Effect of acid whey and freeze-dried cranberries on lipid oxidation and fatty acid composition of nitrite-/nitrate-free fermented sausage made from deer meat

  • Objective: This study evaluated the effect of acid whey and freeze-dried cranberries on the physicochemical characteristics, lipid oxidation and fatty acid composition of nitrite-free fermented sausage made from deer meat and pork fat. Antioxidant interactions between acid whey and cranberry compounds were also explored. Methods: Four formulations of fermented venison sausage were prepared: F1 (control), F2 (with 5% liquid acid whey), F3 (with 0.06% of freeze-dried cranberries), and F4 (with 5% liquid acid whey and 0.06% of freeze-dried cranberries). Each sample was analyzed for pH, water activity ($a_w$), heme iron content, 2-thiobarbituric acid reactive substances (TBARS) value and conjugated dienes at the end of the manufacturing process and at 30 and 90 days of refrigerated storage. Fatty acid composition was measured once at the end of the manufacturing process. Results: At the end of ripening, all samples presented statistically different values for a pH range of 4.47 to pH 4.59. The sum of the unsaturated fatty acids was higher, while the conjugated diene and the TBARS values were lower in sausages with freeze-dried cranberries as compared to the control sausage. The highest content of heme iron (21.52 mg/kg) at day 90 was found in the sausage formulation with the addition of freeze-dried cranberries, which suggests that the addition of cranberries stabilized the porphyrin ring of the heme molecule during storage and thereby reduced the release of iron. The use of liquid acid whey in combination with cranberries appears to not be justified in view of the oxidative stability of the obtained products.   • Ramie (Boehmeria nivea) is a perennial herbaceous plant belonging to the family Urticaceae. It was used in folk remedies for diuretic or anti-pyretic purposes and as an hepatoprotective, anti-oxidant, and anti-inflammation agent. In this study, we investigated the composition of free sugars, amino acids, fatty acids, organic acids, and total polyphenol contents in parts of ramie (root, stem, and leaf) and different harvest areas (10 areas). Overall, free sugars were found as sucrose, glucose, fructose, and galactose at concentrations ranging from 24.5 to 1173.8 mg/g. Amino acids lysine, threonine, tyrosine, phenylalanine, and histidine were detected at concentrations of 33.8 to 3735.3 mg/g. Major fatty acids were linoleic acid, palmitic acid, and linolenic acid at concentrations of 7.3 to 364.4 mg/g. In organic acids, the concentration of malic acid was highest of all with 672.2 mg/g. The content of free sugars, amino acids, fatty acids, organic acids, and total polyphenol was higher in leaves than in roots and stems. In contrast, the total polyphenol content was higher in roots with 33.7 - 219.4 mg/g than in leaves or in stems. As seen in collecting region, the contents of free sugars, amino acids, fatty acids, organic acids, and total polyphenol of Bn-33, 39, 55, 65, and 90 were higher than other samples. Chemical compositions of different parts of ramie are important factors to consider in manufacturing functional foods. The results of this study provide fundamental information on the chemical compositions of ramie parts and would help develop new functional foods from ramie leaves or the whole plant.

The Effect of Electroacupuncture on Abdominal Fat Deposit and Parameters for Obesity (장침 전기자극 시술이 복부지방과 비만지표에 미치는 효과)

  • Objectives : This study was performed to evaluate the effect of the electroacupuncture therapy on abdominal fat deposit without diet, exercise and herbal medication. It was also designed to check the changes of free fatty acid in blood and catecholamine in urine to observe the mechanism of the electroacupuncture efficacy. Methods : 10 volunteers over 85 cm(male, 90 cm) in waist circumferences were recruited, and 10 electroacupuncture treatments were applied on their abdominal subcutaneous fat area for 4-5 weeks. We measured anthropometric factors, abdominal fat area with CT scanning, and the changes of free fatty acid in blood and catecholamine in urine before treatment and after the last treatment. Results : In this study, significant changes were shown in weight, waist circumference, waist/hip ratio, body mass index and body fat percent after the electroacupuncture therapy. There were also significant decreases of visceral fat area, visceral/subcutaneous fat area ratio in CT scanning. The blood level of free fatty acid and the urine level of catecholamine were increased after treatments, but the changes were not statistically significant. Conclusions : This study showed the efficacy of the electroacupuncture therapy on the abdominal fat deposit. But significant changes couldn't be found out in free fatty acid and catecholamine. Further studies that compensate for the limitations of this study are required to confirm the mechanism of the electroacupuncture efficacy.

  • The Merit variety of soybean (Glycine max L.), harvested in 1971 was germinated in the dark at $21{\sim}25^{\circ}C$ for 10 days. The soybean sprout were divided into cotyledons and seedling axis and subjected to the determination of lipoxygenase activity and fatty acid composition of triglycerides, free fatty acids, phosholipids and crude fat fractions at two-day intervals during the germination periods. The results are summarized as follows 1) The lipoxygenase activity in cotyledons declined sharply after second day, but the activity in seedling axis inclined slightly after second day. However, the decrease of lipoxygenase activity in cotyledons coincided with decrease of linoleic and linolenic acids in cotyledons and increase of lipoxygenase activity in seedling axis coincided with increase of those acids in seedling axis. 2) The iodine value of neutral fat in cotyledons decreased continuously, but the iodine value of the neutral fat in seedling axis remained almost constant. iodine value in cotyeldons was greater than in seedling axis. 3) In the fatty acid composition of triglycerides in cotyledons, palmitic acid did not changes significantly, stearic acid increased continuously, oleic acid changed irregularly, linoleic and linolenic acids continuously decreased significantly. But in the fatty acid composition of triglycerides in seedling axis, palmitic acid remained unchanged, linoleic and linolenic acids slightly increased continuously, stearic and oleic acids changed irregularly. 4) Composition of free fatty acids in cotyledons and seedling axis changed irregularly, suggesting that all fatty acids produced by hydrolysis of triglycerides by lipase are used(or either biosynthetic Purpose or energy Production at random. 5) Fatty acids with odd-numbered carbon chain were not detected in the triglycerides and free fatty acid fractions during the germination periods, suggesting that all fatty acids are utilized as $C_2$-unit in degradation and biosynthesis. 6) The changes of fatty acids composition of Phospholipid in cotyledons and seedling axis during the germination were similar to these of triglyceride fraction.

Effect of Gamma-Irradiation on Trans Fatty Acid, Free Amino Acid and Sensory Evaluation of Dry-fermented Sausage (감마선 조사가 건조-발효소시지의 Trans 지방산, 유리아미노산 및 관능검사 특성에 미치는 영향)

  • In this study, the effects of gamma-irradiation (1, 2 and 4 kGy) on texture profiles, fatty acid composition, free amino acids and sensory evaluation of dry-fermented sausage were evaluated. The hardness and adhesiveness of irradiated samples were significantly lower (p<0.01) than that of the control, while the gumminess of samples irradiated with 2 and 4 kGy was higher than the other tested samples (p<0.01). The sample irradiated at 4 kGy had a higher saturated fatty acid (SFA) content (C14:0, C16:0, C18:0) and significantly lower (p<0.05) unsaturated fatty acid content (UFA) (C16:1, C18:1, C18:3), trans, n-3 and n-6 fatty acid than the non-irradiated sample. Gamma-irradiation resulted in an increase (p<0.05) in phosposerine, aspartic acid and glutamic acid and a decrease (p<0.05) in glutamic acid in free amino acids. For the samples irradiated at 4 kGy, the sulfur odor and fat pungent flavor were significantly higher (p<0.05) and the moldy odor and moldy flavor were significantly lower than the control sample. In conclusion, gamma-irradiation had a significant effect on the texture profiles, fatty acid composition and sensory evaluation of dry-fermented sausage.

A Sensitive Determination of Plasma Free Fatty Acids Following Tert-butyldimethylsilyl Derivatization using Gas Chromatography-Mass Spectrometry for Screening of Fatty Acid Oxidation Disorders (지방산대사이상질환 스크리닝을 위한 TBDMS 유도체화 후 GC-MS를 이용한 혈장 중 유리지방산의 분석)

  • Purpose: A sensitive gas chromatography mass spectrometry (GC-MS) method was developed for screening of fatty acid oxidation disorders. Methods: The assay utilized a simple protein precipitation with sulfosalicylic acid followed by tert-butyl dimethylsilyl (TBDMS) derivatization of hydroxyl functional group by N-tert-butyldimethylsilyl-N-methyltrifluoroacetamide (MTBSTFA). Results: Calibration curves of spiked pooled plasma showed a linear relationship in the range of 0.01 ng -2 mg with correlation coefficient value greater than 0.98. Limits of detection (LOD) and limits of quantification (LOQ) were found in the range of 0.9-8.8 ng and 9-88 ng, respectively. Conclusion: The new developed method might be useful for a rapid, sensitive screening of inherited fatty acid oxidation disorders. In addition, the method expected to be one of the alternative method for screening newborns of metabolic disorders in the laboratories where expensive MS/MS is unavailable.

Fatty Acid Compositions of the Various Parts of Ginseng Plant (인삼(人蔘)의 부위별(部位別) 지방산(脂肪酸) 조성(組成))

  • An attempt was made to investigate the lipid contents and fatty acid compositions of the roots (rhizome, epidermis, pith, cortex, branch root, fine root) and aerial parts (seed, flesh of seed, leaf, stem) of ginseng plant. Total contents of free and bound lipids in nine parts ranged 0.91 to 3.48%, those of the seeds were 15.08%. Fourteen even-numbered and 4 odd-numbered fatty acids were identified and quantified by GLC. The major fatty acids in each part were linoleic, palmitic, oleic, and linolenic acid. Fatty acid composition of different parts was varied significantly. Fatty acid composition of ginseng seeds was notably different from those of other parts in plant; the amount of oleic and linoleic acids (51.21 and 37.46%) were higher than those of the other parts. The unsaturated fatty acid content of the free lipid in seed, pith, and cortex were higher than those of the other parts in plant.

  • Physico-chemical properties including the composition of organic acids and fatty acids in native bee-honey and foreign bee-honey harvested in Kangwon area were studied with the emphasis on the honey which was collected form wild flowers nd mixed flowers sources for honey nectars. the major organic acids were considered as acetic acid formic acid and valeric acid in volatile acids and gluconic acid maleic acid malic acid quinic acid and citric acid in non-volatile fraction in both of native bee-honey and foreigr bee-honey. Some naturally occuring fatty acids({{{{ { C}_14{ } }}}}-{{{{ {C }_{20 } }}}}) were observed with the principal fatty acids of myristic aicd linolenic acid and palmitic acid and palmitic acid in the various honey, The characteristics of moisture content pH viscosity free acidity lactone and total acidity were also analyzed and discussed.

  • Non-edible oil sources (i.e., Palm Acid Oil, waste animal fat) usually contain relatively high amount of free fatty acids (FFA) that make them inadequate for direct base catalyzed transesterification reaction. Enzymatic biodiesel synthesis can solve several problems posed by the alkaline-catalyzed transesterification, and has certain advantages over the chemical catalysis of transesterification, as it is less energy intensive, allows easy recovery of glycerol and the transesterification of glycerides with high free fatty acid contents. In this study, we synthesized biodiesel through enzymatic catalyzed process using high free fatty acid containing waste oil in biodiesel reactor (1 ton/day) and optimized the biodiesel production processes.

Stability of Polyunsaturated Fatty Acids in Storage of Sardine Oil Extracted with BHA added Solvent (BHA 첨가추출 정어리유 저장중의 고도불포화지방산의 안정성)

  • The storage stability of sardine oil and the effect of BHA on the oxidation of fatty acids especially, highly unsatureted fatty acids like EPA and DHA were investigated. The sardine oil was extracted from round sardine, with chloroform-methanol(2:1 v/v) solvent with/without addition of BHA, and then stored at $30^{\circ}C$. The deterioration of oil was examined periodically by measuring acid value(AV), peroxide value(POV), carbonyl value(COV), and oxygen absorption. The changes in fatty acid composition during the storage was determined by GLC analysis to elucidate the oxidative stability of individual fatty acid. Formation of free fatty acid increased rapidly according to the storage time elapsed in the BHA free oil while it was obviously inhibited in the BHA added oil. Peroxides and carbonyl compounds were formed very rapidly at the beginning of storage of BHA free oil. But in the oil extracted with BHA, formation of peroxides was somewhat inhibited and formation of carbonyl compounds was very strongly inhibited. Principal fatty acids of sardine oil were $C_{16:0},\;C_{16:1},\;C_{18:1},\;C_{20:5}\;and\;C_{22:6}$ acids, and $\omega_33$ polyunsaturated fatty acid $(\omega_3\;PUFA)$ content was very high as much as $23\%$ of the total fatty acid content. The oxidative degradation of fatty acids was enhanced at PUFA especially $C_{20:5}$ ana $C_{22:6}$ acid in BHA free oil. However, the oxidation was fairly retarded in the oil extracted with BHA and the both $C_{20:5}$ and $C_{22:6}$ acids remained at the end of a month storage.
