A Dimensionless Index for Quantitative Evaluation of Apple Freshness

  • Though the freshness for agricultural products is an important factor related to their quality management, this terminology is being used restrictedly because it is very subjective. In this study, a dimensionless index which had the span of the maximum of 1 through the minimum of 0 was proposed to describe freshness of the product with time-variant quality and was applied to Tsugaru and Fuji apples. First, the compressive properties having the linearity in their change regarding time elapsed after harvest were selected. For Tsugaru apple, bio-yield and rupture forces had high correlation with time while for Fuji, bio-yield and rupture deformations had high correlations. When the slope, or ratio of force to deformation, was considered, the effect of cultivar could be neglected. When the linearly time-variant compressive properties for Tsugaru and Fuji apples were involved in the freshness indices, they described well freshness of apples. Also, the freshness decay constant depicted a characteristic which related to freshness decay rate. Therefore, the freshness index can be utilized to manage the quality during storage and distribution of apples.

세포 표면 특성을 이용한 사과 신선도 평가 (Evaluation of Apple Freshness by Characterizing Surface Texture of Cells)

  • The freshness of apple was evaluated by characterizing the surface texture of flesh cells. The freshness index which was related to the amount of wrinkles on the cell surface was defined to quantify the freshness. Four parameters relevant to the amount of the cell wrinkles were selected and measured using image analysis including wrinkle extraction procedure and Fast Fourier Transform of a wrinkle-extracted image. Out of 4 parameters, three parameters had highly significant correlations with the time elapsed after harvest. But it was concluded that two parameters out of such 3 parameters could be used for description of freshness index.

  • This paper proposes method to find the subjective satisfaction index of an air-conditioner using consumer's sensory evaluation for an air-conditioner. A satisfaction index of an air-conditioner is presented the annoyance and freshness as ${\alphs}$, ${\beta}$ exponents of 1/f slope and is changed the annoyance and freshness as exponents of 1/f slope are changed. The satisfaction index of an air-conditioner is not improved if SPL is above the proper level although the 1/f slope has optimal ${\alpha}$, ${\beta}$ values. Therefore, this paper proposes the satisfaction index of an air-conditioner considered both SPL and ${\alpha}$, ${\beta}$ exponents of 1/f slope.

Ki value 분석을 활용한 보관 중 돼지고기 안심의 신선도 품질평가 센서 구축 (Establishment of Quality Evaluation Sensor for Pork Fillets Freshness during Storage based on Ki value Analysis)

  • Food safety is a fundamental requirement for consumers. Therefore, this study was aimed to determine the freshness of pork fillets based on freshness index (Ki value) analysis during storage. This study obtained a total of 24 pork fillets. This study was divided into 4℃ and -20℃ temperatures. Again, each temperature was divided into 4 different groups based on storage durations (15d). Each group was obtained in triplicate. The level of malondialdehyde (MDA) value was significantly increased at 4℃ than the -20℃ storage with the duration of storage days. The levels of inosine-5'-phosphate (IMP) in pork fillets were significantly decreased at 4℃ and -20℃. Hypoxanthine (Hx) levels were significantly increased at 15 days than those at 0 days during storage at both temperatures (4℃ and -20℃). Subsequent freezing increased more inosine levels at -20℃ than storage at 4℃. The Ki values were increased during storage days at both temperatures, although after 15d storage, its values at 4℃ were significantly higher than those at -20℃. These results demonstrated that storage period and temperature might affect the freshness of pork fillets via lipid oxidation and nucleotide degradation. This study suggested that the Ki value will be the crucial indicator of measurement of freshness of stored pork fillets.

생선회용 어육의 냉장 및 Partial Freezing 저장중 선도의 변화 (Freshness Changes during Iced and Partial Freezing Storage of Sashimi)

  • This study was carried out to make a comparison between iced and partial freezing of bastard, yellow tail, poragy, pomfret that were generally used for Sashimi and the results that measured k-value, VB-N, TMA-N were measured and the results are as follows : 1. Regardless of the kinds of fish, freshness is better preserved in partial freezing than in iced storage. 2. In Bastard, Yellow tail When iced its freshness estimation index its K-value rose above 20% after 4 days of storage. When stored partially frozen, its K-value reached 20% after 8 days. 3. Porgy when iced, its K-value reach 20% after 6 days of storage. But when stored partially frozen, its K-value could be prolonged until 9 days with same degree. Porge was preserved for the longest time among the four fishes. 4. Pomfret When iced during 4 days and stored partially frozen during 6 days, their K-value reached about 20% Pomfret was preserved for the shortest time among the four fishes. 5. According to the kinds of fish, the results that measured VB-N, TMA-N, total bacteria have some differences, but the method of partial freezing was superior to iced storage.

  • Ever-Fresh(주성분(主成分) : kusayate) 처리(處理)가 붕장어, 보리새우, 학꽁치, 빙장중(氷藏中)의 선도유지(鮮度維持)에 미치는 효과(效果)를 실험(實驗)한 결과(結果)를 요약(要約)하면 다음과 같다. 1. K치(値)는 붕장어, 학꽁치 및 보리새우의 사후(死後) 초기(初期)의 신선도(新鮮度)를 판정(判定)하는 좋은 지표(指標)가 될 수 있다. 2. 보리새우의 사후(死後) 초기(初期)의 선도판정(鮮度判定)에는 VB-N도 좋은 지표(指標)가 될 수 있다. 3. Ever-Fresh 처리(處理)는 붕장어, 학꽁치, 보리새우의 빙장(氷藏) 초기(初期)의 선도유지(鮮度維持)에 효과(效果)가 있었다. 4. Ever-Fresh 처리(處理)는 보리새우 빙장(氷藏) 초기(初期)의 산화방지(酸化防止) 효과(效果)가 있었다.

계란의 저장에 따른 물리화학적 특성 평가 및 품질 인자 설정 (Quality Factors Affecting Egg Freshness and Palatability During Storage)

  • 본 연구에서는 저장 온도 및 기간에 따른 계란의 물리화학적 특성 변화를 관찰하고 이들과 신선도 및 전체적인 기호도 간의 상관관계 분석 및 최적 회귀모형 도출을 통한 적정 품질 지표를 규명하고자 하였다. 물리화학적 평가지표 중 중량감소율의 경우 저장온도가 증가할수록 유의적으로 증가하였으며, 비중, Haugh unit, 난황계수 및 난백계수의 경우 저장 온도가 증가할수록 유의적으로 감소하는 경향을 나타내었다. 난황의 경우 저장기간 및 온도에 따라 pH 값이 큰 차이를 나타내지 않은 반면, 난백의 경우 저장에 따라 pH가 증가하는 경향을 나타내었다. 난황점도의 경우에는 저장 기간에 따라 유의적으로 감소하였으며, 특히 저장 온도가 높아질수록 더 빠르게 감소하였다. 반면 난백점도, 색도 및 TBARS 값의 경우 저장 온도와 기간에 따라 큰 차이를 보이지 않았다. 상관분석 결과 신선도에 있어서는 중량감소율, Haugh unit, 난황계수, 난백계수, 난백 pH가 매우 밀접한 관련성을 나타내었고, 전체적인 기호도에 있어서는 중량감소율, Haugh unit, 난황계수, 난백계수가 매우 밀접한 관련성을 나타내었다. 상관분석 결과를 이용하여 회귀분석을 하였는데, 신선도와 전체적인 기호도 모두 중량감소율, 비중, 난황 pH 및 난황점도가 전체 모형의 89%를 나타내는 선형 회귀식이 도출되었다.

인천지역 유통 계란의 신선도 및 영양성분 함량 조사 (Investigation for freshness and nutritive components of the eggs sold in Incheon)

  • This study was performed to investigate the freshness and nutritive components of eggs from Incheon area. The eggs of 64 brands collected from 7 hypermarkets and 6 brands collected from farms were examined to test the Haugh unit (HU), egg yolk index and specific gravity. HU and specific gravity were higher in farm eggs than in hypermarket eggs (P<0.05), and there was no difference in the egg yolk index. Among hypermarket eggs, HU and egg yolk index were higher in the graded eggs than in non-graded eggs (P<0.05), and specific gravity was not different between them. HU and egg yolk index of the eggs collected in March were higher than those in August (P<0.05). To monitor the bacterial contamination, total coliforms, total bacterial counts (TBC) and Salmonella enteritidis were examined. Salmonella enteritidis and total coliforms were not detected from all eggs. TBC of farm eggs were less than $10^1$ CFU/mL in all samples and TBC of hypermarket eggs were less than $10^1$ CFU/mL in 187 samples, $10^1{\sim}10^2$ CFU/mL in 3 samples and $10^3{\sim}10^4$ CFU/mL in 2 samples, respectively. Antimicrobial residues were not detected from all eggs tested. The vitamin E contents in the vitamin E enriched eggs from 6 brands hypermarket were 1.98~22.96 mg/yolk100 g ($14.04{\pm}8.81$ mg/yolk100g), and those of 5 brands among them were higher than the average of ordinary eggs. In one brand egg, vitamin E content was lower than the average of ordinary eggs. The vitamin E contents of ordinary eggs were 1.75~16.36 mg/yolk100 g (average $5.57{\pm}2.76$ mg/yolk100 g) and there were no price differences between vitamin E enriched eggs and ordinary eggs. In the contents of vitamin E, docosahexaenoic acid (DHA) and cholesterol, there were no significant differences according to the price. These results suggests that egg production, distribution, and management system should be improved for supplying fresh eggs to consumers at reasonable prices.

Distributed Indexing Methods for Moving Objects based on Spark Stream

  • Generally, existing parallel main-memory spatial index structures to avoid the trade-off between query freshness and CPU cost uses light-weight locking techniques. However, still, the lock based methods have some limits such as thrashing which is a well-known problem in lock based methods. In this paper, we propose a distributed index structure for moving objects exploiting the parallelism in multiple machines. The proposed index is a lock free multi-version concurrency technique based on the D-Stream model of Spark Stream. The proposed method exploits the multiversion nature of D-Stream of Spark Streaming.

계란의 유통 중 품질예측을 위한 품질지표 선정 (Choosing quality indicators for quality prediction of egg in circulation)

  • 본 연구는 국내에서 유통되고 있는 계란의 유통 중 신선도를 예측하기 위하여 적정 품질지표를 선정하고자 수행되었다. 산란 직후 0, 10, 20 및 $30^{\circ}C$에서 저장하면서 중량감모율, 비중, 색도, 난황계수, 난백계수, Haugh unit(HU), pH 및 관능특성 변화를 조사한 후 각 품질특성과 관능적 기호도와의 상관관계를 분석하였다. 저장온도에 따른 중량감모율, 비중, 난황계수, 난백계수 및 HU와 기호도와의 상관관계는 모든 온도 조건에서 유의적인 상관관계를 나타내었다(p<0.05). 특히 중량감모율과 기호도와의 상관관계는 0, 10, 20 및 $30^{\circ}C$에서 각각 r = -0.78, r = -0.93, r = -0.95 및 r = -0.99로 난백계수와 기호도와의 상관관계는 r = 0.66, r = 0.89, r = 0.89 및 r = 0.93으로 그리고 HU와 기호도와의 상관계수는 r = 0.64, r = 0.92, r = 0.96 및 r = 0.98로 유의적으로 온도가 높을수록 높은 상관계수를 보였다(p<0.01). 반면에 색도와 pH는 각기 상이한 결과를 나타내어 품질평가 자료로 이용하기에는 추가 연구가 필요한 것으로 여겨진다. 따라서 모든 저장온도에서 관능적 기호도와 높은 상관관계를 나타낸 중량감모율, 비중, 난황계수, 난백계수 및 HU의 변화를 계란의 유통 중 신선도 예측을 위한 품질지표로 선정하여 적용하는 것이 적절한 것으로 판단되었다.
