo' pears were seal-packaged in polyethylene (PE) film with different thickness of 0.04. 0.06, 0.07, and 0.08mm and stored for five months in an experimental storehouse with the temperature varyine 0 to $7^{\circ}C$ and relative humidity varying 86 to 89%. The atmosphere in PE film bags was modified to 5-l4% oxygen with 3-5% carbon dioxide depending on the film thickness and the storage period. Packaging of pears with PE film effectively reduced the weight loss, which resulted in good appearance after 5 months' storage, while non-packaged pears showed a slight wilt. Decay occurrence was not significantly different among the treatments. but role browning occurred a little more in packaged lots than in non-packaged lot. The sensory panel rated the pears front 0.07mm-thick bag highest in flavor, texture, and juiciness, which might be due to the high sugar content and low titratable acidity. The firmness of pear flesh decreased with the stogare time and its change was found to be highly correlated with that of cellulase activity (correlation coefficient= -0.946). Thisresult indicated that cellulase might be one of the enzymes responsible for the softening of pear fruit during storage.
This experiment was conducted to elucidate the effects of fruit bagging on the amounts of pesticide residues on/in pears with two pesticides, chlorpyrifos 25% WP, and penconazole 5% WP, and two pear cultivars, Niitaka and Hwangeum-bae. Residues of chlorpyrifos and penconazole in bagged pears were only $0.4{\sim}27%$ of those in non-bagged one. Residues of both pesticides in bagged and non-bagged pears were steeply reduced in the field but slowly reduced during storage. Residues of chlorpyrifos were more in the peel than in the flesh, while penconazole in bagged pear was evenly distributed in the peel and flesh. Chlorpyrifos was evenly distributed in outer bag and inner bag irrespective of bag materials, while most of penconazole was found in outer bag rather than in inner bag. To produce safer pear from pesticide residues, removal of bag before storage is recommended.
The Fuji variety of apple, introduced in Japan, has excellent storage quality and good taste, such that it is the most commonly cultivated apple variety in Gunwi County, North Gyeongsang Province, Korean Peninsula. Accurate prediction of harvest maturity allows farmers to more efficiently manage their farm in important aspects such as working time, fruit storage, market shipment, and labor distribution. Temperature is one of the most important factors that determine plant growth, development, and yield. This paper reports on the beta distribution (function) model that can be used to simulate the the phenological response of plants to temperature. The beta function, commonly used as a skewed probability density in statistics, was introduced to estimate apple harvest maturity as a function of temperature in this study. The model parameters were daily maximum temperature, daily optimum temperature, and maximum growth rate. They were estimated from the input data of daily maximum and minimum temperature and apple harvest maturity. The difference in observed and predicted maturity day from 2009 to 2012, with optimal parameters, was from two days earlier to one day later.
We evaluated the physicochemical and storage characteristics of Hanwoo Tteokgalbi treated with onion skin powder (OSP) and blackcurrant fruit powder (BFP). The experimental design included seven treatments: a control (ascorbic acid 0.1%), T1: OSP 0.3%, T2: OSP 0.6%, T3: BFP 0.3%, T4: BFP 0.6%, T5: OSP 0.15%+BFP 0.15%, and T6: OSP 0.3%+BFP 0.3%. The OSP was higher in both polyphenol and flavonoid contents compared to BFP (p<0.05). The moisture and ash contents of all Tteokgalbi samples with a large amount of added natural antioxidant powder (0.6%) were higher than those with small amounts of added antioxidant (0.3%). The cooking loss and water holding capacity were outstanding in the T2 treatment compared to the others (p<0.05). The lightness, redness, and yellowness values were reduced on the addition of 0.6% antioxidant powder (p<0.05). The springiness and cohesiveness values of the Tteokgalbi samples were higher for the 0.3% addition than the control and 0.6% addition (p<0.05). The Tteokgalbi samples with natural antioxidants showed similar sensory attribute scores compared to the control. The pH values reduced as the BFP increased (p<0.05), and the total microbial count increased after OSP addition. The 2-thiobarbituric acid reactive substance values of the samples treated with OSP were significantly lower than the control after day 10 (p<0.05). As a result, the addition of OSP or BFP did not have a significant negative influence on the quality characteristics of Hanwoo Tteokgalbi. In particular, the addition of 0.6% OSP was effective in increasing water retentivity and inhibiting lipid oxidation.
The objectives of this study were to examine the effect of storage time, temperature, pH, and NaCl concentration on hydroperoxide lyase and lipoxygenase activities, and to establish important informations to the production of typical cucumber flavor. Conditions affecting lipoxygenase and hydroperoxide lyase would be important for cucumber flavor production. Maximum activity was observed at pH 5.0 for hydroperoxide lyase and pH 5.5 for lipoxygenase. Both enzymes were relatively stable at $40\;to\;50^{\circ}C$ for 6days storage time. Maximum activity of both enzymes was observed with 0.2 M NaCl at pH 5.0. Activities were stimulated with concentrations of NaCl from 0.05 to 0.2 M. Hydroperoxide lyase and lipoxygenase activities were decreased at concentration of NaCl greater than 0.2 M.
Changes in volatile organic compounds were investigated during storage after electron beam irradiation. Grapes were irradiated at 0.25, 0.5, 0.75, and 1.0 kGy and stored for 1 month at $4^{\circ}C$. Butanol, hexanal, [E]-2-hexenal, hexanol, and 3-methyl-butanol were the major volatile organic compounds of grapes. The types of volatiles in irradiated grapes were similar to those of non-irradiated samples but concentration differed among treatments. Some volatile compounds decreased during storage, whereas others, especially the esters, increased. Concentration of most volatile compounds were higher in pre-stored grapes than in post-stored fruit (thus, during the 30 days after irradiation by e-beam). Consequently, concentration of volatile organic compounds either increased or decreased after e-beam irradiation but these changes did not correlate with irradiation dose.
Fuji apple variety introduced in Japan has excellent storage quality and good taste so it is most commonly cultivated in the Korean Peninsula. Accurate prediction of harvest maturity allows farmers to more efficiently manage their farm, such as working time, fruit storage, market shipment and labor distribution so it is very important. This study was carried out to predict the harvest maturity of 'Fuji' apple using DTS (Days Transformed to Standard temperature) model based on the Arrhenius law in the Gunwi province of the South Korea. Input data are daily average temperature and apple harvest maturity. Predicted the harvest maturity of Fuji apple after estimating the optimal parameters by using the Nelder-Mead method. The differences of observed and predicted harvest maturity day are approximately 1 to 4 days and the RMSE is 2.9.
Effect of the thickness of low density polyethylene(LDPE) Film as packaging material on changes in physicochemical characteristics of mature-green mume (Prunus mume Sieb. et Zucc) fruits during storage at different temperatures(0, 10 and 25$\^{C}$) were investigated. Fruit samples stored in pouches with 30㎛ thickness of LDPE film maintained well not only external qualities such as Shape and firmness, but also internal chemical properties such as pH, acidity, the content of soluble solid and chlorophyll, and color, comparing with samples stored without packaging material or in other pouches with different film thickness(20 and 40㎛). From the results, it was found that the maintenance of quality of mature-green mume fruits during storage at 0, 10 and 25$\^{C}$ closely related to the changes in respiratory conditions for fruits affected by the film thickness of the packaging material.
In order to develop a sprayable ethylene antagonist, unlike 1-methylcyclopropene (MCP), we synthesized 2-decylcyclopropene-1-carboxylic acid ethyl ester (DCPE) as a derivative of cyclopropene and tested its effect on the flesh softening of 'Fuyu' persimmon fruits. The fruits on trees were sprayed with $4{\cdot}10^{-4}$ M DCPE solution before harvest. After harvest, the persimmon fruits were stored at a low temperature for 1.5 months. The ripening progress of the fruits was then evaluated during storage at ambient temperature ($20^{\circ}C$). Flesh softening, a measure of ethylene response, was considerably delayed up to 7 days after DCPE treatment. However control fruits was rapidly softened after 3-day storage. The treatment effect of DCPE at $4{\cdot}10^{-4}$ M was also compared to that of 1-MCP at 1 ppm. DCPE was storable at refrigerated conditions for at least one month without any loss. The results show that DCPE could be a potential sprayable agent for the prevention of flesh softening of persimmon fruit.
