The Effect of Aronia Powder (Aronia melanocarpa) on Antioxidant Activity and Quality Characteristics of Pork Patties (아로니아 분말 첨가가 돈육 패티의 항산화 활성과 품질 특성에 미치는 영향)

  • This study was performed to evaluate the effects of adding aronia powder on the antioxidant activities and physicochemical properties of pork patties. The patties were prepared by adding 0%, 1%, 2%, and 3% of aronia powder. Water and ethanol were used to extract the antioxidant compounds from aronia. Total phenolic compounds of the water and ethanol extract of aronia were 164.55 mg/g and 221.08 mg/g, respectively. The total phenol contents and DPPH free radical scavenging activity of patties were significantly increased with the increasing amount of aronia powder. Moisture content in control group was 60.61%, and it was significantly different from the aronia powder groups. The cooking loss rate and reduction ratio significantly decreased with the increasing amount of aronia powder. The hardness, chewiness, and gumminess of the control group were lower than those of the treatment group. In the sensory evaluation, the addition of 1% aronia received the best score in appearance, color, and overall preference. We suggest that aronia powder may be a useful ingredient in pork patties to improve the quality characteristics and antioxidant potential.

Quality Characteristics of Demi-glace Sauce with Added Bokbunja (Rubus coreanus Miquel) (복분자를 첨가한 데미글라스 소스의 품질특성)

  • In this study, Bokbunja (Rubus coreanus Miquel) was used with a Demi-glace sauce to compare and analyze the effect of different amounts of Bokbunja (0, 10, 20, 30, and 40%) on the physico-chemical qualities of the Demi-glace sauce. The moisture content of Demi-glace sauce increased but crude protein, crude lipid, and crude ash decreased as the amount of added Bokbunja increased. DPPH radical scavenging activity of the control group was 43.33%, whereas Bokbunja Demi-glace sauces ranged from 83.13~86.40%. As the amount of added Bokbunja increase, pH decreased, and acidity of the Demi-glace sauces increased. Sauce sweetness was significantly different between each sample (p<0.01). Salinity decreased, but viscosity increased as the amount of added Bokbunja increased. Color L, a and b values decreased significantly, as storage period increased. The sensory property results showed that the 20% and 30% Bokbunja sauces were higher than the others. The 20% Bokbunja sauce was the most preferred with regards to the balance of a steak containing this sauce with a score 5.34 points.

Color, Textural Characteristics and Sensory Quality of Strawberry Puree-Substituted Kochujang during Fermentation

  • Quality characteristics of kochujang prepared with strawberry puree (10, 20, and 30% on a total weight basis) were investigated at 30 and 300 days of fermentation. The highest $L^*$-value was found in 30% strawberry kochujang at 300 days of fermentation. In contrast, the highest degree of redness ($a^*$) was observed in 30% strawberry kochujang at the early stage of fermentation. During the fermentation, values of $L^*$, $a^*$, and $b^*$ increased except $a^*$-value of 30% strawberry kochujang, indicating proper substitution of strawberry puree could preserve the desired color of kochujang. After 300 days of fermentation, hardness, gumminess, and chewiness increased while adhesiveness decreased significantly (p<0.05). Taste score and Pearson coefficient between sensory and strawberry concentration revealed that 10% strawberry kochujang was more acceptable than the others, due to color and the formation of flavor compounds during the fermentation and these compounds enhanced the flavor of kochujang.

Changes of Breadmaking Characteristics with the Addition of Rice Bran, Fermented Rice Bran and Rice Bran Oil (쌀겨, 발효쌀겨 그리고 쌀겨유의 첨가에 따른 제빵특성의 변화)

  • This study was conducted to evaluate the breadmaking characteristics of white bread when rice bran (RB), fermented rice bran (FRB) and rice bran oil (RBO) were added to the dough. Addition of RB to dough generally showed a decrease of the bread volume and increase of the bread weight which is related to the comparative decrease of gluten in the dough. Addition of RB also showed a decrease of lightness with yellowish color of RB and showed some rheological changes in dough. However, up to 5% RB addition, the dough showed a similar property of breadmaking with giving functional benefits compared to the control. Moreover 5% FRB addition to the dough improved the taste, flavor, and texture important to quality of bread. Substitutional use of RBO for shortening in dough result in comparative decrease of volume of dough. Addition of yellowish RBO influenced the increasing yellowness score, hardness, gumminess and brittleness, which is disadvantageous for the quality of white bread. However up to 50% RBO substitution for shortening made little rheological differences compared to the control. The 50% RBO substitution for shortening increased the score of flavor in sensory test even if there was an unfavorable quality point of white bread caused by a decreased volume and an increased hardness. From these results it could be suggested that the proper use of RB, FRB and RBO in breadmaking could improve the taste and flavor, giving beneficial function originated from rice bran to white bread.

Evaluation of Dietary Quality in Korea Female according to BMI : From the Korean National Health and Nutrition Examination Survey Data of 2010 (한국 성인여성의 체질량 지수에 따른 식사의 질 : 2010년 국민건강영양조사 자료를 이용하여)

  • The purpose of this study was to evaluate the dietary quality of Korean females according to BMI, using the Korea National Health and Examination Survey data (KNHANES V-1). The study incorporated an individual-based, one-on-one interview with a cohort of 3,552 Korean females, including underweight, obese, and normal subjects, based on BMI calculation from 8,958 samples throughout the country. In this study, BMI between 18.5 and 25 was considered as normal, < 18.5 as underweight, and ${\geq}25$ as obese. We classified the subjects into three groups: the underweight group (n = 206), normal group (n = 2,353) and obese group (n = 993). The result of analysis of nutrient intake was a percentage of Korean RNI. Overall, calcium intake tended to be lower for groups with lower BMI. The result of dietary quality are as follows: For NAR analysis, all groups showed a less than 1.0 for all nutrient levels. In particular, with respect to calcium, all groups showed to have a lower NAR score than that of other nutrients; this was also the case for the Vitamin A. The average NAR score was 0.76 in the underweight group, 0.83 in the normal group, and 0.78 in the obese group. The results suggest the necessity of obesity-related nutritional education programs in Korea, particularly for Korean women.

Improvement of HACCP Verification Checklist in School Foodservices - A Case Study on Cooked Squid with Seasoned Fresh Vegetable - (학교급식 HACCP 검증 체크리스트 개선 - 오징어채소무침을 중심으로 -)

  • The purpose of this study was the improvement and modification of the HACCP verification checklist in school foodservices. For this, the HACCP verification checklist was modified on the basis of an existing school foodservice format. The modified checklist was composed of 28 items, including CCPs (critical control points), microbial test, and other components of the HACCP system than CCPs. To confirm the suitability of the modified checklist, comparisons were made based on the microbiological quality of cooked foods, utensils, and number of aerial microbes in the working area. In this study, the applicability of the modified checklist was determined by focusing on cooked squid with seasoned fresh vegetables (Ojingeochaesomoochim). The following results were obtained from 14 schools in Changwon. The checklist scores for maintaining hot foods over $60^{\circ}C$ or serving within 2 hours, microbial tests of drinking water, food contact surfaces and cooking utensils, monitoring tools, and usage of suitable sanitizers were 2 points each (The possible highest score is 2 points). On the contrary, the checklist score for microbial test of cooked foods was the lowest of all the items. The correlation coefficient (r) between the improved checklist and microbiological quality of cooked foods was 0.699 (P<0.01), whereas that between the improved checklist and microbiological quality of cooking utensils was 0.612 (P<0.05). The correlation coefficient between the improved checklist and aerial plate count in the working area was -0.556 (P<0.05). Our results indicate the potential possibility of using the HACCP verification checklist in school foodservices.

Quality Characteristics of Fried Fish Paste Added with Ethanol Extract of Onion (양파 에탄올 추출물을 첨가한 튀김어묵의 품질 특성)

  • The effects of ethanol extract of onion (EEO) on the qualify of fried fish paste were investigated. EEO was added at 0, 1, 3 and 5% level. Quality attributes including moisture content, pH, acid value, TBA value, volatile basic nitrogen, color value, viable cell count and sensory evaluation were analyzed. Moisture content was not changed by addition of EEO. Increasing the amount of EEO, pH, acid value and TBA value of fried fish paste tended to decreased but volatile basic nitrogen increased. L-value was decreased and a-value and b-value were increased by addition of EEO. Viable cell count was decreased by addition of EEO. In sensory evaluation, the higher amount of EEO obtained higher favorite score in flavor and taste, and 3% EEO had the best score in overall acceptance. These results suggest that EEO can be applied to fried fish paste for the purpose of high quality and functionality.

A Evaluation Study on Nutrient Intake and Diet Quality of Male College Students According to Packyear in Korea (흡연력에 따른 남자 대학생의 영양소 섭취 상태와 식사의 질 평가)

  • The purpose of this study was to compare the nutrient intake and diet quality of male college student according to smoking groups. Subjects were recruited and divided into three groups according to the smoking, which included non-smoker (n = 100), light-smoker (n = 78; packyear < 5), and heavy-smoker (n = 76; packyear ${\geq}$ 5). Subjects were interviewed using a general questionnaire, 24-hour recall method for dietary intake and diet quality. The average age of the subjects were 22.7 years for non-smoker, 23.5 years for light-smoker, and 23.4 years for heavy-smoker. Also the results showed that the heavy-smoker was significantly more often to drink coffee and alcohol compared with the other two groups (p<0.001, p<0.05). The mean daily energy intake was 2278.1 kcal in non-smoker, 2148.3 kcal in light-smoker, and 2144.4 kcal in heavy-smoker. The heavy-smoker consumed significantly lower intakes of vitamin C (p<0.001), calcium (p<0.01), animal calcium (p<0.01), and potassium (p<0.05) compared to the non-smoker and light-smoker. Also NAR (Nutrient Adequacy Ratio), ND (Nutrient Density), and INQ (Index of Nutritional Quality) of these nutrients in heavy-smoker were lower than the other two groups. Mean adequacy ratio (MAR) was 0.78 in non-smoker, 0.78 in light-smoker, and 0.74 in heavy smoker (p<0.05). The heavy-smoker consumed significantly lower intakes of fruits (p<0.001) compared to the non-smoker and light-smoker. The DVS (Dietary Variety Score) of heavy-smoker (26.8) was significantly lower than that 30.4 of non-smoker and 31.5 of light-smoker (p<0.01). In conclusion, heavy-smoker man have low intake status of vitamin C, calcium and potassium, and partly low diet quality. Therefore it was needed that well planed diet to replace the nutrients supplied from excluded food groups in heavy- smoker.

Recoverable Oil Contents and Quality Evaluation of Reconstitute Orange Juice by Electronic Nose (전자코를 이용한 오렌지주스의 Recoverable Oil 함량 및 품질평가)

  • An electronic nose equipped with metal oxide sensor(MOS) was used for investigating the quality of reconstitute orange juice added different recoverable oil(cold pressed valencia oil) contents during 21 days of storage at $4^{\circ}C$. Quality changes in orange juice was described in terms of the sensitivity(${\Delta}R_{gas}/R_{air}$) of the sensors. Principal component analysis(PCA) was carried out using data obtained from twelve metal oxide sensors. The flavor of orange juice contained with the different recoverable oil contents($0.01\%{\sim}0.05\%$) was separated in PCA plot, in which the first principal component score was correlated with the content of recoverable oil. As storage periods prolonged, no significantly different sensitivity score of orange juice was observed in electronic nose. The content of recoverable oil in orange juice was reduced rapidly within 14 days, and then the decreasing ratio was slow on the next 7 days during storage at $4^{\circ}C$. The sensory score for overall and orange flavor of orange juice added $0.03\%$ recoverable oil was decreased during the 14 days and then rapidly dropped next 7 days of storage at $4^{\circ}C$.

Evaluation of Food Intake and Diet Quality in High School Students (고등학생의 식품섭취 실태 및 식사의 질 평가)

  • To assess the food intake and diet quality of high school students who live in Chuncheon area, a dietary survey using 24-hour recall method was conducted with 318 subjects. $71.4\%$ of total food intake was in the form of plant foods and the rest on the form of animal food. Diet quality was assessed by food group pattern, dietary diversity score(DDS), and dietary variety score(DVS). When counting the major food groups consumed, $37.1\%$ of subjects had a DDS of 3 and $48.4\%$ of subjects had a DDS of 4. When investigating the consumption pattern of the major five food groups, only $14.5\%$ of subjects consumed foods from all five groups. On average, subjects habitually consumed 26.7 different foods daily, with the mean score of diet variety for males (27.3) being significantly higher than for females (25.8) . Correlation coefficients between nutrient adequacy ratio (NAR) and DVS ranged from r=0.39 for vitamin $B_2$ to r=0.61 for phosphorus. NAR also improved as the number or foods or rna groups consumed increased (p<0.001). Associations between the NAR and high level of DVS was more positive than those between the NAR with DDS. When assessing the dietary quality of subjects using DDS and DVS, many people appeared not to have a desirable food intake. Therefore, to lead them to have nutritionally balanced diet, educating students and their parents on nutrients and suggesting guidelines for a desirable diet is considered to be essential so that they can intake from all of major food group and have various foods in their diet.
