To produce fresh-cut fruit products of high quality, the combined effects of postharvest calcium and heat treatment on Tsugaru apple were examined. Whole fruits were treated for 20 min at three different conditions: dipping in 3% $CaCl_2$ solution at $45^{\circ}C$ or ambient temperature, or in heated water at $45^{\circ}C$. The calcium content of the apples dipped in $CaCl_2$ solution at $45^{\circ}C$ was higher than that of the control and the non-heated calcium dipping. The fruits with calcium and heat treatment showed the same pattern of respiration rates as the control did during storage. The browning degree of the apple slices increased to approximately 3% after one-day storage, but no significant difference was observed between the treated and untreated apples. The fruits with $CaCl_2$ solution dipping at $45^{\circ}C$ had higher firmness than those with calcium dipping or heat treatment alone.
This study compared the effects of cocopeat and perlite growth media on the storability and quality of sweet pepper fruit stored using modified atmosphere packages (MAP) and carton boxes. The fruits were stored at 8℃ for 35 and 30 days, respectively. Perlite-grown fruits had a significantly lower size at harvest due to the medium's inability to hold plenty of water during the growing stage. Contrary to what is expected for small fruits, the result shows box-stored perlite-grown fruits to have lower weight loss and a longer shelf life than cocopeat-grown fruits, while MAP fruits have indifference. Perlite fruits also had a higher quality in terms of dry matter, soluble solids, and vitamin C, while box-stored fruits had a better visual quality. As expected, respiration and ethylene production rates were high, and fruits had similar after-storage firmness values. Based on the findings, perlite-grown sweet pepper fruits may have a better quality and give preference in a box storage condition.

This study was conducted to determine whether Pleurotus ostreatus (oyster mushroom), cultivated in various ratios with herbal extract remnants instead of cotton supplemented with nutrients (the control), improved mycelial growth, mushroom yields and longevity during storage. In addition, we investigated the transfer of medicinal herb components into the mushrooms since they contained non-specific medicinal herbs and their composition could not be controlled. Mushrooms cultivated with 70% and 100% medicinal herb remnants had faster growth rates, higher yields and less failure in the development of the fruit body than the control group. There were no differences in HPLC chromatogram among the methanol extracts of Pleurotus ostreatus in all groups. In addition, glycyrrhizin, an indicative compound of licorice which was a major herb among the herbal remnants, was not detected in any of the extracts. Pleurotus ostreatus that was cultivated with 70% and 100% herbal extract remnants had improved storage longevity in comparison with the control. They exhibited the least weight loss during storage among the groups and they maintained firmness in the stipe and pileus. However, the sources of media did not alter the color difference of the stipe and pileus or the quality index of the outward appearance during storage. In conclusion, cultivating media that contained over 70% of medicinal herb extract remnants increased the growth rates and yields of Pleurotus ostreatus. In addition, these mushrooms had enhanced storage longevity due to their firmness. Therefore, medicinal herb extract remnants should be utilized in the cultivating media of various mushrooms.
Activity of the noncontacted low temperature atmospheric pressure surface discharged plasma (LASDP) converts stable gas to ionized gas known as discharge or plasma. This ionized gas exhibits the antimicrobial activity. We examined the effects of 3 different storage treatments for 80 days on 'Setoka' : ambient storage (AS), low-tempperature storage (LTS), and low-temperature atmospheric pressure plasma+low-tempperature storage (PLTS). Total soluble solids showed no the significant differences between the 3 treatments. Acidity gradually decreased, and was 0.5% under AS after 30 days of storage. Fruit firmness increased by a few percent until 40 days of storage. Weight loss in AS was higher than for other treatments. After 80 days of storage, the decay ratio was significantly low in PLTS treatment: (AS, 50.5%; LTS, 5.6%; PLTS, 1.9%). In AS treatment, 73% of the rotten fruits were infected particularly with green and blue mold; however, only 1% of the rotten fruits were infected in case of PLTS treatment. In conclusion, LASDP treatment can prevent postharvest decay caused by fungi and is an efficacious alternative extending the shelf-life of citrus fruits.

The objective of this study was to establish the optical storage condition in cutting slips of Lycium chinense Mill. We investigated the different influential growth factor of this plant including two soil types (soil and vermiculite) and storage methods (gauze, parafilm, vinyl, and paper). Our result revealed that the formation of axillary bud was highest ($4.8{\pm}0.75ea$) from the cutting slips stored in vinyl and vermiculite treatment. Root length was long ($2.8{\pm}0.13ea$) in parafilm storage using soil. Maximum plant height was $135.33{\pm}12.81cm$ with gauze storage using vermiculite. The number of leaves was maximum ($130{\pm}2.5ea$) at 90 days from the cutting slips of gauze storage using vermiculite. Highest number of fruit was harvested ($149{\pm}16.05ea$) from the cutting slips stored in parafilm and grown in vermiculite. It can be concluded that the storage treatment and soil type influence the affecting to general growth of Lycium chinense Mill.
Pressure, used as a minimal processing technology in the food industry, is a valuable tool ensuring microbiologically safe, shelf-stable fruit and vegetable production. Pressure could be used to deliver a greater variety of minimally processed products, as demanded by today's consumers. Weevaluated the effect of <400 MPa pressure, applied during chilling, on fresh fruit purees (strawberry, kiwi, aloe, and pomegranate) and vegetable extracts (from carrot and spinach) during cold storage (<$10^{\circ}C$) for 15-20 days. Samples were prepared in a processing facility in which total plate counts of falling and floating bacteria were controlled at $1{\times}100-10^1$ CFU/plate and $1{\times}10^2-10^3$$CFU/m^3$ under conditions of $21-25^{\circ}C$ and 55-60% relative humidity. The aerobic plate counts of raw materials were less than $1{\times}10^3$ CFU/g. Evaluation parameters included microbiological safety, vitamin content, and sensory qualities. Although the overall quality of non-treated samples deteriorated with storage time at $10^{\circ}C$, samples pressurized at 250-350 MPa at $5-7^{\circ}C$ for 10 min showed less change, with no significant difference in microbiological safety, vitamin content, or sensory quality. The use of pressure extended the shelf-life during storage at $10^{\circ}C$.

The study investigated the quality of pound cake prepared with various concentrations of cherry powder (obtained from ground fruit of Prunus serrulata L. var. spontanea Max. wils.). Pound cake was evaluated for their sensory property and physical quality stored for 10 days at $25^{\circ}C$. The pH of the batter decreased with rising cherry powder concentration. The specific loaf volume and height decreased (from 2.95 to $2.60\;cm^3/g$) with increasing in cherry powder. The baking loss rate of the pound cake tended to increased by $11.47{\sim}12.67%$, but with no significant differences. The lightness, redness, and yellowness values were significantly decreased with increases in cherry powder except for redness of pound cake crumb. As the concentration of cherry powder increased, the mechanical characteristics of the pound cake did not differ significantly. The hardness tended to increase, while adhesiveness and springiness decreased with increases in powder. The retrogradation degree of pound cake prepared with cherry powder was higher than the control but there were no significant differences. For the antioxidative activity measured by DPPH (2,2-diphenyl-1-picrylhydrazyl) radical scavenging activity, pound cake prepared with 10% and 15% added cherry powder showed high antioxidant activities. The pound cakes containing 10 and 15% cherry powder had acceptable sensory properties, such as flavor, taste, softness, moisture, and overall acceptability. The results exhibited that adding the cherry powder into the pound cake increased antioxidant activity with the highest quality improvement obtained by incorporating 10% (w/w) of cherry powder into the pound cake formula.
In order to better understand the quality of Korean cactus, Opuntia humifusa, as the functional foodstuffs, it's seeds, stems and fruits were analyzed. In addition, we performed quality evaluation on cookies manufactured with cactus powder added. The results showed the soluble nitrogen-free component levels in the cactus to be very high. The highest component levels were crude fiber(48.75%) and crude fat(7.38%) in the seeds, crude ash(15.39%) in the stems, and moisture(11.26%) and crude protein(8.79%) in the fruits. The antioxidant activities of the cactus were evaluated based on peroxide values(POV), thiobarbituric acid reactive substances(TBARS value), and electron donating ability(EDA) using the DPPH method. The POVs for soybean oil containing a 0.05% concentrated water extract from each part of the cactus revealed a remarkable antioxidant effects on peroxidation as storage time increased. The TBA values were 63.65% in BHT, 60.67% in the stems, 57.31% in the fruits and 49.16% in the seeds. The EDAs were 30.26% in the stems, 25.89% in the fruits, and 25.65% in the seeds. The total polyphenol contents of the water soluble materials from the cactus were 3.14 g/100 g in the fruits, 2.93 g in the stems and 2.11 g in the seeds. For the cookies, as the amounts of fruit and stem powder increased, the spreadness was significantly lowered, but moisture content was increased compared to the control. The color degree of the cookies changed from dim to intense as more fruit powder was added, resulting from a decrease in the L- and b-values and a significantly increased a-value. With the addition of stem powder, the L- and a-values revealed no significant differences, while the b-value was lowered compared to the control as more stem powder added. For texture changes of the fruit cookies, there were significant differences in hardness, gumminess, cohesiveness, springiness and brittleness. The stem cookies, however, showed only differences in hardness, gumminess, and brittleness, and not in cohesiveness and springiness. Finally, an overall sensory preference was found with the 1% fruit powder and 3% stem powder additions.
We evaluated the fruit quality and the incidence of physiological disorders in Asian pear (Pyrus pyrifolia Nakai) cultivar 'Jinhwang' treated with 1-methylcyclopropene (1-MCP, $1.0{\mu}L{\cdot}L^{-1}$) under different temperature conditions to determine appropriate shelf-life period. The postharvest application of 1-MCP in 'Jinhwang' pears showed positive effects at all storage temperature (18, 25 or $30^{\circ}C$) with regard to flesh firmness, marketable fruits (>20N) only attainted with 1-MCP treated fruit after 21 days of shelf-life. A high incidences of physiological disorders and of fruit decay rates were obvious in the fruits distributed at $30^{\circ}C$ and low incidence of physiological disorders including core browning and mealiness were attained at the fruits treated with 1-MCP when we compared with untreated control. The production of ethylene and respiration rates increase coincide with elevated distribution temperature. High respiration rates were obvious in the control fruits, it reached approximately two times higher than the that of 1-MCP treated one regardless of market temperature. These results demonstrated that the application of 1-MCP, especially at high temperature market condition, represented as an effective postharvest technique for newly developed Asian pear 'Jinhwang'.
A new promising kiwifruit, 'Halla Gold' variety with yellow flesh and being harvested in October, was developed at the Agricultural Research Center for Climate Change, National Institute of Horticultural and Herbal Science, Rural Development Administration, Korea in 2007. This variety was derived from the seedling population crossed between Actinidia chinensis cv. Golden Yellow and A. chinensis cv. Songongu in 1997. It was selected out of 2,971 seedlings. Characteristic trials were carried out from 2001 to 2003. After the selection, adaptability test was also conducted at kiwifruit orchards in Jeju Island from 2003 to 2007. Shoots of 'Halla Gold' sprout slightly stronger than those of 'Jecy Gold' but weaker than 'Hort16A' and the color of leaf is green. Fruit shape is oblong and fruit skin color is yellowish-dark green without hair. The average weight of fruit is 106.3 g. Fruit has a moderate size soft core, yellow pericarp, and fragile and juicy flesh. Soluble solids content is $14.7^{\circ}$ Brix and acidity is 1.4%. The harvesting time is about 10 days earlier than 'Jecy Gold' and about 20 days ahead of 'Hort16A'. The storage life is about 90 days at $2^{\circ}C$. This variety can be recommended for cultivating at low land area bellow 100 m sea level in Jeju Island or under shelter to prevent disease and cold injury.
