The purpose of this study was to provide nutritional information for selecting beverages with low sugar contents. The nutritional data, including the sugar contents of 925 beverages, were collected from the nutrition labels through the official websites of manufacturers and analyzed according to the beverage types. The average price and volume of the beverage products were 1,556.6 won and 224.8 mL, respectively. The volume per price was the highest for carbonated beverages at 351.6 mL/1,000 won. The sugar content was high in the order of carbonated beverages (22.6 g), fruit & vegetable beverages (21.0 g), and mixed beverages (19.1 g). The sugar content per 100 mL was high in the order of fruit juice (10.6 g), fruit and vegetable beverages (9.2 g), ginseng and red ginseng beverages (8.5 g), and mixed beverages (8.3 g). The content of the product per 1,000 won was high in the order of carbonated beverages (23.3 g), fruit and vegetable beverages (23.2 g), and mixed beverages (20.0 g). The number of products with energy from a sugar content of 5% or more compared to the energy reference value was significantly higher in the carbonated beverages (52.2%), fruit and vegetable beverages (33.0%), and mixed beverages (26.5%) than other beverages. The sugar energy ratio of beverage products was highest in the carbonated beverages at 88.9%, followed by fruit and vegetable beverages (87.0%), fruit juices (84.3%), and mixed beverages (76.8%). Overall, beverages with high sugar contents per product, volume, and price were carbonated beverages, fruit and vegetable beverages, and mixed beverages.

In this paper, we study image clustering without labeling using machine learning techniques. We proposed an unsupervised machine learning technique to design an image clustering model that automatically categorizes images into groups. Our experiment focused on inception convolutional neural networks (inception V3) with k-mean methods to cluster images. For this, we collect the public datasets containing Food-K5, Flowers, Handwritten Digit, Cats-dogs, and our dataset Rice Germination, and the owner dataset Palm print. Our experiment can expand into three-part; First, format all the images to un-label and move to whole datasets. Second, load dataset into the inception V3 extraction image features and transferred to the k-mean cluster group hold on six classes. Lastly, evaluate modeling accuracy using the confusion matrix base on precision, recall, F1 to analyze. In this our methods, we can get the results as 1) Handwritten Digit (precision = 1.000, recall = 1.000, F1 = 1.00), 2) Food-K5 (precision = 0.975, recall = 0.945, F1 = 0.96), 3) Palm print (precision = 1.000, recall = 0.999, F1 = 1.00), 4) Cats-dogs (precision = 0.997, recall = 0.475, F1 = 0.64), 5) Flowers (precision = 0.610, recall = 0.982, F1 = 0.75), and our dataset 6) Rice Germination (precision = 0.997, recall = 0.943, F1 = 0.97). Our experiment showed that modeling could get an accuracy rate of 0.8908; the outcomes state that the proposed model is strongest enough to differentiate the different images and classify them into clusters.
Purpose: Baicalein, a natural flavone found in herbs, exhibits diverse biological activities. Nonalcoholic steatohepatitis (NASH) is an irreversible condition often associated with a poor prognosis. This study aimed to evaluate the effects of baicalein on the development of NASH in mice. Methods: Male C57BL/6J mice were randomly divided into four groups. Three groups were fed a methionine-choline-deficient (MCD) diet to induce NASH and were simultaneously treated with baicalein (at doses of 50 and 100 mg/kg) or vehicle only (sodium carboxymethylcellulose) through oral gavage for 4 weeks. The control group was fed a methionine-choline-sufficient (MCS) diet without the administration of baicalein. Results: The baicalein treatment significantly reduced serum levels of alanine aminotransferase and aspartate aminotransferase, suggestive of reduced liver damage. Histological analysis revealed a marked decrease in nonalcoholic fatty liver activity scores induced by the MCD diet in the mice. Similarly, baicalein treatment at both doses significantly attenuated the degree of hepatic fibrosis, as examined by Sirius red staining, and hepatocellular death, as examined by the terminal deoxynucleotidyl transferase dUTP nick end labeling assay. Baicalein treatment attenuated MCD-diet-induced lipid peroxidation, as evidenced by lower levels of hepatic malondialdehyde and 4-hydroxynonenal, demonstrating a reduction in oxidative stress resulting from lipid peroxidation. Moreover, baicalein treatment suppressed hepatic protein levels of 12-lipoxygenase (12-Lox) induced by the MCD diet. In contrast, baicalein enhanced the activities of antioxidant enzymes such as superoxide dismutase, catalase, and glutathione peroxidase. Additionally, baicalein treatment significantly reduced hepatic non-heme iron concentrations and hepatic ferritin protein levels in mice fed an MCD diet. Conclusion: To summarize, baicalein treatment suppresses hepatic lipid peroxidation, 12-Lox expression, and iron accumulation, all of which are associated with the attenuation of NASH progression.

This study reviewed the current data presented in the literature on developing meat analogs using plant-, insect-, and protein-derived materials and presents a conclusion on future perspectives. As a result of this study, it was found that the current products developed using plant-, insect-, and mycoprotein-derived materials still did not provide the quality of traditional meat products. Plant-derived meat analogs have been shown to use soybean-derived materials and beta-glucan or gluten, while insect-derived materials have been studied by mixing them with plant-derived materials. It is reported that the development of meat analogs using mycoprotein is somewhat insufficient compared to other materials, and safety issues should also be considered. Growth in the meat analog market, which includes products made using plant-, insect-, and mycoprotein-derived materials is reliant upon further research being conducted, as well as increased efforts for it to coexist alongside the traditional livestock industry. Additionally, it will become necessary to clearly define legal standards for meat analogs, such as their classification, characteristics, and product-labeling methods.
Codex Nutrient Reference Values (NRVs) were based on the 1988 Helsinki report and a single set of NRVs was established for the general population over 3 years for the purpose of food labeling in 1993. Dietary Reference Intakes (DRIs) with new concepts were developed in many countries recently. Hence there has been broad discussion regarding establishment of new NRVs using DRIs, which include estimated average requirement (EAR), recommended intake (RI or RDA), adequate intake (AI), and tolerable upper intake level (UL) in the world. This study was carried out to review various possible values for Codex NRVs such as population-weighted EAR, population-weighted RDA, and populationbased RDA. The values were simulated using DRIs and population distribution of Korea, USA, Japan, Philippines, Germany and England, and compared to the current Codex values and the highest RDA and the lowest UL among populations with different life-stage. Since population weighted/based values are necessary to be updated according to the population changes and are different across countries, inconsistency can be a serious barrier in international transactions. For some of nutrients such as vitamin A and zinc, values based on population-based RDA or the highest RDA were higher than the lowest UL. Therefore, careful considerations should be given before establishing Codex NRVs.

This study was performed to analyze the nutritional contents (calories, carbohydrate, protein, fat, sugar, sodium and potassium) of home meal replacements (HMRs) and assess the total nutritional value of these meals. The energy, carbohydrate and sodium contents were highest in fried rice, and the percentage of the daily value (%DV) was also higher than 50%. In all HMRs, the sodium Index of Nutritional Qualities (INQs) was higher than one, but all sugar INQs were lower than one. Most of the energy contribution of the carbohydrates in fried rice, spaghetti and tteokbokki exceeded the recommended range, whereas protein and fat values were mostly under the recommended range in one-dish type lunchboxes and tteokbokki respectively. When applying the nutritional labeling requirements for food, a difference of 31% above or below the labeling standard indicates that continuous monitoring is needed. These results suggest that HMRs contain high levels of sodium and appear to be nutritionally imbalanced in part.

The purpose of this study was to investigate recognition of food additives, to provide the basic data for food education of high school students. The survey was conducted from 560 students who are boys and girls of high schools in Gwangju. Data were analyzed by a SAS program. According to the survey, an usual recognition for additive food according to related variable showed that it was the highest ratio of 4.18 that policy on complete labeling of foods should be requested for additive food but it showed the lowest 2.17 that additive food is promoting quality of food. In a difference of a degree of a correct answer of knowledge for additive food and knowledge according to related variable, a degree of a correct answer of knowledge for additive food showed a lot of interest in safety in that knowledge for safety showed 79.45 but were showed much lower 7.5% for a degree of a correct answer of actual knowledge of additive food among food ingredients labels. The purpose of this study was to provide basic data for setting more detailed standards for baby food and to provide food information that can be used in real-world settings. We purchased 80 snacks and 40 drinks for infants and toddlers from supermarkets and online markets and analyzed tar color, artificial sweeteners, mycotoxins, and nutritional components (e.g., sucrose, sodium, and calcium). Fortunately, it was confirmed that both tar color and sodium saccharin, which do not have detection criteria for labeled foods for infants and toddlers, were not detected. However, acesulfame potassium was detected at 0.07 g/kg in one snack sample. As for myxotoxins, aflatoxin (B1, B2, G1, and G2) and ochratoxin A were not detected. Fumonisin B1, fumonisin B2, and zearalenone were detected in the ranges of 9.78-78.94 ㎍/kg, 5.58-11.73 ㎍/kg, and 2.96-8.83 ㎍/kg, respectively, but only in snacks. Sucrose was detected in 65 of the snacks (0.02-40.94 g/net weight [g]) and in 24 of the drinks (0.12-27.60 g/net weight [g]). Minerals were detected in most of the samples, and in four snacks, the zinc content per net exceeded the tolerable upper intake level for infants. Sixteen snacks exceeded the food standards for sodium content for infants and toddlers, but none of them were labeled as food for infants and toddlers in the product manufacturing report, such that the corresponding standards could not be applied. Therefore, it seems necessary to establish institutional improvements, such as strengthening labeling standards, so that the currently enforced standards can be appropriately applied, and establishing standards for labeled foods for infants and toddlers.

This study was carried out to investigate food label perception and utilization classified by age and sex. Questionnaires were collected from 938 male and female customers aged in their 20's to 50's from February 4th to March 30th 2014. Regarding checking food labels at the time of purchase, 73.8% of consumers checked food labels, and there was a significant difference by age and sex. Female more often checked food labels than males, and the 40's group showed a higher ratio of checking food labels than other age groups. The main reason for checking food label was 'confirming expiration date' (60%), 'ingredients' (16.4%), and 'nutrition contents' (13.7%). The main reason not checking food labels was 'too small and insufficient to understand' (50.3%), 'too difficult to understand' (16.4%), and 'have no concern' (14.9%). There was a significant difference by age, as in the 50's group showed a higher ratio of 'too small and insufficient to understand' than the other age groups, and 20's and 30's groups showed a higher ratio of 'too difficult to understand'. The overall satisfaction score was 2.96, awareness score was 2.88, and reliability score was 2.93. A total of 96% answered that food labelling education is needed. Therefore, food labelling education for consumers is required to encourage consumers to purchase healthy foods.

In Korea, from January 2023, the Act on Labeling and Advertising of Food was revised to reflect the use-by-date rather than the sell-by-date. Hence, the purpose of this study was to establish a system for calculating the safety factor and determining the recommended use-by-date for each food type, thereby providing a scientific basis for the recommended use-by-date labels. A safety factor calculation technique based on scientific principles was designed through literature review and simulation, and opinions were collected by conducting surveys and discussions including industry and academia, among others. The main considerations in this study were pH, Aw, sterilization, preservatives, packaging for storage improvement, storage temperature, and other external factors. A safety factor of 0.97 was exceptionally applied for frozen products and 1.0 for sterilized products. In addition, a between-sample error value of 0.08 was applied to factors related to product and experimental design. This study suggests that clearly providing a safe use-by-date will help reduce food waste and contribute to carbon neutrality.
