A Study on Microbiological Quality & Safty Control of Hard-boiled Mackerel served by a Industry Foodservice Establishment (II) (산업체 급식소에서 제공되는 고등어조림의 미생물적 품질 관리에 관한 연구(II))

  • This study was written to assess microbilogical quality by passage of time and holding method after making foods, by means of evaluating time, temperature and microbiological quality during vairous phases in product flow of hard-boiled mackerel served by an industry feeding operation for 500 persons a day, measuring pH & Aw and analyzing factors affecting nicrobiological growth conditions. The results were as fallows: 1. According to phases in product flow of hard-boiled mackerel, it showed 4.9 hours of mean of needed time, $27.5^{\circ}C$ of room temperature, 4.8~5.7 of pH value and 0.95~0.98 of Aw. these conditions were suitable for microbiological growth, and the phases with potential hygienic danger were pre-preparation and assembly & service. 2. As for holding methods and passage of time, holding as steam table was more effective than holding at room temperature as time past. 3. Food poisoning bacteria were not dectected from phases in product flow of hard-boiled mackerel.

  • College and university foodservice dietitians have to be competent for playing a role as the future food service executive as well as the present foodservice administrator in the promising foodservice industry field. The study conducted a survey to examine training needs corresponding to educational contents for the purpose of helping them acquire a new knowledge related to self-development and duty through educational training. The results of this study suggested that training needs were differed by general characteristics of dietitians, operational characteristics of food services, and training subjects. A future study should develop systematic training strategies for dietitians.

  • Thanks to China's economic development, the food service industry and franchise industry have combined to serve a huge market, and alterations continue to take place, such as the changing tastes of Chinese people and the changing food culture. Global franchise companies centered in the US are rapidly making inroads into the market, and Chinese local companies are also making efforts to expand their influence. In particular, in this situation where trends are gradually changing due to the COVID-19 pandemic, we look at the trends of franchise headquarters, franchisees, employment, and operating profits for the past 10 years using information published by the National Statistical Office of China. As we examine the information, possibilities push through. In addition, we will look at the cases of domestic companies that have entered China, the conditions and plans for their activities there, and what companies planning to enter China in the future need to prepare for.

  • Korean dairy industry is placed on the very critical situation with the progress of free trade marketing system internationally. To keep and improve the dairy food market, better measures are imperative for dairy industry. Especially, the milk distribution system is premodern to some extent, in comparison with both the production and the processing part of dairy industry. Reform measures for the promotion of domestic milk consumption by lowering the distribution cost are as follows. First, out-sourcing of the logistics department can decrease the circulation cost of milk. Secondly, milk should be packed into large-size package(more than 1 liter) to save both package and distribution cost. Thirdly, milk should be distributed from plant to consumers through the hygienic distribution system including perfect cold chain system, Above reform measures can not come true through the efforts taken by one company but through co-worker, concerted research, and joint in-vestment among dairy companies that can reduce the distribution cost and provide consumers with the best service, eventually resulting in the increment of milk consumption.

  • It is difficult to make which customers want in restaurant industry because of IMF situation. Therefore, utilization of service marketing is needed by best effect through least investment in restaurant industry. The background of restaurant industry is not directly related to the improvement of tourism industry. We should give a hand to tourism and restaurant industry by holding international events. so the way of thinking among people is changing. And importing of famous foreign brand and opening shops are accellerating the improvement of tourism and restaurant industry. In this perspective, improvement factors of restaurant industry are as follows : the increase of pst time, the increase of disposable income, the increase of woman's having jobs and double income, requirement of people about health food, the increase of nuclear family, and the change of viewpoint among people. This restaurant industry is service industry, and it sells invisible service except the aspect of selling menu. In addition, in terms of menu, price reduction strategy should be done by cost reduction and restructuring. The ultimate purpose of marketing is to increase sales and to do this we should increase the number of customers in shops. That means we should create new customers and try to attract customers who used to be regular in the shops. Therefore, the demonstration of management ability and positive reaction is really needed. So the most important things in marketing are as follows: proper strategy for double consumption, increasing the number of customers through new specific menu, menu life cycle according to menu item, menu development by considering customer, making recipe, enhancement of product quality and cost reduction by customer's opinion. We should concentrate on national menu first, and try to develop menu for international market. It is absolutely needed that we set up the menu product strategy through menu marketing with various products and constant study related to menu marketing is to be done.

An Exploratory Study on the Semantic Network Analysis of Food Tourism through the Big Data (빅데이터를 활용한 음식관광관련 의미연결망 분석의 탐색적 적용)

  • The purpose of this study was to explore awareness of food tourism using big data analysis. For this, this study collected data containing 'food tourism' keywords from google web search, google news, and google scholar during one year from January 1 to December 31, 2016. Data were collected by using SCTM (Smart Crawling & Text Mining), a data collecting and processing program. From those data, degree centrality and eigenvector centrality were analyzed by utilizing packaged NetDraw along with UCINET 6. The result showed that the web visibility of 'core service' and 'social marketing' was high. In addition, the web visibility was also high for destination, such as rural, place, ireland and heritage; 'socioeconomic circumstance' related words, such as economy, region, public, policy, and industry. Convergence of iterated correlations showed 4 clustered named 'core service', 'social marketing', 'destinations' and 'social environment'. It is expected that this diagnosis on food tourism according to changes in international business environment by using these web information will be a foundation of baseline data useful for establishing food tourism marketing strategies.

The Relationship between Weather and Meal choices: A Case Study of Restaurants and Cafés on Korean University Campus (날씨와 식사 선택의 관계: 한국대학 캠퍼스 내 식당과 카페의 사례연구)

  • The food service industry is a major driver of global sustainable food consumption. By understanding food consumption behavior, restaurant managers can forecast demands and reduce pre-consumer food waste. This study investigates the relationship between influencing factors and the number of customers at restaurants and cafés. These factors are weather-related factors, including rain and temperature, and school-related factors, including exams and the day of the week. Based on these four factors, 24 possible combinations were created. Three representtive days were chosen for each weekday combination. Besides, one representative day was chosen for each weekend combination. In total, 48 days were sampled throughout the year. Customer data were collected from six restaurants and cafes on a Korean university campus. Conjoint analysis was used to determine the relative importance of each variable to customer numbers. Following that, utility scores were standardized and mapped to determine the best condition when the number of customers was at its peak. In addition, each store's sales were compared using Pearson's Correlation Coefficient. The findings support that temperature and rain influences are correlated with the number of customers. Furthermore, we discovered that temperature was far more significant than rain in determining the number of customers. The paper discusses the implications of weather to forecast food and beverage demand and predict meal choices.

A Methodological Approach on the Evaluation of Patient Satisfaction: Focused on the Importance Performance Analysis(IPA) (환자만족도 평가에 대한 방법론적 접근: IPA기법을 중심으로)

  • The measurement and management of patient satisfaction has become one of the key issues in the last two decades. Hospitals must thoroughly understand the needs of their customers and design products and health services that meet and exceed their expectations. The importance-performance analysis(IPA) is a widely used analytical technique that yields strategies for managing customer satisfaction in a variety of applications. IP A is a two-dimensional grid based on customer-perceived importance of quality attributes and attribute performance. Depending on the interplay of these two dimensions, four strategies can be derived. The aim of this study is to develop the management strategies for improving patient satisfaction in university hospitals using the I-P analysis. The attributes on inpatient service quality in 4 university hospitals was investigated using the Martilla and James(l977)' s a mean adjusted I-P grid where the axes of the grid cross at the average rating point of all items. The patient satisfaction questionnaires were completed by 600 hospital inpatients. The main statistical methods are path analysis and IPA with SPSS 12.0 and AMOS 4.0 statistical softwares. The two attributes, physician and medical service, administrative staff kindness attributes position in first quadrant(Keep Up the Good domain). The nurse and nursing service attributes position in second quadrant(Possible Overkill domain). The two attributes, convenience of check-in service, facilities and physical environment position in third quadrant(Low Priority domain). Finally the quality of inpatient service(food etc.) attributes position in fourth quadrant(Concentrate Here domain). These findings show various implications on the development of strategies in university hospitals in the future. It was determined that quality of inpatient service(food etc.) need to concentrate more on investments. These investments include a taste, price, proper provision of food service and quick response of pain management. A low priority was given to investment in streamlining the check-in process of inpatient and hospital facilities and physical environment in the long run.

Universalizing Korean Food (한국음식의 국제화 방안)

  • The purpose of this study is to draw attention to the distinction of Korean food as well as to find ways to universalize Korean food. Not only does Korean food a big part of representing the Korean culture itself, the ingredients in the Korean food are extremely nutritious. The excellence in the ingredients has been verified through scientific studies over and over. Today, this is recognized widely by the food experts in the U.S. This study also points out some of the hurdles in universalizing Korean food. First of all, many people around the world are not aware of the positive aspects of the Korean food. There have been minimal efforts, if at all, to find ways to make fusion Korean food to be part of a world cuisine. The lack of research and development in the Korean food industry also does not help the situation much. Lastly, the limited knowledge of the actual people working in the food service sector regarding Korean food hinders the Korean food going universal. Currently, the food industry in the U.S. is quite favorable for Korean food to enter its markets to become part of the American cuisine. The Americans' appetite continues to change towards more healthy living leaning them naturally towards Asian food. For Korean food to become part of the American cuisine, the follow recommendations are given in the study: 1) Korean food must be localized, become a fusion cuisine; 2) standardize the cooking method; 3) change the focus to rice-centered trend food; 4) foster more Korean food experts; and, 5) promotion of strengthening food advertisements while increasing research and development. It is also important during this whole process, traditional Korean food be discovered and implemented to the overall food program in universalizing Korean food.

Analysis of Oxalic Acid of Various Vegetables Consumed in Korea

  • Many vegetables contain oxalate at various levels depending on their type and family. Oxalate is known to reduce mineral bioavailability from foods. The following study was conducted to determine soluble and total oxalate contents in 32 plant samples commonly consumed in Korea using high-performance liquid chromatography (HPLC). Chard, amaranth, and spinach contained total oxalate of >1,000 mg/100 g. Approximately 45% of the oxalate in amaranth is insoluble, whereas 74.46 and 92.45% of the oxalates in chard and spinach, respectively, was soluble oxalates, which may be removed by blanching. Eggplant, carrot, leak, ginger root, spinach, burdock, and sweet pepper contained more than 90% soluble oxalate in total oxalate content. However, all oxalates detected in lettuce and celery were insoluble. Oxalate was not detected in shepherd's purse, bellflower root, garlic, radish root, broccoli, cabbage, onion, lotus root, adlay, cucumber, kale, and pumpkin. These observations provide useful information needed for selection of vegetables.
