LED irradiation이 Muscat bailey A 와인의 발효 및 페놀성 화합물의 변화에 미치는 영향 (Changes in Fermentation Properties and Phenolic Contents of Muscat Bailey A Wine by LED Irradiation Treatment)

  • 이 연구에서는 Muscat Bailey A wine 제조에 있어 알코올 발효중 LED hormesis의 영향을 확인하고자 하였다. $453{\pm}4nm$, $522{\pm}3nm$ 파장의 LED를 must에 irradiate하며 발효특성 및 페놀성 화합물 함량과 항산화활성을 control group과 비교하였다. Control group에 비해 LED를 irradiate한 group의 유기산 조성 중 Lactic acid 함량이 낮게 나타났는데, 이는 LED 파장의 젖산균 생육 저해 효과에 따른 것으로 사료된다. 발효 중 yeast의 균수증가와 당 소모는 $453{\pm}4nm$ 파장의 blue LED를 irradiate한 group이 다른 group에 비해 발효초기 빠른 경향을 보였으나 3일 후에부터는 다른 group과 큰 차이를 보이지 않았다, $522{\pm}3nm$ 파장의 green LED는 발효 초기에 다른 group에 비해 높은 항산화활성을 나타냈다. 이는 LED irradiation이 발효 중 hormesis를 유발하여 yeast의 생육 속도와 발효액 내 생리활성물질을 증가시킨 것으로 사료된다. 위 결과를 통해 와인발효 중 LED 자극에 의한 hormesis의 적용 가능성을 확인할 수 있었으며, 향후 LED hormesis가 어떤 기작에 의해 발효중 yeast의 생육속도를 향상시키고 포도 발효액 내의 생리활성물질을 증가시키는지에 대한 추가적인 연구가 필요할 것으로 보인다.

20대 성인에서 성별에 따른 항노화에 대한 관심도 및 건강증진행위 수행도 및 항노화서비스의 필요성 비교 (Comparison of the Interest in Anti-Aging, Need for Anti-Aging Services and the Performance of Health Promotion Behavior by Sex in their 20s)

  • This aim of this study examined the relationship among the interest in anti-aging, health promotion behaviors and the need for anti-aging services by their 20s. Survey was conducted among adults from their 20s in the Changwon City. 228 responses were used for analysis. The overall average score of the interest and effort of anti-aging were 2.97 point and 2.62 point (out of 5), respectively. And those were both higher in female than men (p<0.01~p<0.001). The overall average score of need for anti-aging service was 3.50 point(total score is 5). In The demand for each area of anti-aging service were ≥3.5 point in all 5 areas, and stress management (4.00 point) was the highest, while the beauty management (3.60 point) was the lowest. There were significant differences in all five areas by sex (p<0.01~p<0.001). The overall score of the performance of health promotion behaviors was 2.44 point(total score is 4), and the interpersonal relationship score (2.85 point) was the highest, while the health responsibility score (2.08 point) was the lowest. The interest in anti-aging and performance of health promotion behaviors showed positive relationship to anti-aging services, and their explanation powers were 34.6% (p<0.001). The results of this study suggest be used as data to establish strategies revitalizing various anti-aging service in the twenties.

프랜차이즈 분식점의 서비스 품질이 고객만족과 재방문 의도에 미치는 영향 - 부산 지역을 중심으로 - (The Study of the Relationships among Service Quality, Satisfaction, and Revisit Intention of Franchise Snack Bar - Focused on Busan Area -)

  • 본 연구는 프랜차이즈 분식점을 소비자들을 대상으로 프랜차이즈 분식점 방문 시 지각된 서비스 품질을 측정하고, 이러한 요인이 고객의 만족과 재방문 의도에 어떠한 영향을 미치는지 파악하고자 수행되었다. 연구가설 검증을 위하여 총 300부의 설문지를 프랜차이즈 이용고객들을 대상으로 배포하였으며, 이 중 272부의 설문지가 최종분석에 사용되었다. 사용된 통계방법은 SPSS21.0을 사용하여 기술통계, 요인분석 및 신뢰도검증, 상관관계분석 그리고 단순 및 다중회귀분석을 실시하였다. 지각된 서비스 품질은 Brady & Cronin의 3차원 모델을 기반으로 물리적 환경품질, 상호작용품질, 그리고 결과품질로 구성되었으며, 고객만족과 재방문 의도와의 인과관계 결과는 다음과 같다. 서비스 품질의 세 가지 요인인 물리적 환경, 상호작용품질, 결과품질과 고객만족간 그리고 재방문 의도와의 관계는 모두 유의한 영향을 미치는 것으로 분석되었다. 또한, 결과품질요인이 세 가지 서비스품질 요인 중 가장 높은 영향을 미치는 것으로 나타났다. 따라서 프랜차이즈 분식점에서 고객의 만족도와 재방문 의도를 높이기 위해서는 무엇보다도 결과품질의 주요 측정항목인 음식 자체의 품질이 가장 중요함이 입증되었다. 마지막으로 고객만족은 재방문 의도에 유의한 영향을 미치는 것으로 나타나, 만족한 고객은 다시 그 프랜차이즈 분식점을 재방문하거나 주변사람들에게 긍정적인 추천할 의향이 있다는 것을 알 수 있다. 이러한 연구결과는 기존에 이미 여러 선행연구를 통해 검증되었던 서비스품질 척도를 프랜차이즈 분식점이란 영역에 적용시켜 그 인과관계를 검증하였다는 것에 학술적 의의를 가지며, 또한, 외식산업에서 중추적 역할을 하고 있는 분식점산업을 위한 현실적이고 실증적 제언을 해 줄 수 있을 것으로 사료된다.

패밀리레스토랑의 욕구체계 기반 고객가치가 고객만족, 행동의도에 미치는 영향: 4×4 매트릭스 욕구체계를 중심으로 (Needs-Based Customer Value Effects of Family Restaurants on Customer Satisfaction and Behavior Intention)

  • Purpose - A pre-study on service quality-based customer value is conducted with the path structure (perceived value of service quality→customer satisfaction→behavior intention) based on the hierarchical model of service quality including interaction and outcome quality, physical environment quality and the SERVQUAL model of process quality, namely, reliability, responsiveness, assurance, empathy, and tangibles. In addition, customer value in the service industry is studied by dividing into the two-way structure of utilitarian and emotional values. This study classifies customer values of family restaurants through the customer value model based on the 4×4 matrix needs system of Jeon and Kim (2009). It illustrates the path structure of customer value→customer satisfaction→behavior intention targeting college students in order to generalize the customer value system of family restaurants. Research design, data, and methodology - This study established seven hypotheses based on the relationship between each type of customer value (food quality, convenience, social, emotional, interior quality, service encounter, and purchasing) and customer satisfaction, and the relationship between customer satisfaction and behavior intention. The study data were collected from students in the Department of Business and Tourism at Kimpo University. In all, 294 survey papers were returned of the 300 distributed: 253 pieces were used in the final analysis excluding 41 with insufficient and less effective answers. For statistical analysis, the statistics software package SPSS 15.0 was used. Results - The results of the analysis are as follows: first, the customer values of family restaurants are classified by seven customer values: goods quality value, emotional value, convenience value, social value, purchasing value, service encounter value, and inner quality value. Second, emotional value, purchasing value, service encounter value, and inner quality value had positive impact on customer satisfaction. In particular, purchasing value through being included in functional value was not classified in the previous study; however, this study could classify and generalize this value in a new way. Finally, customer satisfaction had a positive impact on behavior intention. This showed that college students had behavior intention - repurchase intention and word-of-mouth - because they could be content with the food items on the menu and the service provided by employees. Conclusions - The main points based on the above-mentioned results are as follows. This study with college students as study subjects could be classified into four dimensions, namely, generic value, usage value, purchasing value, and physical value and seven sub-dimensions on customer values of family restaurants based on a 4×4 matrix needs system. Then, to confirm its generalization, the path structure of customer value→customer satisfaction→behavior intention was verified. While existing pre-studies used simplified values by classifying restaurant values largely as utilitarian value and hedonic value, this study classified various forms of customer value, and that customer value especially could be expanded by adding purchasing value. As a result, it is shown that marketers need to diversify their customer services because this study proved that customer values can be classified in various ways based on customer needs.

외식업체 프랜차이즈 가맹점의 공정성지각이 관계의 질에 미치는 영향 연구 (A Study on the Effect of the Fairness of Franchisee on Relationship Quality in Food Service Industry)

  • 본 연구에서는 외식 프랜차이즈 가맹본부와 가맹점간의 장기적인 관계형성을 통해 경쟁력을 증진시키기 위한 방안으로 공정성에 대한 지각이 상호관계의 질에 미치는 영향을 분석하고자 하였다. 실증분석 결과, 프랜차이즈 본부의 공정성에 대해 긍정적으로 인식할수록 상호관계의 질에 긍정적 영향을 미쳤다. 공정성의 두 개념인 분배공정성과 절차공정성 모두 긍정적으로 지각할수록 가맹본부에 대한 신뢰와 만족은 높게 나타났으며, 갈등은 적게 나타났다. 분배공정성과 절차공정성 모두 유의한 결과를 나타내기도 했지만, 특히 분배공정성보다는 절차공정성이 가맹본부에 대한 신뢰와 만족에 더 큰 영향을 미치는 것으로 나타났다. 또한 프랜차이즈 가맹본부와 가맹점간의 상호관계의 질은 장기적인 결속에 긍정적인 영향을 미치는 것으로 나타났다. 즉, 본부에 대한 신뢰와 만족이 높고, 갈등이 적을수록 본부와 보다 상호협력적인 가맹점이 되는 것이다. 상호관계의 질을 구성하는 요인 중 장기적인 결속에 가장 큰 영향을 나타내는 것은 신뢰로 나타났다. 이 결과는 외식 프랜차이즈의 가맹본부와 가맹점의 적절한 관계개발 전략을 수립하는데 시사점을 줄 수 있다. 첫째, 외식 프랜차이즈 본부의 실무담당자들은 가맹점과의 상호관계의 질을 높이기 위해 본부의 절차적인 공정성에 대한 가맹점의 지각을 긍정적인 방향으로 유도해야 할 것이다. 둘째, 가맹본부와 가맹점간의 장기적인 관계 형성을 위한 전략 대안으로는 가맹본부에 대한 신뢰형성을 우선적으로 제고해야 할 것이다.

경기 북부 실버관리인력 양성 과정에 관한 수요도 조사 (Studies on the Demands of Development Program of Silver Industrial Professionals in the Northern Gyeonggi-do Area)

  • The principal objective of this study was to assess the demands of the development program of silver health care professionals for elderly individuals residing in the Northern Gyeonggi-do area. To this end, a survey was conducted to investigate college students and employees related with elderly individuals in the area regarding their recognition, interest, and involvement in the labor training program. In the case of college students, the health education they had received was only 1 to 2 hours, from a school lecture(35%). The content of health education they desired was exercise(34%) and stress management skills(28%). The sources of health information they received included mass media(77%) and the internet(12%), and they trusted the information they received from health professionals(45%), and the mass media(34%). In the case of health professionals who were working at silver care facilities, the sources of health information to which they had access were mass media(51%), internet(14%), reliable health professionals(56%), mass media(22%), and books related to health (18%). The principal issues they reported as being relevant to the elderly were dementia(39%), hypertension(14%), arthritis (11%), and they reported that the most important personnel for elderly in the future would be care managers(44%), and care helpers(21%). 88% of subjects believed that there was a need for a silver welfare integrated information system. 43% of subjects used the internet, 77% of them required in-service training programs for the welfare of the elderly. Via this developmental program of silver health care professionals, a variety of new job opportunities can be provided in the future, and a program related to the silver service industry must be established as soon as possible.

초등학생의 영양 상담에 따른 인식, 흥미도 및 영양 지식 -경북 지역 중심- (Nutrition Counseling Practice, Perception, and Nutrition Knowledge of Nutrition Counseling Participants and Non-Participants -Elementary Students in Gyeongbuk Province-)

  • For the purpose of carrying out nutrition counseling effectively and efficiently, this study assessed the nutrition counseling practice, perception and nutrition knowledge of elementary school children in Gyeongbuk province. Survey questionnaires were distributed between November 2009 and December 2009 to 100 nutrition counseling experienced children (participants) and 110 nutrition counseling non-experienced children (non-participants) and were completed with nutrition teachers' assistance. According to the survey results, girls and overweight/obese children showed higher tendency of participation in nutrition counseling (p<0.001). Participants who took nutrition counseling according to their own intentions showed satisfaction after counseling on diverse subjects such as obesity, unbalanced diet, and weight control. Particularly, 'lack of counseling session time', 'unfavorable counseling condition' or 'difficult explanation' caused participants unsatisfaction after counseling. Participants usually perceived the meaning of nutrition counseling more correctly than non-participants and showed positive intentions for taking further counseling in the future(p<0.001). Diet good for weight control, good food to fix unbalanced diet and diet good for growing stature were the top three subjects of nutrition counseling chosen by subjects (p<0.001). Participants also showed higher nutrition knowledge scores than non-participants. Therefore, it is critically important to apply nutrition counseling in the proper environment (counseling room, time, teaching materials, etc) to elementary school students to fix healthy food habits. Therefore, nutrition teachers need to be provide professional nutrition counseling skills and knowledge.

외식 창업 메뉴 기획에 관한 연구 (A Study on Menu Planning in Foodservice Enterprises - Focused on Menu of Theme Restaurants -)

  • This study conducted a survey on 290 employees in 6 theme western restaurants, proposing differences in the menu planning of western food enterprises based on the factors that influence on the inside and outside of western restaurants as well as the theme industries in order to clear up the characteristics peculiar to and factors related to the menu planning of western food enterprises. The results are as follows. According to the results, even with same foodservice industries, they have to search for their own exclusive menu from a marketing aspect because of the full of ups and downs based on the dealing items: for six western restaurants by theme, it showed that there is a significant difference in marketing factors. Particularly, they have to plan these points- considered menu, given that general flavor is the most important point, followed by environment or atmosphere and service. In the result, it should not only apply the developed menu according to industries and dealing items differently, but also arrange a comfortable atmosphere and kind services, centering on health food in the select menu of mid and low prices verified above, through a sufficient location survey in advance and a firm preparation accompanied by consumers.

특 1급호텔 베이커리의 현황 비교 분석 (The present condition comparative analysis the case of Bakery In Luxurious Hotels)

  • The purpose of a study was the present condition comparative analysis by the case of Bakery in Hotels. The sample was selected first grade hotels in seoul. The method of research was In-depth interview. The questionee were mamagers and chefs each hotel bakery. Interview was accomplished average 45minutes. The period of the research was from 1th of Februrary, 2002 to 28th of February, 2002. The survay was composed of product operation, employee operation, equipment operation, customer operation, sales and bakery characteristics. the data was analyized by SPSS10.0 mean, maximum value and minimum value were salected. Recently, as it is getting higher of importance of bakery in the food service market and many major companies run into a bakery industry, the researches about bakery have advanced, however in fact, materials or researches about hotel bakery are fewer than franchise, in-store bakery and mass production enterprise. Especially, each hotel exchanges their information through benchmarking but data analysis - accurate materials, sales, the present condition equipment is not easy to perform. The purpose of this study was to be helpful for studying hotel bakery for others by analysis. The data was analyzed by each hotel characteristics, employee, equipment, sales, productions and the present condition sales.

Physicochemical Characteristics of Different Parts of Burdock (Arctium sp.)

  • Burdock (Arctium sp.) is known as a nutraceutical vegetable, especially in Japanese and Korean cuisine. While burdock plants are generally harvested for their tap roots, different parts of the plant are consumed as food or used as traditional medicines. This study investigated the physicochemical properties of the leaves, stems, roots, and peeled roots of the burdock plant based on their pH, soluble solid content, titratable acidity, color values, and mineral content. The pH differed significantly among the different plant parts, with the highest value in the leaves and the lowest in the stems. However, for the soluble solid content, the leaves had the lowest, while the peeled roots had the highest. The titratable acidity of the stems was significantly lower than that of the leaves, roots, and peeled roots. As regards the color values, the lightness value was highest for the stems, while the roots showed the highest redness value, followed by the peeled roots, and the leaves had the highest yellowness value. The leaves and stems contained almost three times more potassium than the roots and peeled roots. Thus, the higher content of different minerals in the leaves and stems of the burdock plant shows that these plant parts could be used as potential sources of dietary minerals.
