This study was performed to improve the quality index of paprika by assessment of instrumental test and sensory attributes. Red paprika (11 cultivars), orange paprika (9 cultivars), and yellow paprika (10 cultivars) were provided by GyeongNam (GN) and JeonBuk Agricultural Research and Extension Services (JB). We measured hardness and color values using a colorimeter and TPA as well as developed new terminology such as cucumber taste, grass taste, green pepper flavor and appearance (size, color size, color, and glossiness), texture (hardness, juiciness), and taste (sweetness, pungency, sourness) to describe paprika quality attributes by trained panels. a* value of red 'Nagano' cultivar provided by JB was significantly low, and only b* value of orange paprika was significantly different among the samples. In the case of yellow paprika, b* values were not significantly different, and hardness was significantly different. Overall color values were different among samples provided by GN. Oranos, orange paprika, L value, b value, and hardness were different among the samples. Bitterness was negatively correlated with sweetness and positively correlated with green pepper aroma (p<0.05). Overall acceptability was positively correlated with size, juiciness, and sweetness (p<0.01) and negatively correlated with pungent (p<0.05) and bitterness (p<0.01). In conclusion, negative attributes such as bitterness and pungentness as well as positive attributes such as size, juiciness, and sweetness must be considered as important factors for consumer preference and breeding of new cultivars.
We investigated the effects of 1-methylcyclopropene (1-MCP) treatment (0, 0.5, and 1.5 ppm) for 16 hours, followed by storage at ambient temperature, on the qualities of pears (Pyrus pyrifolia c.v. "Hwasan"). Color differences, as measured using the Hunter L, a, and b values, showed the greatest decreases before storage, and 8 weeks after storage, when fruit was exposed to 1.5 ppm 1-MCP. The sensory qualities of c.v. "Hwasan" pears were good until 4 weeks of storage after treatment with 0 ppm 1-MCP, until 6 weeks when 0.5 ppm 1-MCP was employed, and until 7 weeks when 1.5 ppm 1-MCP treatment was performed. Fruit and storage quality in terms of all of hardness, sugar content, PPO activity, respiration amount, and ethylene production increased in the 8 weeks after application of 1.5 ppm 1-MCP. Consequently, it seems that 1-MCP treatment, especially at 1.5 ppm, before storage of pears at ambient temperature, effectively improves the quality of pears of c.v. "Hwasan".

"Doha" is a new strawberry (Fragaria x ananassa Duch.) variety, which was released by the Highland Agriculture Research Institute in 2021. The "Doha" variety originates from a 2014 cross between "Saebong No. 3" and "Yeolha," both of which exhibited excellent ever-bearing characteristics, including continuous flowering and large fruits under long-day and high temperature conditions. This new cultivar was initially named "Saebong No. 13" after examining its characteristics and productivity during summer cultivation between 2015 and 2018. After regional adaptability tests, "Doha" was selected from "Saebong No. 13" as an elite cultivar. The general characteristics of "Doha" include spreading, elliptic leaves, and strong growth. The fruits are long and conical and of a red color. The plant height of "Doha" was similar to that of "Goha," but the number of leaves was lower. The number of flower clusters of "Doha" was 8.6, which was 2.8 fewer than that of the control variety, "Goha," with 11.4. The average fruit weight of "Doha" was 13.9 g, which was 4.9 g heavier than that of "Goha." The fruit hardness of "Doha" was 35.5 g·mm-2, which was 9.4 g·mm-2 harder than that of "Goha." The marketable yield of "Doha" was 26,971 kg·ha-1, 125% more than that of "Goha" with 21,479 kg·ha-1. The findings of this study suggest that "Doha" is a hard fruit and high-yielding variety of ever-bearing strawberries that could increase farming income when distributing to farmers.
This studies were conducted to make vinegar from the physiologcical fallen persinmon during the ripening fruit. The main components of the persimmon mere investigated for the several focal valieties, Some microke acted on the fermentation of persimmon was isolated. The obtained results were as follows : 1) The hardness of fruit was the hithest for Jangjunsi (long persimmon) The hardness of Bansi and Soosi valieties was decreased vary fast after five or six weeks. 2) The total amount of pectin was increased a little in order of Jangjunsi, Bansi and Soosi. The amount of soluble pectin was increased considerably in order of Soosi, Bansi and Jangjunsi. 3) The amount of total sugar and reducing sugar were increased in order of Bansi, Jangjunsi and Soosi. After five or six weeks the amount of reducing sugar of Soosi and Bansi was increased much. The amount of starch was decreased in order of Bansi, Jangjunsi and Soosi, to trace amounts without significent differences. 4) The amount of Soluble tannin was decreased in order of Bansi, Jangjunsi and Soosi. 5) Main microbes on the fermentation of persimmon vinegar were identified as follows: yeast was proved to be Saccharomyces rouxii, CBS 726, and Acetobacters were Gluconobacter oxydans subsp. suboxydans, Gluconobacter oxyaans subsp, osydans, Acetobaeter pasteurians subsp. xylinum 6) During the fermentation, process of persimmon vinegar the amount of reducing sugar and alcohol were decresed, but that of acidity was increased.
This studies were carried out to investigate the physical properties and quality of sweet persimmon fruits which packaged with polyethylene for improvement of quality and storage. The fruits which packed 5 fruits a pack by 0.06mm PE film was maintained freshness during 120 days of storage, but those which packaged a fruit was maintained freshens during 150 days of storage, and quality of fruits was excellent during storage. It was more excellent quality of fruits packaged 5 fruits a pack with 0.08 and 0.10mm PE film than quality of those packaged by 0.06mm PE film. Hardness of fruits were decreased during storage, and the color of fruits was changed. But the fruits which packaged each with 0.08mm PE film was maitained freshens during 180 days of storage, and the quality of fruits was excellent during storage. The hardness and color of fruits were net changed during storage.

The objectives of this study were to investigate the quality characteristics of nutritional cereal bars with various concentrations (0, 5, 10, 15, 20%) of Citrus fruit extract. Regarding the color of nutritional cereal bars, the L value decreased according to the amount of nutritional cereal bars added, whereas a, b color values increased. The nutritional cereal bar with 5, 10, 15, and 20% Citrus fruit extract had a significantly lower hardness value than the control nutritional cereal bar. The result of a sensory test showed that the scores for color, taste, texture, and overall acceptability were the highest for the nutritional cereal bar with 15% Citrus fruit extract. The nutritional cereal bar with 20% Citrus fruit extract attained the highest flavor score. The results indicated that optimal concentration of Citrus fruit extract in nutritional cereal bars were 15%. The quality characteristics of the nutritional cereal bar were also potential materials for good healthy food.
This study was carried out to investigate the characteristics of mulberry fruit seolgidduk. Four percent additions of mulberry were evaluated as the most suitable concentration for seolgidduk, in order to improve the color of gum metal gray and sour smell. Therefore, in order to improve the preference, citric acid was added. The acidity of mulberry fruit seolgidduk increased and its pH decreased significantly by increasing the amount of citric acid. The moisture content of mulberry fruit seolgidduk showed no significant difference between the groups with added citric acid and the control group. The L value decreased as the citric acid concentration increased. Color a and b (Ed-define 'a' and 'b') values increased significantly by increasing the mont of citric acid. The hardness, cohesiveness, springiness, gumminess and brittleness decreased as the citric acid was added. From the sensory evaluation, mulberry fruit seolgidduk with 0.01% citric acid added was the most preferred in taste, chewiness and overall acceptability. These results indicated that mulberry fruit stolgidduk with 0.01% citric acid added showed the best quality.
This study was investigated the utilization of pomegranate(P) as coagulants for 새려 manufacture, the quality characteristics and shelf-life on tofu made by P1(fruit juice of pomegranate 1%) and P2(fruit juice of pomegranate 2%) and P3(fruit juice of pomegranate 3%) and P4(fruit juice of pomegranate 4%) and P5(fruit juice of pomegranate 5%) were investigated and compared to G.D.L(C). And also, total microbe and tatal acid of the tofu were determined during storage at $0^{\circ}C^$. The results are summarized as follow P3(493.3g/500ml) compared to C(485g/500ml) showed the highest yield. Turbidity of tofu was increased as the proportion of pomegranate was increased, while pH of tofu was increased as the proportion of pomegranate was decreased. $L^{\ast}^{\ast}^{\ast}$ value of C tofu was highest, $a^{\ast}^{\ast}^{\ast}$ value of tofu was increased as the proportion of pomegranate was increased and $b^{\ast}^{\ast}^{\ast}$ value of C tofu was higher than those of other tofus. The hardness of tofu coagulated with pomegranate showed higher than that of coagulated G.D.L. The cohesiveness of P4, P5 showed higher than C tofu, but those of other tofus showed lower than C tofu. The springiness of tofu showed in the order of P4>P5>P3>P2>P1, gumminess of P5 tofu was highest. The Brittleness of tofu was increased as the proportion of pomegranate increased. The pH value of tofu coagulated with pomegranate increased during storage at $0^{\circ}C^$. During the storage period of tofu, pH and total acid showed a maximum change in C tofu. Generally the total plate counts of bacteria of all tofu increased during storage at $0^{\circ}C^$, and those of tofu with added pomegranate were shown to be lower than C tofu. The results of S.E.M(scanning electron microscopes), the lower hardness showed the more soft and the smaller particle, The particle of C tofu was small and uniformity but the size of P4, P5 tofu showed coarse. In the sensory evaluation of all tofu, sleekness, nutty, chewiness and smoothness, appearance and overall quality was the highest in C tofu. In the sensory evaluation of tofus coagulated with pomegranate. overall quality was the highest in P2.
The object of this study was to evaluate the effect of the gibberellin treatment on fruit enlargement and ripening promotion in 'Niitaka' pear(Pyms pynfolia). Fruit weight was similar between $GA_{4+7}$ treatments and the gibberellin-paste control, but fairly increased of fruit weight compared to non-treatment Most effective time for $GA_{4+7}$ treatment to increase diameter and length was on 35 and 40 days after full bloom, respectively. Shape index was similar in all treatments. Fruit enlargement at the period of early growth, $GA_{4+7}$ 2.4% treatment was remarkably effective than $GA_{3}+GA_{4+7}$ 2.7% treatment or non-treatment However at the period of maturity, $GA_{4+7}$ 2.4% treatment and $GA_{3}+GA_{4+7}$ 2.7% treatment showed little differences in fruit enlargement and coloring. In maturing promotion effect, young fruit treated with $GA_{3}+GA_{4+7}$ showed similar fruit coloring to ethephon treatment on 35 days after full bloom, and both of those treatments promoted fruit coloring than non- treatment about 6 days. $GA_{3}+GA_{4+7}$ treatments resulted higher solid content and decreased acidity than non-treatment However, there was no differences in fruit hardness comparing to non-treatment As a result, gibberellin was most effective in fruit enlargement, so as all $GA_{3}+GA_{4+7}$ treatments were more effective on fruit enlargement than ethephon treatment or non-treatment Specifically, when $GA_{3}+GA_{4+7}$ was treated 35days after full bloom of flower, the diameter, the length and the shape of fruit index were best, and fruit coloring was good as well.

In this study, basic data were obtained to determine the optimal cultivation method to achieve stable fruiting and yield increase in "Cheonhwang" jujube trees. Accordingly, thefructification, fruit characteristics, and yield according to tree age were analyzed. The mean (and range of) tree height, crown area, stem diameter near the root, clear stem length, number of main branches, and distance between main branches were 235.6 (217.4-253.8) cm, 3.5 (3.1-4.1) m2, 5.5 (4.0-7.1) cm, 70.6 (66.2-72.7) cm, 9.7 (8.6-10.5), and 10.4 (7.9-14.2) cm, respectively. Correlationanalysis results indicated that tree age was positively correlated with crown area, stem diameter near the root, and clear stem length but not with the number of main branches. The mean number (and range) of fruit per fruit-bearing mother shoot and tree were 18.3 (16.7-18.3) and 170.7 (157.9-178.3), respectively. Tree age was not significantlycorrelated with fruiting characteristics (i.e., the numbers of fruit-bearing mother shoots per main branch, fruit-bearing shoots per fruit-bearing mother shoot, fruit per fruit-bearing shoot, and fruit per tree). Given that the shape of jujube trees is constantly managed according to the growing area and greenhouse type, the tree growth characteristics were more affected by tree management techniques than by tree age. The mean (and range of) fruit weight, fruit hardness, and soluble solid content were 28.6 (27.7-30.3) g, 29.4 (28.5-30.4) N, and 20.4 (19.3-21.0) °brix, respectively, and these fruit characteristics were not significantly correlated with tree age.The average yield per tree of the 'Cheonhwang' jujube cultivar was 4.9 (4.8-5.0) kg, which was not significantly correlated with tree age.
