The aim of the study is to explore and test the relationship between the factors influencing consumers' dietary decisions in Ho Chi Minh City, Vietnam. The questionnaire applied a five-point Likert scale to investigate factors that affect Ho Chi Minh City's citizens when they have a vegetarian diet. 497 respondents (68% female; 61.2% aged 18-22; 82.7% had regular vegetarian diets) living in Ho Chi Minh City took part in both online and offline surveys. The results were processed by SPSS 22.0 software. The reliability was checked by Cronbach Alpha and Exploratory factor analysis (EFA) to identify the underlying relationships between measured variables. The Correlation analysis was implemented to show how strong and degree of two variables are related to each other before the multivariate regression equation was analyzed. The result showed the Five factors that were motivating people in Ho Chi Minh City to decide on plant-based diets, such as Animal Welfare, Health, Religion, Mood, and Reference groups. The mood is the most influential variable that significantly influences people's food choices. Attitudes toward vegetarian diets are changing. • Various non-face-to-face services are being activated due to the influence of the Corona 19 virus around the world. However, unlike the rapid development of delivery services, social awareness of delivery services is causing many problems. Therefore, in this study, we analyze the quality attributes of delivery services from the consumer's point of view, and based on the results, we try to derive a direction for service improvement. In this study, quality factors were established through interviews and surveys with actual consumers, and quality attributes were classified through the Kano model and Timko's customer satisfaction coefficient. "Attractive" is ('Ease of ordering, Accurate delivery to the designated place'), "One Dimensional" is ('Variety of payment methods, Accurate delivery on time, Accurate delivery of ordered food, Degree of non-deformation of packaging conditions, etc., Convenience of use time'), "Must be" is ('Kindness of the delivery person'), "Reverse" is ('provision of services, service response to order discrepancies'). This study has academic significance in that it compensated for the disadvantage of not being able to interpret the mathematical meaning of the Kano model with Teamco's customer satisfaction coefficient. It also has practical implications in that it provides an indirect clue to future improvement directions.

  • Objectives: This study was conducted to develop and validate Eating Behaviors Test form (EBT) for infants and young children, including eating behaviors of their parents and parental feeding practices. Methods: Draft version of EBT form was developed after a pretest on 83 mothers. It was consisted of 42 questions including 3 components; eating behavior of children, eating behavior of parents, and parental feeding practices. Using these questionnaires, the first survey was conducted on 320 infants and children, 1 to 6 year old, for exploratory factor analysis, and the second survey was collected on 731 infants and children for confirmatory factor analysis. Results: Exploratory factor analysis on 42 questions of EBT form resulted in 3 factor model for children's eating behavior, 3 factor model for parents' eating behavior, and 1 factor model for parental feeding practices. Three factors for children's eating behavior could be explained as follows; factor 1, pickiness (reliability ${\alpha}=0.89$; explanation of variance=27.79), factor 2, over activity (${\alpha}=0.80$, explanation of variance=16.51), and factor 3, irregularity (${\alpha}=0.59$, explanation of variance=10.01). Three factors for mother's eating behavior could be explained as follows; factor 1,irregularities (${\alpha}=0.73$, explanation of variance=21.73), factor 2, pickiness (${\alpha}=0.65$, explanation of variance= 20.16), and factor 3, permissiveness (${\alpha}=0.60$, explanation of variance=19.13). Confirmatory factor analysis confirmed an acceptance fit for these models. Internal consistencies for these factors were above 0.6. Conclusions: Our results indicated that EBT form is a valid tool to measure comprehensive eating and feeding behaviors for infants and young children.

  • This study analyzes the entrepreneurship education phenomena for agri-food entrepreneurs whose main business is the production of agricultural products and the sale of processed products, using the qualitative study Strauss & Corbin(1998)'s evidence theory approach. From the entrepreneur's point of view, I would like to summarize the phenomena that appear in education, and to prepare a theoretical basis for explaining the phenomena. The importance of entrepreneurship education is emphasized to cultivate the ability to develop and provide products tailored to customers. The necessity of education leads to an increase in demand according to the situational awareness of the founders, and the quantitative increase in entrepreneurship education in the agri-food sector is a clear trend. Inevitably, the need for various discussions on systematic and effective entrepreneurship education is raised. For the study, an interview was conducted with preliminary or entrepreneur who have experienced entrepreneurship education in the agri-food sector. As a research method, I use Strauss & Corbin(1998)'s approach and analyze qualitative data using QSR's NVIVO 12 program. Through this study, it was found that contextual and systematic entrepreneurship education in the agri-food sector has the effect of strengthening competitiveness and strengthening sales. There is a need for follow-up management of trainees. Strengthening the competitiveness of start-ups is based on training professional manpower through education and linking regions with cities. Strengthening sales is based on product planning and market development. This study explores entrepreneurship education in the agri-food sector, which has not been actively conducted in the past. Exploratory analysis on the experiences of the founders of agri-food sector as education demanders has an important meaning for understanding the phenomenon of start-up education.
