Assessment of Sensory and Safety Evaluation of Cook/Chill Pajeon (Cook-chill 파전의 관능성 및 안전성 평가)

  • The purposes of this study were to compare the effect of several reheating treatments (heating in the frying pan, convection oven and microwave oven) on sensory characteristics and to evaluate the safety during storage period of cook/chill Pajeon. The sensory evaluations were made on 5 sensory attributes by a 9-member panel using quantitative descriptive analysis (QDA). The fresh cooked Pajeon and the Pajeon reheated in the frying pan obtained a significantly (p<0.01) higher score in taste than the ones reheated in a convection oven and microwave oven. The reheated cook/chill Pajeon had a significantly (p<0.01) lower score in flavor than the freshed cooked one. Regardless of the reheating methods, sensory scores in texture of the Pajeon reheated at $v$ for 1 day were not different from that of fresh cooked one. However, the scores of the reheated ones in a convection oven and in a microwave oven decreased with storage time up to 5 days at $3^{\circ}C$. On the other hand, the Pajeon reheated in the frying pan, even after 3 days' storage at $3^{\circ}C$, was not found to be inferior to the freshed cook one in every quality attributes except flavor. Therefore, the reheating treatment in frying pan may be superior to those in a convection oven and a microwave oven. The safety of Pajeon was also evaluated by measuring total count, coliform count, psychrotrophic count, acid value and peroxide value during 5 days of storage periods at $4^{\circ}C$. Total counts of Pajeon was ranged from not detectable to $5.2\times10^2$ CFU/g. The coliform and psychrotroph were not detected at all experiments. The acid values were ranged from 1.90 to 4.03 mg of KOH/g of fat until 5 days at $4^{\circ}C$. And the peroxide values were ranged from 3.63 to 12.50 meq of peroxide/kg of fat until 5 days of storage period. Therefore, these results demonstrated that Pajeon is microbiologically and chemically safe during 5 days of storage period at refligeration temperature.

The relationship between the prevalence of anemia and dietary intake among adults according to household types based on data from the 7th (2016-2018) Korea National Health and Nutrition Examination Survey (국민건강영양조사 제7기 (2016-2018년)에서의 가구 유형에 따른 성인의 빈혈 유병율과 식이 섭취)

  • Purpose: In this study, data from the 7th Korea National Health and Nutrition Examination Survey (2016-2018) were used to examine the relationship between the prevalence of anemia and dietary intake among adults according to household types. Methods: Using data from a total of 10,646 subjects (4,428 men and 6,218 women), the general information, body measurements, results of biochemical examination, food and nutrient intake, and meal quality evaluation were analyzed according to the type of household. Results: The prevalence of anemia was higher in men belonging to single-person households (SPH) than in those from multi-person households (MPH), while anemia prevalence was higher among the women in the MPH than in the SPH. The men in SPH had a lower total food intake of nuts, vegetables, fruits, fish, and seaweed than the men in MPH, and consumed higher quantities of milk, oil, and processed foods. The women from SPH had a lower intake of seaweed and a higher intake of milk than those belonging to the MPH. In addition, the men in SPH had a lower iron intake and iron intake per 1,000kcal than the men in MPH, lower iron intake through plant-based foods, and a lower iron intake ratio compared to the reference nutrient intake. The total Korean Healthy Eating Index (KHEI) score was lower in both men and women in SPH than in those from the MPH. When analyzing the relationship between household type and anemia risk after correcting for the confusion variable, the risk of anemia in men in SPH increased compared to those belonging to the MPH. However, women showed no such significant correlation. There was no relationship between the total KHEI score and the risk of anemia by gender and household type. Conclusion: In conclusion, since anemia in men belonging to SPH is a matter of concern, it is essential to develop guidelines for anemia-related nutrition education for men living alone.

The Effects of Using Artificial Sweeteners and Coffee Grounds in Chocolate Filling on Quality Characteristics and Glycemic Index (쉘 초콜릿 filling에 사용한 대체 감미료와 커피박이 품질 특성 및 당지수에 미치는 영향)

  • Chocolate is restricted for obese and diabetic patients due to high in sugar contents. We investigated shell-chocolate fillings with low calorie content and low glycemic indexes using alternative sweeteners such as tagatose and xylose and adding coffee grounds. Chocolate filling was made with sugar, cacao and butter in the original recipe. Sugar was substituted with tagatose or xylose and 3% coffee ground was added in each chocolate filling and substituted for 3% of the cocoa. Water retention and spreadability of the chocolate filling was significantly higher in the tagatose+coffee ground group in comparison to the sugar. In the chromaticity test, chocolate filling made with tagatose was darker in comparison to that made with sugar: brightness (L) was lower and redness (a) and yellowness (b) were higher than the sugar filling. Sensory evaluation revealed that chocolate filling made with tagatose had high score in 4 categories such as taste, smell, texture of foreign substance, overall acceptance. After consuming 60 g of the chocolate with different fillings, blood glucose levels of subjects at 1 and 2 h were significantly lower in the tagatose and tagatose+coffee ground groups than the other groups. In conclusion, using tagatose as the sweetener in chocolate filling has a beneficial effect on lowering blood glucose levels and increasing water retention, spreadability and sensory scores. Coffee ground did not have additive effect on quality of chocolate filling and blood glucose levels. These results indicate that shell chocolate made with tagatose can be used as a snack for diabetic patients.

Quality Characteristics of Garaedduk with Roasted Rice Bran (볶음 미강 첨가량에 따른 가래떡의 품질 특성)

  • This study examines the quality characteristics of garaedduk with roasted rice bran in addition of the control at 10%, 20%, 30% & 40% and to measure the mechanical and sensory quality characteristics in order to show the optimum addition ratio and production condition. The result of adding roasted rice bran with 10% up to 40% in all research groups are as follows; First of all, the moisture content was decreased and the "L" score which represents the brightness of garaedduk showed 68.86 in control which was non supplemented garaedduk. L-value decreased. However, a-value increased significantly and b-value increased except in control group. In the experiment on hadness, it showed 0.69 in control group and it showed 0.94 in garaedduk with 10% of roasted rice bran. Also, there was significant difference in hardness depending on the amount of roasted rice bran and storage period. In the experiment on the sensory evaluation of color and flavor in panel test, all groups showed higher scores than control group. Moreover, there was significant taste difference depending on the amount of roasted rice bran. As a test result, the overall acceptability by sensory evaluation was observed as 30%>10%>20%>40%> in the group added with roasted rice bran.

Effects of Different Levels of Vitamin-Mineral Premixes on Growth Performance, Nutrient Digestibility, Carcass Characteristics and Meat Quality of Growing-Finishing Pigs

  • Two experiments using growing and finishing pigs (Landrace$\times$Duroc$\times$Yorkshire) were conducted to determine the effects of different levels of vitamins and trace minerals (VTM) on growth performance, nutrient digestibility, carcass characteristics and meat quality of growing-finishing pigs, and to evaluate the suitability of vitamin-mineral levels commonly used in the swine industry in Korea. A total of 120 three crossbred (Landrace$\times$Duroc$\times$Yorkshire) growing (Experiment I: 20.90 0.44 kg average initial body weight) and finishing (Experiment II: 53.55 0.97 kg average initial body weight) were used in 6 and 9 weeks feeding trials, respectively. Pigs were allotted on the basis of sex and weight to 5 treatments with 6 replications per treatment with 4 pigs per pen in a completely randomized block design. Treatments were: 1) control, 2) fat soluble vitamin 200% vs. control, 3) water soluble vitamin 200% vs. control, 4) trace mineral 50% vs. control, 5) trace mineral 200% vs. control. In experiment I, during the overall experimental period (0 to 6 weeks, 21 to 54 kg body weight), ADG of the 200% trace mineral supplemented group was significantly higher than that of the 50% trace mineral supplemented group. There were no significant differences among other the treatments. Digestibility of crude protein was lowest in mineral 50% supplemented group (p<0.05). Calcium digestibility was significantly higher in the 200% fat soluble vitamin supplemented group than in the other treatments (p<0.05). In experiment II, during the overall experimental period (0 to 9 weeks, 54 to 106 kg body weight), growth performance was not significantly affected by dietary vitamin and trace mineral levels. However, increasing level of water soluble vitamins at the level of 200% compared to control had a tendency to improve the overall growth performance. Overall carcass characteristics except for carcass length did not differ among pigs fed the dietary treatments. Loin eye area, pH, drip loss and shear force of meat were not affected by dietary vitamin and trace mineral levels. There was a trend for less fat content (%) in pork when the level of vitamin and trace mineral was increased, but the difference was not significant. Flavor score was the lowest in control and highest in the 200% fat soluble vitamin supplemented group (p<0.05). Juiciness of muscle was lower in the 200% fat soluble vitamin supplemented group than other dietary treatments, except for trace mineral 50% supplemented group (p<0.05). Based on these results, it is suggested that "typical" commercial levels of vitamin and trace minerals used by feed companies in Korea are sufficient to meet requirement for the maximum growth of growing-finishing pigs. Our results suggests that a reduction in trace mineral levels in commercial diets could be considered to reduce feed cost and nutrient excretion with economic and environmental benefits.

Improvement of Takju Quality by a Ripening-Fermentation Process Using Honey and Extension of Shelf Life by Control of Takju Mash Sediment (벌꿀을 이용한 고액분리 숙성 탁주의 주질 향상과 고형분의 조절에 따른 품질유지기간 증대)

  • This study was conducted to improve quality of takju where natural honey is used to control the ripening fermentation and the amount of sediment derived from takju mash. A koji was prepared using rice starch and Aspergillus awamori var. kawachii. Takju mash was prepared by alcohol fermentation with Saccharomyces cerevisiae and a 3-step addition of steamed rice. The clean part of the mash (CPM) was separated from the sediment at $5^{\circ}C$ and 5% (w/v) of natural honey was added and then ripened for 23 days at 5, 10, or $15^{\circ}C$. Temperature, pH, acidity, and total sugar content showed no significant differences, but a 0.2 percent reduction in alcohol content occurred during storage. However, CPM ripened with honey had a comparatively higher score on sensory evaluation than did immature CPM with added honey added. Takju with 8% alcohol content was prepared by mixing the water from the mixed CPM ripened with honey together with 100, 50, and 25% of the frozen sediment. Several quality characteristics of the takju were checked over 37 days of fermentation at $10^{\circ}C$. The pH was sustained between 4.1 and 4.3, and changes in the number of viable yeast cells, acidity, total sugar amounts, and alcohol content showed similar patterns but differences in scale. Smaller amounts of sediment affected the stability of the takju. Mixing the CPM ripened with natural honey at low temperature moderately reduced the amount of sediment in the mash and resulted in a highly flavorful takju with an extended shelf life.

Quality of Traditional Kochujang Supplemented with Mushrooms (Pleurotus ostreatus and Lentinus edodes) (버섯을 첨가한 전통고추장의 품질특성)

  • The traditional kochujang supplemented with mushrooms (Pleurotus ostreatus and Lentinus edodes) was prepared, and changes in quality characteristics during fermentation at ambient temperature were investigated. The moisture content of kochujang increased by addition of mushroom. The titratable acidity of mushroom-added kochujang was gradually increased during fermentation. Ethanol contents of mushroom-added kochujang decreased with the addition of oyster mushroom, but increased with the addition of oak mushroom. The amino-nitrogen contents increased gradually during fermentation, resulting in significantly higher contents of 9% mushroom-added kochujang than others. The a value of kochujang decreased greatly during fermentation, but L, a and b values showed significantly higher than the control. The growth of bacteria in kochujang was delayed by the addition of mushrooms. Bacterial and yeast counts at the end of fermentation were not influenced by the addition of mushrooms. Sensory evaluation test revealed that color and flavour of kochujang were improved by the addition of mushrooms, and higher score was obtained from the addition of oyster mushroom compared to oak mushroom.

Quality Characteristics of Fermented Pork with Korean Traditional Seasonings (한국 전통 양념을 이용한 발효 돼지고기의 품질 특성)

  • This study was canied out to evaluate the quality characteristics of the fermented pork with Korean traditional seasonings. The samples, outside muscle of pork ham were cut to cube(7 ${\times}$ 12 ${\times}$ 2cm) and five Korean traditional seasonings such as garlic paste(TI), pickled Kimchi(T2), pickled Kimchi juice(T3), soybean paste(T4), red pepper paste(T5) were seasoned by the proportions of meat to seasonings(1 : 1). The seasoned samples were fennented at - 1 ${\pm}$ 1$^{\circ}C$ for 20 days. According to proximate composition analysis, all pork samples contained protein 20 ${\sim}$ 22%, fat 3 ${\sim}$ 5%, moisture 64 ${\sim}$ 70% and ash 1.8 ${\sim}$ 2.0%. However, T5 had high crude fat level and relatively low moisture content. The highest pH among treatments was shown in TI whereas T3 showed the lowest. Water holding capacity(WHC) of T4 and T5 were higher, while those values were lower in T3 compared with other treatment. Shear force value was the highest in T5, while it was the lowest in T4. TBARS value of T3 was the highest, while that was the lowest in T4. Moreover the highest VBN value was observed in T4 due to fermentation of soy protein. However, the lowest VBN value shown in Tl indicated the inhibition of protein degradation by the garlic. The highest saccarinity was shown in T5 but it was the lowest of in T3. Salinity was shown to be high in T2 and low in T5. $L^*$ values of T4 was higher both at the surface and inner side of samples than the others but T5 showed the lowest value. T2 showed the highest $a^*$ value but T4 and T5 showed the lowest. In the result of sensory evaluation for cooked meat, T5 had the highest score in all item including overall acceptability, while T4 had the lowest score. Unsaturated fatty acid(UFA) ratio of T5 and n were 72.16 and 69.93 respectively, and the ratio of UFA/Saturated fatty acid(SFA) were higher in the order of T5 >T4> T3 >Tl >T2. Overall quality characteristics were higher in the order of T5 >T2 >Tl >T4 >T3.

The Study on the Qualities of Commercial Anchovy Sauces and Kimchies Prepared with Different Anchovy Sauces (시판 멸치 액젓의 품질과 그 액젓으로 제조한 김치의 품질 연구)

  • To evaluate the quality of commercial anchovy sauces, 8 varieties (2 products from the Fishery Cooperation, 2 from small companies, and 4 well-known brands) were chosen and their physicochemical and sensory properties were examined. The salinity of anchovy sauces ranged from 19.8% to 26%, where product E was the saltiest and followed by F> H > B > E > A> C = G > D. Product D with the least salinity was turbid, rancid, and high in ammonia content, suggesting that it is difficult to control the quality of anchovy source with a low salt content. Protein content of anchovy sauces ranged from 2.51% to 2.64%. The unit price of anchovy source A was the highest, whereas B was the lowest. Sensory evaluation scores of anchovy sauces were in the order of B > G > A > F > E > C > H > D for color, B > G = C > H > E = F > G > D for odor, E > C > F > G > H > D > B > A for saltiness, and B > A > C > H > E = F > G > D for overall acceptability. Above results suggest that product B was the best in quality as well as the cheapest among all. Based on the above results, kimchies were prepared with product A, B, C with a high sensory quality and product H with a high market occupancy, and sensory evaluation was performed. The kimchi with product C got the highest sensory score in appearance and the one with product A and H in odor. Although the kimchi with product A generally had high scores throughout the fermentation period, there were no significant differences in texture, salty taste, and overall acceptability among kimchies with different varieties of anchovy sauces.

Effect of Indigenous Herbs on Growth, Blood Metabolites and Carcass Characteristics in the Late Fattening Period of Hanwoo Steers

  • This study was conducted to evaluate the effects of indigenous herbal supplements on growth, blood metabolites and carcass characteristics in the late fattening period of Hanwoo steers. In a 6 month feeding trial, thirty Hanwoo steers ($647{\pm}32$ kg) were allotted to one of 5 treatment groups, control (basal diet contained lasalocid), licorice, clove, turmeric and silymarin, with six steers per pen. All groups received ad libitum concentrate and 1 kg rice straw/animal/d throughout the feeding trial. Blood samples were collected at the beginning, middle, and the end of the experiment and the steers were slaughtered at the end. Blood glucose, triglyceride, total protein, and albumin concentrations were higher in the turmeric treatment compared with other treatments. Blood urea nitrogen and creatinine concentrations were highest (p<0.003 and p = 0.071, respectively) in steers treated with silymarin. Alanine aminotransferase activity was lower (p<0.06) for licorice and silymarin compared with the control group. There were no alterations in serum aspartate aminotransferase and gamma glutamyltransferase activities as a consequence of herb treatments (p = 0.203 and 0.135, respectively). Final body weight, body weight gain, average dairy gain and dry matter intake were not significantly different among treatments. Yield grade, marbling score and quality grade were higher for silymarin group than those of the control group (p<0.05). Therefore, the results suggest that silymarin can be used an effective dietary supplement as an alternative to antibiotic feed additive and a productivity enhancer, providing safe and more consumer acceptable alternative to synthetic compounds during the late fattening period of steers.
