Symbolism of Food Expressed in Oral Folk Tale (구전설화에 나타난 음식의 상징성)

  • Oral folk tale, which are organized stories that have been handed down to each district, includes a lot of mention about local specialties related to food. In folk tales consisting of linguistic signs, food plays a role in expressing not only instinct and desire but also order, exclusion and communication of human beings. Understanding the matters of concern or consciousness that community members of the time have put an emphasis on through food included in folk tales can be useful for better understanding the culture of the time and the food in folk tales can be a symbolic code. In this study, food mentioned in folk tales were classified into six groups, medicine, love, god, livelihood, provision and power focused on both inland and coastal regions that are referred to in most of the sixteen volumes of Korean Oral Folk Tales. In addition, the symbolic meanings of these groups were examined. This study can contribute to establishing the foundation of the globalization of the Korean food by determining the way Korea food can become a world class food. This study aims to reinterpret and combine culture and art with the food of Korea based on six symbolic meanings of food expressed in Korean Oral Folk Tales.

Effects of Emotional Reaction Based on Consumption Experiences of Luxury Korean Restaurants on Repurchase Intention (고급 한정식 레스토랑의 소비경험에 의한 감정반응이 재 구매의도에 미치는 영향)

  • This study is intended to analyze how emotional reaction based on consumption experience of dining at Korean traditional restaurants affects comsumer's repurchase intention. These restaurants are chosen from lists of high quality Korean traditional restaurants designated by the Restaurant Association in Busan. And then a model for the study is designed based on preceding studies and hypotheses are extracted. A statistical package program, SPSS WIN Version 18.0 is used for frequency analysis, reliability analysis and factorial analysis and regression analysis to verify the hypotheses. As the result of verifying how experience of dining at a Korean traditional restaurant affected arousal among emotional reactions, the symbolism factor and the variety factor were all proved to be meaningful, whereas the amusement factor was proved to be meaningless. As the result of verifying how experience of dining at the restaurant affected dominance among emotional reactions, the symbolism, amusement, and variety factors were all proved to be meaningful. As the result of verifying how emotional reactions affected consumer's repurchasing, the arousal and dominance factors were all proved to be meaningful. Moreover, as the result of verifying how experience of dining at the restaurant affected consumer's repurchasing, the variety and amusement factors were all proved to be meaningful, whereas the symbolism factor was proved to be meaningless.

Was Dried Pollack a Talisman against Evil or for Good Luck?: An Examination of the Socio-economic Origins of the Magical Symbolism of Dried Pollack (북어는 액막이 부적인가, 행운의 부적인가? -북어의 주술적 상징성의 사회경제적 기원에 관한 고찰-)

  • The purpose of this article is to elucidate the origins of the symbolic significance of traditional Korean talismanic ornaments such as dried pollack, bokjori (luck-bringing strainer), silk threads, and sokotture (a nose-block). Previous studies have primarily interpreted the magical meanings of these ornaments based on their shapes or functions, but such approaches are limited due to this likely being an ex-post-facto interpretation. This study argues that the symbolic meanings of these ornaments originated from the socio-economic characteristics of the time. These items were food resources or products closely related to the economic activities of the people of the time, and therefore, could be considered symbols of abundance and fortune. In particular, dried pollack served as an important food resource and commodity during the Late Joseon Dynasty, even functioning as a quasi-currency, and considering that fish are seen as symbols of abundance and fertility in various cultures around the world, its symbolic significance becomes clearer. Bokjori and sokotture acquired the meaning of abundance by being associated with major goods or properties of the time such as rice and cattle, and silk thread was linked to sericulture, a significant source of income for farmers of the time. These economic characteristics form the basis of the symbolism of these ornaments, and the function of these talismans can be seen as a secondary symbolism added in the process of social justification of these customs. This study reveals that economic motives underlie magical-religious customs and suggests that a broad consideration of the cultural and ecological environment of the time is necessary to understand the origins and transformations of cultural phenomena.

Development on Native Local Food Contents in Damyang through Ancient Writing Storytelling (담양관련 음식고문헌을 통한 장수음식 콘텐츠 개발)

  • The purpose of this study was the development of traditional food recipes from local food contents related to the historical and cultural heritage in the representative long-lived area Damyang. The information on digging 'story' was collected through the region's representative local native journal, searching for related websites, analyzing old literatures, and interviewing traditional household; 'telling', the part of conveyance, was organized by reviewing the literatures, including historical condition, regional food materials, cuisine, region symbolism, etc. After nutritional analysis, the prepared, balanced, and healthy Korean food dishes using the traditional food contents were displayed. In Damyang, the story was extracted from Heuichoon Ryu (柳希春, 1543-1577) - figura of Damyang - and his collection, 'Miam's diary', and described about native food. The traditional history of many foods that were used mainly as rewarding during one's trouble, showing good faith, and delivering gratitude is recorded in Miam diary. A little effort has been made to express the classical scholar's clean and neat dining table which was the mixed Damyang's clean image and nobleman's straight integrity in the middle of the Choson Dynasty. Nutrition fact of 'Miam's table' was based on the Daily Reference Values of Koreans aged 65 or older.

  • 일반적으로 애니메이션 안에 표현된 음식은 문화의 정서를 상징적으로 나타낸다. 음식에 대한 상징적 해석에 대해서는 문화기호학적 측면에서도 다양한 연구가 이루어지고 있는데, 본 연구에서는 미국과 일본의 극장판 애니메이션 속에 등장하는 음식장면을 중심으로 하여 미국과 일본 애니메이션에 표현된 문화의 상징적 속성을 밝히고자 한다.

Development of Blueberry Cakes with Addition of Mealworm Powder (Tenebrio molitor Lavare) Using sensory evaluation

  • In the search for another appealing source of future food to cover the increasing need for nutrients of a growing global population, this study reviewed the potential of insects as human food. This study assessed some common edible insects, but concentrated on mealworms. Insects, especially mealworms, have a similar or higher nutritional value than many conventional food sources. The present study aimed to promote health through the development of blueberry cake by Mealworm Powder (Tenebrio molitor Lavare). The results of Sensory evaluation comparison of Blueberry cake to different levels of mealworm powder. The sensory evaluation showed that sample 3 had the highest color, taste, texture, and overall texture except flavour. Therefore, mealworm blueberry cake made with 60g of mealworm powder showed the best results. The results of analyzing the general components of the Mealworm blueberry cake showed more than two times higher Crude protein and less than half Crude fat compared to control blueberry cake. It is believed that the addition of mealworm powder means that the protein in the cake, a high carbohydrate food, has been strengthened. This is the development of bakery products with both nutritional excellence and symbolism, and it is believed that wheat worm powder is a good food material as a favorite food, not a hateful food, which will improve consumer awareness of edible insects.

  • In general, food depicted in animated films symbolically conveys cultural emotions. And yet, as diverse studies have shown, even from the perspective of cultural semiotics, there are different ways to interpret food symbolism. This study focuses on food depicted in American and Japanese animation, through a comparative analysis of scenes from "The Simpsons" (1989-present), the longest-running American animated program, and "Atashin'chi" (2002-2009), a much-beloved animated sitcom that follows the daily experiences of a Japanese family. It is hoped that the research presented here may be applied as a criterion in the production stage for understanding the cognitive function of cultural underpinnings and symbolic expression in animated works.

Development of Local Food Content in Jinan-Gun and Gurye-Gun through Storytelling (스토리텔링을 활용한 호남지역 장수밥상 콘텐츠 개발 - 전북 진안·전남 구례군 중심으로 -)

  • The purpose of this study was to develop cultural food contents from local dishes related to the historical and cultural heritage in the representative areas of Gurye and Jinan. The information on 'Story' was collected from each region's representative local native journal, searches of related web-sites, analysis of old literature, and interviews of traditional households. 'Telling', the conveyance, was focused on texts of literature analysis, which were synthesized from historical conditions, regional food materials, cuisine, regional symbolism, etc. The created food contents were displayed with balanced and healthy Korean food dishes after nutritional analysis. In Gurye, the content was extracted from the story of Hwang hyun (黃玹, 1855-1910) - figura of Gurye - and his collection, "Maecheonyarok", and the storytelling native food was prepared. In Jinan, the content was extracted from the text of an anecdote from "filial son Kwang-beom Lee", a local journal. We tried to express Gurye's clean image in connection with the patriot - Hwang hyun (his nick name was Maecheon), in the late period of Chosun through the unprocessed and simple nature of the dining table. As in Jinan's storytelling materials, we tried to express a healthy menu of health food for older people based on the clean nature and documents about the real character's filial behavior. The developed healthy menu and dining table properties in this study have been established in accordance with nutrient intake standards of energy in Korea.

Historical Reviews on Traditional Symbolism of Ginseng in Everyday Life (의식주(衣食住)에 나타난 인삼의 상징성과 역사 전통)

  • Ginseng, a Korean native herb, has been a symbol of mystic cure-all which provides longevity benefits throughout Korean history. According to Chinese historical records, a major source of wild ginseng has been described as Korean peninsula, which is the most suitable ginseng production area, and the Manchu region near Mt. Baekdu and the Maritime Province. Since Tang dynasty period (618-917 CE), Chinese has also called ginseng as "Goryeo Ginseng", which is named after "Goguryeo" (37 BCE-668 CE), an ancient kingdom of Korea, from which they mainly imported the herb as the region was famous for its high quality of ginseng. To date, it refers to Korean ginseng. This study compares the medicinal properties of ginseng as stated in the ancient Korean medical books with the major Korean historical records regarding the usage of ginseng and its symbolism of longevity in everyday life. By contrasting these findings, we tried to figure out how the actual medicinal properties of ginseng and the anticipation of longevity are related. It was confirmed that the expectations about longevity were widely applied to everyday life. In addition, the study investigates the various usage of ginseng as a motive for decorative patterns and as an ingredient for daily products including snacks, health drinks, various types of food, clothing patterns, and so on. Finally, the usage of ginseng ingredients in the cosmetic products fulfilled the desire of Korean people to purchase, showing the aesthetic recognition and medicinal understandings about the herb. These findings suggest that ginseng is an important medicinal agent that not only symbolizes longevity and good health but also has a great influence on the lives of Koreans.

  • The aspects of contemporary society change have been changed rapidly running for function value on the part of part industrialization and information-oriented. The transfer to the society focused on a human being emphasis and symbol value is in progress rising with natural desire of recurrence of human nature accordingly and desires of a human being inborn of sensitivity-oriented and pluralism-oriented are being expressed. Answering these social and cultural demands, concerns about an arbitrary mind world of a human being and pursuit dispositions about impractical and transcendental world are coincided with to the purpose and so various kinds of expressions except for art sphere are being experimented and applied. Here upon also in the field of the contemporary interior design, answering sensual desire of users, various arts and cultural tendency, the concept of surrealism is being applied in design introducing the concept of surrealism positive. And fantastical and unreasonable expression features of surrealism are being used as subjective essential elements to make new spaces. Especially amoung various kinds of the interiors designs, the features like surrealistic expressions in Food & Beverage Space which proper identity and strong symbolism will be expressed can be recognized as appropriate expression patterns to give still more sensitivity stimuli to customers. Thus this research disclosed conceptual and ideological background of surrealism and also analyzed and studied surrealistic expression features applied to the interiors designs of Contemporary Food & Beverage Space through expression disposition, study and classification of techniques. And standing on the result of analyzing surrealistic expression features of Contemporary Food & Beverage Space with a key word of expression features derived we groped for estatescape trend demanded in Food & Beverage Space and direction coming.
