A Study on the Factors Influencing Food Consumption by Food Frequency Questionnaire far the Middle Aged and Elderly Living in the Chonju Area (전주지역 중.노년의 식품섬취빈도에 영향을 미치는 요인)

  • This study was conducted to find the differences in food consumption frequency of the middle aged(male 20, female 50) and the elderly(male 15, female 15) living in Chonju in December, 1998 according to food habits, smoking, alcohol drinking and exercising habit, health status, and the levels of nutrition knowledge and attitude store. The foods frequently consumed among the subjects were kimchi(15.4/week), mixed rice(11.5/week), rice(7.6/week), vegetables in soup, jjigae and jorim(5.0/week), mandarins and oranges(5.e/week), and seasoned laver(4.3/week). There were several factors influencing food consumption patterns. These were age, regularity of meal times, the status of smoking, alcohol drinking and exercising, and the level of nutrition attitude. The elderly ate cooked rice more frequently, while the middle aged ate fish, especially blue fishes more frequently. The middle aged who had breakfast regularly ate milk and milk products, legumes and fruits frequently. Those who smoked seemed to eat less cereals and starches and fats, while those who didn't smoke ate more sugars. The alcohol drinking group also ate less fats and the exorcising group ate almost all of food groups frequently. The status of health showed to be related with food consumption patterns. The normal group in hemoglobin ate eggs more frequently than the anemia group and the high risk group in blood pressure ate almost all of food groups more frequently. The high level group for nutrition attitude score chose vegetables, fruits, and milk and milk products more frequently than the other groups. On the other hand, low level group for nutrition attitude score was apt to eat ramyun, ham-sausage, and carbonated beverages more frequently. Therefore, nutrition education to improve the food habits find to change nutrition attitude is necessary to promote health status anti mole attention should be taken to the high risk group in blood pressure to guide proper food and nutrition intakes.

Effect of the Nutrient intakes on Psychosocial Stress (영양소 섭취가 사회심리적 스트레스에 미치는 영향)

  • This research was designed to see the relationship among nutrient intake, food intake frequency and psychosocial stress in ordinary life. The subjects were 190 males and 263 females of university students in urban areas. There were significant correlations between nutrient intake and stress value, and between food intake frequency and stress value. In male, the more they consumed energy, protein and carbohydrate, the higher they had stress in several categories. But in female the results were reversed. Their stress values were lower when they have consumed protein source food frequently. And in general, stress values of female were higher than those of male. From these results, we conclude that nutrient intake tends to be decresed with increase stress in less stressful condition, but to be increased in more stressful condition.

A Study of Korean Elderly on the Preference of Food according to Body Composition

  • Present study classified body composition to 4 groups categorized as sarcopenic obesity (SO), sarcopenic nonobesity (SNO), nonsarcopenic obesity (NSO), and nonsarcopenic nonobesity (NSNO) and then was performed to investigate that body composition associated with food consumption frequency as well as MS in individual aged 60 years or older. Body mass index and an appendicular skeletal muscle mass (ASM) divided by weight (Wt) of < 1 standard deviation (SD) below the sex-specific mean for young adults were used to define obesity and sarcopenia. A total of 1,433 subjects (658 male and 775 females) 60 years or older from the fifth Korea National Health and Nutritional Examination Survey 2010 participated in this study. One of the interesting findings was that the association of the prevalence of MS with body composition was higher in women than man. Other finding was that there were different food frequency and food preference according to 4 different groups between men and women. In addition, men are much more influenced by food than women. In conclusion, body composition changes were more related with food frequency in elderly men (60 years or older) than women. Women had a higher prevalence of MS than men, suggesting early nutritional intervention in elderly women may help them prevent body composition changes.

Study on Dietary Factors Associated with Characteristics of Attention Deficit Hyperactivity Disorder (일부 초등학생에서 주의력결핍 과잉행동 성향과 관련된 식이요인)

  • The purpose of this study was to investigate the dietary factors associated with characteristics of attention deficit hyperactivity disorder (ADHD) in upper-grade elementary school students. The study subjects were 397 students, and 52% of total study subjects were boys. The risk for developing ADHD was assessed by using a DSM-IV questionnaire. Boy's ADHD score was higher than that of girls (p<0.001). Subjects were divided into two groups according to the median of the ADHD score in boys and girls. The high ADHD score group showed higher frequency of skipping breakfast and a lower score for good dietary habits, as compared to the normal group. Further, the high ADHD score group showed higher frequency of processed food intake with lower frequency of vegetable intake, as compared to the normal group. These results suggest that undesirable eating habits and frequent intake of processed foods may be associated with higher risk of developing ADHD in elementary school students.

Dietary assessment according to frequency of food consumed away from home among children and adolescents: Based on the 2010~2012 Korea National Health and Nutrition Examination Survey

  • Purpose: The aim of this study was to investigate the dietary quality of food consumed away from home among Korean children and adolescents. Methods: Data were obtained from the 2010~2012 KNHANES (Korea National Health and Nutrition Examination Survey) and included 3,583 subjects aged 7 to 18 years old. The frequency of food consumed away from home was dichotomized into more than once or less than once per day. Results: Thirty percent of subjects were shown to consume food away from home more than once per day, and older children from higher income households showed a higher frequency of food consumed away from home compared to other children. The percentage of children and adolescents cited as regularly skipping breakfast was 19%. Individuals who ate out more than once per day showed higher consumption of energy and sodium than those who ate out less than once per day. Conclusion: Excessive intakes of energy and sodium are associated with obesity, high blood pressure, diabetes, and obesity-related diseases. Thus, there is a need for nutritional intervention and educational efforts to improve child nutrition and prevent obesity.

Headspace Volatile Compounds of Steamed Liriopis Tuber Tea Affected by Steaming Frequency

  • Flavor quality of Liriopis tuber tea that was made using a steaming process was studied by measuring changes in headspace volatile compounds. Headspace volatile compounds of the prepared samples were isolated, separated and identified by the combined system of purge & trap, automatic thermal desorber, gas chromatography, and mass selective detector. As steaming frequencies were increased, the area percent of aldehydes decreased from 32.01% to 3.39% at 1 and 9 steaming frequency times, respectively. However, furans and ketones increased from 18.67% to 33.86% and from 9.60% to 17.40% at 1 and 9 times, respectively. The savory flavor of Liriopis tuber tea was due to a decrease in aldehydes contributing a fresh flavor at the 1st steaming process and newly generated furans from nonenzymatic browning with repeated steaming frequencies. These results will provide basic information for quality control of the newly developed Liriopis tuber tea.

Survey on Body Image Perception, Dietary Habits and Nutrient Intakes according to Interest Level in Health of Female University Students in Gyeongnam Area (경남지역 일부 여대생의 건강관심도에 따른 체형인식, 식생활습관과 영양소 섭취 실태 조사)

  • This study was conducted using a self boarding questionnaire survey to investigate body image perception, dietary habits and nutrient intakes according to interest level in health of female university students in Masan area (n=302). The subjects were divided into 2 groups according to interest level in health ('High' group, n=101, 'Low' group, n=201). Body image according to BMI was significantly different regardless of interest level in health (p<0.001). The answer percentage indicated that the purpose of weight control is health, regular use of the scale, and regular exercise were significantly higher in the high group (p<0.05). Nutrient knowledge score (p<0.01) and food frequency score (p<0.001) were significantly higher in the high group (p<0.01). There were no significant differences in nutrient intake, but intake, NAR and INQ of vitamin C were significantly higher in the high group (p<0.001). Nutrition knowledge score (p<0.01), food intake frequency score (p<0.01), and INQ and NAR of vitamin C (p<0.01) were positively correlated with the interest level in health. These results will be useful as a basis for the development of effective nutrition education programs in order to increase interest level in health and apply well in real life what have learned through the correct nutrition knowledge.

Reproducibility of a food frequency questionnaire: Korea Nurses' Health Study

  • BACKGROUND/OBJECTIVES: This study aimed to examine the reproducibility of food frequency questionnaires (FFQs) designed for young female nurses in the Korea Nurses' Health Study. SUBJECTS/METHODS: The reproducibility of web-based, self-administered FFQs was evaluated among 243 Korean female nurses. The first FFQ (FFQ1) was administered from March 2014 to February 2019 and the second FFQ (FFQ2) from November 2019, with a mean interval of 2.8 years between the FFQs (range, 9 months-5.6 years). Pearson and Spearman correlation coefficients (r values) and quartile agreements between FFQ1 and FFQ2 were calculated for intakes of energy, nutrients, and foods. RESULTS: Pearson correlation coefficients ranged from 0.41 to 0.55 (median r = 0.51) for energy and raw nutrients and from 0.16 to 0.46 (median r = 0.36) for energy-adjusted nutrients. Spearman correlation coefficients ranged from 0.25 to 0.72 (median r = 0.41) for food items. The percentages of women who were classified into the same or adjacent quartile were 77% to 84% (median = 82%) for raw nutrients and 69% to 86% (median = 78%) for foods. CONCLUSIONS: The results indicated that the web-based FFQ used in the Korea Nurses' Health Study has acceptable reproducibility.

Food consumption frequency of Korean adults based on whether or not having chewing difficulty using 2013-2016 KNHANES by sex-stratified comparative analysis

  • BACKGROUND/OBJECTIVES: This study examined the associations between food consumption frequency of Korean adults and self-perceived chewing difficulty, using the food frequency questionnaire (FFQ, 112 items) from 2013-2016 of the Korea National Health and Nutrition Examination Survey (KNHANES). SUBJECTS/METHODS: Subjects were divided into not difficult in chewing (NDC) and difficult in chewing (DC) groups, with 24.17% being classified into DC. Males and females consumed 35 and 37 items less frequently than the other sex, respectively. Due to the remarkable gender difference in food consumption, gender-stratified one-sided survey regression analysis was performed after adjusted for the effect of age, household income, and self-rated health status. RESULTS: Thirty-four items of FFQ were significantly less consumed by the DC group. Females exclusively consumed less beverages and alcohol while males showed the same for fruits and milk·dairy products. Consumption frequency of 8 items such as steamed potatoes·grilled potatoes, stir fried beef, other kimchi·fresh vegetable kimchi, orange, sour pork·pork cutlet, tteokbokki and green tea were significant only in males. In contrast, 17 items including cooked rice with other grains and legumes, boiled egg·steamed egg, Korean cabbage kimchi, banana, and tofu stew·soft tofu stew were significant only for females. Finally, items that showed significance for both were 9 items including loaf bread, ready-to-eat cereal, steamed sweet potatoes·grilled sweet potatoes, stir-fried lotus roots·stir-fried burdock, green laver salad·brown seaweed salads, apples, tomato·cherry tomatoes, squid (raw, dried shredded, boiled, stir-fried), and curd type yogurt. CONCLUSIONS: Findings in this study suggest chewing difficulty may be an important nutritional issue that has to be dealt with for healthful food consumption, with distinct interest of gender.

Comparison Between Semi-Quantitative Frequency Methods and 7-day Dietary Records Methods in Food and Nutrition Intake Status For Hemodialysis Patients (혈액투석환자 대상 반정량적 식품섭취빈도 조사법과 7일간 식사기록법을 이용한 일상 식품과 영양소 섭취수준 비교)

  • Objectives: The valid assessment of food and nutrients intakes using appropriate dietary intake method is necessary to improve the nutritional status of the hemodialysis (HD) patients. This study was conducted to compare the method between newly developed, semi-quantitative food frequency questionnaire (Semi-FFQ) and 7-day dietary records (7-DRs) for hemodialysis patients. Methods: We conducted both methods on 53 maintenance HD patients in two university hospitals. We calibrated the frequency, portion size and daily intake of 47 food items reported in Semi-FFQ. The food and nutrients intake was compared and the correlation of the two methods was analyzed. Also each nutrient intake was compared to recommended dietary allowance for Korean (KDRIs) and recommended nutrient reference value for HD patients. Results: Energy and energy-yielding nutrients intakes were significantly higher in the two methods (p<0.01). These support the possible reliability between Semi-FFQ and 7-DRs that is similar with regard to most mineral and vitamin intakes. Thus, the Semi-FFQ used in this study for the assessment of nutrient intakes of HD patients can be reliable for the assessment of the nutrient intake along with the 7-DRs. The correlation coefficients were higher for foods consumed daily, such as steamed rice, meat and chicken, bean, egg, milk, coffee and alcohol than for those of foods eaten rarely (p<0.01). Conclusions: The Semi-FFQ used in this study can be a reliable tool for the assessment of the HD patients' nutrient intake along with the 7-DRs, despite its limitations.
