Two experiments were conducted in central Vietnam to test the hypothesis that supplementation with a concentrate, comprising rice bran (45% fresh basis), maize (49%), fish meal (3%), urea (2%) and salt (1%), up to 2% of live weight (LW)/d (dry matter (DM) basis) would linearly increase digestible organic matter intake and LW gain of yellow cattle. In both experiments, there were five treatments, namely a basal diet of fresh grass fed at 1.25% of LW (experiment 1, elephant grass, Pennisetum purpureum; experiment 2, native grass) and rice straw (Oryza sativa) fed ad libitum or this diet supplemented with concentrate at about 0.3, 0.7, 1.3 or 2.0% LW. There were 4 male growing cattle per treatment in experiment 1 and 3 in experiment 2. Diets were fed for 44 (experiment 1) or 49 (experiment 2) days, with feed intake recorded daily, LW measured about weekly and digestibility measurements made over 7 days commencing on day 24 (experiment 1) or day 10 (experiment 2). The elephant grass and native grass had neutral detergent fibre (NDF) concentrations of 82 and 73% DM, and nitrogen concentrations of 1.3 and 1.8% DM, respectively. The rice straw used had a NDF concentration of 79-84% DM and nitrogen concentration of 0.8% DM. The concentrate had NDF and nitrogen concentrations of 33 and 2.8% DM. In both experiments, DM intake increased (p<0.001) linearly as the amount of concentrate consumed increased. Rice straw intake declined (p<0.001) (experiment 1: 1.24 to 0.48 kg DM/d; experiment 2: 0.95 to 0.50 kg DM/d) as concentrate intake increased. Grass intake was not significantly affected by concentrate intake in either experiment. The lowest amount of concentrate supplement increased forage intake, after which substitution rate increased as the amount of concentrate consumed increased. However, substitution rates at the highest amount of concentrate consumed were modest at 0.3 to 0.5 kg DM reduction in forage intake/kg DM supplement consumed. In both experiments, digestible organic matter intake increased linearly (p<0.001) (experiment 1: 1.16 to 2.38 kg/d; experiment 2: 1.30 to 2.49 kg/d) as the amount of supplement consumed increased, as did LW gain (experiment 1: 0.15 to 0.81 kg/d; experiment 2: 0.15 to 0.77 kg/d). This was associated with significant (p<0.01) linear increases in organic matter intake and apparent organic matter digestibility. Neutral detergent fibre digestibility declined as concentrate intake increased, but the effect was not significant (p = 0.051) in experiment 2. These results are discussed in relation to existing literature and potential to improve the profitability of cattle fattening in central Vietnam.
This study aims to find the taste compounds of wild loach, Misgurnis mizolepis, which is important fresh-water fish in this country. In order to elucidate the origin of the taste of wild loach meat, free amino acids, organic bases, nucleotides and their related compounds, organic acids, sugars and minerals were analyzed, and then followed by organoleptic test of synthetic extract prepared on the basis of the analytical data. Sensory evaluations of synthetic extracts prepared by omitting each extractive components were carried out by a triangle difference test, and changes in taste profile were assessed. In free amino acid composition, histidine, threonine, glycine, lysine, alanine were abundant. IMP and AMP were dominant in the wild loach in content. Total creatinine and butyric acid were abundant. As for the minerals, $Na^+,\;K^+,\;Cl^-\;and\;PO_4^{3-}$ were found to be the major ions. From the results of omission test of synthetic extracts the major components which contribute to produce the taste were arginine, glutamic acid, valine, aspartic acid, IMP, succinic acid, $Na^+,\;K^+,\;Ca^{2+}\;Mg^{2+}\;Cl^-\;and\;PO_4^{3-}$.

It was mathematically analyzed at which steps to activate TTI in the cold chain for Alaska pollack, assuming that the performance of a commercial TTI product, and Fresh-check, could not always be optimized for the pollack. Three places were selected for the TTI activation, such as on fishing ship, Busan cooperative fish market, and mart. First, the kinetic and Arrhenius temperature dependent models were experimentally built under isothermal conditions. The color index of TTI and the level of Pseudomonas spp. of pollack were measured at time intervals. Second, the resultant models were used in the mathematical calculations for dynamic temperature conditions included in the cold chain. As a result, the TTI activated at the mart place showed the best agreement between the spoilage time of the pollack and the time for the TTI color to reach its end-point. It was therefore found that it is practically important to optimally select the TTI activation place or time when using a commercial TTI product.
The echinostomatid metacercariae encysted in the gill of the fresh water fish, Pseudorasbora larva were identified through obtaining adult worms after eBperimental infection to mice. In addition, a brief course of worm development and maturation was observed in this experimental host. The results were as follows: 1. The echinostomatid metacercariae were elliptical, golden yellow, 0.073∼0.078 mm long and 0.0541∼0.065 mm wide. Their head portions were characterized by the presence of a head crown armed with collar spines of total 24 in number and interrupted at the mid-dorsal side of the oral sucker. 2. The average rate of worm recovery froth 12 mice (on the 1-2lth postinfection days) was 19.4 % and the rate revealed no decrease in accordance with the increase of infection duration. The worms were collected chiefly from the lower part of the small intestine. 3. After the infection, their sexual maturation was attained in 5 days and their growth in size nearly completed in 7 days. The early growth curve of genital organs was S shape while that of nongenital organs was C form. In 5 day old worms, 1 or 2 eggs were found from their uteri and the stools of mice revealed echinostomatid eggs from the 5-6th postinfection day. 4. The 7 day old adult worms were ovoid in shape, 0.54-0.69 mm long and 0.29-0.34 mm wide, and characterized by a well developed head crown with 24 collar spines and vitelline follicles distributed from the acetabular level down to the posterior end of body. Based on these characters they were identified to be Echinochasmus japonicus Tanabe, 1926. From these results, it is verified that p. larva is one of the second intermediate hosts of 5. jatonicus in Korea.
Mitochondrial DNAs of two Mdh allelotypes of the dark chub, Z. temmincki inhabiting in Korean fresh water, were analysed. Samples of each type were collected from four populations, and the fragment patterns for mtdNA of each type were explained from 7 of the eleven restriction enzymes with hexanucleotide recognition site. Genome size was approximately 16.7 kilobases. The highly typical mtdNA fragments of each type were discovered in digestion profiles produced by Eco RI and Pst I enzyrnes. The comparisons of restriction fragment patterns and relative digestion maps permitted the estimation of fragment homology (F) and nucleotide sequence divergence(p). Between the two identical types, sequence divergence(p) was 0.128(MS), and 0.045(MM), ; between the two different types, 0.195 (range 0.177-0.226). These result may provide a distinct difference more than the value derived from allozyrne analysis, and a powerful new molecular approach for assessing genetic-evolutionary relationship among fishes.
This study was intended to outline the characteristics of the food culture in the area of Kyungsangnamdo and its modernization by interpretation and analysis of the novel Toji, which was set in Hadong, Jinjoo in the area of Kyungsangnamdo in the early 20th century. The characteristics of the Kyungsangnamdo area's native dish during the Japanese ruling era in the latter half of the Choson dynasty are as follows. In the first part of the novel, which spans from 1897 to 1908, vegetable and grain food development can be seen in the area of Hadong, the interior plains of Kyungsangnamdo, where there is a typical farming village in the mountains. The second part of the novel, which spans from 1911 through 1917, includes some mentions of the properties of Kyungsangnamdo area's native dishes through the lens of emigrated Koreans living on Gando island. Gando island is in China, and is where Seohee, the heroine, escapes from her homeland and remains for a period of years. There is a unique type of seafood in the Gando area using fresh marine products, exactly the same as in the Kyungsangnamdo area. The third part of the novel spans 1919 through 1929, after Seohee returns to her own country and regains her house. There is a noticeable description of food culture in the area of Jinjoo in Kyungsangnamdo through the description of Seohee focusing on the education of her children. The well-described features of Jinjoo are boiled rice with soup of beef leg bones and Jinjoo bibimbob, with vegetables and a variety of foods using cod. Cod are caught in large quantities in Kyunjgsangnamdo, and cities in the area grow to medium size as the area became traffic-based. The fourth part of the novel spans from 1929 through 1938, and includes very detailed descriptions of characters and background locations. Salted fish combined with the wild ingredients of Mt. Jiri feature prominently in the Kyungsangnamdo's area descriptions. The fifth part spans from 1940 through 1945, and as the Japanese colonization era ends, the foods described in Kyungsangnamdo seem to develop the usage of soybean paste. With abundant fish and shellfish Kyungsangnamdo, the dishes that evolve to use soybean paste include mussel soybean paste soup, picked bean leaves in soybean paste, chaitgook - cold soup from soybean paste, and seolchigook used with seaweed and sea laver.

Background: The effect of choline chloride supplementation through forced drinking combined with concentrate diets containing Ca-fish oil on milk production and milk composition of Etawah Grade goats was evaluated. Choline chloride is an essential component in ruminant diets as it is required for fat metabolism. Method: The experiment was conducted in a completely randomized block design with three types of treatments and eight replications. The trial had two successive experimental periods; the first, during the eight weeks of late pregnancy, and the second, during the first 12 weeks of lactation. Twenty-four Etawah Grade does in the second gestation period were divided into three treatment groups. Commercial choline chloride 60 % in corncobs-based powder was used as a source of choline chloride. The treatments were no supplementation (control) and supplemented with either 4 g or 8 g/2days of choline chloride. Choline chloride was given to the animals through a forced drinking technique, after dissolving it in 60 ml drinking water. The initial body weight of does was $38.81{\pm}3.66kg$. The does were penned individually, and were given fresh chopped King Grass ad libitum and 700 g/day of concentrate diets containing Ca-fish oil, starting eight weeks prior to expecting kidding and continuing for 12 weeks of parturition. Results: All nutrient intakes were not significantly different (p > 0.05) among the treatments during the late pregnancy and the lactation periods. Supplementation did not affect (p > 0.05) the average daily gains and feed conversion ratio during pregnancy but gave effects (p < 0.05) on the average daily gains, feed conversion ratio and income over feed cost during lactation. The highest average daily milk yields and 4 % fat corrected milk yields were found in goats supplemented with 4 g/2days of choline chloride and increased by 17.00 % and 24.67 %, respectively, compared to the control. Moreover, milk composition percentage and milk constituent yields improved significantly (p < 0.05) in those supplemented with 4 g/2days of choline chloride. Conclusion: The supplementation of 4 g/2days of choline chloride through forced drinking increased milk yields, the 4 % fat corrected milk yields, milk composition, milk constituent yields, and improved feed conversion ratio and income over feed cost of Etawah Grade goats.
A specimen of porous-head eelpout Bothrocara hollandi (Zoarcidae: Perciformes) caught from the East Sea was found to harbour a myxosporean parasite. Numerous whitish pseudocysts were scattered throughout the body musculature of this individual specimen. Fresh myxosporean spores were found from the squashed pseudocysts under light microscopy. They were subspherical in frontal view with a length of $11.9(11.0{\sim}13.5){\mu}m$, width of $11.6(10.7{\sim}13.6){\mu}m$, and thickness of $7.8(6.9{\sim}8.8){\mu}m$. Two polar capsules were almost equally pyriform with a length of $4.4(3.2{\sim}5.3){\mu}m$ and width of $3.3(2.4{\sim}4.2){\mu}m$. Morphometric and host ecology analysis revealed that this myxosporean parasite could be identified as Myxobolus aeglefini Auerbach 1906. Phylogenetic analysis based on 18S rDNA sequences also revealed that M. aeglefini was clustered with M. albi and M. groenlandicus in the same branch, sharing 97.7% and 96.9% sequence similarities with M. albi and M. groenlandicus, respectively.
Salted and dried yellow corvenia(Pseudosciaena manchurica), so called 'Gul-bi', is one of nation-widely consuming fish foo::ls. It is suitable for a long term preservation and its pro-duce is also a great deal on sea food processing in this country. The texture of 'Gul-bi', however, have often appeared to be a delicate factor for the quality of the product. The loss or dislocation of fat in the tissue of the fish resulted by salting and drying is believed to profoundly relate to the texture of product. In this paper, the tissue of yellow corvenia and movement of fat were microscopically observed before salting, immediately after salting, and after drying and the results observed in the tissues dry salted, brine salted, and brine salted with the addition of BHA were compared. The cross section of yellow corvenia muscle showed that a distinctive border by connective tissue between white and red muscle could not be seen in general, and red muscle was surrounded by hypodermic fatty tissues. In the tissue of fresh yellow corvenia, the fat was mainly distributed in hypodermic fat layer which located under the corium while rarely distributed in white muscle. It was found that some parts of the fat in the tissue were permeated into intermuscular tissue passing through the connective tissues during salting. The result Was the same in both dry-salting and brine-salting tissue. However, the fat translocated into intermuscular tissues disappeared during drying process in the salted without BHA tissues whereas in BHA added tissue. This result suggested that BHA may take a role of multiple effect in translocation of fat in tissues as well as in retarding oxidation. In an advanced stage of salted and dehydration, the muscle fibers were ajoined together and then limits between muscle fibers already became indistinguishable. And the migrated fat into intermuscular tissue aggregated around the connective tissue and are apt to gradually to flow out from the muscular system through these tissues.
This study surveyed the Kimchi preference for French, potential Kimchi improvement for French market adaptation and Kimchi application for French cuisine, with the aim of spreading the recognition of Kimchi throughout the world, especially in France, by giving information and developing local types which could be expected to be suitable for utilization of French food life. The Kimchi experience of 100 persons in France was surveyed for the study. Most (72.0%) had no experience. For the preference of red Kimchi in palatable ripening period depending on sexes, women had a higher Score (M=4.04${\pm}$0.88) than men (M=3.91${\pm}$0.91) did. In the case of white Kimchi, women had a higher score (M=4.09${\pm}$0.90) than men (M=3.98${\pm}$1.01) did, also. The attraction reason of Kimchi for males was the chewing feel, healthy food and spicy taste, and for females was the chewing feel, spicy taste and healthy food orderly. However, the other side of the Kimchi improvement point was decreased fermented order, spicy taste and salinity, but improved orderly appearance. Thus, the Kimchi development point for French was keeping the crisp chewing feel, fermenting better at the fresh than ripening, reducing the fermented order and controlling the spice taste. Types of fermented food similar to Kimchi were involved in more than 80% of French cuisine, with the most common in the survey being pickled cabbage, followed by cabbage salary and fermented salted food orderly. The Kimchi utility as a raw ingredient or a seasoning for French cuisine was firstly as an accompaniment with meat cuisine, followed by appetizer, eating with cooked rice, eating with fish cuisine, orderly for males, whereas for females it was eating with cooked rice, followed by appetizer, eating with fish cuisine and eating with fried potato and orderly. Thus, the French had a similar view to Koreans regarding the accompaniment of Kimchi meat. The developed fusion Kimchi foods were 'Poitrine de porc caramelisee au miel et Kimchi', 'Blanc de barbue aux crevettes roses et Kimchii', 'Kimchi SpringRoll' and 'Potage saint-Germain aux Kimchi'. The French preference for Kimchi utility was generally a high score for the eating the cuisine in which Kimchi was added to meat cuisine.

1. (시행일) 이 약관은 2016년 9월 5일부터 적용되며, 종전 약관은 본 약관으로 대체되며, 개정된 약관의 적용일 이전 가입자도 개정된 약관의 적용을 받습니다.
